Objective. To assess the fatty acids composition (FA) in Wagyu beef and its crosses with Angus, Beefmaster, Brangus and Hereford, and to analyze its relationship with genetic markers related to lipid metabolism. Materials and methods. 111 Longissimus dorsi samples were collected and grouped by genetic group. FA were extracted and quantified in a gas-liquid chromatography and DNA markers theoretically associated to FA were typed. Hardy-Weinberg equilibrium and linkage disequilibrium were examined, the effect of crosses and the effect of genotypes were estimated. Results. The crosses did not show substantial differences in FA composition. Nine SNPs showed association with FA composition, and a significant effect was found in the SLC2A4 marker ss62538460 which influenced SFA, MUFA and MUFA/SFA; PLTP ss77832104 and IGF2R ss77831885 markers, influenced C16:0, MYOZ1 ss77832104 on C17:1 and PPARGC1A c.1892+19 on C18:2. In addition, previously described effects of MEF2C ss38329156 and SCD c.878 were supported. Conclusions. These results are first evidence on FA deposition in Wagyu cattle and their crosses, and proposes some loci in candidate genes with the possibility of implementation in assisted selection strategies. Background: Forage and feedstuff technologies with additives contributed to more efficient nutrition of herbivores. Aim. To evaluate the productive performance and organoleptic quality of meat from covies fed forages and feedstuffs containing various levels of oregano. Methods: This paper consisted of two studies, one on El Romeral Farm, Guachapala Canton, the University of Cuenca, located on S 2o45'54", W 78o42'58", 2 254 m above sea level. Another study was developed in sheds belonging to Molihers food processing factory in Ochoa Leon, on S 2o49'48", W 78o59'12", 2 600 m above sea level. The control (T1) consisted of feeds for covies (Molihers); the other treatment (T2) relied on phytogenics at a rate of 2 kg/ton. Treatment 3 (T3) used phytogenics (3 kg/ton), whereas treatment 4 (T4) contained phytogenic products (5 kg/ton). All the treatments had 13.5% protein. A completely randomized experimental design was used, along with one-way ANOVA. The final weight was measured after 115 days. Results: No significant differences were found between the treatments for the final weight in the two trials. There were no differences in the organoleptic quality indexes, except for the color and crust for the Molihers in T3 and T4. Conclusions: The nutrition of covies using alfalfa and feeds containing phytogenic product additives such as oregano at 3 and 4 kg. t dose of the feed proved effective. The final weights were similar to the control animals, and the organoleptic characteristics of meat were not affected, due to the organic principles in the oregano supplemented. With this study were determined the risk profile of Salmonella ssp. and sanitary quality of a meat packing company in the capital. For this, hygienic-sanitary inspections were made as described in the CNICA Sanitary Inspection Guide. Knowledge level of handlers was evaluated by means of a survey. To predict the growth of Salmonella spp. in the plant scenery, the Pathogen Modeling Program (PMP) was applied. Risk characterization was estimated with the Ross-Sumner program. Although the hygienic conditions of the facility reached a score of 82 points and the results of the survey were satisfactory, with 85. 9% of correct answers, insufficiencies and abuses were detected in the management of temperatures during the process that could cause the microbial growth. Through the model used, it was possible to predict that when the hamburger dough, with 2.1% NaCl and pH 6.4, is kept at 25 °C, the number of cells reaches the infective dose in 4.1 h, which represents a danger. Finally, through the Ross-Sumner program, a risk for consumers of 67% was estimated, which reflects the probability of occurrence of a foodborne disease outbreak due to consumption of hamburgers, in the event of contamination by Salmonella from raw materials, handlers or cross-contamination during the process. Objective: To determine the multidimensional quality, as well as the reasons for the consumption of rabbit meat from the perspective of the consumer. Methodology: A structured survey was used to 177 decision-makers of family food consumption, to analyze the data a database was created and subsequently a multivariate treatment was given through a factor analysis by principal components followed by a cluster analysis. Results: The results show special interest in two dimensions of quality; the nutritional and health as the main reason to value the consumption of rabbit meat, while the traditionality in the preparation of dishes is not observed. Limitations: Because it was carried out during the pandemic, a greater number of consumers could not be counted on. Conclusion: The perception of quality of rabbit meat is positively influenced by the nutritional, sanitary and technological dimensions, while the dimensions of use and traditionality are perceived as limiting since said meat has not been positioned in the Mexican gastronomic culture. This work aims to emphasize the importance of the management practices acquired in the production of swine to provide well-being, establishing that swine farmers and slaughterhouses understand the concept, ways to identify and guarantee well-being, in addition to carrying out the correct transport at slaughter to avoid loss of efficiency and improve meat quality for consumers. Swine welfare can be assessed using behavioural indicators such as vocalization. For proper pre-slaughter management, consideration should be given to how the swine are handled and how to transport them. The swine welfare must be guaranteed in all production processes, in order that the importing and exporting markets achieve good economic results and meet consumer demands. Producers and slaughterhouses must know and use welfare protocols and legislation, apply behavioural comments as well-being indicators, such as swine' vocalizations. In addition, adopt appropriate management measures throughout the pre-slaughter process, especially during the transport of animals to the slaughterhouse, as this will prevent losses to producers and industries due to damage to the quality of pork, in addition to promoting swine welfare. Objective. To quantify some meat quality physicochemical traits in Longissimus thoracis from hair sheep in southeast Mexico, and test if any of these traits effectively distinguish between genotypes. Materials and methods. Animals were 18 male lambs from the Dorper (Dp, n=6) and Katahdin (Kt, n=6) breeds, and F1 Dorper sire x Katahdin dam (DpxKt, n=6) crosses. They were slaughtered at 29.5 ± 4.2 kg average weight, at 6.2 ± 0.2 months. Proximate composition and physicochemical analyses were run of Longissimus thoracis samples, and a canonical discriminant analysis run to identify traits that distinguished between breeds. Results. Genetic group had no effect (p>0.05) on moisture (%), crude protein (% CP) and myoglobin content. It did affect (p<0.05) intramuscular crude fat (% IMF), ash (%) and cholesterol content. IMF (4.05%) and cholesterol (92.63 mg/100 g) were highest in Kt. Ash content (1.01%) was lowest in DpxKt. Values for pH did not differ between genetic groups and were within normal limits. Cooking and drip losses were highest in DpxKt. Chroma, L* and a* values were highest in Kt, providing fresh meat from this genotype a desirable bright red color. The distinction analysis identified drip loss, IMF, Chroma and a* as effectively separating the genotypes. Conclusions. Genetic group influenced intramuscular fat, cholesterol and ash contents, and four traits served to distinguish between genotypes. These are important data for producers and marketers as they aim to create fresh meat products with specific meat quality physicochemical traits that meet demand in a diversifying market that includes grilling and gourmet cuts. The rabbit produces healthy meat, generating low methane emissions, and without competing for grain and other food resources for humans, hence adequately responding to the principles of the bioeconomy. For these properties to have a positive impact on society, it is necessary to promote the production and consumption of rabbit meat. Therefore, we evaluate the quality of carcass and meat of New Zealand breed rabbits was assessed in 12 males reared under commercial conditions and slaughtered at two months of age under standard conditions. The average weight of animals at slaughter was 2.6 kg, and their carcass had a yield, length and compactness index of 52.6%, 32.6 cm and 41.29 g/cm, respectively. The carcass measurements offered average percentages of 38.2%, 27.4%, 18.7% and 14.8% for the legs, loin, thorax, and shoulders, respectively. The pH of the meat was at normal values and the pressure and cooking losses and tenderness showed mean values of 12.8%, 26.6% and 3.1 Kg/cm2, respectively. The chromatic variables showed mean values of L * = 46.9, a * = 0.54 and b * = 8.14. These results are in line with those reported for industrial breeds. [ABSTRACT FROM AUTHOR]

The rabbit industry in El Salvador is a little explored area, since the rabbit considered more as a pet and not as a protein of high nutritional value for the human being, which has advantages over other species such as the high rate of fertility and the lit tle space needed for its development. However, as in every exploitation the aspect of costs per feed and the respective gain in weight of the animal is one of the factors considered since it represents one of the highest costs of production. Alternatives to concentrate feeding such as hydroponic crops, specifically corn (Zea mays), can have a positive impact on local producers because the country does not have well established dry and rainy seasons, making it difficult for farmers to harvest. The research carried out using three groups of four rabbits each one of the age of a month and a half. Since at this age a greater food conversion obtained with the diet based on concentrate. The control group assigned a unique diet of concentrated super rabbit of grea ter commercial consumption to a ration of 120 grams per day. The experimental group, which given a diet based on hydroponic cultivation of corn (Zea mays) of, own elaboration to a ration of 120 grams. A third group to which added concentrated 60 grams and hydroponic cultivation of corn (Zea mays) 60 grams; this with the objective of determining which of the three groups gains greater weight and meat quality. Objective. To study meat and carcass quality in broilers fed Roystonea regia (royal palm nut) fruits meals. Materials and methods. A total of 40 broilers distributed according to a completely randomized design were used in four treatments: control (corn-soybean paste) and the inclusion of 5, 10 and 15 % royal palm nut meal. The carcass yield, abdominal fat and meat quality (technological and fatty acid composition (FA)) were studied. For the appearance parameters, a non-parametric analysis of simple classification was performed. Results. There were no differences between treatments for carcass weight and pH at 45 minutes and 24 hours postmortem. There was a reduction in abdominal fat by 5 and 15 % compared to the control (13.00 and 11.96 vs. 17.02 g / kg), while 10 % did not differ from the rest (15.10 g/kg) (p<0.01). There were no differences in color, except for the luminosity in the drumstick that was superior with the inclusion of 10 and 15 % (48.62 and 49.22) with respect to 5 % (45.32) and the control did not differ between treatments (47.53) (p<0.05). The composition of FA in the different edible portions showed that the broilers deposited oleic, linoleic and palmitic acids in higher proportions. Conclusions. The inclusion of royal palm nut meal in broiler diets does not change the carcass yield, reduces abdominal fat and positively affects meat quality indicators. [ABSTRACT FROM AUTHOR]

Beef consumer's perception is complex and demands multivariate analyses to understand their structure and concept. This study aimed to evaluated beef consumer's perception and willingness to pay related to nutritional information. A total of 400 of structured surveys were applied. Surveyed were requested for information related to socioeconomic status and their perception about intrinsic and extrinsic beef cues, healthy consumption, nutritional information and willingness to pay, on a Likert scale. A structural equation model (SEM) and Chi-square were used to analyze. SEM showed a successful fit (CFI=0,978, RMSEA=0,17). The beef consumer's perception was conceptualized as intrinsic (color, tenderness, and water holding capacity), extrinsic (price, animal welfare, and trusted), and healthy consumption. Women, consumers between 37 and 55 years old, and employees were consumers with a better beef quality concept. [ABSTRACT FROM AUTHOR]

In the last decades, Brazilian swine farming has undergone modernization processes in several production segments, reaching technical and economic indices similar and, sometimes, better to those obtained in more traditional countries in the creation, especially through the production techniques that have emerged in recent years. Despite the Northeast region having the second largest swine herd in Brazil, informal farms are still found, without effective control of production and with dubious hygienic-sanitary conditions, making it a negative point when choosing meat and meat products, which on low consumption in the region. From this, the objective of this study was to evaluate the hygienic sanitary conditions of swine meat sold in free fairs in the Vale do Paraíba, Alagoas, Brazil. Twenty samples were collected from free fairs in four municipalities in the Vale do Paraíba. The samples were collected aseptically in sterile containers and placed in an isothermal box, containing recyclable ice, and sent to the Laboratory for microbiological analysis. High counts of aerobic mesophilic microorganisms were observed, ranging from <1.8x105 to >2.5x106 CFU/g, and coliforms were found at 45 °C above the values allowed by legislation in 80% of the samples, the presence of Staphylococcus was verified positive coagulase in 25% of the samples. Thus, the hygienic-sanitary conditions of pork from free markets in the municipalities of Vale do Paraíba, Alagoas, Brazil, may reflect the way in which they are subjected to handling and commercialization. In addition, the prolonged exposure of this food without any type of refrigeration, contributes to high levels of microbial contamination, which can cause risks of food poisoning, deterioration, and loss of meat quality for the final consumer. Objective. To evaluate the quantitative characteristics of the carcass and chemical composition of the meat of purebred Santa Inês (SI) lambs and crosses with Dorper (DO-SI) or Texel (TX-SI), finished in feedlot or semi-feedlot, through a meta-analysis. Materials and methods. Virtual databases such as Google Scholar, Science Direct and Scielo were used to select scientific articles published from 2000 to 2019. Keywords such as genotype, lambs, carcass characteristics and meat quality, both in Spanish, Portuguese and English were used as criteria for the inclusion of articles. From each genetic group were evaluated: animal performance, quantitative characteristics of the carcass, carcass cuts and chemical composition of the meat. These variables were included in the analysis from 37 scientific articles. Results. Final body weight, hot carcass weight, cold carcass yield and muscle percentage do not differ between the different genetic groups evaluated. DO-SI lambs showed higher dry matter intake, daily weight gain, loin eye area and loin percentage. Chemical composition was not influenced by the genetic groups. Conclusions. In a tropical and subtropical environment, purebred lambs SI finished in feedlot or semi-feedlot have quantitative characteristics of the carcass and chemical composition similar to DO-SI and TX-SI lambs. Antecedentes: La ceba de los cerdos enteros tiene las desventajas del olor sexual en la carne y los problemas de bienestar por el comportamiento agresivo y la monta. La castración quirúrgica reduce estos comportamientos y facilita el manejo, incrementa el peso, mejora las cualidades de la carne y la libera de olor y sabor a verraco. Sin embargo, es una práctica polémica ya que causa heridas, dolor, estrés, somete a los animales a riesgos por infecciones, inflamaciones crónicas y complicaciones post-operatorias. Objetivo. Examinar el estado actual de la inmunocastración como alternativa viable a la castración quirúrgica de los cerdos machos. Desarrollo: La inmunocastración es una opción segura, comercialmente factible, amigable con el bienestar animal y viable para la producción sostenible de cerdos, pues favorece la calidad de la carne, la rentabilidad económica y la protección del medio ambiente. Sin embargo, su aplicación es insuficiente, excepto en Australia, Brasil y Nueva Zelanda y predomina la castración quirúrgica en la mayoría de los países. Conclusiones: La inmunocastración es una tecnología relativamente reciente, su aceptación, introducción y extensión pueden generar incertidumbres y resistencia por parte de los diferentes actores de la cadena de producción porcina. Esta práctica demanda de los productores mayor disciplina tecnológica para obtener los beneficios esperados. La extensión de su uso requiere su aprobación por todas las partes interesadas que integran la cadena de producción, además, mercados que demanden la carne de estos cerdos y de actores dispuestos a comercializarla. This study examined the growth, carcass characteristics, weight of internal organs, meat quality and meat proximate composition in six genotypes of chickens reared in Andean region of northern Peruvian, with intensive system, using 600 chickens one-day-old, divided in to six equally sized groups. The comparison included two Creole chicken breeds from Peru, improved and pure, and four imported chicken strains (Hubbard Red, Hubbard White, Native French, and Babcock). The animals were fed without restriction and slaughtered 13 weeks of age. Chickens of the imported strains, especially Hubbard chickens were heavier at slaughter than creoles breeds. Proportions of cuts: thigh, drumstick and head were similar among genotypes, carcass yield, breast meat and abdominal fat were lowest in the Creole breed and Native French. There were no statistical differences (p > 0.05) for meat pH, drip loss, and cooking loss in response to genotype. The breast meat of the two Creole breeds had lower contents of fat compared with that of the Hubbard strains. [ABSTRACT FROM AUTHOR]

This study aimed to evaluate productive indicators of growth, carcass aspects and the proximal composition of the meat of the Guinea Fowl (GF) reared under tropical conditions in Mexico. It was carried out from July 2016 to May 2017. The productive behavior (PB) of 100 keets in 14 weeks was evaluated and for the trait of the carcass (TC) samples of 5 males and 5 females were analyzed. It was evaluated in PB, Weight gain (WG), feed consumption (FC) and feed conversion (FCO) and in TC, carcass yield (CY), water retention capacity (WRC), pH and color. Descriptive statistics were performed and a generalized linear model (GLM) was used to detect differences between sex, using the SAS statistical package (Ver. 9.4). The final average weight was 1161.56 ± 94.82 g with a WG of 10.98 ± 0.95 g/bird, FC of 62.04 ± 2.48 g and an FCO of 5.65 ± 0.57 g. Males were superior (79.3%) in the CY, without statistical differences (P> 0.05). The WRC and the pH were very similar. GF production is an alternative meat supply being a source of animal protein. Antecedentes: las buenas prácticas ganaderas (BPG) se han constituido en un pilar técnico-científico que ha permitido el avance en el sector primario de la producción ganadera en Colombia, sin embargo se desconoce el estado actual de este proceso en nuestro país. Objetivo: realizar una revisión sistemática de literatura sobre el estado y la implementación de buenas prácticas ganaderas en la producción primaria bovina a nivel de Latino América. Metodología: se realizó una indagación en buscadores tales como; Science Direct, Sistema de información Científica Redalyc, Proquest, Scielo y Google Scholar; de los cuales se lograron obtener 202 artículos bajo los criterios de inclusión como especie bovina, año (2018 - 2022) e idioma (inglés y español), y criterios de exclusión cuyo objetivo de estudio difiere de la especie bovina, año de publicación inferior a 2018, idioma diferente a español e inglés. Resultados: a partir de la búsqueda en las diferentes bases de datos, se obtuvo un total de 202 registros, de los cuales 50 se eliminaron por ser duplicados, los 152 estudios restantes se sometieron a un proceso de depuración con base en el tema de profundización del texto, excluyéndose 13 documentos; por último, se realizó una tercera selección a partir de 139 artículos, donde se descartan 76 que no relacionaban los criterios de inclusión. En total se obtuvieron 63 artículos que se incluyeron en la revisión sistemática por medio de la metodología Prisma. Se evidenciaron variables asociadas al tipo de producción ganadera, las prácticas de Bienestar Animal y las practicas sanitarias como vacunación y desparasitación. Conclusiones: el análisis permitió evidenciar la aplicación de las BPG y las normativas vigentes a nivel de Latino América que a pesar de tener marcos normativos diferenciales en los países, se rigen bajo pautas similares que incluyen las prácticas de manejo, nutrición-alimentación, sanitarias y de bienestar que garanticen mejores indicadores productivos. The objective of the present work was to study the effect of the slaughter time about some carcass features and quality of old Creole goats. The study was carried out in the arid south Central Plateau of Mendoza. 30 old Creole goats were used, which were fed on a typical natural grasslands of the region, without supplementation and with normal breeders' management. The first group (GI n = 15) was slaughtered in April at the return of the summer, and the second (GII = 12) was slaughtered in October at the beginning of the regrowth of natural grassland. The results found showed that old goats slaughtered in April presented greater live weight at slaughter, higher carcass performance, greater amount of meat, better muscle: bone ratio, higher level of intramuscular fat and a similar amount of bone in both groups of goats. From the results of this study, it can be concluded that the performance and composition of slaughtered old Creole goats' meat at the return of the summer present higher quality standards to meet demand for this type of product, and that it could be commercially exploited as a lean alternative. The current systems of beef production must be competitive and oriented towards meat quality as a marketing concept. The objective of this investigation was to evaluate on grazing steers the effect of the genotype and nutritional supplementation finishing on growth, carcass composition, and cutability performance. The evaluation period was of 126 days during 2013. The research was conducted at the "La Vega farm" located in San Carlos, Alajuela, Costa Rica. In the investigation an analysis of production characteristics was performed, and the following were determined: daily weight gain, backfat, marbling, muscle depth, packing plant live weight, weight loss from farm to abbatoir, hot carcass weight, dressing %, muscle conformation, round circumference, carcass lenght, rib eye area, backfat, marbling, pH and temperature at 24 h and chill shrinkage. The genotypic component of cattle and the type of received supplementation affected the carcass traits. Brahman*Charolais (F1) crossed genotypes showed better performance than Brahman and / or Charolais, regarding characteristics such as muscle depth and yield in meat cuts, tenderloin, inside round and sirloin cap. The high feed costs in the production of rabbits through the use of commercial food, make that are looked for alternatives of feeding for this species, as it can be the "palo escrito" plant (Dalbergia palo-escrito sp). The leaves of this plant contain high amounts of protein, it is perhaps for this reason that this gender is part of their diet. The effect of replacing the proportion of alfalfa per "palo escrito" in the diet of rabbits for fattening on the quality of the carcass and the meat of rabbits was evaluated. The results showed that the use of "palo escrito" in the diet of rabbits is totally harmful, since, in the first week of treatment, all the animals died, even though some beneficial effect has been reported in some other animals. Regarding the use of alfalfa or maize in multinutritional diets, the rabbits treated with maize showed a significant difference in the productive parameters and in the quality of the channel with respect to those treated with alfalfa. It is necessary to continue studying the "palo escrito" because possibly its secondary metabolites may have the beneficial effect if they are included as additives. [ABSTRACT FROM AUTHOR]

Carcass composition and meat quality of indigenous sheep of Benin are little known. The present study aims to evaluate carcass characteristics, and technological and sensory properties of the meat of Djallonke and Sahel sheep bred raised under the traditional breeding system. Twenty-two ram carcasses were then sampled at the slaughterhouse of Cotonou. These carcasses came from Djallonke and Sahel sheep that were eighteen months old on average. Live weight, hot carcass weight, carcass joints weight, offal weight and carcass measurements of Sahel sheep were significantly higher than those of Djallonke (p<0.001). Proportion of carcass joints of Djallonke was higher than the Sahel except for the shoulder. Meat color, water holding capacity, shear force, juiciness, flavor, and note of consumer assessment score did not differ significantly according to the breed (p>0.05). Carcass temperature in the cold room decreases progressively to 0 °C, at 438 mn and 526 mn of chilling respectively for Djallonke and Sahel sheep. Carcass pH 1 hour post mortem of Sahel sheep (6.85) was higher than the one of Djallonke (6.67). Deep temperature of carcass in cold room decreased progressively to reach 0 °C, respectively at 438 mn and 526 mn of colding. Carcass pH (1 hour post mortem) of Sahel sheep (6.85) was higher than the one of Djallonke (6.67). At 24 hours post mortem, the pH recorded became 6.15 in Djallonke sheep and 6.23 in Sahel (p<0.05). pH recorded at 36 hours and 48 hours did not differ significantly by genetic type (p>0.05). - Abstract
The objective of this research was to evaluate the productivity of beef in confinement in Mexico, through criteria of efficiency, effectiveness, quality and economy, in five entities (Nuevo Leon, Tamaulipas, Coahuila, Sonora and Baja California); considering five scales of production (3,000, 5,000, 6,000, 7,000 and 7,500 bovines completed per cycle). The average initial live weight was 267.00 ± 35.99 kg and 470 ± 11.73 kg. The average production cycle was 136 ± 22 d and 2.67 ± 0.34 cycles per year. Efficiency was 7.84 ± 1.39 kg feed/kg and 61.20 ± 0.84 % of carcass yield, efficiency 99.55 ± 0.26 %, 100 % quality and economy 3.36 ± 1.89 $/kg of net income. The benefit-cost ratio was 1.08 ± 0.03, with a marginal investment average of 17,815.98 ± 4,795.81 Mexican pesos per bovine. The conclusion is that the economic activity presents an average productivity of 63.50 ± 15.20 %. [ABSTRACT FROM AUTHOR]

- Abstract
Rabbit breeding is an activity that is growing worldwide in recent times, due to its easy handling, the speed with which they reproduce and the possibility of generating animals for sale or self-consumption. Keeping rabbit's digestive system under appropriate pH conditions means that the food consumed can be better digested and nutrients are available for absorption, and pH can be a triggering factor that encourages the growth of microorganisms that may affect rabbits' health. Here we evaluated the quality of the carcass and rabbit meat in animals treated with vinegar and fermented water in consumption water, in order to improve the functioning of the digestive system, to obtain better quality characteristics of the carcass and the meat. The results showed that there are no significant differences when using vinegar or fermented water in the meat quality and the carcass in rabbits, only a significant difference in color was observed in the value of L (P<0.01) in the treatment which consumed vinegar; so it would be important to use a fermented drink with an acid-lactic bacterium isolated from the rabbit's own digestive system and observe its action on the quality of meat and the carcass. Introduction. The ante mortem lapses in Colombia are long, animals do not eat for more than 40 hours in average and this produces high stress levels that affect the quality and the quantity of the meat. Objective. Analyze the effect of the ante mortem waiting time on the performance in carcass and the pH in bovine carcasses. Materials and methods. 78 animals were studied (commercial Brahman) with ages between 24 and 27 months and an average weight of 465 kg. They were subjected to two fasting lapses: a short one (20 hours) and a long one (40 hours). The living weights were registered in hot and cold carcass conditions, and the pH was measured post mortem, after 24 hours. Results. The effect of the ante mortem time of wait on the performance in carcass and the decline of the pH 24 hours post mortem in bovine carcasses were analyzed. Significant differences in the pH decline 24 hours post mortem were found, and it was observed that the decrease rate is almost twice in animals with long fasting and the stabilization level is lower. As for the performance in carcass, there were no significant differences in the treatments. Conclusions. The long ante mortem waiting lapses affect the normal decline of the pH 24 hours post mortem, and this affects the meat's quality. [ABSTRACT FROM AUTHOR]
