Organic residues contain essential nutrients (carbon, nitrogen, and phosphorus), matter that can be used as a culture medium for the growth of a certain microorganism to produce certain enzymes. In this case the enzyme of interest produced is amylase from a ceparium of fungi and bacteria of the Microbial Diversity and Interaction Laboratory (LDIM-ITESI) using starch as a substrate, which degrades starch to dextrin, maltose, or free glucose, so they have application at an industrial level in the manufacture of detergents, textiles, paper industry and in food production. The strains with the highest production of amylase were isolated from residues such as corn stover, corn straw and agave bagasse. [ABSTRACT FROM AUTHOR]
