Maturity at harvest is a determining factor in fruit storage potential, especially in such perishable species as plums (Prunus salicina L.). However, harvest´s logistics is very complex, and a large percentage of fruits are harvested at a more advanced stage of maturity than the optimum recommended for long storage. Treatment with 1-MCP has shown to be effective in reducing the post-harvest deterioration rate of Japanese plums, but the effectiveness of this treatment may be reduced in late harvested fruit. The aim of this trial was to determine the efficiency of treatment with 0.4 µL L-1 of 1-MCP in Larry Ann plums harvested at 4 different maturity stages. The results showed that the treatment was effective in reducing the ripening rate of the fruit at all harvest timings. The duration of this effect and the number of parameters affected decreased as harvest was delayed. In maturity stage 1 (M1, ~62 N) and maturity stage 2 (M2, ~58 N), 1-MCP delayed ethylene production rate during shelf life after 30, 40, and 50 days of storage at 0 ºC and reduced loss of flesh firmness, and acidity. At the maturity stage 3 (M3, ~50N) 1-MCP delayed ethylene production rate during shelf life after 30 and 40 days of storage at 0 ºC and maintained higher flesh firmness values. In fruit harvested at the maturity 4 (M4, ~35 N), 1-MCP did not affect ethylene production rate, but reduced loss of flesh firmness during shelf life, supporting the hypothesis that the treatment has a direct inhibitory effect on softening enzymes, independent of ethylene.

O experimento foi conduzido com o objetivo de obter informações sobre a influência do estádio de desenvolvimento do fruto (época de coleta) e do tipo de congelamento sobre os componentes nutricionais e de textura da polpa de pequi (Caryocar brasiliense Camb.). Os frutos foram coletados na árvore, antes da queda natural; no chão, após a queda natural, e após a queda natural, mantidos três dias em condição ambiente. Em cada época de coleta, após a retirada da casca dos frutos, um grupo de putamens foi congelado diretamente em freezer, e outro, congelado em nitrogênio líquido, antes do congelamento em freezer. Após seis meses, foi retirada a polpa dos putamens para a análise dos teores de carotenóides totais, ß -caroteno, licopeno, vitamina A, proteínas e lipídios; teor de celulose, hemicelulose, pectinas total, cálcio ligado à parede celular e total, atividade da pectinametilesterase e poligalacturonase. Os resultados indicaram que os teores de pigmentos, lipídios, proteínas e atividade da PG aumentaram com o avanço do estádio de maturação dos frutos. Por outro lado, houve diminuição no teor da celulose com avanço do estádio de maturação, enquanto os teores de hemicelulose e cálcio não foram influenciados pela idade do fruto. O tipo de congelamento interferiu nos teores de pigmentos, maiores na polpa congelada em nitrogênio líquido, e na atividade da PG, maior na polpa congelada apenas em freezer. Por último, os resultados mostraram que os frutos coletados na árvore são nutricionalmente inferiores aos coletados após a queda natural.The experiment was carried out with the purpose to obtain information about changes in the constituents responsible for nutritive and texture traits of pequi pulp related with harvest time and types of freezing. Fruits were collected in the tree before natural fall, in the ground after natural fall and in the ground three days after natural fall. In each harvest time, while one batch of the putamens was frozen in liquid nitrogen and afterwards stored in a freezer, another batch was frozen directly in the freezer. After six months the following analyses were performed in the pulp: contents of proteins, total carotenoid, b-carotene, licopene, vitamin A and lipids (nutritive characters); content of cellulose, hemicelluloses, total pectin, total and bound calcium, activity of polygalacturonase (PG) and pectinmethilesterase (PME) of the cell wall. The contents of pigments, lipids, proteins and activity of PG were the highest in the most advanced stages of maturation of fruits. On the other hand the content of cellulose decreased with the advanced stages of maturation whiles the content of hemicelluloses, total and bound calcium were not affected at the stages of maturation of the fruits. The types of freezing affected the contents of pigments; higher in the pulp frozen in liquid nitrogen; and the activity of PG was higher in the pulp frozen directly in the freezer. The fruits collected in the tree showed the lowest eating quality as judged by their lowest contents of pigments, protein and lipids. The results indicate that the most appropriate harvest time to higher quality of pequi fruits is after natural fall.

Harvest time is one of the main factors related to guava fruit postharvest losses. It is subjectively determined by fruit size and skin color, without any consensual standardization among the growers. The use of maturity indexes enables growers to know the ideal harvest time according to each market situation. The objective of this work was to determine the maturity indexes to identify the harvest time for guava fruit cv. Kumagai and Paluma. Skin color, fruit firmness, soluble solids, titratable acidity, ratio and ascorbic acid were analyzed. The most adequate maturity indexes for 'Kumagai' guava fruit were skin color and pulp firmness, while for 'Paluma' guava fruit, the best indexes were skin color, pulp firmness, titratable acidity and ratio.O ponto de colheita é um dos principais fatores de perda pós-colheita e, em goiaba, este é determinado de maneira subjetiva através da coloração externa e tamanho do fruto, não havendo uma padronização consensual entre os produtores. A utilização de índices de maturação permite que se conheça o ponto de colheita ideal para cada situação mercadológica. Este trabalho objetivou determinar tais índices que permitam identificar o ponto de colheita em goiabas 'Kumagai' e 'Paluma', em cinco estádios de maturação. Avaliaram-se cor da casca, firmeza, teor de sólidos solúveis, acidez titulável, ratio e teor de ácido ascórbico. Os índices de maturação mais adequados para 'Kumagai' foram cor da casca e firmeza da polpa, e para 'Paluma', foram cor da casca, firmeza da polpa, acidez titulável e relação sólidos solúveis/acidez titulável.
