The article describes the deoiling of lecithin using CO2 as an alternative to conventional deoiling with acetone. By removing the oil, lecithin becomes a powdered solid that is easier to handle and suitable for oil-free and reduced-fat formulations. Deoiling with CO2 offers advantages such as the possibility of offering the finished product in organic quality, the use of a natural product as an auxiliary substance, and the avoidance of reaction products with acetone and other organic solvents. The planning of a CO2 deoiling plant requires consideration of size and capacity, with gradual expansion being possible.
