Abstract The aim of the study was to develop and analyze various black chokeberry (Aronia melanocarpa (Michx.)) products using waste-free treatment technology. The chemical composition of black chokeberry berries, and various processed products made from them (juice, pomace, pomace water extract, dried sweetened pomace, and syrup) are described. The effect of activated carbon (AC) on the reduction of proanthocyanidins content in black chokeberry berry juice and water extract and the effect of ascorbic acid additive on the sensory properties of dried sweetened pomace were investigated. Principal component analysis (PCA) resulted in one compact group of products representing the solid products of black chokeberry, and the first two factors of the PC1 (total anthocyanins and flavonoid content) described 98.38% of the total variability. It was concluded that AC allowed for reducing the content of proanthocyanidins in juices but did not affect their taste. However, reduced proanthocyanin content reduces the functionality of the products, and this information must be considered in new product development. The addition of ascorbic acid to dried sweetened black chokeberry pomace did not significantly affect the degree of liking of dried sweetened pomace. Black chokeberry products developed by waste-free technology are rich in biologically active compounds and could be used to produce new functional products.

Distance learning is a form of education that is perfectly suitable for the implementation of contemporary models of education in the information society. This fact relates to the tremendously progressive development of information technology and the increasingly more promising prospects for education. The present study aims to analyze the influence of professional self-improvement on the effectiveness of teachers’ work in the distance mode. Based on an empirical study using the survey method, the levels of competencies comprising competence in the organization and conduct of distance learning among teachers in the information-technical and pedagogical sphere are identified. The results obtained testify to the need to improve the pedagogical qualifications of teachers in the direction of improving competence in the field of information computer technologies and their application in education, as well as in the field of Internet technologies and distance learning.

Abstract Vegetable soybean (Glycine max (L.) Merr.) is a seasonal vegetable and has limited shelf life. The present study aimed to determine the use of ozonated water as a sanitizer in order to extend the shelf life of blanched edamame and also to study the effect of ozonation on the quality indicators of packaged soybeans. Raw unwashed beans were used as control to test treatments beans washed and blanched in water bath at 93 ± 2 °C for 2 minutes; part of them was cooled in ice cold distilled water and part was cooled in ozonated ice cold distilled water. Chilled edamame was packed in a polypropylene bag, hermetically sealed and stored at the temperature of +4.0 °C for 21 days. The use of ozonated water for cooling the blanched edamame effectively inhibited the development of harmful microorganisms without significant color changes of pods and beans. The data obtained from the analytical hierarchy process revealed that the ozonated water used to cool blanched edamame compared to pure water did not significantly affect the change in phenolic content in 11 days of storage.

PROBLEM I METODY BADAWCZE: Problemem badawczym rozpatrywanym w niniejszym artykule jest konieczność reorganizacji życia codziennego instamatek w okresie pandemii. Przeprowadzone badanie miało charakter jakościowy, interpretatywny i zostało zrealizowane za pomocą metody analizy treści publikowanych przez instamatki. PROCES WYWODU: W pierwszej części dokonano przeglądu literatury dotyczącej roli mediów społecznościowych w życiu codziennym kobiet, w tym tych, które posiadają dzieci, oraz przemian sytuacji zawodowej matek w 2020 roku. W drugiej części artykułu zaprezentowano rezultaty badań własnych zrealizowanych metodą analizy treści postów udostępnianych przez matki na Instagramie w okresie pandemii. WYNIKI ANALIZY NAUKOWEJ: Rezultatem badań własnych jest gęsty opis codzienności matek w okresie pandemii w perspektywie kobiet, które dzielą się swoimi doświadczeniami na Instagramie. WNIOSKI, INNOWACJE, REKOMENDACJE: Dotychczasowe rekomendacje praktyk służących kształtowaniu równowagi praca – życie stały się nieadekwatne do pandemicznej codzienności pracujących matek.

Tricksters are usually defined as non-heroic male characters obsessed with food, sex, and general merrymaking, occasionally changing shape and even gender but eventually returning to their masculine self. But is this necessarily true in contemporary ethnic literature? The current essay explores the notion of the trickstar, or the female trickster, in Afghan- American fiction, analysing the three heroines in Khaled Hosseini’s 2007 novel A Thousand Splendid Suns, which is a mother-daughter story set in Kabul at the turn of the millennium. In order to place this text into a cultural context and underscore the significance of the trickstar figure, it is compared to a traditional Afghan folk tale, “Women’s Tricks.” Two research questions are at the centre of this article: (1) In what ways are trickstars from Afghan folklore similar to the heroines of Hosseini’s novel? and (2) What roles do his heroines perform as pro-social trickstars?
