Emerging paradigms on ethical consumption of meat and replacement alternatives require a bioethical reflection to understand the social relations between sentience and animal welfare. This study seeks to understand how Brazilian society represents animal production, meat consumption, and alternatives to replace its consumption. For this, an online survey was conducted with 330 participants from Brazil. The results suggest that variables such as age, sex, and education level influence the representation of meat consumption and demonstrate that Brazilian society believes that reducing consumption is more feasible than adhering to alternatives., Os paradigmas éticos emergentes sobre o consumo da carne e das alternativas de substituição necessitam de reflexão bioética para compreender as relações sociais com a senciência e o bem-estar animal. Este estudo procura compreender como a sociedade brasileira representa a produção animal, o consumo de carne e as alternativas para a sua substituição. Para isso, foi realizada uma investigação em linha com 330 participantes do Brasil. Os resultados sugerem que variáveis como idade, sexo e nível de ensino influenciam a representação social da carne e as alternativas da sua substituição e demons- tram que a sociedade brasileira acredita que é mais factível a redução do consumo do que a adesão a alternativas.

4. DESENVOLVIMENTO DE LARVAS DE Tenebrio molitor L. EM DIFERENTES DIETAS VISANDO A PRODUÇÃO DE INSETOS PARA CONSUMO HUMANO.

Insects are excellent sources of protein which may be included in the human diet, although this practice is not common in western countries. The aim of this study was to evaluate the development of T. molitor larvae reared on diets with different amounts of corn bran in order to reduce the production costs of this insect for human consumption. The experiment was carried out in the Laboratory of Entomology UNIVAG University Center in a room at 28 ± 2 °C, RH 70 ± 10% and photoperiod of 12 hours. The experimental design was completely randomized which were tested 5 different diets for the development of T. molitor with 5 replications. The control treatment consisted of a diet consisting only of wheat bran and other treatments consisted of the substitution of 25, 50, 75 and 100% corn bran in standard insect diet. T. molitor was able to complete their life cycle in all diets. There were no significant differences in the time of larval and pupal development. Also, the type of diet did not affect the weight of insects. Therefore, addition of corn bran to the diet of T. molitor does not affect the development of this insect and reduces production costs. Recollection of insects is an ancient practice that can be observed in some places from Mexico. The objective of this work was to describe the actual situation around the recollection and preparation of edible insects in the touristic zone of Teotihuacán and Otumba, Mexico. By using ethnographic techniques (depth and semi-structured interviews and participant observation) were possible to document the forms of harvested and cooking of six species of edible insect. The recollection of edible insects is realized by families by using complicated and rudimentary techniques. The insects can be consumed raw or cooked form, and in form of various traditional dishes that are sold to tourists who arrive touristic area.

Eighteen species of edible insects belonging to 15 families of six orders of Insecta were recorded in the county of La Purísima Palmar de Bravo in Puebla State, Mexico. They had the following taxonomic distribution among the different families: Lygaeidae, Pentatomidae, Membracidae, Cercopidae, Psocidae, Melolonthidae, Curculionidae, Cossidae, Megathymidae, Pyralidae, Geometridae and Apidae, all with a single recorded species; the families Acrididae, Formicidae and Vespidae with two species in each family. The latter were the most abundant families, and Hymenoptera was the most salient order with five species. Three species were reported as new registers of edible insects for Mexico and also for the world. The nutritive value of insects in terms of macro and micronutrients is discussed.

Resumo: O consumo de insetos como uma fonte alternativa de proteínas é considerado uma tendência futura e uma estratégia viável, com potencial notório para garantia do fornecimento de alimentos em nível global. Os insetos são uma fonte não convencional de proteínas, seja para consumo humano direto ou indiretamente, como ingredientes em alimentos formulados. Além disso, estudos científicos têm demonstrado que a hidrólise enzimática destas proteínas resulta na produção de peptídeos com atividades biológicas de grande interesse, como atividade antioxidante, antidiabética, anti-hipertensiva e antimicrobiana. O uso desses peptídeos com fim nutracêutico pode substituir ou reduzir o uso de drogas sintéticas, as quais estão associadas a efeitos colaterais indesejáveis. O presente trabalho teve como objetivo abordar o uso de insetos na alimentação humana, destacando sua aplicação como substrato proteico na hidrólise enzimática para produção de peptídeos bioativos. As principais propriedades bioativas dos peptídeos foram relatadas Abstract: The insect consumption as an alternative source of protein is considered a future trend and a viable strategy with a notorious potential for ensuring global food supply. Insects are an unconventional source of protein, either for human consumption directly or indirectly, as ingredients in formulated foods. In addition, scientific studies have been shown that the enzymatic hydrolysis of these proteins results in the production of peptides with biological activities of relevant interest, such as antioxidant, antidiabetic, antihypertensive and antimicrobial activity. The use of these peptides for nutraceutical purposes may replace or reduce the use of synthetic drugs, which are associated with undesirable side effects. The present work aimed to address the use of insects in human food, highlighting its application as a protein substrate in enzymatic hydrolysis for the production of bioactive peptides. Resumo . Cynaeus angustus (LeConte) caracteriza-se como praga de graos armazenados, possui diversos substratos alimentares listados em sua ecologia alimentar entre eles o milho, trigo, sorgo e soja. Porem nao ha registro de seus habitos no amendoim in natura, assim o objetivo deste estudo foi apresentar a tabela de vida estatica, para C. Angustus em condicoes de laboratorio utilizando como substrato o amendoim, e avaliar a composicao proteica nos diferentes estadios de desenvolvimento de C. angustus . A quantificacao de proteinas foi feita pelo metodo de microbiureto e o metodo qualitativo foi feito per metodo eletroforetico. Assim a quantificacao de proteinas indicou um aumento de seus valores durante o desenvolvimento dos insetos: larvas 38,22 mg/mL, pupas 47,53 mg/mL e adultos de 60.00 mg/mL. Foi possivel observar o perfil electroforetico de C. angustus indicando um aumento significativo na variedade de proteinas (29 a 700 kDa) sobre as diferentes etapas deste inseto. Os dados obtidos pela analise populacional indicam que C. angustus apresenta maiores taxas iniciais de sobrevivencia, alto potencial biotico e desenvolvimento continuo em condicoes favoraveis que mostram potenciais condicoes de cultivo e pode ser usado como uma fonte nutricional tal como mencionado para outras especies da mesma familia. Protein Evaluation and Static life Table Cynaeus angustus (LeConte) (Coleoptera: Tenebrionidae) Abstract. Cynaeus angustus (LeConte) is characterized as a pest of stored grain, there is several food substrates on their feeding ecology including corn, wheat, sorghum and soybeans. But there is no record of their habits in peanut in natura , so the aim of this study was to present the static life table, to C. angustus in laboratory conditions using as substrate the peanut, and evaluate the protein composition in different stages of development C. angustus . The quantification of proteins was taken by microbiureto method and qualitative method was done per electrophoretic method. Protein quantitation indicated an increase of its values during development of insects: larvae 38,22 mg/mL, pupae 47,53 mg/mL and adults 60,00 mg/mL. It was possible to observe the electrophoretic profile C. angustus showed a significant increase in the variety of proteins (29-700 kDa) on the different stages of the insect. Data obtained from the population analysis indicate that C. angustus shows higher initial survival rates, high biotic potential and continuous developing in favorable conditions showing potential growing conditions and, that can be used as a nutritional source such as mentioned for other species of the same family.

Hoje em dia os alimentos escasseiam em várias partes do mundo e o aumento do custo de produção devido aos mais variados fatores originam preços elevados de venda ao público. Estes fatores promovem atenção para a entomofagia, dado os valores nutricionais dos insetos, ao nível do seu teor proteico e lipídico, tornando-os um dos grandes temas da atualidade, apesar de os insetos não serem correntemente consumidos nas sociedades ocidentais. O presente trabalho visa avaliar a perceção dos Portugueses residentes na região da Bairrada e dos Moçambicanos da cidade de Maputo, em relação à possibilidade dos insetos serem utilizados na alimentação humana e na alimentação para animais. O trabalho, também, fará uma análise sobre os resultados do estudo efetuado para assim concluir que as populações da região da Bairrada, Portugal e da cidade de Maputo, Moçambique não são entomofágicas. Nowadays, Food Scarce occurs in many parts of the world and the rising cost of production due to various factors originates higher selling prices to the public. These factors have become of world-wide attention to the Entomophagy and the creation of insects, making it one of the greatest subjects of our time. Although insects are not commonly consumed in Western societies, their nutritional, make them as viable alternatives to meat consumption, with good implications for socialand environmental level. This study aims to evaluate the perception of Portuguese inhabitants from “Bairrada” region and from Maputo, the capital city of Mozambique relating the entry of insects in animal feeding. The work will make an analysis of the results obtained concluding that the cultures of the “Bairrada” region, Portugal and the capital city of Maputo, Mozambique are not entomophagic.

No Brasil foram registradas mais de 130 espécies de insetos comestíveis, pertencentes a nove ordens, dentre as quais se destaca Coleoptera. Desta ordem, destacam-se Tenebrio molitor e Pachymerus nucleorum. A informação de que a amêndoa da bocaiuva é parasitada por larvas de P. nucleorum motivou a elaboração do primeiro manuscrito, despertando a hipótese de que essas larvas possam apresentar potencial nutricional igual ou superior ao de seus frutos. Os resultados obtidos do estudo mostraram que as proteínas representam a segunda maior porção da composição nutricional das larvas de P. nucleorum (33,13%), superior à amêndoa de bocaiuva (14,21%). Destacou-se também o elevado teor de lipídios nas larvas (37,87%), muito próximo ao da amêndoa (44,96%). Do óleo extraído das larvas, a fração correspondente aos ácidos graxos saturados foi de 40,17% e aos insaturados de 46,52%. A atividade antioxidante foi 24,3μM trolox/g de extrato do óleo. A atividade tríptica das larvas foi 0,032 + 0,006nmol BAPNA/min. As larvas e a amêndoa de bocaiuva apresentaram ausência de fatores anti-nutricionais. Estes resultados favorecem o uso de larvas de P. nucleorum como alimento humano, sendo ótima fonte proteica e lipídica com concentrações consideráveis de ácidos graxos insaturados em relação à amêndoa de bocaiuva. Diante disso, decidiu-se elaborar dietas artificiais com adição de bocaiuva para criação de T. molitor visando determinar a composição química das larvas criadas em diferentes dietas, dando origem ao segundo manuscrito. As larvas de T. molitor foram analisadas quanto a sua composição nutricional, composição de ácidos graxos, atividade antioxidante, atividade tríptica e fatores anti-nutricionais. Os resultados demostraram que as larvas de T. molitor criadas em dieta artificial com adição de bocaiuva são ótima fonte proteica (44,83%) e lipídica (40,45%), em comparação com carnes consumidas por humanos e presentam concentrações significativas de ácidos graxos insaturados (65,99%). A atividade antioxidante foi 4,5μM trolox/g do óleo das larvas. A atividade tríptica das larvas foi 0,144 + 0,003nmol BAPNA/min. As larvas apresentaram ausência de fatores anti-nutricionais. A partir desses resultados concluiuse que é possível criar larvas de T. molitor em dieta artificial com adição de farinha de bocaiuva, sem comprometer a qualidade nutricional do T. molitor, demonstrando que larvas criadas em dietas artificiais podem ser um recurso alimentício altamente nutritivo. The consumption of insects as food is culturally practiced in various regions of the world. In Brazil, there were more than 130 species of edible insects, belonging to nine orders, among which stands out Coleoptera. In this order, we highlight Tenebrio molitor and Pachymerus nucleorum. The information that the bocaiuva’s kernel is parasitized by larvae of P. nucleorum motivated to develop the first manuscript, raising the hypothesis that these larvae can present nutritional potential equal to or higher than its fruits. The results of the study showed that the proteins are the second largest portion of the nutritional composition P. nucleorum larvae (33,13%), higher than the bocaiuva’s kernel (14,21%). Also notable was the high fat larvae (37,87%), very close to the kernel (44,96%). The oil extracted from larvae, the corresponding fraction of the saturated fatty acids was 40,17% and 46,52% unsaturated. The antioxidant activity conducted by ABTS (2, 2'-3-azinobis ethylbenzothiazoline 6-sulfonic acid) method, found value of 24,3uM trolox/g oil. The tryptic activity of larvae was 0,032 + 0,006nmol BAPNA/min. The larvae and bocaiuva’s kernel presented absence of anti-nutritional factors. These results favor the use of P. nucleorum larvae as food, with great protein and lipid source with considerable concentrations of unsaturated fatty acids in relation to the kernel of bocaiuva. Therefore, it was decided to develop artificial diets with added bocaiuva for feeding T. molitor to determine the chemical composition of larvae reared on different diets, leading to the second article. The T. molitor larvae were analyzed for their nutritional composition, fatty acid composition, antioxidant activity, trypsin activity and anti-nutritional factors. The results show that the T. molitor larvae reared on an artificial diet with bocaiuva are good protein source (44,83%) and lipid (40,45%), compared to conventional meats and show significant levels of unsaturated fatty acids (65,99%). Antioxidant activity was 4,5uM trolox/g oil. The tryptic activity of larvae was 0,144+0,003nmol BAPNA/min. The larvae showed no anti-nutritional factors. From these results it was concluded that it is possible to create T. molitor on artificial diet with added bocaiuva flour without compromising the nutritional quality of T. molitor, demonstrating that larvae reared on artificial diets can be a highly nutritious food resource.

11. Brazilian consumers’ perception of edible insects

ABSTRACT: It is estimated that by 2050 the world population will be 9 billion people; and therefore, the need for alternative sources of protein is inevitable, since conventional sources, such as beef, pork and poultry, will not be sufficient to meet the demand of population growth. Food that includes alternative sources of protein, such as insects, is a reality in countries of Latin America, Asia, Australia, Europe and Africa. This research presents the results of an exploratory study that analysed the food profile of 1,619 consumers in the five Brazilian regions (North, Northeast, Midwest, Southeast and South) as well as their perception, motivation and preferred form of edible insects. The data were analysed by cross-tabulation and expressed as frequencies. Our results show that women are more reluctant than men to consume insects. In general, there is a preference for consumption of insects in the form of flour. However, those with more familiarity with this type of consumption prefer the whole insect. Most Brazilian consumers have no opinion about the safety of consuming insects; however, consumers with higher levels of education and familiarity consider it safe.
