Диссертация на соискание ученой степени кандидата технических наук по специальности 05.18.06 "Технология жиров, эфирных масел и парфюмерно-косметических продуктов" (18 – Производство и технологии). – Национальный технический университет "Харьковский политехнический институт" Министерства образования и науки Украины, Харьков, 2021 г. Диссертация посвящена созданию научно обоснованной технологии обрушивания семян сафлора для получения прессового масла пищевого назначения. У диссертационной работе впервые показано, что обрушивание семян сафлора может быть достигнуто путем предварительного охлаждения, которое существенно уменьшает физико-механические свойства семенной оболочки; определены эффективные технологические параметры обрушивания путем экспериментального исследования и аппроксимационного моделирования, а именно температуру предварительного охлаждения, влажность и частоту оборотов ротора семенорушки, которые обеспечивают достаточную для практических целей степень обрушивания; получены новые научные данные касательно технологических свойств семян сафлора отечественных сортов, структурных и качественных показателей сафлорового масла. Разработана усовершенствованная технологическая схема переработки семян сафлора с получением пресового масла. Выполнена экономическая оценка предложенной технологии. На основании выполненных исследований и испытаний образцов сафлорового масла в лаборатории инструментальных исследований Украинского научно-исследовательского института масел и жиров НААН и в отделе хроматографических и радиологических испытаний государственной исследовательской лаборатории пищевой и сельскохозяйственной продукции Государственного предприятия "Харьковский региональный научно-производственный центр стандартизации, метрологии и сертификации" разработан и согласован проект технических условий ТУУ 10.4-3199908465-001:2020 "Масло сафлоровое пищевое". Результаты диссертационной работы внедрены в учебный процесс НТУ "ХПИ". The dissertation is devoted to scientific substantiation and development of safflower seeds dehulling technology from domestic varieties for production of edible vegetable oil. For the first time, new scientific data сoncerning technological properties of domestic varieties safflower seeds and characteristics of fatty acid composition were obtained, and a promising cultivar for further research was selected; mathematical models of dependence safflower seeds objective fraction dehulling degree on precooling temperature, humidity and dehullerꞌs rotary rotations per minute were made, which made it possible to determine effective technological parameters of the main stage of seed`s preparation for oil extraction; system analysis of organoleptic, structural and safety indicators of safflower oil obtained by cold pressing from husked seeds was performed; quantitative characteristics of induction period during safflower unrefined oil oxidation, including those with addition of herbal antioxidants, were determined. Theoretical conception and practical results, achieved during sunflower seed dehulling, concerning pre-freezing positive effect on separation efficiency of seed coat from safflower nucleus, were further developed in dissertation. Effective technological parameters of prior manufacturing operations in safflower seed processing technology were determined experimentally and via using approximative modeling, namely: pre-cooling temperatures minus 45°С, seed moisture 4,2 %, dehullerꞌs rotary rotations – 28,33 s-1, degree of dehulling 88,0-95,0 %. Cold-pressed oil was obtained in laboratory conditions, in which organoleptic, physicochemical, structural and safety parameters were determined. In particular, it has been shown that main fatty acids of safflower oil variety Lagidny are essential linoleic acid (74,4 %), oleic (15,1 %) and palmitic (7,2 %). In total, nine fatty acids were identified. Acylglyceric composition of safflower oil acid under investigation is represented by six groups of acylglycerines, identified by their carbon content: C 48 – 1,7 %, C 50 – 20,2 %, C 52 – 72,7 %, C 54 – 4,1 %, C 56 – 0,9 %, C 58 – 0,4 %. Sterol fraction of unsaponified substances in safflower oil was analyzed. It have been shown that safflower oil phytosterols are represented by following isomers: 39,0 % β-sitosterol, 12,9 % stigmasterol, 6,4 % campesterol and 3,5 % brasicasterol. Safflower oil vitamins – vitamin A (2,3 ppm (g) and vitamin E (32,2 mg %). New scientific data concerning fatty acid, acylglycerine, sterol and vitamin composition of cold-pressed safflower oil, as well as content of toxic elements, mycotoxins, pesticides and benz(a)pyrene have been obtained. Research studies have shown that safety indices (content of toxic elements, mycotoxins, chlorogenic pesticides, benz(a)pyrene) of cold pressing safflower oil correspond with normative attributes for vegetable oils. Oxidative stability of cold-pressed safflower oil was investigated by differential scanning calorimetry method in dissertation; and it is shown that its induction period is 1,22 times shorter than that of sunflower oil. Induction period and, therefore, oxidative stability, can be increased by inclusion of aqueous alcoholic extracts of some plants. Specifically, it has been shown that addition of 0,02 % green tea aqueous alcoholic extract prolongs induction period of safflower oil by 2,39 times. Improved manufacturing scheme of safflower seeds processing with obtaining of cold-pressed and hot-pressed oil is developed and economic evaluation of proposed technological solutions is made. On the ground conducted researches and tests of safflower oil samples at the instrumental research laboratory of Ukrainian research institute of vegetable oils and fats of the National academy of agricultural sciences of Ukraine and in department of chromatographic and radiological testing of the state testing laboratory of food and agricultural products of State enterprise "Kharkiv Regional Research and Production Center for Standardization, Metrology and Certification" tentative specifications of TCU 10.4–3199908465–001:2020 "Safflower edible oil" was developed and agreed.

Дисертацію присвячено створенню науково обґрунтованої технології обрушування насіння сафлору для отримання пресової олії харчового призначення. Актуальність теми дослідження повꞌязана з тим, що, незважаючи на те, що в Інституті олійних культур НААН (м. Запоріжжя) створено національну колекцію сафлору, представлену сортами Сонячний, Живчик, Лагідний; наукові дослідження мають переважно селекційну або генетичну спрямованість. Комерційна привабливість вирощування сафлору полягає в його надзвичайній посухостійкості і високій якості одержуваної олії, яка є корисною завдяки високому вмісту в ній поліненасичених жирних кислот, переважно лінолевої (74,0-78,0 %). З насіння сафлору отримують олію, яку використовують як сировину у виробництві оліфи, білої фарби, емалей, мила, лінолеуму, біоетанолу, а також після рафінування – фармацевтичні препарати, косметичні засоби, продукти функціонального і дієтичного харчування. Інтерес до сафлору у багатьох країнах світу постійно підвищується, вже розроблені технології його вирощування та переробки. В Україні сафлор є малопоширеною олійною культурою, площа посівів досі незначна – близько 5 тис.га у Херсонській області. Але площі засолених грунтів щорічно збільшуються і на теперішній час уже складають близько 4 млн га. Для їх рекультивації і подовження використання підходить саме культура сафлору. Розширення обсягів виробництва сафлору – дуже приваблива річ. Пропонується використання площ, які у Південній частині України на теперішній час не забезпечують економічно вигідне та стабільне вирощування соняшнику. За думкою фахівців, площі сафлору повинні становити не менше 100 тис. га, що забезпечить додатково 100 тис. т олійної сировини. Таким чином, культура сафлору має світовий попит і обсяги виробництва, до яких може долучитися і Україна. Формуванню позитивного ставлення до сафлору як цінної олійної культури у значній мірі сприятимуть наукові дослідження, спрямовані на одержання високоякісної сафлорової олії. Удосконалення потребують, зокрема, технології підготовчих операцій. Це повꞌязано з тим, що насіння сафлору має такі морфологічні особливості, що технологія його переробки не передбачає обрушування, а олія, одержана з цілого насіння має гіркуватий присмак і тому використовується без рафінування тільки для технічних цілей. Таким чином, розробка науково обґрунтованої технології обрушування насіння сафлору вітчизняних сортів для отримання високоякісної рослинної олії є актуальним науковим завданням, яке вирішується в дисертаційній роботі. Актуальність теми та вагомість результатів дисертаційної роботи підтверджується тим, що вона виконувалась в рамках держбюджетної науково-дослідної роботи "Наукове обґрунтування та удосконалення методів видобування і переробки жирів, одержання продуктів бродіння, напоїв та виноробства" (ДР № 0116 U 000880), а також у відповідності з угодою № 46/1002012 про творчу науково-технічну співдружність між НТУ "ХПІ" та Харківським національним аграрним університетом ім. В. В. Докучаєва (м. Харків), в якому здобувач була відповідальним виконавцем окремих етапів. Практичне значення результатів дисертаційної роботи для олійножирової галузі полягає у розробці удосконаленої технології видобування харчової рослинної олії з насіння сафлору сорту Лагідний, адаптованого до умов Східного Лісостепу. Розроблено та узгоджено проект технічних умов ТУУ 10.4 – 3199908465 – 001:2020 "Олія сафлорова харчова". Результати роботи впроваджено в навчальний процес кафедри технології жирів та продуктів бродіння Національного технічного університету "Харківський політехнічний інститут" під час викладання дисциплін "Основи фізіології та гігієни харчування", "Технологія галузі. Технологічні розрахунки, облік та звітність у галузі" та "Сучасні напрямки розвитку технології видобування жирів" для студентів денної та заочної форм навчання за освітньо-кваліфікаційними рівнями бакалавр та магістр; в курсовому та дипломному проектуванні, а також у науково-дослідній роботі студентів за спеціалізацією (акт впровадження від 02.02.2021 р.). Визначено стандартизовані технологічні властивості насіння сафлору сорту Лагідний: масу 1000 насінин, вміст сміттєвих домішок, вологість, олійність, фракційний склад, зокрема, виявлено, що насіння сафлору цього сорту має досить велику олійність – 34,0-40,0 %. Міцність насіння в залежності від фракційного складу коливається в межах 68,65-127,50 Н (7,0-13,0 кгс). Експериментально та за допомогою апроксимаційного моделювання визначено ефективні технологічні параметри обрушування у технології переробки насіння сафлору: інтервал температур попереднього охолодження -35÷-45 °С, вологість насіння 4,2 %, частота обертання ротору насіннєрушки – 28,33 с-1, ступінь обрушування 85,40-92,55 %. В лабораторних умовах одержано олію холодного пресування, в якій визначено органолептичні, фізико-хімічні, структурні показники та показники безпеки. Зокрема, показано, що основними жирними кислотами олії із сафлору сорту Лагідний є ессенціальна лінолева кислота (74,4 %), олеїнова (15,1 %) та пальмітинова (7,2 %). Всього ідентифіковано девꞌять жирних кислот. Ацилгліцериновий склад досліджуваної кислоти сафлорової олії представлено шістьома групами ацилгліцеринів, ідентифікованих за вмістом вуглецевих атомів: С 48 – 1,7 %, С 50 – 20,2 %, С 52 – 72,7 %, С 54 – 4,1%, С 56 – 0,9 %, С 58 – 0,4 %. Проаналізовано стеринову фракцію неомилених речовин сафлорової олії. Показано, що фітостерини олії сафлору представлено наступними ізомерами: 39,0 % β-ситостерину, 12,9 % стигмастерину, 6,4 % кампестерину та 3,5 % брасикастерину. Вітаміни сафлорової олії – це вітамін А (2,3 м.о. в (г) та вітамін Е (32,2 мг %). В дослідженнях виявлено, що за показниками безпеки (вмісту токсичних елементів, мікотоксинів, хлорогенових пестицидів, бенз(а)пірену) олія сафлорова холодного пресування відповідає нормативним показникам для рослинних олій. В дисертаційній роботі досліджено методом диференційної скануючої колориметрії окиснювальну стабільність сафлорової олії холодного віджиму і показано, що період індукції її у 1,22 рази менше, ніж у соняшникової олії. Період індукції, а значить і окислювальну стабільність, можна підвищити уведенням водно-спиртових екстрактів деяких рослин. Зокрема, показано, що додавання 0,02 % водно-спиртового екстракту зеленого чаю подовжує період індукції сафлорової олії у 2,39 рази. Розроблено вдосконалену технологічну схему переробки насіння сафлору з одержанням олії холодного та гарячого пресування та виконано економічну оцінку запропонованих технологічних рішень. На підставі виконаних досліджень та випробувань зразків сафлорової олії у лабораторії інструментальних досліджень Українського науково-дослідного інституту олій та жирів Національної академії аграрних наук України та у відділі хроматографічних та радіологічних випробувань державної випробувальної лабораторії харчової та сільськогосподарської продукції Державного підприємства "Харківський регіональний науково-виробничий центр стандартизації, метрології та сертифікації" розроблено та узгоджено проект технічних умов ТУУ 10.4 - 3199908465 - 001:2020 "Олія сафлорова харчова". The dissertation is devoted to scientific substantiation and development of dehulling technology of safflower seeds from domestic varieties for production of edible vegetable oil. Urgency of research issue is related to the fact that, despite the fact that a national collection of safflower, which was created at the Institute of Oilseeds of the NAAS (Zaporozhye), is represented by the varieties Sonjachnyj, Zhivchyk, Lagidny; research studies have primary selective or genetic tendency. Commercial attractiveness of cultivation safflower lie in its extreme drought resistance and high quality of resulting oil, which is beneficial due to its high content of unsaturated fatty acids, predominantly linolic acid (74,0-78,0 %). Oil, obtained from safflower seeds, is used as a raw material in production of varnish, white paint, enamel, soap, linoleum, bioethanol, as well as after refining – pharmaceuticals, cosmetics, functional and dietary foodstuffs. Interest in safflower in many countries of the world is constantly increasing, already developed technologies for its cultivation and processing. Safflower is rare oil-yielding crop in Ukraine, area under grain crops is still small – about 5 thousand hectares in Kherson region. But saline soils areas are annually increasing and now form about 4 million hectares. Safflower is suitable for revegetation of soils and prolongation of their usage. Expansion of safflower production volume is a very attractive thing. It is proposed to use areas that currently do not provide economically sound and stable sunflower cultivation in the southern part of Ukraine. According to experts, the areas of safflower should be at least 100 thousand hectares, which will provide an additional 100 thousand tons of oil-yielding raw materials. Thus, safflower crop has worldwide demand and production volumes to which Ukraine can join. Formation of a positive attitude to safflower as a valuable oilyielding crop will be greatly facilitated by scientific investigations aimed at producing high-quality safflower oil. Improvements require, in particular, technologies for prior operations. This is because safflower seeds have such morphological features that technology of its processing is not provided for dehulling, and oil, obtained from whole seeds, has a bitterish taste without refining and is used only for technical purposes. Thus, development of science-based technology of dehulling of safflower seeds domestic varieties for production of high-quality vegetable oil is an urgent scientific problem, which is solved in dissertation. Relevance of a project and weight of dissertation results is confirmed by the fact that it has been carried out within of the state budget research work "Scientific justification and improvement of fats production and processing methods, obtaining of fermentation products, drinks and wine-making" (RW № 0116 U 000880), as well as in accordance with agreement № 46/100_2012 on creative scientific and technical partnership between NTU "KPI" and Kharkiv National Agricultural University named by V. V. Dokuchaev (Kharkiv), in which the applicant was responsible executor of separate stages. Practical importance of dissertation work results for oil and fat industry consists in development of advanced technology for production edible vegetable oil from safflower varieties Lagidny, which adapted to conditions of the Eastern Forest Steppe. Tentative specifications of TCU 10.4 – 3199908465 – 001:2020 "Safflower edible oil" was developed and agreed. Results of dissertation work were implemented in educational process Technology of Fats and Fermentation Products Department of National Technical University "Kharkiv Polytechnic Institute" during teaching of disciplines "Fundamentals of Physiology and Food Hygiene", "Technology. Technological calculations, accounting and reporting in industry" and "Modern development of fat extraction technologies" for full-time and external students at educational and qualification levels of bachelor and master; in course works and diploma thesises, as well as in research works of students (implementation act 02.02.2021). Standardized technological properties of safflower seeds of variety Lagidny are determined: weight of 1000 seeds, content of contaminant impurities, humidity, oil content, fractional composition, in particular, it is found that safflower seeds of this variety have a sufficiently high oil content – 37,0-40,6 %. Seed strength varies 68,65-127,50 Н (5,0-13,0 kgf) depending on fractional composition. Effective technological parameters of dehulling in safflower seed processing technology were determined experimentally and via using approximative modeling, namely: pre-cooling temperature range -35÷-45 °С, seed moisture close to 4,2 %, dehullerꞌs rotary rotations – 28,33 s-1, degree of dehulling 85,4-92,55 %. Досліджено технологічні властивості зерна соризу українських сортів як сировини для виробництва поп-зерна. Доведено перспективність розширення ринку снекової продукції в Україні. У харчових продуктах використання поп-зерна може покращити його склад та харчову цінність, що вимагає нових джерел зерна українського сорту. Характеристики поп-властивостей зерна соризу визначали для п'яти сортів, а саме: Деймос, Вересень, Октан, Європа та Меркурій. Колір зерна соризу для досліджуваних сортів дещо відрізнявся: сорт Вересень мав темно-коричневий колір, у той час як інші – світло-коричневий. Насипна маса зерна соризу коливалася від 757 до 777 г/дм3, маса 1000 зерен становила від 29,3 до 36,1 г. Форма зерна всіх досліджуваних сортів була близькою до кулястої, трохи сплюснутою та витягнутою. Технологічні властивості зерна соризу для отримання поп-зерна включають вихід, об’ємну масу, коефіцієнт розширення. Мікрохвильова обробка зерна соризу українських сортів дозволила досягти виходу повітряного зерна на рівні 44–67 %, що було близьким до багатьох сортів українського сорго. Об’ємна маса поп-зерна соризу становила від 82 до 103 г/дм3. Коефіцієнт розширення зернівки для різних сортів соризу коливався від 8 до 13, що є досить високим показником, порівняно з іншими поп-культурами. Поп-зерно соризу було оцінено експертною комісією щодо органолептичних характеристик, таких як зовнішній вигляд, колір, запах, смак, текстура. Загальний бал розраховували з врахуванням коефіцієнта вагомості. Вибрані зразки поп-соризу дещо відрізнялись за кольором, але встановлена суттєва різниця в їх запаху, смаку та структурі. Найвищий вихід і коефіцієнт розширення, найменшу об’ємну масу показав сориз сорту Вересень. Поп-зерно соризу цього сорту характеризувалося найвищою загальною органолептичною оцінкою серед досліджуваних сортів., Technological properties of soriz grain of Ukrainian varieties as a raw material for pop-grain production have been studied. The prospects of expanding Ukrainian snack market were proved. In food products, using pop-grain can be improving its composition and nutritional value requiring new sources of grain of Ukrainian variety. Popping characteristics of the soriz grain were determined for five varieties such as Deimos, Veresen, Octane, Europe, and Mercury. Color of the soriz grain of the studied varieties differed slightly: Veresen variety had a dark brown color when others light brown. Bulk grain weight of the soriz variety varied between 757 and 777 g/dm3, the weight of 1000 grains ranged from 29.3 to 36.1 g. Grain shape of all studied varieties was close to spherical, slightly flattened and elongated. Technological properties of soriz grain quality for popping purpose include popping yield, specific weigh, and volume expansion ratio. Microwave treatment of the soriz grain of Ukrainian varieties allowed achieving popping yield at 44–67 %, which was close to many varieties of Ukrainian sorghum varieties. Specific weight of the popped soriz grain ranged from 82 to 103 g/dm3. Volume expansion ratio for the different soriz varieties varied from 8 to 13, which is a fairly high compared to other pop crops. Popped soriz grain was evaluated by expert panel on sensory characteristics such as appearance, color, smell, taste, texture. Overall score was calculated taking into account the value coefficient. The popped soriz grain samples differed slightly in color, but there was a significant difference in their smell, taste and texture. The highest popping yield and volume expansion ratio, the lowest specific weight was showed by soriz grain of Veresen variety. Popped soriz grain of this variety received the highest overall organoleptic score among the studied varieties., Исследовано технологические свойства зерна сориза украинских сортов как сырья для производства поп-зерна. Доказана перспективность расширения рынка снековой продукции в Украине. В пищевых продуктах использование поп-зерна может улучшить состав и пищевую ценность, что требует новых источников зерна украинских сортов. Характеристики поп-свойств зерна сориза определяли для пяти сортов, а именно: Деймос, Вересень, Октан, Европа и Меркурий. Цвет зерна сориза для исследуемых сортов несколько отличался: сорт Вересень имел темно-коричневый цвет, в то время как другие - светло-коричневый. Насыпная масса зерна сориза колебалась от 757 до 777 г/дм3, масса 1000 зерен составила от 29,3 до 36,1 г. Форма зерна всех исследуемых сортов была близка к шаровидной, немного сплюснутой и вытянутой. Технологические свойства зерна сориза для получения поп-зерна включают выход, объемную массу, коэффициент расширения. Микроволновая обработка зерна сориза украинских сортов позволила достичь выхода воздушного зерна на уровне 44-67 %, что было близко к многим сортам украинского сорго. Объемная масса поп-зерна сориза составляла от 82 до 103 г/дм3. Коэффициент расширения зерновки для различных сортов сориза колебался от 8 до 13, что является достаточно высоким показателем по сравнению с другими поп-культурами. Поп-зерно сориза было оценено экспертной комиссией по органолептическим характеристикам, таким как: внешний вид, цвет, запах, вкус, текстура. Общий балл рассчитывали с учетом коэффициента весомости. Выбранные образцы поп-сориза несколько отличались по цвету, но установлена существенная разница в их запахе, вкусе и текстуре. Самый высокий выход и коэффициент расширения, наименьшую объемную массу показал сориз сорта Вересень. Поп-зерно сориза этого сорта характеризовалось самой высокой общей органолептической оценкой среди исследованных сортов.

Purpose. Investigate the formation of baking properties of soft wheat grain with the addition of spelt wheat.Methods. Laboratory, mathematical and statistical, organoleptic, expert.Results. The research results of the grinding process of crushing batches with a percentage of spelt content of 5 %, 10, 15, 20, 25 %, indicate that in the third and fifth samples there is high gluten content – 29.6 % and 29.0 %. The lowest number in the fourth sample is 24.8 %. By colour, all samples of the obtained flour is of the highest quality. The results of trial bread baking performed good results. The best flour milling and baking properties were characterized by samples with a percentage of spelt in the amount of 15, 20 and 25 %. The obtained research results scientifically substantiate the expediency of adding spelt wheat to the crushing batches of soft wheat in the amount of 15 % to improve the milling and baking properties. It is when adding 15 % of spelt wheat to the crushing batch of soft wheat that the greatest extraction of flour was obtained, which as a result of trial bread baking showed its high quality.Conclusions. The baking properties of spelt wheat are similar to soft one. The grain of the studied variety of spelt wheat is inferior in volume of bread. It has been found that the adding of 15–20 % of spelt wheat to soft one does not reduce the baking properties of the latter flour. The gluten content is at the level of soft wheat. The volume of bread is 495–506 cm3. The porosity is 73.0–74.1 %, the persistent shape of hearth bread is 0.32–0.33., Мета. Вивчити питання щодо формування хлібопекарських властивостей зерна пшениці м’якої з добавлянням пшениці спельти.Методи. Лабораторні, математично-статистичні, органолептичні, експертальні.Результати. Результати дослідження процесу подрібнення помельних партій з відсотковим вмістом спельти 5 %, 10, 15, 20, 25 %, вказують, що в третьому та п’ятому зразках високий вміст клейковини – 29,6 % і 29,04 %. Найменша кількість у четвертому зразкові – 24,8 %. За білизною всі зразки отриманого борошна відносяться до вищого сорту. Результати пробної випічки хліба показали добрі результати. Найкращими борошномельними та хлібопекарськими властивостями характеризувались зразки з відсотковим вмістом спельти у кількості 15, 20 і 25 %. Отримані результати досліджень науково обґрунтовують доцільність добавляння пшениці спельти у помельні партії пшениці м`якої в кількості 15 % для покращення борошномельних та хлібопекарських властивостей. При добавлянні 15 % пшениці спельти до помельної партії пшениці м’якої отримано найвищу якість борошна.Висновки. Хлібопекарські властивості зерна пшениці спельти подібні пшениці м’якій. Зерно дослідженого сорту пшениці спельти поступається за об’ємом хліба. Встановлено, що добавляння 15–20 % зерна пшениці спельти до пшениці м’якої не знижує хлібопекарських властивостей борошна останньої. Вміст клейковини при цьому знаходиться на рівні пшениці м’якої. Об’єм хліба становить 495–506 см3. Пористість становить 73,0–74,1 %, формостійкість подового хліба – 0,30–0,32.

Urgency of the research. The modern food industry must address not only the safety of the product, but also the role of food in the prevention of iodine deficiency. The promotion of the role of nutrition in the prevention of alimentary diseases is reflected in the steady trend of increasing volumes and expanding the range of foods enriched with dietary supplements, including iodine. Of particular interest to manufacturers and consumers are herbal supplements.Target setting. Despite the breadth of the range of processed cheeses, it is constantly updated. This is due to the need to meet the requirements of science, changing consumer demand, availability of raw materials, the profitability of a particular type of cheese. Increased interest in these products is caused by its ability to retain its qualities well during long-term storage, the ability to combine various components, including non-dairy origin, and as a result to obtain a product of high nutritional and biological value. Considering the above facts, it should be noted that the development of processed cheeses with walnut leaves is of great importance and is a relevant scientific and practical topic.Actual scientific researches and issues analysis. Contemporary publications of Ukrainian and foreign scientists have been considered on ways to solve the problem of iodine deficiency by introducing a herbal supplement product into the recipe.Uninvestigated parts of general matters defining. Therefore, the organization of disease prevention requires further study and a deeper study of functional food technology. Considering the fact that processed cheeses are a fairly affordable product for the majority of the population of Ukraine, we consider it expedient to expand their range precisely through the introduction of walnut leaves in the recipe.The research objective. The purpose of the work was to develop a recipe and substantiation of the technology of production of functional melted cheese with the addition of walnut leaf extract of NVK Vilarus LLC, as well as to substantiate the expansion of the range of melted cheese in the functional direction. The statement of basic materials. The recipe is developed and the technology of production of processed cheeses with vegetable component is substantiated. Quality and organoleptic characteristics were experimentally investigated. The calculation method determines the amount of iodine that will contain the developed product. Conclusions. The obtained results of organoleptic, physicochemical and structural-mechanical studies allow to state that melted cheese with the addition of 5 % walnut leaf extract of NVK Vilarus LLC is a product with desirable consumer characteristics and high iodine content. This will not only expand the range of functional foods, but also prevent iodine deficiency., Актуальність теми дослідження. Сучасна харчова промисловість має вирішувати не лише завдання безпечності продукту, а й питання ролі продуктів харчування у профілактиці дефіциту йоду. Популяризація ролі харчування у профілактиці захворювань аліментарного характеру має своє відображення у стійкій тенденції збільшення об’ємів та розширенні асортименту харчових продуктів, збагачених біологічно активними добавками, зокрема йодом. Особливий інтерес і у виробників, і у споживачів викликають рослинні добавки.Постановка проблеми. Незважаючи на широту асортименту плавлених сирів, відбувається постійне його оновлення. Це зумовлено необхідністю задовольнити вимоги науки, зміною споживчого попиту, наявністю сировини, рентабельністю того чи іншого виду сиру. Підвищена зацікавленість до цієї продукції викликана її здатністю добре зберігати свої якості під час тривалого зберігання, можливістю поєднувати різні компоненти, зокрема немолочного походження, а в результаті отримати продукт високої харчової і біологічної цінності. Враховуючи наведені вище факти зауважимо, що розробка плавлених сирів із листям волоського горіха набуває важливого значення і є актуальною науково-практичною темою.Аналіз останніх досліджень і публікацій. Були розглянуті сучасні публікації українських та закордонних науковців щодо шляхів вирішення проблеми дефіциту йоду шляхом введення в рецептуру продукту рослинної добавки.Виділення недосліджених частин загальної проблеми. Отже, для організації профілактики захворювань необхідне подальше вивчення та більш глибоке дослідження технологій харчових продуктів функціонального направлення. Враховуючи той факт, що плавлені сири є досить доступним продуктом для більшості населення України, вважаємо за доцільне розширити їх асортимент саме за рахунок внесення в рецептуру екстракту листя волоського горіха.Постановка завдання. Метою роботи була розробка рецептури та обґрунтування технології виробництва функціонального плавленого сиру з додаванням екстракту листя волоського горіха ТОВ «НВК Віларус», а також обґрунтування розширення асортименту плавлених сирів функціонального направлення.Виклад основного матеріалу. Розроблено рецептуру та обґрунтовано технологію виробництва плавлених сирів з рослинним компонентом. Експериментально досліджена якість та органолептичні характеристики. Розрахунковим методом встановлено кількість йоду, що буде містити розроблений продукт.Висновки відповідно до статті. Отримані результати органолептичних, фізико-хімічних та структурномеханічних досліджень дозволяють констатувати, що плавлений сир із додаванням 5 % екстракту листя волоського горіха ТОВ «НВК Віларус» є продуктом із бажаними споживчими характеристиками та підвищеним вмістом йоду. Це дозволить не лише розширити асортимент функціональних продуктів харчування, а й дасть змогу проводити профілактику дефіциту йоду.

Для подальшого ефективного розвитку та, відповідно, ефективної експлуатації такого виду технологічного обладнання, як вовчки, актуальним є вироблення достовірних рекомендацій щодо параметрів впливу робочих органів вовчків на готові ковбасні вироби. Досліджувалися структурно-механічні й органолептичні властивості ковбасних виробів з таких видів сировини: яловичина, оброблена в м’ясорубці, яловичина, подрібнена на кубики ножем вручну, а також піддана обробці тиском. Встановлено, що найбільший модуль осьового стискання властивий ковбасам із яловичини, нарізаної кубиками (285 кПа). Для виробів з сировини, обробленої тиском у 0,4 МПа та у 0,6 МПа, а також з м’ясного фаршу модуль осьового стискання набуває суттєво менших значень (249 кПа, 217 кПа та 140 кПа відповідно). Найбільше напруження стандартної пенетрації також спостерігається для ковбас з яловичини, нарізаної кубиками (124 кПа), тоді як для продуктів з сировини, яка оброблена тиском у 0,4 МПа та у 0,6 МПа, а також для м’ясного фаршу – 96 кПа, 87 кПа та 71 кПа відповідно. Залежність напруження зрізу ковбас від виду обробки сировини аналогічна напруженню стандартної пенетрації. Отримані результати дають змогу вважати обробку м’яса тиском у вовчках позитивним процесом, необхідним для отримання ковбасних виробів із високими органолептичними властивостями For further efficient development and, accordingly, efficient operation of such type of technological equipment, as meat comminutors, it is urgent to make reliable recommendations on the parameters of the influence of meat comminutors working organs on raw materials and prepared sausage products. Structural, mechanical and organoleptic properties of sausage products from such raw materials as: beef processed in a meat grinder, beef minced by hand with a knife and beef processed with a pressure have been studied. It is established that the largest module of axial compression is peculiar to beef sausages minced with a knife (285 kPa). For products from raw materials processed with a pressure of 0.4 MPa and 0.6 MPa, as well as minced meat, the axial compression module accepts significantly smaller values (249 kPa, 217 kPa and 140 kPa, respectively). The highest standard penetration pressure is also observed for beef sausages, cut into cubes (124 kPa), while for the products from raw materials processed with a pressure of 0,4 MPa and 0,6 MPa, as well as for minced meat it is 96 kPa, 87 kPa and 71 kPa respectively. The results obtained allow to consider the processing of meat with a pressure in meat comminutors as a positive process necessary for obtaining sausage products with high organoleptic properties. The impact of the pressure when grinding meat in a meat grinder defines the delicate consistency of the meat and finished sausage products. Sliced meat doesn’t allow to achieve benchmarks of finished sausage products. It is necessary to supplement the definition of "mince" to read as follows: "mince is meat, sliced and crushed." A purely compressive pressure, which corresponds to the pressure in the working chamber of meat grinder, doesn’t lead to the acquisition of raw materials, cut into cubes, the reference values of structural, mechanical and organoleptic properties. It is reasonable to study the effect of joint action of compressive and shear stresses on the indicated properties of the raw material. The meat processing with a pressure in meat comminutors should be considered a positive process necessary to obtain sausages with high organoleptic properties. To reduce losses of meat juice during the raw material processing it is appropriate to develop new methods which provide for its processing by pressure

The purpose of the researchis theoretical and experimental substantiation of the technology of non-alcoholic drinks of resistant action using walnut on the basis of the balanced biochemical composition of local plant raw materials.Methodology of investigationconsists physical and chemical, functional and technological, organoleptic, experimental and statistical, executed with the use of modern devices and computer technologies.The scientific noveltyof the article is to substantiate the requirements for non-alcoholic drinks of resistant action and to determine their nutrient composition.Conclusions. The article emphasizes that all mechanisms of the protective system of human body are not possible without the participation of certain nutrients – vitamins A, C, E and polyphenols, and immune and antioxidant systems also require participation of B (B6, B9, B12) vitamins, carotenoids and trace elements (selenium, zinc, iodine, etc.). Creation of drinks from plant raw materials, which contain a wide range of nutrients and trace elements of the resistant action to body, when used in a daily ration, will contribute to the improvement and preservation of human health. To provide a given action of drinks, it is necessary to use vegetable compositions with the addition of walnut, which is widely spread in Ukraine and contains in the stage of milk-waxy maturity the majority of essential nutrients (vitamins A, E, C and B, carotenoids, edible fibers, polyphenols, iodine, and zinc). Scientifically substantiated is the technology of the use of dietary additives from walnut for the enrichment of drinks, which ensure their high organoleptic parameters and biological value – the fruits of milk-wax ripeness, pericarp and extracts on their basis. The conducted research has become the basis for the development of methodological approaches to the formation and evaluation of the quality of multicomponent drinks of resistant action on the basis of local plant raw materials using walnut, including their reliability and functionality.
