Este trabalho teve por objetivo propor e aplicar um procedimento para a sistematização das inspeções higiênico-sanitárias de supermercados no Município de Ibiúna/SP, e analisar criticamente os resultados com vistas a atingir os objetivos da vigilância sanitária. O trabalho foi desenvolvido durante cinco meses em quatro supermercados, sendo que na primeira inspeção realizou-se o diagnóstico da situação, com a identificação das irregularidades sanitárias. Após esta fase, a equipe da vigilância sanitária realizou os retornos programados aos supermercados, a fim de verificar a evolução das adequações sanitárias e as dificuldades encontradas. Os resultados mostraram que, após quatro inspeções em cada supermercado, foi satisfeita a maioria das adequações sanitárias solicitadas pela equipe da vigilância sanitária e as principais dificuldades por parte do empresário ou gerente do supermercado estiveram centradas na assimilação das informações, no tempo e no custo para sua execução.This paper had the objective of proposing and applying a procedure to standardize sanitary inspections in grocery stores in Ibiúna/ SP and to critically analyze the results obtained so as to meet the objectives of food sanitary surveillance. The study was conducted during five months in four grocery stores. In the first inspection, the situation was diagnosed and sanitary irregularities were identified. After this phase, the sanitary surveillance team visited the grocery stores again on the dates scheduled, aimed at checking the progress of sanitary improvements and difficulties encountered. Results showed that after four inspections in each grocery store, businessmen or managers managed to meet most of the sanitary improvements requested by the surveillance team, and the main difficulties they found were related to understanding information and time and costs for execution.

The article presents a case study of grocery stores in Joinville, state of Santa Catarina, Brazil to discuss the importance of commercial heritage in the construction of social identity and collective memory. Subjects discussed include grocery stores as remnants of traditional marketplaces, the preservation of industrial heritage as cultural property, and a brief historical overview of industries in Brazil.
