The demand for meat is constantly rising due to the increasing world population. Factors such as insufficient resources, ethical concerns, and animal welfare encourage the new studies to discover alternative meat sources. One of these alternatives is in vitro meat (IVM), which is produced in a laboratory condition. Since IVM is a fairly new and unknown alternative, studies are needed to find out consumers' perceptions and parameters that affect their perception. In this context, our current research was established to investigate general attitudes towards IVM and to examine whether some predictive factors have an impact on consumers' attitudes. The study was established using 80 male and 81 female students attending Atatürk University Erzurum Vocational School. All questions asked to the participants are presented on a 1 ± 5 likert type scale. If the participants stated that they would not try IVM, other follow-up questions were not submitted. Then, all participants were given a versatile option, which investigated under what conditions they would not want to try IVM. Statistical analysis shows that students are somehow willing to consume IVM. On the other hand, it has been determined that taste/appearance is the primary obstacle in terms of IVM consumption. At the same time, it has been determined that gender and meat type are the most important variables in attitude towards IVM. However, all the results show that there is a deep confusion about the perception of IVM. Although the study is small-scale, it has revealed that it is an important step in measuring the perceptions of IVM and the need for further research on the subject of IVM., Artan dünya nüfusu nedeniyle ete olan talep günümüzde sürekli olarak artmaktadır. IVE oldukça yeni ve bilinmeyen bir alternatif olduğundan, tüketicilerin ürüne karşı algılarının ve algılarını etkileyen parametrelerin ortaya konulmasıyla ilgili çalışmalara ihtiyaç duyulmaktadır. Bu bağlamda, mevcut araştırmamız, IVE’ye karşı genel tutumları araştırmak ve tüketicilerin tutumları üzerinde bazı öngörücü faktörlerin bir etkisi olup olmadığını incelemek için kurulmuştur. Çalışma Atatürk Üniversitesi Erzurum Meslek Yüksekokulunda okuyan 80 erkek ve 81 kadın öğrenci katılımcı kullanılarak kurulmuştur. Katılımcılara sorulan tüm sorular 1 ± 5 likert tipi ölçekte sunulmuştur. Katılımcılar IVE'yi denemeyeceklerini belirttiyse, diğer takip soruları sunulmamıştır. Daha sonra tüm katılımcılara, hangi koşullarda IVE'yi denemek istemeyeceklerini araştıran çok yönlü bir seçenek verilmiştir. İstatistiksel analizler, öğrencilerin bir şekilde IVE tüketmeye istekli olduklarını göstermektedir. Diğer taraftan IVE tüketimi konusunda tat/görünüşün öncelikli engel olduğu belirlenmiştir. Bununla birlikte, cinsiyet ve et türünün, IVE’ye yönelik tutumda en önemli değişkenler olduğu tespit edilmiştir. Ancak elde edilen tüm sonuçlar IVE algısı konusunda derin bir karmaşının olduğunu göstermektedir. Çalışma küçük ölçekli olsa da, IVE’ye yönelik algıların ölçülmesinde önemli bir adım olduğu ve IVE konusu hakkında daha fazla araştırmanın gerekliliğini ortaya koymuştur.

Dünya genelinde akut gastroenteritlerin % 50’den daha fazlasından sorumlu tutulan NoV’ler genel olarak gıda kaynaklı salgınlara sebep olabilmektedir. Gıdaların orijini açısından değerlendirildiğinde meyve ve sebzeler, çiğ deniz ürünleri ve hazır gıdalar enfeksiyonun yayılımında önemli rol oynamaktadırlar. Özellikle insanların toplu halde yaşadığı yerler (örn., hapishane, okul, yurt, bakım evi) ve restoranlar hastalığın ortaya çıkışını ve yayılımını kolaylaştırmaktadır. NoV’lerin gıdalardaki tespiti RT-PZR’ın yanı sıra; daha kolay ve ucuz yöntemlerle belirlenmesine yönelik bazı alternatif metotlar geliştirilmiş (İMA, lateks aglütinasyon testi) ve bu konudaki çalışmalar halen güncelliğini koruyarak geliştirilmeye devam edilmektedir. Gıdalardaki NoV’lerin inhibisyonuna yönelik kimyasal metotların (klorin, ozon, sodyum bikarbonatla muamele) yanı sıra; fiziksel metotlar (ısıl işlem, dondurma ve yüksek basınç uygulamaları) uygulanmaktadır. Salgınları orta düzeyde sağlık problemlerine sebep olabilen NoV’lerin epidemiyolojik çalışmaları için hızlı tespit edilebilir metotların ve korunma yöntemlerinin belirlenmesine yönelik daha fazla çalışmaya ihtiyaç duyulmaktadır. Bu derlemede NoV’lerin gıdalardaki varlığı, tespit edilme yöntemleri ve gıdalarda kontrolüne yönelik uygulamalar ele alınmıştır., NoV which are responsible for more than 50% of acute gastroenteritis worldwide in general may lead to foodborne outbreaks. In terms of the origin of foods; fruits and vegetables, raw seafood and ready-to-eat food play an important role in the dissemination of the infection. Particularly in semi-closed environments (e.g., prisons, schools, dormitories, nursing houses) and restaurants facilitate the emergence and spread of infection. As well as RT-PCR detection of NoVs in foods, some alternative methods (IMS and latex agglutination test) have been developed for easier and cheaper detection of them and the studies on this topic are still being developed by keeping up to date. Besides the chemical methods (chlorine, ozone, sodium bicarbonate treatment), physical methods (heating, freezing and high pressure practice) are applied for the inhibition of NoV. More studies on the rapid detection and prevention methods for the epidemiology of NoV, of which outbreaks may lead to relatively mild health problems, are required. In this review, the presence of NoVs in foods, their detection methods and the application on the control of them in foods were discussed.

The ripening process of cheese is very complex and involves some microbiological and biochemical changes. One of these biochemical changes is proteolysis in cheese plays an important role in the development of characteristics such as texture and flavour. The contribution of proteolysis to texture and flavour may be direct, by releasing peptides and amino acids, or indirect, by catabolizing amino acids to amines, acids, thioles, thioesters. These reactions are catalyzed by enzymes from coagulant, indigenous milk proteolytic enyzmes, proteinases or peptidases from lactic acid bacteria, propionibacterium and different fungi strains. The activity of these proteolytic agents which contribute proteolysis has been the subjected of many cheese ripening studies for a long time. In this review, it will be dealt with proteolytic systems of proteolytic agents that affect proteolysis, these systems perform how to protein and amino acids degradation reactions and formation of flavour compounds., Peynirin olgunlaşma süreci çok komplekstir ve bazı mikrobiyolojik ve biyokimyasal değişiklikleri içerir. Bu biyokimyasal değişikliklerden biri olan proteoliz peynirde tekstür ve lezzet gibi özelliklerin gelişiminde önemli bir rol oynamaktadır. Tekstür ve lezzete proteolizin katkısı direkt olarak peptit ve aminoasitlerin salınımıyla ya da aminoasitlerin amin, asit, tiyol ve tiyoesterlere katabolize edilmesiyle olabilir. Bu reaksiyonlar koagülant enzimleri, doğal süt proteolitik enzimleri, laktik asit bakterileri, propiyonobakteri ve farklı küf çeşitlerinden gelen proteinaz veya peptidazlar vasıtasıyla katalize edilir. Proteolize katkıda bulunan bu proteolitik ajanların aktivitesi uzunca bir süredir peynirin olgunlaşma çalışmalarına konu olmaktadır. Bu derlemede proteolize etki eden proteolitik ajanların proteolitik sistemleri, bu sistemlerin protein ve aminoasitlerin parçalama reaksiyonlarını nasıl gerçekleştirdiği ve lezzet bileşiklerinin oluşumu ele alınacaktır.

The aims of this study were to investigate the effect of oviductal cells on in vitro maturation (IVM) of canine oocyte in Tissue Culture Medium 199 (TCM-199) or synthetic oviductal fluid (SOF) supplemented with bovine serum albumin (BSA) or fetal calf serum (FCS) and to compare the maturation rates of oocytes from the diestrus and anestrus stages. Following ovariohysterectomy, 13 pairs of ovaries were collected from bitches in anestrus (n = 10) or diestrus (n = 3) and oocytes were harvested by slicing. The oviducts were flushed with TCM-199 containing 10% FCS and were scraped and squeezed into a tube in order to obtain oviductal cells. Selected oocytes were divided into groups for IVM over 48 h for each of the diestrus and anestrus stages as follows: Group Ia, SOF+BSA; Group Ib, SOF+BSA+oviductal cells; Group IIa, SOF+FCS; Group IIb, SOF+FCS+oviductal cells; Group IIIa, TCM-199+BSA; Group IIIb, TCM-199+BSA+oviductal cells; Group IVa, TCM-199+FCS; and Group IVb, TCM-199+FCS+oviductal cells. Afterwards, oocytes were fixed with acetic acid-ethyl alcohol and stained with aceto-orcein to determine nuclear maturation. When compared between anestrus and diestrus stages for all parameters (undetermined nuclear material, germinal vesicles, germinal vesicle break down, metaphase I, metaphase II, and degenerated) in different media, the differences were found to be significant statistically in Group IIa (22.9%) and Group IIIb (35.7%) for the germinal vesicle stage (P < 0.05) as compared to the other groups. In conclusion, in the oocytes obtained from bitches in diestrus and anestrus supplemented with FCS or BSA in SOF medium without oviductal cells, more positive effects were seen on canine oocyte maturation than with TCM-199 medium supplemented with same protein sources and oviductal cells.
