With basic definition, batteries are energy storage systems that convert chemical energy into electrical energy. The usage areas of batteries are increasing day by day. The rapid development of mobile technologies in every field has increased the importance of storage systems with high energy density, low volume, and weight. Until 1990, lead acid, Ni-Cd and Ni-MH storage systems were used extensively. However, rapid technological developments in the field of mobile telephony have revealed the need for lighter and higher energy density batteries. Li-Ion batteries have revolutionized mobile devices in this area, and these batteries have spread rapidly in every field where mobility is important. On the other hand, they also caused concern with their dangerous aspects and a series of precautions had to be taken in their use. In order to determine the precautions, the data of the Li-Ion batteries in use should be collected and evaluated. In this study, battery data during charging and discharging by setting up experimental setup were collected and processed. In addition, data of batteries operating under different electrical and temperature conditions were collected. The collected data were used to determine battery performance and calculate capacity level., En basit tanımı ile kimyasal enerjiyi elektrik enerjisine çeviren pillerin kullanım alanları gün geçtikçe artmaktadır. Savunma sanayiden endüstriyel alana, bireysel kullanımdan toplumsal kullanıma kadar her alanda mobil teknolojilerin hızla gelişmesi, yüksek enerji yoğunluğuna, düşük hacme ve ağırlığa sahip depolama sistemlerinin önemini artırmıştır. 1990 yılına kadar kurşun asit, Ni-Cd ve Ni-MH altyapısına sahip depolama sistemleri yoğun olarak kullanılmakta iken mobil telefon alanında elde edilen hızlı teknolojik gelişmeler, daha hafif ve yüksek enerji yoğunluğuna sahip pil ihtiyacını ön plana çıkarmıştır. Bu konuda Li-Ion piller, mobil cihazlarda bir devrime sebep olmuş ve bu piller, mobilitenin önemli olduğu her alanda hızla yayılmıştır. Li-Ion piller sahip olduğu avantajlar ile yaygınlaşırken, diğer taraftan tehlikeli yönleri ile de endişeye sebep olmuştur ve kullanımında bir dizi önlemlerin alınması zorunluluğunu beraberinde getirmiştir. Önlemlerin belirlenmesi için ise kullanımda olan Li-Ion pillerin verilerinin toplanması ve değerlendirilmesi gerekmektedir. Bu çalışmada deneysel düzenek kurularak, şarj ve deşarj esnasındaki pil verileri toplanmış ve işlenmiştir. Ayrıca farklı elektriksel ve sıcaklık şartları altında çalışan pillerin toplanan verileri, pil performansının belirlenmesinde ve kapasite seviyesinin hesaplanmasında kullanılmıştır.

Licensed warehousing activities in the agricultural sector started with the Agricultural Products Licensed Warehousing Law No. 5300, which was enacted in 2005. It was opened with the support of the state, was developed with the published regulations and started to work under the leadership of the state. The importance of licensed warehouses has increased with the sustainable agriculture approach, which is among Turkey's 2023 Strategic Goals. In Turkey, their number has been increasing in recent years and the licensed warehousing system is of great importance in terms of agricultural products. In this study, the theoretical dimension of the licensed warehousing system and the producers delivering cereals to LİDAŞ operating in Kırşehir Mucur district were evaluated. The sample of the research consists of 70 producers who deliver products to LİDAŞ in the region. When the results obtained are examined, 61.40% of the producers cannot store, 45.70% keep their products at LİDAŞ for an average of 1-3 months, the most important support tool is withholding tax, 80.00% is pricing. It has been determined that LİDAŞ does not have any influence on the cereal planting decision of 60.00%. In addition, other problems of the producers, procedural problems, analysis fees, loading and unloading fees, warehouse rental fees and withholding costs create a negative situation for the producer. The real decline in the amount of support comes to the fore as negative thoughts about working personnel, low capacity in storage facilities and narrow product range to be stored. It can be said that the tendency towards licensed warehousing activities will increase with the solution of these problems.

The purpose of this research is to determine the effect on egg quality characteristics of storage eggs produced using various egg production systems and at various storage temperatures. The egg production systems used in the study were conventional cages, enriched cages, barn systems, free-range systems (natural vegetation in the outdoor area), and free-range systems (alfalfa in the outdoor area). The study used 500 eggs from the 33-week-old ATAK-S layer genotype. Eggs from various egg production systems were randomly distributed for storage in refrigerators and at room temperature. The egg quality of ten eggs from each group was determined prior to and on the 7th, 14th, 21st, and 28th days of storage. We investigated egg weight loss, egg specific gravity, eggshell strength, Haugh unit, yolk index, and albumen pH as indicators of egg quality. In this study, it was discovered that egg production systems did not have a statistically significant impact on egg weight loss, specific gravity, yolk index, or albumen pH during storage, but that storage temperature did have a statistically significant impact (P, Bu araştırmanın amacı farklı yumurta üretim sistemlerinden üretilen yumurtaların farklı sıcaklıklarda depolamanın yumurta kalite özellikleri üzerine etkisini araştırmaktır. Çalışmada yumurta üretim sistemleri olarak, geleneksel kafes, zenginleştirilmiş kafes, kapalı yer sistemi, serbest dolaşımlı sistem (gezinme alanında doğal vejetasyon) ve serbest dolaşımlı sistem (gezinti alanı yonca bitkili) kullanılmıştır. Çalışmada 33 haftalık ATAK-S yumurtacı genotipinden elde edilen toplam 500 adet yumurta kullanılmıştır. Dünyada ve ülkemizde kullanılabilir su miktarı, su kaynakları üzerinde artan kirlenme ve aşırı tüketim baskısıyla her geçen gün azalmaktadır. Özellikle artan nüfus ve sanayi faaliyetleriyle birlikte küresel iklim değişiminin su kaynakları üzerindeki olumsuz etkisi her geçen gün hızla artmaktadır. Bu nedenle günümüzde, suyun kullanımı ve tasarrufu önem kazanmakta olup kaynakların yeni stratejilerle verimli ve bilinçli kullanımı gerekmektedir. Yenilikçi teknolojilere sahip sanayi üretimi ile su tüketiminin azaltılması, evsel nitelikli atık suların arıtılarak tekrar kullanılması, su sıkıntısının yoğun olarak yaşandığı bölgelerde deniz suyundan tatlı su elde edilerek kullanılması ve binalarda yağmur suyu hasadı gibi su kaynaklarına yönelik alternatif teknolojiler tüm Dünya’da giderek yaygınlaşmaktadır. Tatlı su kaynaklarının sürdürülebilir kullanımında hasat edilen yağmur suyunun birçok alanda kullanımı alternatif su kaynağı oluşturabilir. Bina çatılarından toplanan yağmur suları, evsel ihtiyaçlarda veya bahçe sulama gibi diğer ihtiyaçlarda kullanılmakta olup diğer teknolojilere göre kurulumu oldukça basittir. Bu çalışmada, binalardan yağmur suyu hasadı uygulamalarında kullanılan sistemlerin projelendirme esasları geniş bir literatür araştırması yapılarak incelenmiş ve derlenmiş olup yağmur suyu hasat sistemlerinin kurulum maliyeti ile amortisman süresi çalışma kapsamına alınmamıştır. Yağmur suyu hasadı planlaması ve uygulanmasına yönelik öneriler sunulmuştur. The amount of usable water in the world and in our country is decreasing day by day with the increasing pollution and excessive consumption pressure on water resources. The negative impact of global climate change on water resources, especially with the increasing population and industrial activities, is increasing day by day. For this reason, the use and saving of water is of great importance today, and efficient and conscious use of resources with new strategies is required. Alternative technologies for water resources such as reducing water consumption through industrial production with innovative technologies, treating and reusing domestic wastewater, obtaining fresh water from sea water in areas where water shortage is intense, and rainwater harvesting in buildings are becoming increasingly widespread all over the world. The use of rainwater harvested in the sustainable use of fresh water resources in many areas can create an alternative water resource. Rain water collected from building roofs is used for domestic needs or other needs such as garden irrigation, and its installation is quite simple compared to other technologies. In this study, the design principles of the systems used in the rainwater harvesting applications from the buildings were examined and compiled by conducting an extensive literature search, and the installation cost and depreciation period of rainwater harvesting systems were not included in the study. Recommendations for rainwater harvesting planning and implementation are presented.

Bu çalışma, farklı olgunlaşma sürelerine sahip bazı patates çeşitlerinin Isparta koşullarında verim performansları ile hasat sonrası depo davranışları ve depoda kalite değişimlerinin belirlenmesi amacıyla 2018 yılında yürütülmüştür. Çalışmada ülkemizde yaygın olarak tarımı yapılan Agria, Agata, Alegria, Desiree, Granola, Hermes, LadyAnna, Marabel, Morfona ve Russet Burbank patates çeşitleri kullanılmıştır. Araştırmada çeşitlerin arazi koşullarında verim performansları belirlendikten sonra her çeşitten alınan yumru örnekleri 6-8°C sıcaklıkta 6 ay süreyle depolanmıştır. Çeşitlerin yumru verimleri 2.860-5.331 kg/da, vejetasyon süreleri ise 97,7-146,6 gün arasında değişmiştir. Depolama sürecinde yumruların %50‘sinde dormansinin kırılması için geçen süreler 23,3-111,6 gün arasında değişmiş, erkenci çeşitlerde dormansi daha erken kırılmıştır. Çalışmada 6 aylık depolama devresi sonunda çeşitlerin %4,13 ile %6,48 oranında ağırlık kaybettikleri saptanmıştır. Çeşitlerin depolama süresine bağlı olarak nişasta oranları, indirgen şeker içerikleri ve parmak patates verimleri değişkenlik göstermekle birlikte depolama süresi boyunca genellikle azalma göstermiştir. Araştırmada kullanılan patates çeşitlerinin depolama sürecinde parmak patates ve sofralık kalitelerinde önemli değişimlerin olduğu, cips sanayisine uygun olmayan, düşük kuru madde oranına sahip çeşitler ile erkenci özellikteki çeşitlerin depoda ağırlık ve kalite kayıplarının daha fazla olduğu belirlenmiştir. Çalışmada patates çeşitlerinin dormansi süreleri ile olgunlaşma özelliklerinin depo kalitesine önemli derecede etki gösterdiği ve bu nedenle patates depolamasında çeşit özelliklerinin dikkate alınarak depo süresinin belirlenmesi gerektiği sonucuna varılmıştır.

Çalışmada, Black Diamond erik çeşidinde derim sonrası farklı uygulamaların depolama boyunca üşüme zararı üzerine etkilerinin belirlenmesi hedeflenmiştir. Bu amaçla optimum derim tarihinde toplanan erikler, derimden hemen sonra salisilik asit (1.5 mM, 10 dk daldırma), putresin (2 mM, 6 dk daldırma), oksalik asit (5 mM, 3 dk daldırma) ve nitrik oksit (1 mM, 3 dk daldırma) içeren çözeltilere daldırılmıştır. Fazla suyun uzaklaştırılması için uygulamalardan sonra meyveler 30 dk oda koşullarında (21°C, %50-60 oransal nem) bekletilmiş ve suyu uzaklaştırılan meyveler hava ile ön soğutma (1°C) işlemine tabi tutulmuştur. Ön soğutma işleminden sonra erikler modifiye atmosfer poşetlerine yerleştirilmiş ve 0±0.5 °C ve %90 oransal nem koşullarında 100 gün süreyle depolanmıştır. Depolama süresince üşüme zararı indeksi, iç kararması ve çürüme oranı ile üşüme zararıyla ilintili olarak değişen meyve et rengi ve kabuk rengi incelenmiştir. Raf ömrü çalışmaları (5 gün, 20±1 °C ve % 60±5) için aynı analizler tekrarlanmıştır. Çalışmada üşüme zararı ile iç kararması bulguları paralellik göstermiştir. Genellikle muhafazanın son iki döneminde (40 gün) çürümeler artmış ve depolama sonunda %8.12 (SA) ile %11.37 (K) arasında değişmiştir. Depolama boyunca üşüme zararının, iç kararmasının ve çürüme oranının geciktirilmesinde en etkili uygulamanın SA olduğu saptanmıştır.

Bu çalışmada bıldırcın nugget üretimi ve depolama stabilitesinin belirlenmesi amaçlanmıştır. Çalışmada %75 bıldırcın eti ve %25 piliç eti kullanılarak nuggetlar (BN) üretilmiş, ardından 4°C ve -18°C’de depolanarak kimyasal, mikrobiyolojik ve duyusal analizleri gerçekleştirilmiştir. Yapılan analizlerde BN örneklerinin su, yağ, protein ve kül içeriği sırasıyla, %55.97, %8.84, %16.17 ve %2.08 olarak tespit edilmiştir. Yağ asitleri bileşimine bakıldığında, en yüksek orana sahip yağ asitleri linoleik asit (%21.55), linolenik asit (%21.78) ve palmitik asit (%19.18) olarak belirlenmiştir. Yüksek verim ve kaliteye sahip şeker pancarı üretimi için kaliteli tohumluk kullanılması esastır. Şeker pancarı tohumları ya ham (işlenmemiş) ya da işlenmiş olarak depolanmaktadır. Tohumlarda depolama ömrü, tohum üretimi sırasında uygulanan kültürel işlemler, çevresel faktörler, çeşit özelliği, tohumun kimyasal içeriği, tohum olgunluk durumundan etkilenmektedir. Bu çalışmada, Türkiye’de üretimi yapılan şeker pancarı tohumlarının 17 yıl süre ile depolanmasının çimlenme oranları üzerine etkileri incelenmiştir. Hasat edildiklerinde %12 nem içeriğine sahip olan tohumlar, sıcaklığı ve nemi kontrol edilmeyen depolarda saklanmıştır. Depo sıcaklıkları Aralık (1 oC), Ocak (2 oC) ve Şubat (3 oC) aylarında en düşük olurken, Temmuz ve Ağustos aylarında 29 oC’ye yükselmiştir. Deponun nisbi nemi Ocak ayında %69 ,Temmuz ve Eylül aylarında ise %22 olarak gerçekleşmiştir. Üretiminden sonra 17 yıl süre ile saklanan 12 partiye ait ham tohumlarda en yüksek çimlenme oranları %92 ile 3, 6 ve 7 nolu partilerden elde edilmiş ve 3 partiye ait işlenmiş tohumlarda ise %93-95 arasında değişmiştir. Uzun süre depolanan tohumların sera testlerinde bütün tohum partilerinde çimlenme oranlarına ait değerler %82 ile %94 arasında elde edilmiştir. Tohumların tarla çıkış oranları laboratuvar ve sera çimlenme testleri ile bir paralellik göstermiş ve çimlenme oranları %88 ile %90 arasında değişmiştir., It is essential to use quality seeds for the production of sugar beet (Beta vulgaris L.) with high yield and quality standards. Sugar beet seeds are stored either raw (unprocessed) or processed form. Logetivity of seeds in storage is affected by cultural processes applied during seed production, environmental factors, genetic characteristics of the variety, chemical content of the seed, and seed maturity status. In this study, the effects of storage period of 17 years on germination of stored sugar beet seeds produced in Turkey were investigated. When harvested, seeds with a moisture content of 12% were stored in storage whose temperature and humidity parameters were not controlled. While storage temperatures were the lowest in December (1 oC), January (2 oC) and February (3 oC), it increased to 29 oC in July and August. The relative humidity of the storage was 69% in January and 22% in July and September. The highest germination rate of raw seeds, which were stored for 17 years after production was obtained as 92% from the lots 3, 6 and 7 and 93-95% in processed seeds of these 3 lots. In the greenhouse tests of stored seeds, the values of germination rates in all seed lots were obtained between 82% and 94%. Field emergence rates of seeds showed a parallelism with laboratory and greenhouse germination tests, germination rates varying between 88% and 90%.

Bu makale “Tlos Antik Kenti Stadyum Alanı Seramikleri” başlıklı doktora tezimin bir bölümünden geliştirilerek yazılmıştır. Bu makalede depolama kavramı ve uygulama işlemi ana hatlarıyla ele alınmış ve bu bağlamda depolama kapları iki ana yönüyle irdelenmiştir. Öncelikle pithos kaplarının morfolojik, dekoratif ve teknik özellikleri incelenmiştir. Bu kapsamda zamansal ayrım yapılmadan arkeolojik ve etnoarkeolojik veriler yardımıyla genel hatlarıyla üretim teknikleri ele alınmıştır. Diğer yönü ise ele geçtikleri arkeolojik bağlam çerçevesinde antik dönem ekonomisindeki rolleri ve işlevsel nitelikleri değerlendirilmiştir. Sonuç olarak, en önemli arkeolojik materyallerden olan seramik çalışmalarında ikinci planda kalan depolama kapları, arkeometrik yöntemlerle incelendiğinde üretim ve dağıtım ağları hakkında sağlam sonuçlar sunacakları gibi basit yerel topluluklardan kompleks merkezi topluluklara kadar ekonomik-politik yapıları ve gelişimlerinin anlaşılmasında odak noktası olabileceği vurgulanmıştır. This study aims to underline the concept of storage and its application process by examining the context storage vessels in two fold. First of all, pithoi have been examined by their typological, decorative and technical layouts. Within this context, production techniques were discussed with the helping of archaeological and ethno-archeological data in general terms, by discarding periodical distinction. On the other hand, the archaeological context in which they were discovered, were evaluated under the discussion of ancient economy by means of their roles and functional qualities. Consequently, storage vessels, which take back seat in the pottery studies in archaeology, offer strong bindings about production and distribution network, provide understanding on local communities as well as complex ones by throwing light on economical-political ties with the helping archaeometrical applications.

Tomato (Solanum lycopersicum L.) seeds and skins,which are the wastes of the tomato processing industry, are often regarded asanimal feed in everyday life. In this study, tomato seed oil was obtained bySoxhlet extractor. The oil yield of tomato seeds was approximately 20.8%. The oilsin the transparent, amber and opaque glass bottles were exposed to sunlightfrom June to September. The sample intake was made every 20 days and thisprocedure was repeated 4 times. Each sample was analyzed for fatty acidcomposition in gas chromatography. The minimum and maximum rates of the majorfatty acids in all of the oil samples were 54.12-55.72%, 21.68-22.35%,11.92-12.55%, 6.18-6.63% and 2.39-2.62% for linoleic (C18:2n6c), oleic(C18:1n9c), palmitic (C16:0), stearic (C18:0) and α-linolenic acids(C18:3n3), respectively. The results showed that there was no highly variationbetween the fatty acid rates in all samples., Domates işleme endüstrisinin atıkları olan domates (Solanumlycopersicum L.) çekirdeği ve kabukları, günlük hayatta genellikle hayvanyemi olarak değerlendirilmektedir. Bu araştırmada, domates çekirdeği yağıSoxhlet ekstraktörü ile elde edilmiştir. Domates çekirdeğinin yağ verimiyaklaşık %20.8 olarak bulunmuştur. Şeffaf, kehribar ve opak cam şişelerdekiyağlar Haziran'dan Eylül'e kadar güneş ışığına maruz bırakılmıştır. 20 gündebir örnek alınmış ve bu işlem 4 kez tekrarlanmıştır. Her numune, gazkromatografisinde yağ asidi kompozisyonu için analiz edilmiştir. Analiz edilentüm yağ numunelerinin ana yağ asitlerinin minimum ve maksimum oranları,linoleik (C18: 2n6c) için %54.12-55.72, oleik (C18: 1n9c) için %21.68-22.35,palmitik (C16: 0) için %11.92-12.55, stearik (C18: 0) için %6.18-6.63 veα-linolenik asitler (C18: 3n3) için %2.39-2.62 olarak belirlenmiştir. Sonuçlar,tüm numunelerde yağ asidi oranları arasında önemli bir değişimin olmadığını göstermiştir.

Protective effect of cyclodextrin (CD) on some quality characteristics of clear pomegranate juice (CPJ) was investigated. CPJ with no CD addition (Control) and CPJ samples, subjected to different type (β-CD and Hydroxy propyl (HP-β-CD) and concentration (0.5, 1% and 2%) combinations of CD, were stored at 25 °C for 3 months. The changes in color characteristics (polymeric color and total color difference − ΔE), total phenolic content (TPC) and antioxidant activity (AA) of all PJ samples monitored at 1 month intervals. Although overall color change of the PJ samples was hardly perceived visually, none of the treatments were successful to protect the initial color of clear PJ technically (P > 0.05). Çalışma, fındık mamulleri için depo yeri seçimini etkileyen faktörlerin belirlenmesi ve işletme yöneticilerinin Lisanslı Depoculuk Sistemi ile ilgili algılamalarının araştırılmasını amaçlamaktadır. Bu amaçla yapılan literatür taramasında, Lisanslı Depoculuk Sistemi'ni konu alan ve fındık mamulü için lisanslı depo yeri seçiminde etkili olan faktörleri araştıran bir çalışmaya rastlanılmamıştır. Dolayısıyla araştırma modelinde yer alan depo yeri seçim faktörleri, bir işletmenin kuruluş yeri seçimini etkileyen faktörleri konu alan ve araştırmayla kısmen ilgili olan çalışmalara yer verilerek oluşturulmuştur. Lisanslı Depoculuk Sistemi ile ilgili algılamalara yönelik ifadeler, yetkili kişilerle yüz yüze görüşmeler yapılarak tespit edilerek literatür kısmında belirlenen yer seçim değişkenleriyle birleştirilip çalışmanın anket soruları oluşturulmuş ve Karadeniz Bölgesi'nde fındık mamulü ihracatı yapan 44 işletme üzerinde uygulanmıştır. Yapılan faktör analizi sonucunda fındık mamulleri için depo yeri seçimini etkileyen değişkenler; finansal, pazar/tedarik, devlet/çevresel ve doğal faktörler olarak belirlenmiş ve ifade edilen bu faktörler içerisinde depo yeri seçimini etkileyen en önemli faktörün finansal faktör olduğu tespit edilmiştir. Lisanslı Depoculuk Sistemi algılamalarını etkileyen değişkenler ise; üretim/pazarlama, sistem işleyişi ve maliyet faktörleri olarak saptanmıştır. Ayrıca, Lisanslı Depoculuk Sistemi algılamalarını etkileyen faktörlerden maliyet faktörlerinin depo yeri seçimini etkileyen finansal faktörler üzerinde etkili olduğu belirlenmiştir. This study aims to determine the factors affecting warehouse site selection for nut products and to research the perceptions of companies on Licensed Warehouse System. In the literature review carried out for this purpose, no study was found researching the factors focused on Licensed Warehouse System and affecting licensed warehouse site selection for nut products. Therefore, the factors of warehouse site selection given in the research model have been created by including the studies on the factors affecting foundation site selection of an enterprise which are partially related with the research. The expressions regarding the perceptions on Licensed Warehouse System were determined by having detailed interviews with authorized persons, they were combined with the site selection variables, and the survey questions created in this way and they were applied on 44 enterprises which export nut products in the Black Sea Region. As a result of the factor analysis conducted, the variables affecting warehouse site selection for nut products were found to be financial, market/supply, governmental/environmental and natural factors and it was determined that the financial factor is the most significant factor among these factors affecting warehouse site selection. The variables affecting Licensed Warehouse System perceptions were found to be production/marketing, system operation and cost factors. It was found that the cost factor affecting Licensed Warehouse System perceptions also affects financial factor which has a significant impact on warehouse site selection.

Üretiminde başlıca şeker, yağ ve un kullanılmakta ve geleneksel yöntemle üretilmektedir. Saray helvası şeker içeriği yüksek ve su aktivitesi düşük bir üründür. Su aktivitesi düşük şekerlemelerin depolama kalitesine etki eden en önemli faktörler bağıl nem ve sıcaklıktır. Saray helvası nem almaya eğilimli bir üründür. Bu tip ürünlerde en çok rastlanan kalite sorunu, nem almaya bağlı olarak üründe yapı değişimidir. Bu çalışmada, saray helvasının kalitesine depolama sıcaklığı ve bağıl nemin etkisi incelenmiştir. Saray helvası numuneleri 25 ve 35°C'de %22-90 arasında farklı bağıl neme sahip ortamlarda denge nemine ulaşılıncaya kadar depolanmış ve depolama sonrasında üründeki kalite değişimleri belirlenmiştir. Üründe su aktivitesi, hacim değişimi, tekstür, oksidasyonun göstergesi olarak TBA değeri ve renk analizleri yapılmıştır. Üründe sıcaklık ve bağıl neme bağlı olarak hal değişimlerinin belirlenmesi için X-ışını kırınımı cihazı ile kristal varlığı araştırılmıştır. Ayrıca saray helvasının bu iki sıcaklıktaki adsorpsiyon izotermleri çizilerek ürüne uygun bir sorpsiyon modeli belirlenmiştir. Saray helvası 25°C'de bağıl nemin %21'den yüksek olduğu koşullarda depolandığında sertlik değeri artış göstermiş, %44 bağıl nemde en yüksek sertliğe ulaşmış ve bu bağıl nemden daha yüksek bağıl nem koşullarında sertlik değeri azalmıştır. Sıcaklık 35°C olduğunda sertlikte benzer bir eğilim gözlenmiş ve en yüksek sertlik %32 bağıl nem değerinde saptanmıştır. Saray helvasının hacminin her iki sıcaklıkta da, %75 bağıl nem değerinden yüksek bağıl nemlerde azaldığı, ürünün yapısını koruyamadığı ve eridiği gözlenmiştir. Bağıl nem arttığında saray helvasının renginde koyulaşma olduğu gözlenmiştir. Ölçülen L* değerinin iki sıcaklık için de %64 bağıl nem değerinden yüksek bağıl nemlerde azaldığı saptanmıştır. a* değerinin sürekli bir artış gösterdiği ve %64 bağıl nem değerinden sonra bu artışın daha fazla olduğu belirlenmiştir. b* değerinde %64 bağıl nem değerine kadar artış sonra da azalma saptanmıştır. Her iki sıcaklıkta da %44-54 bağıl nemlerde oksidasyon minimum düzeyde gerçekleşmiş, bu nem değerlerinden daha düşük ve yüksek nem değerlerinde oksidasyonda artış görülmüştür. En fazla oksidasyon %75'ten daha yüksek bağıl nemlerde gözleniştir. Saray helvasının adsorpsiyon izotermi, şeker içeriği yüksek ürünlerde görülen J tipi, Tip 3 izotermine benzer çıkmıştır. X-ışını kırınımı cihazı ile yapılan ölçümlerde, saray helvasının üretimden sonra camsı halde olduğu bulunmuştur. Bu nedenle üretildikten sonra oluşabilecek kalite kayıplarını önlemek için uygun bir ambalaj kullanılmalı ve ortam sıcaklık ve bağıl nemi kontrol edilmelidir., Palace halva is a traditional confectionery product of Turkey. Sugar, wheat flour and milk fat are the main components of this halva. It has a special fibrous, soft and brittle structure, which melts in the mouth. The product has low water activity hence tendency to adsorb water. Physical deterioration is observed in the product during storage. Storage relative humidity and temperature are the major factors affecting quality and shelf life of the product. Changes in quality of palace halva were investigated in this research at different storage relative humidities and temperatures. Halva samples were stored at different relative humidity values in the range of 22-90% at 25 and 35°C until equilibrium was reached. Changes in quality of palace halva were followed by measurements of volume change, hardness, lipid oxidation and color. Physical state of the product was determined by X-ray diffractometry. Adsorption isotherms were determined for 25 and 35°C and modelled and compared by using isotherm models published in the literature. Adsorption isotherms were established by applying isopiestic method. Halva samples were stored in eight different jars with different relative humidity. Different relative humidities were obtained by preparing supersaturated solutions of salts including CH3COOK, MgCl2, K2CO3, Mg(NO3)2, NaBr, NaCl, KCl and BaCl2 in the jars to have relative humidities in the range of 22-90% in the headspace. Halva samples were kept on a stand in the headspace of the jars. Jars were stored in incubators at 25 and 35°C. Gravimetric method was used to determine the time when the samples reached equilibrium. Eight different isotherm models were tested to choose the best fitting model to water adsorption data. These models were Oswin, Henderson, Halsey, Iglesias-Chirife, Caurie, Chung-Pfost, Kuhn and Bradley models. Regression coefficients (R²), mean relative error (MRE) and standart of the mean (SEM) were calculated by using a computer program and best model was chosen by comparing the results. Hardness of the samples were measured by applying penetration method with a 2 mm-diameter probe. The color was mesured by using a colorimeter. L*, a* and b* values were measured and total color change (ΔE*) relative to color values of the original sample was calculated. Volume of the samples was calculated from their heights and base areas. Lipid oxidation was measured by using thiobarbituric acid (TBA) method. In this method, oxidation products were seperated by Kjeldahl distillation and reacted with TBA reagent. Amount of TBA reactive substances (TBARS) in the samples was determined spectrophotometrically. X-ray diffractometry was used to determine physical state of palace halva samples. The instrument was run with a 1 minute dwell time at each 1° from 5° to 27° 2-theta angles. Computer software was used to generate the X-ray diffraction plot of intensity vs. 2-theta angle. Samples stored at three relative humidity levels at two temperatures were chosen for X-ray diffraction analysis to explain phsyical changes observed in the product. Adsorption isotherms of palace halva were found to be similar to those of other foods with high amounts of sugar. Halsey, Henderson and Iglesias-Chirifie models were found to be suitable for adsorption isotherm of palace halva. Hardness of palace halva increased when stored at 25°C and higher than 21%relative humidity. Highest hardness value was obtained at 44%relative humidity at 25°C. Halva samples softened at relative humidities higher than this value. A similar trend was observed in halva samples stored at 35°C. Highest hardness value was measured at 32% relative humidity at this temperature. Changes in the hardness value of halva was found to be more at 35°C compared to those occurred at 25°C. There was no difference in the volume of palace halva at both temperatures upto 75% relative humidity. At relative humidities higher than this value, samples' height and volume decreased. Halva samples could not maintain their original shape and they melted at relative humidity values higher than 75%. They lost their brittle and fibrous structure. Color of the palace halva tended to darken as relative humidity was increased. The L* indicating the lightness of the color of the samples were found to decrease at relative humidity values higher than 64% at both temperatures. The a* value, indicating green-red tones of the color, was found to increase as relative humidity was increased and the increase was higher at relative humidity values higher than 64%. The b* value, showing the blue-yellow tones, was found to increase upto 64% relative humidity but it decreased after this value. ΔE* value slightly changed upto 64% relative humidity, but it increased dramatically at higher relative humidities at both temperatures. Amount of TBARS in palace halva samples was found to be at a minimum at 44-54% relative humidity values at both temperatures. At higher and lower relative humidities, TBARS tended to increase. The increase was more at relative humidities higher than 54%. The trend observed in the amount of TBARS with increasing relative humidity was in accordance with the lipid oxidation-water activity relationship at both temperatures. Changes in the physical state of the palace halva were found to be related with the changes in the hardness of the product. Physical state of halva was found to be changed from glassy to crystalline with increasing relative humidity. Fresh palace halva was found to be in glassy state by X-ray diffraction analysis. Crystalline state was observed in the halva samples stored at 54% relative humidity at 25°C and 32% relative humidity at 35°C. Temperature increase was found to accelerate this change and allowed the state transition to take place at a lower relative humidity. These findings also showed that physical state of the samples changed within the time required for reaching equilibrium at certain relative humidities during the determination of adsorption isotherm. Stability of palace halva was determined in relation to storage temperature and relative humidity. It was found that storage temperature and relative humidity had important influence on the quality of palace halva. Changes in storage temperature and relative humidity may cause changes primarily in the structure of the product. In addition, chemical reactions may cause changes in color and taste of the product. Başta meyve ve sebzeler olmak üzere birçok gıda yüksek miktarda flavonoid içerir. Flavonoid içeren bu gıdaların tüketilmesinin kanser, kalp- damar hastalıkları ve yaşlanmaya bağlı görülen hastalıklara karşı koruyucu özellik gösterdiği düşünülmektedir. Flavonoidler gıdalarda serbest formda ya da glikozit formda bulunabilirler ve çeşitli kimyasal reaksiyonlar farklı yapısal formlarının, dolayısıyla birçok farklı flavonoidin oluşmasına sebep olur. Besinsel önemlerine göre flavonoidler; flavonlar, flavonoller, flavanonlar, isoflavonlar, flavanoller (kateşin ve taninler), ve antosiyaninler olmak üzere altı alt sınıftan oluşmaktadır. Soğan dünya genelinde yaygın olarak tüketilen bir sebze iken aynı zamanda besinsel flavonoidlerin en zengin ve en fazla tüketilen kaynağıdır. Soğandaki başlıca flavonoidler flavonollerdir. Quercetin mono- ve diglukozitler soğanda bulunan başlıca flavonoller iken kaempferol, isorhamnetin and myricetin de soğanda çeşitli miktarlarda bulunabilmektedir. Aynı zamanda quercetin 3,4’-diglukozit ve quercetin 4’-monoglukozit soğandaki başlıca flavonollerdir. Meyve sebzeler hasat edildikten sonra mutfaktaki hazırlama koşulları sırasında ya da endüstrideki üretim aşamalarında çeşitli işlemlere maruz kalmaktadır. Bu işlem koşulları besinsel flavonoidlerin miktarında bazen artışa neden olsa genellikle flavonoid miktarında önemli ölçüde azalma gözlenir. Yapılan çalışmanın amacı, endüstriyel işlem gören, farklı atmosferik koşullarda paketlenen ve sıcaklık, süre ve ışık etkisi bakımından farklı depolama koşullarında depolanan soğanlardaki flavonoid maddelerin değişimlerinin incelenmesidir. Bu amaçla sebze halinden alınan soğanlar, dilimleme ve dilimlenmiş soğanları yağda kızartma olmak üzere iki farklı endüstriyel işleme tabi tutulmuştur. Dilimlenmiş soğanlara atmosferik, nitrojen ve vakum paketleme uygulanmış, paketlenen soğanlar oda sıcaklığında aydınlık ve karanlık ortam koşullarında, +5 °C ve -18 °C sıcaklıkta ise sadece karanlık ortam koşullarında 1 gün, 1 hafta, 2 hafta ve 3 haftada boyunca depolanmıştır. Dilimlenmiş soğanlara yağda kızartma işlemi endüstriyel uygulamadaki proses koşulları göz önüne alınarak 141 °C’de 30 saniye boyunca gerçekleştirilmiştir ve soğanları kızartmak için kolza yağı kullanılmıştır. Yağda kızartılmış soğanlar, oda sıcaklığında aydınlık ve karanlık ortam koşullarında hava içeren paketlerde sadece 1 hafta; azot içeren ve vakumlanmış paketlerde ise 1 hafta ve 3 hafta boyunca depolanmıştır. Kızartılmış soğanlar, +5 °C ve -18 °C sıcaklıkta da sadece karanlık ortam koşullarında hava içeren, azot içeren ve vakumlanmış paketlerde 1 hafta, 2 hafta ve 3 hafta boyunca depolanmıştır. Soğanda aglikon ve glikozit formda bulunan flavonoidlerin tayini ve miktarlarının belirlenmesi için foto diyot dizisi dedektörlü (PDA) ultra performanslı sıvı kromatografisi (UPLC) ile analiz yapılmıştır. Soğanda bulunan flavonoidler UPLC analizi sonucu elde edilen piklerin alıkonma zamanlarının ve UV spectra görüntülerinin mevcut ticari standartlarınkilerle karşılaştırılması sonucu belirlenmiştir. Bu flavonoidlerin miktarı ise pik alanlarının, miktarı bilinen quercetin standardının pik alanı ile karşılaştırılması sonucu quercetin eşdeğeri cinsinden kuru madde bazında hesaplanmıştır. Yapılan analizler sonucunda dilimlenmiş soğanlar için hazırlanan kontrollerdeki toplam flavonol içeriği 1569±176 µg q.e./g k.m., Q-3,4’-diglu. değeri 926±105 µg q.e.d./g k.m. ve Q-4’-glu. değeri 564±64 µg q.e.d./g k.m. olarak bulunmuştur. Kızartılmış soğanlar için hazırlanan kontrol örneklerinin toplam flavonol içeriği 1521±154 µg q.e.d./g k.m, Q-3,4’-diglu. içeriği 866±93 µg q.e.d./g k.m. ve Q-4’-glu. içeriği 576±60 µg q.e.d./g k.m. olarak bulunmuştur. Dilimlenmiş ve dilimlenip kızartılmış soğanların referans örneklerinde, quercetin aglikon çok az miktarda bulunurken, bu örneklerin hiçbirinde kaempferol ve isorhamnetin aglikonları bulunmamıştır. Genellikle dilimlenmiş soğanların toplam flavonoid içeriği oda sıcaklığında artan depolama süresi ile birlikte azalmıştır. Depolama süresindeki artışla birlikte oda sıcaklığında depolanan dilimlenmiş soğanlardaki Q-3,4’-diglu. ve Q-4’-glu. miktarında önemli bir azalma görülürken quercetin aglikon miktarı zamanla artmıştır. +5 °C and – 18 °C’de azot ve vakum paketleme koşullarında depolanan soğan örneklerinde flavonoid miktarlarında önemli değişimler ve quercetin aglikon miktarında önemli bir artış gözlenmemiştir. Kızartılmış soğanlardaki başlıca quercetin glukozit ve toplam flavonol miktarı, kızartılmamış, sadece dilimlenmiş soğanlardakinden az miktarda düşük olarak bulunmuştır. Oda sıcaklığında kızartılmış soğanlar için de zamanla Q-3,4’-diglu. ve Q-4’-glu. içeriğinde azalma ve quercetin aglikon miktarında artma gözlenmiştir. Genellikle her sıcaklıkta, kızartılmış soğanların toplam flavonol miktarlarında 7. Gün sonuçları kontrolden yüksek olarak bulunmuştur. Genellikle vakum paketleme uygulanan kızartılmış soğanlardaki toplam flavonol içeriği diğer paketleme koşullarından yüksek olarak bulunmuştur. Hem dilimlenmiş hem de kızartılmış soğanlarda, tüm paketleme koşullarında genelde ışık ortamında depolanan örnekler karanlık ortamdakilerden daha az flavonol içeriğine sahip olarak bulunmuş ve bunların quercetin aglikon miktarında artış gözlenmiştir. Bununla birlikte, ışık ortamında quercetin aglikon miktarındaki artış karanlıktakinden daha fazladır. Flavonoid içeriğinin korunması açısından taze soğanların oda sıcaklığında ve normal hava ile paketlenerek, ışıklı ya da karanlık ortamda kısa süreliğine depolanması tavsiye edilmektedir. Eğer tüketiciler açısından depolama süresinin ayarlanması mümkünse, daha yüksek toplam flavonol içeriğini elde etmek için, dilimlenmiş soğanlar kullanılmadan önce +5 °C’de ve hava koşulunda 21 gün boyunca depolanmalıdır. – 18 °C’de azot ya da vakum paketlerde depolanan dilimlenmiş soğanların hepsi depolama süresi gözetmeksizin toplam flavonol içeriği açısından ortalamanın üstünde değerlere sahiptir. Kızartılmış soğanlar açısından tüm depolama sıcaklıklarında vakum paketleme uygulamasının flavonoid içeriğini korumak açısından en uygun koşul olduğu bulunmuştur. Daha iyi toplam flavonol içeriği sağlamak açısından, kızartılmış soğanlar vakum paketlenerek +5°C’ de 7 gün depolandıktan sonra değerlendirilmelidir. Bununla birlikte, daha uzun depolama süreleri gerekliyse, kızartılmış soğanların -18°C’de vakum ya da hava koşullarında paketlenmesi tercih edilmelidir., Flavonoids are bioactive compounds which are known for their potential healthful effects. Most fruits and vegetables contain a lot of nutrients including high contents of flavonoids. Consumption of these foods including flavonoids presumably provides protective effects against cancer, coronary heart disease and age-related degenerative diseases. Flavonoids are found in nutrients in free state or glycoside forms, and different chemical interactions lead to formation of different structural forms hence formation of many different flavonoids. Flavones, flavonols, flavanones, isoflavones, flavanols (including catechins and tannins), and anthocyanins are the main six subclasses of flavonoids according to their dietary significance. While onion is a vegetable widely found and eaten all over the world, it is the richest and most commonly consumed source of dietary flavonoids. The main flavonoids in the onion are flavonols. Quercetin mono- and diglucosides are major flavonols in the onions, at the same time kaempferol, isorhamnetin and myricetin might also be available in different amounts. In addition, quercetin 3,4’-diglucoside and quercetin 4’- monoglucoside are the most abundant flavonoids in the onion. Fruits and vegetables are subjected to various process conditions during preparation at home usage and industrial production, after their harvest. These process conditions sometimes lead to increase in flavonoid content while generally they cause important decreases in flavonoid content. The aim of this study was to investigate flavonoid changes in onions that were industrially processed and then packed in different atmospheric conditions and finally stored at different storage conditions in terms of time, temperature, and light. For this purpose, onions purchased from a vegetable market hall were subjected to two different industrial processing conditions including slicing and deep frying of sliced onions. Sliced raw onions were packed under atmospheric, nitrogen and vacuum conditions, then these packed onions were stored at room temperature with light and dark conditions, at +5 °C and -18 °C with only dark conditions for 1 day, 1 week, 2 weeks and 3 weeks periods. Deep frying process for sliced onions was carried out by simulating industrial process conditions and 30 second deep frying at 141 °C was applied in rapeseed oil. Fried onions were stored at room temperature with light and dark conditions for 1 week in atmospheric, nitrogen and vacuum packages and for 3 weeks only in nitrogen and vacuum packages, while they were stored at +5 °C and -18 °C with only dark conditions for 1 week, 2 weeks and 3 weeks periods in atmospheric, nitrogen and vacuum packages. In order to identify and quantify flavonoids found in aglycon and glycoside forms in onions the flavonoids were extracted from freeze-dried samples by accelerated solvent extraction and subsequently determined by ultra performance liquid chromatography (UPLC) with photodiode array detector (PDA). Identification was carried out by comparison of the retention times and UV spectras of the peaks obtained from UPLC measurement of onion samples and commercial standards. At the same time quantificaion was completed by comparing peak areas of known amounts of quercetin standard with the peak areas of the onion flavonoids, and expressed as quercetin equivalents in dry weight of the sample Total flavonol content, Q-3,4’-diglu. and Q-4’-glu. contents found in the raw reference onion samples as 1569±176 µg q.e./g d.w., 926±105 µg q.e./g d.w. and 564±64 µg q.e./g d.w., respectively. In addition, fried onion samples had 866±93 µg q.e./g d.w. Q-3,4’-diglu., 576±60 µg q.e./g d.w. Q-4’-glu., and 1521±154 µg q.e./g d.w. total flavonol content. Q content was found in very small quantities while no K and I were detected both in fresh-cut and fried samples. In general total flavonoid content of fresh-cut onions decreased with increasing storage period at room temperature. Important decreases in main quercetin glucosides Q-3,4’-diglu. and Q-4’-glu. were detected with an increase in quercetin aglycone content at room temperature. Generally, there were no distinct changes in total flavonoid content of fresh-cut samples and no important increase in the content of quercetin aglycone at +5 °C and – 18 °C in nitrogen atmosphere and vacuum packaging conditions. Main glucosides and total flavonol content in fried onion samples weren’t markedly different than fresh-cut onions. For fried onions, decreases in Q-3,4’-diglu. and Q-4’-glu. contents with and increase in Q levels was observed at room temperature. From Day 0 to Day 7 increses in total flavonol contents were generally observed at all temperatures. Total flavonol content of vacuum packaged fried samples were usually higher than that of other packaging conditions. Light condition had lower flavonol content than dark condition with a quercetin aglycone production both for raw sliced and fried onions at each packaging atmosphere usually. Quercetin aglycone production was much more in light condition than dark condition during storage period both for raw sliced and fried onions. For preservation of the flavonoid content it is recommended to keep fresh-cut onions at normal air conditions and room temperature for short time under light or dark. If it is possible to adjust storage time for consumers before using fresh-cut onions, it is suggested to store samples at +5C and air atmospheres for 21 days for higher total flavonol contents. In addition, samples stored at -18°C and nitrogen atmosphere or vacuum packaging conditions had total flavonol contents above the average regardless storage time. Regarding fried onions, at all storing temperatures vacuum application was found to be the favorite atmospheric condition from the point of preserving flavonoid content. Fried onions should be utilized after 7 day storage +5°C by vacuum packaging application to provide better total flavonol content. However, for long term storage periods vacuum or air atmosphere packages and -18°C should be preffered for storage of fried onions., Yüksek Lisans, M.Sc.

Aksiyomatik tasarım, müşteri ihtiyaçlarının fonksiyonel gereklilikler şeklinde ifade edilmesini, fonskiyonel gerekliliklerin gerçekleşmesi için gereken tasarım parametrelerini ve bunlar arasındaki matematiksel ifadeyi göstermektedir. Askeri lojistik insan ve ekipman lojistiğini içermesine rağmen bu çalışmada sadece ekipman lojistiği tasarımı yapılmıştır. Ayrıca savaş meydanındaki lojistik yerine, ulusal lojistik olarak da tanımlanan, savaş alanına kadar olan lojistik üzerinde durulmuştur. Tasarım dört alt baslıkta yapılmıştır: temin etme, depolama, dağıtım ve bakım-onarım. Satın almada önemli olan müşterinin gereksinim duyduğu ürünü doğru zamanda, doğru miktarda uygun fiyata ve istenilen özelliklerde satın almaktır. Maliyet kalemi değişken ürün maliyeti, taşıma maliyeti ve sabit maliyetten oluşmaktadır. Maliyeti düşürmek için, konsolidasyon, dış kaynak kullanımı ya da talepleri azaltma yollarına başvurulabilir. Fiyat analizleri yapılarak ürün değişken fiyatı optimize edilmeye çalışılmalıdır. Ayrıca stoktaki ürünlerin özellikleri tam bilinmelidir. Ürün özellikleri derken miktar ve kalite kastedilmektedir. Yeni alımlardan önce depodaki ürünler kullanılmalı, üründe modifikasyonlar yapılarak istenilen kalite standartlarına getirmeye çalışılmalıdır. İstenilen kalite standartları ise olası düşmanın ekipmanlarının kalitesine ve miktarına bağlıdır. Bu bilgilerin elde edilmesi için casusluk yapılmalı ve elde edilen bilgilerin doğru kullanımı için de çok hassas biçimde tahmin etme metodlari geliştirilmelidir. Askeri lojistikte en önemli sorunlardan bir tanesi depolama standartlarının sağlanamamasıdır. Depolamada maliyetleri düsürmek ve envanter kullanımını arttırmak amaçlanmaktadır. Maliyeti azaltmak için dış kaynak kullanımı ya da konsolidasyon yöntemleriyle sabit maliyetler ve yönetim maliyetleri düşürülmeli; envanter seviyesi ve envanter hareketleri azaltılmalıdır. Envanter seviyesi sadece depoda bulunan envanteri değil, taşıma halindeki envanteri, tadilattaki envanteri ve savaş alanındaki envanteri de içermektedir. Askeri sistemlerde savaş olasılıklarına karşı bazı ekipmanlar tehlike bölgelerine yakın yerlere konumlandırılırlar. Önemli olan ne miktarda hangi üründen nerede depolanacağı, bu ürünlerin ne sıklıkta bakıma tabi tutulacağı, saklama koşullarının neler olacağıdır. üçüncü basamağı ulaştırma tasarımı oluşturmaktadır. Askeri dağıtım; savaş alanı dağıtım ve savaş alanına kadar dağıtım olmak üzere iki kısımdan oluşmaktadır. Dağıtımda önemli olan zamanında ve düşük maliyette olmasıdır. Ölçek ekonomisi ve mesafe ekonomisi dikkate alınarak maliyet azaltılabilir. Rota optimizasyonu ve taşıma yönteminde esneklikler arttırılarak zamanında ulaştırma sağlanabilir. En son tasarım basamağı bakım onarım faaliyetleridir. Askerler tarafından sahada bakımı yapılamayan ürünler belirli bakım merkezlerine gönderilmektedirler. Bakımda önemli olan maliyetlerin düşürülmesi ve riskin azaltılmasıdır. Riskin azaltılması için ürünler kısa surede bakımdan geçirilmeli ve tamir edilmeli, tamir prosesleri oluşturulmalı ve kontroller sıkı yapılmalıdır. Maliyetleri azaltmak için önleyici ve tahmin edici bakim yöntemleri ile ekipmanlardaki bozulmalar azaltılabilir. Dış kaynak kullanımı ile yönetim maliyetleri ve personel maliyetleri sıfırlanabilir. Çalışmada örnek askeri sistem olarak Amerika Birleşik devletleri savunma bakanlığının yayımlamış olduğu kaynaklardan faydalanılmıştır., As long as there is a conflict of any kind, and weapons are being used by the parties, the military is the only organization that can secure interests. In war, the victory does not always go to those having the largest army or the most sophisticated equipment. It goes to who has more efficient strategic plan. Everything depends on strategic plan: when, where and with what forces a battle is to be delivered; in other words on logistics how and where to locate. In this study military logistics network is designed via axiomatic design principles. In axiomatic design, functional requirements, technical side of customer expectations, design parameters to achieve functional requirements and mathematical relation between two are studied. During logistics network design, it is divided to 4 steps: acquisition, storage, distribution and maintenance. In acquisition it is important to buy products in required amount and desired features to minimum cost at the right time. Cost includes variable product costs, shipping cost and fixed costs. In order to decrease cost, consolidation, outsourcing or any step that will decrease demand can be used. Price analysis should be made and inventory visibility should be maintained. In acquisition, besides cost, it is important to buy products in desired features- desired quantity and quality. Demand quantity depends on safety stock in peace time and probability of war. Quality not only depends on what is available in the market but also depends on enemy’s’ quality standards. Forecasting, spying and updating product information are necessities. In order to buy products at the right time order-management procedures should be developed and lead time should be decreased. Second design step is storage. For strategic mobility framework, some equipment should be prepositioned. Instead of long movement of needed equipment, by prepositioning it allows combat-ready forces. Managing inventory is one of the key features of logistics. Inventory management includes minimization of costs and maximization of usage of inventory. Profit maximization and risk minimization strategies should be developed to better management. In order to minimize costs, fixed costs including fixed assets, administration and selling costs should be decreased; inventory levels and movement of inventory in depots should be minimized by eliminating non-value added functions as much as possible, inventory accuracy and developing inventory allocation strategy. Inventory level minimization means minimization in depot inventory, minimization of non-stable inventory (under maintenance and in-transit), clarification of pre-positioned equipment quantity and minimization of in-theater inventory. Another concern in storage design is to keep assets in safe and good conditions. Third design step is distribution design. The military distribution system has two distinct segments: strategic-national and theater. The strategic-national segment consists of moving supplies from points outside a theater of military operations into the theater. The theater segment consists of distribution that occurs within a theater of military operations. In distribution it is aimed to increase efficiency and decrease risk of failure. Performance indicators for transportation are throughput maximization, time definite delivery, cost minimization and flexibility. Fundamental economic principles impacting transportation economy are economy of scale and economy of distance. Transportation costs are driven by distance, volume, density, stowability -how product case dimensions fit into transportation equipment-, handling, and liability. By flexibility, it is aimed to define a transportation mode having high maneuverability, large freight volume, can be used in all weather and climatic condition. In order to increase efficiency transportation methods should be optimized. Transportation optimization methods are consolidation, outsourcing, route optimization and selecting right transportation mode based on product features, quantity and critique. Another important point in distribution is to decide shipping priorities: which one, in which order, what quantity, in which conditions, what frequency. To solve the problem shipping procedures should be developed based on defined criteria. The last design step is maintenance design. Maintenance is an important aspect of military logistics and includes those activities needed to keep weapons, vehicles, and other materiel in an operable condition; to restore them to a serviceable condition when necessary; or to improve their usefulness through modifications. The Army calls maintenance as reset as the repair, recapitalization and replacement of equipment to equip units preparing for deployment and improve next-to-deploy unit’s equipment on hand levels. In order to have a customer satisfied maintenance function, total cost, risk and required time should be decreased. Cost for repairing are shipping, material and personnel costs. Outsourcing, consolidation and decrease breakdown-frequency can reduce costs. Speed and the accuracy of repair are other issues. Normal peynire göre daha düşük oranda protein içeren üründe, azaltılan protein küf kökenli -amilaz enzimi ile kısmi olarak parçalanmış vaksımsı mısır nişastası ve -karagenan ile ikame edilmiştir. Çalışmanın birinci aşamasında, iki farklı sitrik asit ve eritme tuzu konsantrasyonunun ürünün yapısal özelliklerine etkileri incelenmiştir. Üründe sitrik asit konsantrasyonunun artırılmasının ürünün erimesini engellediği ve sertliğini arttırdığı saptanmıştır. Üründe eritme tuzu konsantrasyonunun artırılmasının ise eriyebilirliği azalttığı ve sertliği arttırdığı saptanmıştır. Çalışmanın ikinci aşamasında, bu bulgulara göre en yüksek sertliğe (Formül1, %0,3 sitrik asit, %0,22-0,10 trisodyum sitrat-disodyum fosfat) ve en yüksek eriyebilirliğe (Formül4, %0,1 sitrik asit, %0,11-0,05 trisodyum sitrat-disodyum fosfat) sahip ürünü sağlayan formüllere göre iki ürün üretilmiş, bu ürünler vakumlu ambalajda paketlenerek buzdolabı koşullarında depolanmış ve ürünlerde meydana gelen yapısal, mikrobiyal ve duyusal değişimler incelenmiştir. Örneklerde eriyebilirlik puanları depolama süresinde değişmemiştir. Örneklerde depolama süresinde serbest yağ tespit edilmemiştir. Formül1 ile üretilen örnekte depolama süresinde sertliğin arttığı, iç yapışkanlığın azaldığı ve esnekliğin değişmediği tespit edilmiştir. Formül4 ile üretilen örnekte depolama süresinde sertlik, iç yapışkanlık ve esneklikteki değişimlerin önemli düzeyde olmadığı tespit edilmiştir. Depolama süresinde mikrobiyal gelişim formül1 ile üretilen örnekte daha düşük düzeyde meydana gelmiştir. Duyusal analizlerde her iki örneğin tat ve yapısının üç ay depolama sonunda değiştiği ancak bu değişimlerin kabul edilebilir bir düzeyde olduğu saptanmıştır., In this study, microbiological, physical and sensory changes during storage of a starch-based cheese-like product were investigated. In the product containing lower amount of protein compared to natural cheese, reduced protein was replaced with κ-carrageenan and partially hydrolyzed waxy maize starch with fungal α-amylase. At the first stage of the study, effects of concentrations of emulsifying salts and citric acid on physical properties of the product were determined. Increasing the amount of citric acid was found to decrease meltability and increase hardness while increasing the amount of emulsifying salts was found to lower meltability and increase hardness of the product. At the second stage, two products were produced according to formulas that provided a product with highest hardness (Formula1, 0,3% citric acid, %0,22-0,10 trisodium citrate-disodium phosphate) and highest meltability (Formula4, 0,1% citric acid, %0,11-0,05 trisodium citrate-disodium phosphate), products were packaged under vacuum, stored under refrigeration conditions and physical, microbial and sensory changes in the products were investigated. Meltability of the products did not change. Free oil was not detected in the samples. Increase in hardness and decrease in cohesiveness and no change in springiness were determined in the product produced with formula1. In the product produced with formula4, changes in hardness, cohesiveness and springiness were not found to be significant. Microbial growth during storage was found to be slower in the sample with formula1. Taste and structure of both samples were found to change; however, these changes were found to be at an acceptable level in the sensory analysis., Yüksek Lisans, M.Sc.

Türkiye, gerek dünya coğrafyası üzerindeki konumu, gerek genç ve dinamik nüfusu ve gerekse lojistik sektörüne verilen önem ve yapılan yeni yatırımlar sayesinde lojistik hizmetlerde Dünya’da önemli bir merkez konumuna gelebilecek bir potansiyele sahiptir. Bu nedenle, lojistik kavramının öneminin son yıllarda ülkemizde artmasıyla, lojistik faaliyetler de ivme kazanmıştır. The reflections of the development in logistics also observed in the Turkish economy and the logistic services started to be mentioned more often. Turkey has the potential to become an important center of the logistic services in the world due to its location, young and dinamic population, the importance given to logistic services and new investments in the sector. The importance of the logistic concept has increased in the recent years as a result of acceleration in the logistic activities. This study is prepeared in order to describe the logistic concept, to highlight the importance of the sector, to inquire the logistic activities in Turkey especially in İstanbul and to compare the feasibility analysis of the logistic facilities which will developed in different locations. Tez (Doktora) -- İstanbul Teknik Üniversitesi, Fen Bilimleri Enstitüsü, 2005, Thesis (PhD) -- İstanbul Technical University, Institute of Science and Technology, 2005, Aktif çamur sistemleri için substrat depolama kavramı son dönemlerde önemli bir proses olarak kabul edilmektedir ve bu kavram aktif çamur modellemesine Aktif Çamur Modeli No.3 (ASM3) ile dahil edilmiştir. Bu çerçevede, ASM3 organik karbon ve azot giderimi için detaylı olarak incelenmiştir. Aktif Çamur Modeli No.3 (ASM3)de yer alan en önemli parametrelerden biri olan depolama dönüşüm oranının belirlenmesi için deneysel bir yöntem ortaya konmuştur. Substrat kompozisyonunun ve özellikle kültür kompozisyonunun anoksik koşullar altında gözlenen respirometrik tepkiler üerindeki etkileri ele alınmıştır. ASM3 parametrelerini hesaplamak için respirometrik kesikli deneyler bu çalışmada son derece uygun olarak kullanılmış ve modele ait önemli kinetik ve stokiyometrik katsayılar asetat için aerobik ve anoksik koşullarda başarılı bir biçimde belirlenmiştir. Gerçek durum uygulamaları ve model parametrelerinin belirlenmesi için gerçekleştirilen kesikli deneyleri daha iyi değerlendirebilmek için, ASM3 depolama ve çoğalma proseslerinin tanımları açışından modifiye edilmiştir. Aktif çamur modellemesinde hidroliz olabilen substratların ayrışma prosesleri de bu çalışma kapsamında araştırılmıştır. Bu çalışma ayrıca, partiküler yerel patates nişatası ve çözünen nişastanın model substratlar olarak kullanılması ile, yavaş ayrışan KOİ bileşeni için simültane çoğalma ve depolama kavramını da içeren uygun modelleme tekniklerini inceleyerek ve bu teknikleri ortaya koymuştur., Substrate storage under dynamic conditions is recently regarded as a significant process for activated sludge system and has been incorporated into activated sludge modeling by with Activated Sludge Model No. 3 (ASM3). In this context, ASM3 was investigated in detail for organic carbon and nitrogen removal. An experimental procedure was developed for the respirometric determination of bacterial storage yield as defined in the Activated Sludge Model No. 3. The effect of substrate composition and specifically culture composition on the observed respirometric responses under anoxic conditions were examined. ASM3 parameters and the main kinetic and stoichiometric model coefficients were successfully and uniquely determined for aerobic and anoxic conditions for acetate. In order to have better predictions for real case applications and batch tests for model parameter determination ASM3 was modified in terms of storage and growth process descriptions. The study also explored the conversion processes of hydrolysable substrates by activated sludge in the context of activated sludge modeling. Pek çok bilimsel ve uygulamaya yönelik çalışmada kabul görmüş olan aktif çamur sistemlerinin çok bileşenli modeli ASM1 (Henze ve diğ., 1987) tespit edilen yetersizlikleri ortadan kaldırılıp geliştirilerek ASM3 (Gujer ve diğ., 2000) modeli ortaya konmuştur. Depolama kavramının modele dahil edilmesinin yanı sıra bozunma prosesinin ASM1’ den farklı olarak içsel solunum mekanizması ile tanımlanması sonucu ASM3 hem bileşenleri hem de prosesleri açısından yeni bir yaklaşım ortaya koymaktadır. Yürütülen çalışmada, ASM 3 modelinde yer alan depolama kavramının beslenme koşullarına bağlı olarak değişiminin incelenmesi amaçlanmıştır. Anoksik koşullarda yapılan deneylerde besleme biçiminin değiştirilmesi sonucunda mikroorganizmaların depolama davranışlarının değişimi incelenerek, aktif biyokütlenin geçmişinin bu değişim karşısındaki etkileri belirlenmiştir. Asetat ile ani beslenmeye aklime edilmiş biyokütle ile gerçekleştirilen deneylerde YSTOD 0.57-0.59 aralığında saptanmış ve ortalama değer 0.58 gKOİ/gKOİ olarak belirlenmiştir. Respirometrik yöntem ile bulunan YSTOD değerleri PHA depolanmasıyla elde edilen sonuçlarla büyük uyum göstermektedir., Recent studies on various configurations of activated sludge systems focus on the growth and storage behavior of microorganisms under dynamic conditions. ASM3 model (Gujer et al., 2000) is introduced for multi-component modeling of activated sludge systems as an alternative to ASM1 (Henze et al., 1987) which has been widely accepted for research and applications, in order to overcome its defects. With the introduction of storage phenomena in addition to the endogenous decay mechanism, ASM3 outlines a new concept in terms of processes and model components. This study aims to investigate the basis for storage concept of ASM3 with respect to different feeding patterns. While the experiments were conducted at anoxic conditions, the effect of sludge history and varying feeding patterns on the response of active biomass in terms of storage were assessed. The YSTOD values obtained for the activated sludge fed with a pulse of acetate under pulse feeding conditions were in the range of 0.57-0.59 and on the average 0.58 gCOD/gCOD.
