The present study carried out in the Metropolitan Area of Bucaramanga is an attempt to identify traditional cheeses existing in the market. For this purpose a total of 370 consumer surveys were applied. The results indicate that, from the point of view of consumers, the following cheeses are seen as traditional: the cheeses: leaf, double cream, peasant, Chitagá, curd, goat cheese, mozzarella, cream, "costeño", pear, salty, "onzagueño" and "paisa". In general, texture and flavor are the two main attributes that stand out from traditional cheeses. Also, based on the main descriptor of the cheese that each consumer considers as traditional, these products can be organized into three groups. One segment is made up of cheeses with a product traditionality link of regional origin. Another segment would be made up of more industrialized cheeses, but which are considered traditional. Finally, the "costeño" cheese, through its salty attribute, is the most differentiated on the market. [ABSTRACT FROM AUTHOR]
