Background: the Mediterranean diet has been associated with a lower prevalence of obesity and metabolic syndrome, and with healthier lifestyles in adults and children, but data is scarce in younger ages. The Mediterranean-type ecosystem of the central region of Chile as well as its traditional gastronomy would facilitate the adoption of this dietary pattern. Objectives: to assess the adherence to Mediterranean diet in preschoolers and their parents, and to evaluate the impact of a nutrition education intervention and diet implementation. Methods: prospective cohort study. The KidMed index was applied to children older than 18 months, and the Mediterranean Dietary Index in Chile (Chilean-MDI) to their parents, before and after a remote educational intervention. Results: one hundred and thirty-nine families participated, with 95 preschoolers; 56 % were girls, aged 26.2 ± 8.7 months. The basal mean KidMed score was 7.4 ± 1.9 and increased to 7.9 ± 1.9 after the intervention (p = 0.1). The Chilean-MDI score was 6.9 ± 1.8 and 7.1 ± 1.7, respectively (p = 0.09). When separated by categories, there was improvement from low and moderate adherence to optimal adherence in both children and their parents (Chi2, p = 0.009 y p = 0.04). In 58 dyads, there was a positive correlation between the KidMed and the Chilean-MDI index, pre- and post-intervention (Pearson R = 0.3 y 0.34; p = 0.004 y 0.003, respectively). Conclusions: most of these sample of preschoolers and their parents had a moderate adherence to Mediterranean diet, with an improvement after an educational intervention. [ABSTRACT FROM AUTHOR]

Objective: to evaluate the impact of a group program of nutrition education implemented by community workers on food consumption, physical activity and cardiometabolic risk. Material and methods: a randomized trial by conglomerates was performed. The intervention group (n = 246) participated in a program of nine group sessions of nutrition education delivered by community workers and focused on giving healthy habits options and evocation of motivations. The control group (n = 183) received printed information on healthy eating and physical activity. At the beginning of the study and after one year of follow-up, anthropometric measurements of blood pressure, heart rate, lipid profile and glucose were assessed. A questionnaire was applied to collect sociodemographic data, food consumption and physical activity. Results: in multilevel regression models it was observed that the intervention group reported an increase in the frequency of consumption of fruits, vegetables and legumes, increased body mass index and its probability of increasing recreational physical activity was higher; in addition, it reduced its consumption of sweetened cereals, and decreased the probability of hyperglycemia compared to the control group. Resting heart rate increased in both groups, but the increase was lower in the intervention group. Conclusions: nutrition education guided by community workers can have positive effects on cardiometabolic risk, so it would be an alternative to traditional education focused on providing information. The objective of the research was to highlight the significance of the precedence of the Food and Culture subject in the theme of food and nutritional security for the Preparation for Defense discipline in the Food Sciences career. Of the empirical methods, the bibliographic consultation and the analysis of documents were used. It is concluded that with the treatment of the subjects of the Food and Culture subject, it contributes to enrich the theoretical-methodological foundations of the Preparation for Defense discipline and is identified as an interdisciplinary articulation node between the subjects, security: historical evolution of the concept, its polysemy; international and national security. The work proposes a set of actions for the production of viands in the province of Pinar del Río, as part of the implementation of the National Plan for Food Sovereignty and Nutritional Education in Cuba. The objective of this research is to design a system of actions for the production of viands in a sustainable way for human and animal consumption and that allows the development of exportable items in the province of Pinar del Río on the basis of local governance according to territorial development. The methods used were observation, historical-logical, systemic and hypotheticaldeductive. In correspondence with these, the procedures analysis and synthesis, scientific abstraction, induction-deduction and individual and group interview techniques were used, with a predominance of documentary analysis, as well as research and participative action. The offered results focus on the diagnosis of the existing situation in the territory regarding the production of viands, identifying strengths, weaknesses, potentialities and limitations, as well as a system of actions to organize efforts and resources that allow an adequate planning, taking into account the availability, access, consumption and biological use of food. Background: The Interactive Group Nutritional Education method has been used with adults for twenty years at the Nutrition School of Costa Rica University. Objective: To describe the application of the Interactive Group Nutrition Education method in projects for children, applied by Nutrition School students in public schools located in La Unión, Cartago. Materials and Methods: 12 projects were carried out and reviewed between August and November 2016 at nine urban public schools (3802 preschool and school-age children), based on work experiences of the course NU-2030. Childhood overweight and obesity prevalence and problems related to eating habits were studied as starting points. Regarding this method, were analyzed objectives, number, inner construction and sequence from sessions, participants number, materials/activities, barriers and facilitators, evaluation methods, goals and indicators, monitoring and results of the process. Results: Despite the reduced intervention time, some behavioral changes were observed in children. The usage of games promoted an active participation of the children, while the adaptation of the times in the sessions and the follow-up given allowed an appropriate implementation of the method. Conclusions: It is possible to apply this method to the school population; it is important to work on the barriers identified to involve all parties of the school environment. [ABSTRACT FROM AUTHOR]

Introduction: Eating disorders (ED) are a complex pathology in which numerous etiopathogenic factors intervene, and their approach requires an interdisciplinary approach, which is why nutritional education (NE) should be part of both prevention and treatment programs, since NE aims to modify eating behavior to achieve healthier patterns and, for this, the development of nutritional teaching programs is required, directed to the patients and their environment, focusing on the different factors that condition food choices and attitudes towards feeding. NE in these patients is a fundamental therapeutic tool to achieve normalization of eating behavior, since it will allow to contribute knowledge that facilitates the adoption of healthy behaviors, abandon erroneous ideas, and reduce the irrational fear of certain foods, as well as minimize nutritional risk and normalize eating behavior. The prevalence of eating disorders has been increasing over the years and the concern is such that the different autonomous communities, hospitals, and government entities have developed guidelines and protocols that include NE for the prevention and management of the disease. Scientific evidence and organizations such as the American Society of Parenteral and Enteral Nutrition (ASPEN), the American Dietetic Association (ADA), and the Spanish Society of Clinical Nutrition and Metabolism (SENPE) recognize the importance of NE in the treatment of ED and the participation of nutrition professionals in this area. Therefore, the approach to the prevention of ED must be broad, so that it encompasses vulnerable groups and their environment; in the same way, action protocols for treatment must include NE as one of their pillars, through implementation of nutritional education programs to achieve changes in eating behavior, which can be carried out in the different phases or treatment modalities (hospitalization, day hospital, outpatient clinics, etc.) even though each one has different objectives and addresses different theme areas, and they must be developed in a multidisciplinary way with a delegation of clear functions for each professional, in favor of the recovery and stability of the patient and his sociofamilial environment. - Abstract
Introduction: Nutrition education (NE), as part of the treatment of eating disorders (EDs), plays a crucial role in helping patients to change their food attitudes and routines, lose fears, and recover a healthy eating pattern. All these changes may contribute to improving their nutritional status. However, there is a lack of consensus and standardization concerning the procedures to teach it. This work's objective was to elaborate a consensual protocol for NE implementation in the treatment of EDs to help in decision-making regarding which patients are appropriate candidates to receive NE, the agents (family, school community) and professionals involved, and the areas in the healthcare system that are best suited for implementation. - Abstract
Cardiometabolic diseases are highly prevalent at ages where there is greater productivity. This condition represents a public problem that implies its analysis in the field of public policies located in specific contexts, such as the Maracaibo Municipality of the Zulia State - Venezuela. The study proposes to develop the design of a public policy related to nutritional education, through the management of strategic projects to prevent, educate and control the referred diseases. The study was developed during the 2019- 2020 period. Methodologically, it was based on the logical framework approach that allows questioning and analyzing the reality studied, through the organization of a structured research design at one level; prospective - strategic, and implies the systematization of the public problem. The result proposes a didactic community intervention project aimed at reducing the prevalence of cardiometabolic diseases in this region of the country, through a nutritional education program to promote healthy lifestyles. It is concluded that the definition of cardiometabolic diseases as a structured problem in the social sphere is a prerequisite for the design of a public policy, associated with nutritional education projects that contribute to mitigating this condition in the population. It is showed how this management has been oriented in recent months to the issue of food sovereignty and nutrition education and, in particular, examines what is related to local food systems and their practical implementation in the province of Pinar del Río. Introduction: Background: adolescence is a relevant period to educate in healthy eating behaviors. For this purpose it is necessary to obtain expert opinions and reach consensus and prioritize the best methodologies available to educate adolescents on healthy eating. Methods: the Delphi method was chosen to get consensus through repeated iterations of anonymous opinions in two rounds. Participants were experts in nutrition (24), education (14), and cooking (2), selected with the following inclusion criteria: outstanding professional career; interest shown in their knowledge area, and expertise in healthy eating education. The 40 experts in the first round were reduced to 37 in the second round. The questionnaire was mailed in the first round and the results were sent to establish priorities in the second round. The analysis was done with descriptive statistics (%). Consensus was reached if ≥ 75th percentile. Cronbach's alpha coefficient was used to analyze internal consistency, which was considered good for an alpha value higher than 0.7, and moderate for values between 0.6 and 0.7. Results: there was 90% consensus for food habits, culinary skills, and methodologies. In food habits experts prioritized improving access to healthy food and curricular changes at school. In culinary skills they agreed on healthy breakfast and healthy snack preparations; in methodologies the consensus was to educate in healthy eating at breakfast and lunch at school, and on participative activities such as cooking workshops. Conclusions: the Delphi method was useful to obtain consensus and priorities on the methodologies to educate adolescents in healthy eating. [ABSTRACT FROM AUTHOR]- Published

- Abstract
Nutrition education is a tool that promotes the creation of healthy eating habits for life. It allows the individual to receive a solid knowledge to select, prepare and preserve foods of high nutritional value, to experiment with emerging food products and to compare their experiences with family and other community members. Nutrition education is essential for adopting a healthy lifestyle and reducing the risk of both chronic diseases and those transmitted by contaminated food. Social networks and the web have been the ideal vehicle to multiply quality nutritional interventions. With the emergence of the COVID-19 pandemic and regulated containment measures, the spaces traditionally used to teach and provide nutritional education have been disabled, as they are conducive to the transmission of the viral agent. In Venezuela, nutritional education was not prepared for a sudden migration to the virtual mode for multiple reasons, including Internet connection, interruptions in electrical service, availability of electronic equipment, and digital and technological training of the professional in the area. Currently, telemedicine has promoted the transmission of knowledge from the virtual mode to maintain social distance, due to which the exploitation of institutional spaces for information and communication of knowledge in nutrition emerges as a necessity. This research explores the potential of the project-based learning for nutrition education. A case study is carried out with the students and teachers of the third-grade of Primary School using different research instruments such as questionnaires and interviews, amongst others. The results show improvements in the quality of the diet, increasing the consumption of fruits and vegetables, reducing the consumption of sweets and improving the quality of breakfast. Background: Mobile technologies can enhance dietary changes in patients affected by overweight and obesity. Evidence with mobile applications designed and adapted to the Latin American context are, however, limited. Objective: To evaluate the use of NutriMetas as part of a group nutrition education intervention, including anthropometric changes, and satisfaction with the mobile application. Materials and Methods: Randomized controlled study, in which all participants attended group nutrition education sessions, and recorded their goal progress with NutriMetas (experimental group, n=26) or on paper (control group, n=26). Multilevel mixed models were used to assess anthropometric changes (weight, BMI, body fat percentage and waist circumference between groups). Results: The experimental group had a mean weight-loss of 2,1±2,6 kg; in comparison to 0,7±1,6 kg for the control group (p=0,08). Attributes of appearance, effectiveness, efficiency, and ease of use of NutriMetas were rated favorably by a majority of program participants. Conclusions: NutriMetas mobile application was an effective tool when used as part of the group weight loss nutrition intervention. [ABSTRACT FROM AUTHOR]

Introduction and Objectives: It is intended to assess the use and meaning of food-related expressions in Spanish language such as «comida basura» (junk food), «guarrerías» or «snacking». Methodology: A questionnaire has been developed and answered by residents in Spain. Results: An identification has been observed between the expressions «junk food» and «fast food», and a high agreement between «junk food» and «unhealthy food». The main foods included in this term are «refreshing drinks», followed by «hot dogs», «hamburger», «chips» and «pizza». There is broad agreement that the reason «food» is called «junk» is because it «promotes obesity», and because «it can cause cardiocirculatory problems». The term «guarrerías» related to food is known by 96.3% of surveyed, is related to foods such as «candies», «goodies», «buns», «chips», «salty snacks» or «popcorn». The consumption of «guarrerías» is associated with «unhealthy food». «Snacking» is only known by 52.87% of participants, is related to «eat between meals» and «habitual consumption of snacks». Conclusion: The use of expressions such as «junk food» (comida basura) or «guarrerías » can be useful in nutritional and health education. [ABSTRACT FROM AUTHOR]

Child food neophobia is usually associated with a lower consumption of fruits and vegetables, and the latter, is related to a less healthy diet. Different types of programs have been conducted in order to reduce food neophobia and thus increase the intake of fruits and vegetables in childhood. Among them, sensory education programs have shown their effectiveness. On the other hand, various nutritional programs that include garden and food preparation activities are used for the same purpose. However, the heterogeneity of programs and their evaluations, make it difficult to reach firm conclusions about its effectiveness. Several experimental studies have been conducted to determine the effect of each of the stages of preparing food separately: the selection of the recipe, the purchase of food, cooking and the presentation of the plate. While the results are promising, it is necessary to realize studies in real environments to validate such experiments. An example is the EgizuSUK project, carried out at schools and that encompasses different sessions that involve children in the different stages of the preparation of new foodstuffs, and whose results, compared with a control group, seem to be in line with the experimental studies. Finally, in order to promote healthy eating in children, it is considered that programs should include elements of nutrition education, sensory education, as well as culinary skills. Objectives: to gain a better understanding about consumers in order to be able to inform them, improve their protection and promote their responsibility, emphasizing the role of consumer organizations in improving the food literacy of the Spanish population.Methods: more than 2,000 families from all the Autonomous Regions of Spain participated in the "Survey on consumer habits 2016", which aimed to better understand the profile of the new Spanish consumer and encourage responsible consumption. We analysed consumer habits, factors that influence purchase and level of information of consumers.Results: some 65% of consumers choose supermarkets as their usual place of purchase; the purchase of fresh products is imposed on the rest. The data reflect dietary habits of citizens are less healthy than recommended and little knowledge about food allergen-free, ecological or transgenic foods. About 75% acknowledge that the economic situation forced them to change partially consumption and food habits. When selecting a product, people value the most quality and price, factors that together with the proximity of the point-of-purchase influence the choice of place of purchase. 71% of consumers say they look for information about products before buying them and find it on labels. They value information on expiration date, ingredients, price, place of origin and nutritional information. Only 71% difference between expiration date and preferential consumption.Conclusions: for a consumer association, nutrition education should not only contemplate the dissemination of information about food and nutrients, but also provide tools to know what to do and how to act to improve nutrition, creating environments that provide good food options and capabilities that allow to individuals, institutions and companies to commit to adopting healthier practices. The obesity is a disease whose acceptance is difficult. It presents low uptake to treatment, maintenance and nutritional accompaniment. Currently, most of the health-care services in the country, especially private care, are not able to serve all patients, due to the high demand for cost. Facing the need for new services repair, users are compelled to search for other distinguished services, of high quality and low cost. Therefore, the purpose of this study was to verify the main reasons for abandonment of the nutritional treatment proposed in a nutrition clinic-school. The research was a cross-sectional descriptive study carried out through records of the clinicschool and telephone survey, answered by 150 obese people, male and female, from 21 to 60 years old, who have attended at least two nutrition appointments that constituted the sample of this study. The results indicated that the female gender prevailed (78%), classified as first degree of obesity (64%) and age from 41 to 50 years old (29,9%), treated for less than 30 days (56,41%). 84,61% declared having followed nutrition recommendations and never having gone through psychological treatment. The most cited reasons for abandonment were: lack of time, transportation and self-confidence. It is concluded thereupon that the abandonment of nutrition planning occurred mainly for issues related to the patients' lack of time and their financial and travel difficulties. Objetivo: mediante la técnica de consenso Delphi, conocer la opinión de un grupo de expertos en nutrición, educación y gastronomía para buscar consenso sobre metodologías educativas en alimentación saludable, alumnos de tercero a quinto año básico, sus familias y profesores.Métodos: con los resultados de encuestas y grupos focales realizados previamente a niños, padres y profesores, se elaboró un cuestionario que fue enviado a 51 expertos en nutrición, educación y gastronomía en una primera ronda. Los resultados fueron analizados y reenviados en una segunda ronda con las preguntas no consensuadas, obteniendo 38 respuestas.Resultados: hubo consenso en que se pueden cambiar hábitos en escuelas mediante talleres de cocina con chefs o monitores, educación activo-participativa y huertos escolares. Padres y profesores deben tener habilidades culinarias saludables para educar a los niños. Estos deben hacer uso racional del dinero en la escuela. Para ello es necesario cambiar la oferta del kiosko hacia alimentos saludables, o suprimirlo si no es saludable. Los profesores deben capacitarse con talleres de autocuidado y vida sana para educar en alimentación saludable a los niños en horarios de clase con material educativo, talleres de cocina con recetas y aprovechar horarios de desayuno y almuerzo para actividades educativas. Los padres deben participar en talleres para escoger alimentos saludables en lugares de venta y preparar menús saludables. Los niños deben aprender habilidades culinarias simples, preparando y degustando alimentos saludables. Conclusiones: estos resultados son fundamentales para diseñar materiales educativos en alimentación saludable que cambien los malos hábitos alimentarios actuales. [ABSTRACT FROM AUTHOR]

This work makes a historical review of the construction of knowledge about human nutrition, which evolved from simplistic and unconnected ideas on vital functions, focusing on the organism, to more complex concepts and inclusive of nutrition within the framework of the cell theory and its interaction with the environment. A review of various studies on conceptions of students with respect to human nutrition, showing that children are aware of the need for food to live, grow, although they do not have a unified idea of nutrition which integrates the functions of the different systems is also. Taking into account the historical review and the conceptions of the students, we have developed a series of key ideas that guide the progress of the study of human nutrition in primary education and first cycle of ESO. These key ideas clump around four dimensions: a) the concept of nutrition and his purpose; b) the organs and systems that take part in it; c) the nourishing and its importance for health and d) the repercussion of the nourishing process in the environment. In each dimension, three levels of increasing difficulty are considered, all of them associated with a series of questions in order to work on different key ideas about human nutrition. Objective: The main objective is the reduction of early morbidity and mortality associated with metabolic syndrome (MS). Methods: 24h intakes count for 3 days and clinical-nutritional history. Follow-up of 19 visits to monitor the evolution. Results: Following weight loss, the measurement of capillary blood glucose was 59 mg/dl, discontinuing then treatment with metformin; after 7 days without metformin treatment the value was 64 mg/dl. Conclusions: Intervention in nutritional education and lifestyle contributed to almost a 10% reduction of body weight; the patient moved from the obesity BMI range to overweight. Peripheral insulin resistance was also enhanced and the GP in charge decided to discontinue the dosing of metformin as a result. [ABSTRACT FROM AUTHOR]

Background: The dialysis patients have problems in maintaining proper conduct and adherence to the diet prescribed in liquid nephrology consultation. Indicate the interdialytic weight gain, serum potassium and phosphorus along with self-report instruments, markers that have been used as indicators of non-adherence to the diet. Most of the time is not counted in dialysis units with dietitians-nutritionists. Nephrologists and nurses lack the time and / or sufficient to establish and monitor adherence to an individualized diet knowledge. Objectives: The main objective is to determine adherence to dietary guidelines and hemodialysis fluids by DDFQ questionnaire and establish its relationship with the dietary habits of the patients, assessed by test dietary habits and cooking procedures. Secondary objectives are to measure adherence by DDFQ and relate the results to biochemical markers of intake and interdialytic weight gain (GID). Linking monitoring liquid diet and reported by the patient, biochemical markers of intake, interdialytic weight gain and the outcome of DDFQ. Determine membership based on sex, time on hemodialysis, have diabetes or have been transplanted once. And linking dietary habits reported by patients in the test of dietary habits and cooking procedures with patients' knowledge of the guidelines prescribed by nephrologists in consultation. Methodology: Cross-sectional pilot study. Sociodemographic variables: age and sex. Clinical variables: diabetic transplant patient ever, time on dialysis, dry weight and GID. Biochemical markers: serum potassium and phosphorus. Variables adherence to diet questionnaire measures DDFQ. Statistical analysis: SPSS 20 Descriptive, Spearman correlation test, Student t test, Mann-Whitney U test and contingency table. Results: 42 patients; 59.5% male, 40.5% female. Age 63.64 ± 16.17 years. Diabetics 11.9%. GID 1.96 ± 0.70 kg. Potassium 5.08 ± 0.86 meq / l phosphorus 4.71 ± 1.63 mg / dl. DDFQ Measured with 50% of patients not adhering to the diet in 2 days 14 days and 50% have no adherence to liquid in 1 day 14 days. There are correlations between adherence to diet and phosphorus (ρ = 0.304) and adherence to fluid and GID (ρ = 0.413). Conclusions: There is a lack of adherence to dietary guidelines in dialysis patients, in contrast to the accession referred by them. The review of dietary and fluid patterns is necessary in patients with CKD on dialysis. Objective. Evaluate the effect of an intervention with rumba dance and nutrition education on the cardiovascular risk factors in a group of people with metabolic syndrome in a rural area of Colombia. Methods. Controlled, randomized clinical trial that included 59 people between 30 and 60 years of age with metabolic syndrome. The intervention group (n = 30) participated in a 12-week exercise program of aerobic rumba (60 minutes, 3 days per week) and muscle-strengthening work (30 minutes, twice a week). Each week the group also received two hours of nutrition education. The control group (n = 29) continued with conventional care. An assessment was made of the effect on the cardiovascular risk factors (physiological, metabolic, anthropometric, and nutritional) in the intervention group. Results. The intervention group showed a reduction in systolic blood pressure (-10.0 mmHg; CI95%: -14.3 to -5.6, P < 0.001), diastolic blood pressure (-4.8 mmHg; CI95%: -8.4 to -1.1, P < 0.05) and overall cardiovascular risk at 10 years (-1.5%; CI95%: -2.7 to -0.3, P < 0.05). Furthermore, there was an increase in peak oxygen consumption (1.7 ml O2.kg-1.min-1; CI95%: 0.1 to 3.3, P < 0.05) and muscular strength (P < 0.001). Positive changes were also observed in body composition, caloric intake, and consumption of macro and micronutrients (P < 0.05). No differences were detected between metabolic variables in the two groups or in inflammatory markers (P < 0.05). Conclusions. An exercise program with rumba and muscular strengthening, combined with nutrition education, favorably modifies cardiovascular risk factors in people with metabolic syndrome. [ABSTRACT FROM AUTHOR]
