Bu çalışmada, konvektif kurutma yönteminin iki farklı elma çeşidinin (Granny Smith ve Red Delicious) kurutulmasında, kurutma sıcaklığı (50, 55 ve 60°C), numune kalınlığı (5, 7 ve 9 mm) ve kuruma süresi (8, 9 ve 10 saat) gibi bağımsız değişkenlerin özgül enerji tüketimi, özgül nem çekme oranı, enerji verimliliği, termal etkinlik ve efektif nem difüzyonu özelliklerine etkisi incelenmiştir. Yüksek Lisans Tezi, Bu çalışmada, gıda alanında yeni bir kurutma yöntemi olan ve birçok avantajı bulunan köpük kurutma yöntemi ve aynı koşullarda konvektif kurutma yöntemi uygulanarak balkabağı tozları üretilmiştir. Proses sonucunda elde edilen tozlar %0, 5, 10, 15, 20 ikame oranlarında bisküvi üretiminde ve %0, 15, 30 ikame oranlarında ise kek üretiminde kullanılmıştır. Elde edilen örneklerde, fiziksel (renk, tekstür, bisküvide çap, kalınlık, yayılma oranı, kekte hacim ve simetri indeksi), kimyasal (nem, kül, ham protein, toplam fenolik madde içeriği, antioksidan aktivite, toplam karotenoid miktarı ve mineral madde) ve duyusal analizler yapılmıştır. Bisküvi örneklerinde en yüksek L değerleri kontrol örneğinden elde edilmiş olup, L değerleri balkabağı tozu ilavesi ile azalırken, a değerlerinde ise artış gözlenmiştir. Bisküvilere ikame edilen normal kurutulmuş balkabağı tozu ve köpük kurutulmuş balkabağı tozunun artan ikame oranı ile birlikte bisküvi örneklerinin çap değerinde azalış, kalınlık değerinde ise artış tespit edilmiştir. Bisküvi formülasyonunda NKBT ve KKBT’nin artan ikame oranı ile bisküvi örneklerinin nem, kül, protein, toplam fenolik madde, antioksidan aktivite, toplam karotenoid, Ca, Fe, K, Mg, P miktarları artmıştır. Genel beğeni bakımından değerlendirildiğinde bisküviye %5 NKBT ikamesinin duyusal kabul edilebilirlik bakımından en uygun oran olduğu bulunmuştur. Kek örneklerinde NKBT ve KKBT ikamesi ile kek içinin L değeri azalırken a ve b değerlerinde artış tespit edilmiştir. Kek kabuk kısmının ise L, a ve b değerlerini düşürmüştür. Kek formülasyonunda NKBT ve KKBT’nin artan ikame oranı ile kek örneklerinin toplam fenolik madde, toplam karotenoid, antioksidan aktivite, kül ve Ca, K, Mg, P miktarları artış göstermiştir. Genel beğeni bakımından değerlendirildiğinde %15 KKBT ikamesi panelistler tarafından kabul edilebilir bulunmuştur., In this study, pumpkin powders were produced by applying the foam-mat drying method, which is a new drying method in the food technology and has many advantages, and the convective drying method under the same conditions. The powders obtained were used in the biscuit production at 0, 5, 10, 15, 20% replacement rates and in cake production at 0, 15, 30% replacement rates. In the samples obtained, physical (color, texture, diameter in biscuit, thickness, spreading rate, volume and symmetry index in cake), chemical (moisture, ash, crude protein, total phenolic content, antioxidant activity, total carotenoid amount and mineral substance) and sensory analyzes were carried out. In the biscuit samples, the highest L values were obtained in the control sample. The L values decreased with the addition of pumpkin powder, while an increase was observed in the a values. With the increasing substitution rate of normal dried pumpkin powder and foam-mat dried pumpkin powder substituted for biscuits, a decrease in the diameter value of the biscuit samples and an increase in the thickness value were determined. The moisture, ash, protein, total phenolic content, antioxidant activity, total carotenoid, Ca, Fe, K, Mg, P amounts of biscuit samples increased with increasing substitution rate of NKBT and KKBT in the biscuit formulation. When evaluated in terms of general taste, it was found that 5% NKBT substitution for biscuits was the most appropriate ratio in terms of sensory acceptability. In cake samples, L value of the cake crumb decreased with NKBT and KKBT substitution, while a and b values increased. It decreased L, a and b values of the cake crust part. Total phenolic substance, antioxidant activity, total carotenoid, the ash and Ca, K, Mg, P amounts of the cake samples increased with increasing substitution rate of NKBT and KKBT in the cake formulation. When evaluated in terms of general taste, 15% KKBT substitution was found acceptable by the panelists.

Bu çalışmanın amacı barbunya, domates, mantar ve patateslerin kurutma karakteristiklerini belirlemek ve konvektif, mikrodalga ve mikrodalga-konvektif kurutma yöntemleri için en iyi ince tabaka kurutma modelini seçmektir. Bu amaç için, Henderson ve Pabis, Newton, Page, Geliştirilmiş Page, Logaritmik, İki Terimli, Wang ve Singh, Difüzyon Yaklaşımı, Midilli ve İki Terimli Eksponansiyel modelleri deney sonuçlarını analiz etmek için kullanılmıştır. Ayrıca farklı sıcaklıklar ve mikrodalga güçleriyle kurutulan deney örneklerinin modellenmesi için yeni bir ince tabaka kurutma modeli geliştirilmiştir. Yeni model Midilli ve Wang ve Singh modellerinin bir kombinasyonu şeklindedir. Bu modellerin performansları ki-kare (2), hataların karelerinin karekök ortalaması (RMSE) ve belirtme katsayısı (R2)'na göre karşılaştırılmıştır. İncelenen kurutma modelleri arasında, deneylerin çoğunda geliştirilen model barbunya, domates, mantar ve patateslerin kurutma davranışlarının tanımlanması için en iyi model olarak bulunmuştur. Sonuçlar göstermiştir ki, artan kurutma hava sıcaklığı ve mikrodalga güç seviyeleri daha kısa kurutma süresine neden olmuş ve kurutma işlemi azalan periyotta gerçekleşmiştir. Çoğu deneylerde bu sonuçlar kısa bir ısınma periyodundan sonra belirlenmiştir. Kullanılan kurutma yöntemleri arasında, mikrodalga-konvektif kurutma yöntemi önemli ölçüde daha yüksek kuruma hızı ve daha fazla nem uzaklaştırılması sağlamıştır. Mikrodalga-konvektif birleşimi kurutma hem konvektif hem de mikrodalga yöntemleriyle karşılaştırıldığında gereken kurutma süresini azaltmıştır. Ayrıca bu çalışmada, taze ve kurutulan ürünlerin renk ve yapısal değişiklikleri incelenmiştir. Tüm kurutma şartları için taze örneklere en yakın sonuçlar 50 C sıcaklıkta kurutulan örneklerden elde edilmiştir. Tüm kurutma uygulamaları taze örneklerle karşılaştırıldıklarında ürünlerin mikroyapılarında farklı fiziksel değişikliklere neden olduğunu taramalı elektron mikroskobu görüntüleri ortaya çıkarmıştır. Daha yüksek sıcaklıklar ve mikrodalga güçleri örneklerin mikroyapılarına daha büyük zararlara sebebiyet vermiştir. The objectives of this study were to determine the drying characteristics of barbunya beans, tomatoes, mushrooms and potatoes and to select the best thin layer drying model for convective, microwave and combined microwave-convective drying methods. For this purpose, Henderson and Pabis, Newton, Page, Modified Page, Logarithmic, Two Term, Wang and Singh, Diffusion Approach, Midilli and Two Term Exponential models have been used to analyse the test results. Also, a new thin layer model for modeling the drying of test samples with different temperatures and microwave powers was developed. The new model was a combination of the Midilli and Wang and Singh drying model. The performances of these models have been compared according to three statistical parameters, i.e. reduced chi-square (2), root mean square error (RMSE) and coefficient of determination (R2). Among the drying models investigated, the new model in most of the experiments was found to be the best model for describing the drying behaviour of barbunya beans, tomatoes, mushrooms and potatoes. The results showed that increasing the drying air temperature and microwave power level caused shorter drying times and drying process occurred in falling period. In the most experiments, these results were determineted after a very short warming-up. Among all the drying methods, microwave-convective drying method provided in a significantly higher drying rate and more moisture removal. Combined microwave-convective drying was decreased the drying time required when compared to drying with both convective and microwave methods. The drying time was decreased with increasing drying air temperatures and microwave levels. Additionally, in this study, color and structural changes of fresh and dried samples were investigated. At all drying conditions, the closest values to the colour of fresh samples was obtained from samples dried at 50 C temperature. Scanning electron microscope images revealed that the applications of all drying led to different physical changes in product microstructure, compared to fresh samples.
