Antecedentes: Entre os fatores não genéticos, a idade de abate é apontada como o fator mais significativo que influencia as propriedades de qualidade da carne e a quantidade de carne bovina. Objetivo: Comparar os efeitos da idade de abate e tipos de músculos nas características de carcaça e atributos de qualidade da carne de touros da raça Holstein Friesian. Métodos: Touros foram abatidos com 18 meses (grupo jovem=YG) e 24 meses (grupo velho=GO) de idade. No final do período de engorda, foram abatidos os 30 touros (YG=14 cabeças; OG=16 cabeças) que foram engordados numa quinta privada. Em seguida, foram avaliadas as características de carcaça e qualidade da carne dos músculos Longissimus dorsi (LD) e Gluteus medius (GM). Resultados: Foi determinado que os touros podem ser abatidos mais tarde porque suas características de carcaça não foram significativamente afetadas ao longo do tempo. Embora as medidas de gordura da carcaça, como escore de marmoreio, espessura de toucinho, o escore de gordura do European Beef Carcass Classification System (SEUROP) aumentou numericamente com o avanço da idade de abate, apenas o aumento da porcentagem de rim, pelve e coração (KPH) o teor de gordura foi estatisticamente significativo (p<0,05). Touros abatidos aos 24 meses de idade tiveram área LD 13,4% maior (p<0,01) do que os do grupo YG. Os touros Holstein Friesian no grupo OG tiveram peso de abate significativamente (p<0,01) maior, bem como pesos de carcaça quente e fria. No entanto, as porcentagens de rendimento de carcaça quente e fria não foram significativamente afetadas pela idade de abate. Os valores de L* (luminosidade), a* (vermelhidão), b* (amarelamento), croma (intensidade da cor) e matiz da carne de touros da raça Holstein Friesian no grupo OG não diferiram significativamente dos touros no YG grupo. No entanto, os valores de L*, a* e croma do músculo GM foram maiores do que os do músculo LD, enquanto o valor de pH24 do músculo GM foi significativamente (p<0,01) maior do que o do músculo LD. Conclusões: Parece mais vantajoso abater touros aos 24 meses de idade para obter carcaças não apenas mais pesadas, mas também com maior pontuação de marmoreio e mais musculosas e, portanto, mais adequadas às exigências atuais do consumidor. Aims: This study was carried out in order to determine the current situation and problems in the cattle breeding practices related to shelter characteristics in İspir district of Erzurum province and to provide solutions.Methods and Results: In this research, a face-to-face survey was conducted with 394 business owners selected by a random sampling method among cattle farms in İspir district of Erzurum province. Chi-square and frequency analyzes were performed in the statistical evaluation of the obtained data. It was determined that 97.2% of the surveyed enterprises did not have separate maternity wards in their barns. While the majority of the enterprises housed heifers, young cattle and dry cows together (90.4%), only 9.6% of them housed them separately. It was also determined that the percentages of enterprises providing bedding for cattle in the district were considerably low (12.4%). Grain straw (6.6%) and sawdust (3.3%) were the most popular bedding materials. The enterprises watered their animals through village fountains (90.1%), troughs (70.6%) or carrying the water by the bucket (33.5%). Of all the surveyed enterprises, 54.8% performed general cleaning once a year, while 33.0% twice and 12.2% three times. In 62.9% of the enterprises, manure was used as fertilizer in the fields, and a significant part of the enterprises preferred to utilize manure as fuel (34%). Most of the participants stated that they believed that the cattle would be uncomfortable and that their productivity would decrease at 10-15 °C, which is the optimal temperature for the cattle.Conclusions: The findings of the study demonstrated that there were some improper and deficient practices in the district in terms of breeding practices related to barn characteristics and a large educational campaign on this subject was required for cattle breeders.Significance and Impact of the Study: There are some structural and nonstructural elements in the barn that help the cattle to perform their natural behaviours indirectly increase productivity and ease the work in the enterprises. With this study, the status of cattle enterprises in İspir district in terms of breeding practices related to barn characteristics was determined and some suggestions were made regarding current problems., Amaç: Erzurum ili İspir ilçesinde barınak özellikleri ile ilgili sığır yetiştiriciliği uygulamalarına ilişkin mevcut durumu ve sorunları belirlemek ve çözüm önerileri sunmak amacıyla bu çalışma yapılmıştır.Yöntem ve Bulgular: Bu çalışmada Erzurum ili İspir ilçesinde, sığırcılık işletmeleri arasından tesadüfi örnekleme yöntemi ile seçilen 394 işletme sahibi ile yüz yüze anket yapılmıştır. Elde edilen verilerin istatistiksel değerlendirmesinde ki-kare ve frekans analizleri kullanılmıştır. Ankete katılan işletmelerin %97,2'sinin ahırlarında ayrı bir doğum bölmesinin olmadığı belirlenmiştir. İşletmelerin büyük çoğunluğu düve, dana ve kuru inekleri birlikte (%90,4) barındırırken, sadece %9,6’sı ayrı barındırmaktadır. Ayrıca ilçede işletmesinde sığırlar için altlık bulunan işletmelerin yüzdelerinin oldukça düşük olduğu (%12,4) tespit edilmiştir. İlçede en çok tercih edilen altık materyallerinin tahıl samanı (%6,6) ve talaş (%3,3) olduğu belirlenmiştir. İşletmelerdeki hayvanlarının su ihtiyaçlarını köy çeşmesi (%90,1), yalak (%70,6) veya kovayla (%33,5) su taşıyarak sağlamaktadırlar. Ankete katılan işletmelerin %54,8'i yılda bir kez genel temizlik yaparken, %33,0'ı iki kez ve %12.2'si 3 kez genel temizlik yaptıklarını belirtmiştir. İşletmelerin %62,9'unda gübre tarlalarda kullanılırken, işletmelerin önemli bir kısmı gübreyi yakıt olarak kullanmayı tercih etmektedir (%34). Katılımcıların büyük bir çoğunluğu, sığırlar için optimum sıcaklık olan 10-15°C'de sığırların rahatsız olacağını ve verimlerinin azalacağını düşündüklerini belirtmişlerdir.Genel Yorum: Araştırmadan elde edilen bulgular, ilçede sığır yetiştiriciliği konusunda bazı yanlış ve eksik uygulamaların olduğunu ve ilçede sığır yetiştiriciliğine yönelik geniş bir eğitim kampanyasına ihtiyaç olduğunu göstermiştir.Çalışmanın Önemi ve Etkisi: Ahırlarda sığırların doğal davranışlarını gerçekleştirmelerine yardımcı olan ve dolaylı olarak işletmelerde verimliliği artıran ve iş gücünü kolaylaştıran yapısal ve yapısal olmayan bazı unsurlar bulunmaktadır. Bu çalışma ile, İspir ilçesindeki sığırcılık işletmelerinin ahır özellikleri ile ilgili yetiştirme uygulamaları açısından durumların ortaya konmuş ve problemlerin çözümüne yönelik öneriler sunulmuştur.

6. Effects of Slaughter Age of Holstein Friesian Bulls on Meat Quality: Chemical Composition, Textural Characteristics, Sensory Attributes and Fatty Acid Profile.

This study aimed to investigate the effects of slaughter age (young vs. old), muscle type (Longissimus dorsi (LD), Gluteus medius (GM)) and fat deposits (kidney knob and channel fat, subcutaneous fat, intramuscular fat) on chemical, organoleptic, textural characteristics and fatty acid composition of Holstein Friesian bull meat. For this purpose, the carcasses of 26 Holstein Friesian bulls that had been fattened on the same private farm were assigned to two experimental groups based on their age at slaughter: a young group (YG) (average age: 17.0 ± 1.0 months old) and an old group (OG) (average age: 22.0 ± 1.0 months old). The percentage of crude protein, panel tenderness score, polyunsaturated fatty acid (PUFA) and saturated fatty acid (SFA) content, the PUFA/SFA ratio and the hypocholesterolemic fatty acid (DFA)/hypercholesterolemic fatty acid (OFA) ratio of the bull carcasses decreased significantly with increasing slaughter age. By contrast, the OFA content of the carcasses significantly increased (p < 0.05) with increasing slaughter age. Advanced slaughter age resulted in lower panel tenderness scores. Additionally, the meat of the bulls in the OG was considered to be less healthy because of the less desirable fatty acid composition and nutritional indices, such as the PUFA/SFA and hypocholesterolemic/hypercholesterolemic ratios, compared to the meat from the bulls in the YG. Furthermore, the intramuscular fat and internal fat contained high percentages of PUFA and SFA and high PUFA/SFA and hypocholesterolemic/hypercholesterolemic ratios. Interestingly, the percentage of OFA content in the internal and intramuscular fat tissues decreased with increasing slaughter age. In conclusion, this study provided evidence that slaughter age and muscle and fat type are essential sources of variations in the textural characteristics, sensory panel attributes and fatty acid profile of meat from Holstein Friesian bulls. Bu çalışmanın amacı, Erzurum ili İspir ilçesindeki sığırcılık işletmelerinde yem kullanımı ve hayvan besleme uygulamalarına ilişkin mevcut durumu belirlemek ve ilgili sorunları ortaya koyarak bu sorunlara çözüm önerileri getirmektir. Metot: Bu amaçla şansa bağlı olarak seçilmiş 394 sığır yetiştiricisiyle yüz yüze anket yapılmıştır. Elde edilen veriler istatistiksel olarak Ki-kare Bağımsızlık testi ve frekans analiz metodu kullanılarak analiz edilmiştir. Elde edilen bulgulara göre yetiştiricilerin %97,7’sinin bitkisel üretim yaptığı saptanmıştır. Önemli bir kaba yem kaynağı olan silaj ise ilçede çok düşük düzeyde (%2,8) kullanılmaktadır. Yetiştiricilerin yemleme uygulamasını genellikle kendi bilgi ve tecrübelerine göre yaptıkları belirlenmiştir. Yetiştiricilerin buzağılara kaba ve kesif yem vermeye doğumdan sonra dördüncü haftada (%97,5), su vermeye ise üçüncü haftada (%98,7) başladıkları tespit edilmiştir. İşletmelerin %99,7’sinin mera kullandığı, genellikle Nisan ayında (%95.4) meraya çıkıldığı ve 5 aydan daha fazla merada kalındığı belirlenmiştir. Sonuç: İlçede hayvan yemleme ve besleme konularında bilgi eksikliği bulunduğu sonucuna varılmıştır. Bu nedenle ilgili kurumlar tarafından eğitim çalışması yapılması, yetiştiricilerin bilgi ve becerilerinin arttırılması ve silaj üretiminin teşvik edilmesi bölge hayvancılığının kalkınmasına fayda sağlayacaktır., The aim of this study was to determine the current situation on feed usage and cattle feeding practices and reveal the concerning problems in cattle enterprises in İspir county of Erzurum Province to suggest solutions for these problems. For this purpose, a face-to-face survey was conducted with the owners of 394 randomly selected cattle breeders. Data obtained were statistically analyzed using the chi-square independence and frequency analysis test. Results: According to the findings, it was determined that 97.7% of the enterprises made plant production. Silage, which is an important source of roughage, was utilized at a very low level (2.8%) in the county. It was also determined that the breeders generally fed their animals based on their own knowledge and experience. They started offering roughage and concentrate feed to the calves in the fourth week (97.5%) and watering in the third week (98.7%) after birth. It was found that 99.7% of the enterprises initiated pasture grazing in April (95.4%) and animals were grazed in the pasture for more than 5 months. It was concluded that there is a lack of information about animal feeding among breeders in the county. For this reason, training activities by the relevant institutions, increasing the knowledge and skills of the breeders, and encouraging silage production will benefit the development of the region’s livestock production.

Findings were evaluated through graphs obtained from proportional values. It was determined that 66% of the enterprises have free-stall closed barns, the barns in 48.5% of the enterprises were used for less than 10 years and the barns were generally detached (98.5%). Building material for the walls of the barns was mostly stone (72.8%), and sheet metal (72.8%) was the most preferred material for the construction of the roof, and the floors of the were generally made of concrete (88.8%). The feed alley (15%) and automatic waterers (2.8%) are available in a small percentage of the barns. It was determined that 88% of the cattle farms have individual calf units, and calves in the most of the enterprises are housed in a separate group sections (87.5%) in the same barn. Only 15% of the enterprises used bedding and 85% of them did not have bedding material. The majority of the enterprises watered the animals with buckets (51.5%) and village's fountain or trough (43.8%). It also found out that 62.3% of the enterprises implemented general cleaning and 99.3% cleaned the manure with manpower. Furthermore, 94.5% of the enterprises stored the manure near the barn without any cover. In addition, 72.5% of the cattle farms utilized from the manure for heating purpose and 51% of them used it as fertilizer in their field. İşletmelerin %66’sının bağlı duraksız kapalı ahırlardan oluştuğu, %48.5’inin ahırlarını 10 yıldan daha az kullandıkları ve ahırların genellikle müstakil (%98.5) olduğu belirlenmiştir. Kullanılan ahırların duvarlarında yapı malzemesinin genellikle taş (%72.8) olduğu, çatısında çoğunlukla sac (%72.8) kullanıldığı ve ahırlarının tabanlarının “beton” (%88.8) olduğu tespit edilmiştir. Ahırlarda yemlik yolu (%15) ve otomatik sulukların (%2.8) çok az işletmede mevcut olduğu tespit edilmiştir. İşletmelerin %88’inde ayrı buzağı bölmesi bulunduğu, çoğunluğunun aynı ahırda ayrı grup bölmesinde (%87.5) barındırıldığı tespit edilmiştir. İşletmelerin sadece %15’inin yataklık kullandığı, %85’inde yataklık materyal bulunmadığı saptanmıştır. İşletmelerin çoğunluğu hayvanların su ihtiyaçlarını kova ile (%51.5) ve köy çeşmesi-yalak (43.8%) ile sağladığı tespit edilmiştir. İşletmelerin %62.3’ünde genel temizlik yapıldığı, %99.3’ünün gübreyi insan gücü ile temizlediği, %94.5’inin gübreyi ahır yakınında biriktirdiği, %72.5’inin ise gübreyi yakarak ve %51’inin tarlada gübre olarak değerlendirdiği belirlenmiştir. Elde edilen bulgular neticesinde bölgedeki işletmelere verilecek bilgi desteği ve yatırım teşvikleri ile ayrıca yetiştirici eğitimleri yapılarak işletmelerin karlı bir hayvancılık yapabilmelerine olanak sağlanabileceği sonucuna varılmıştır.

This study wascarried out to determine cattle breeders’ farm management and calf raisingpractices in Narman county of Erzurum province. For this purpose, some datawere obtained by conducting a face to face survey study with 208 producers inNarman county. Just 13,5 %of breederswho participated in the survey stated that they kept records of their animalsregularly. 59 %of the cattle breeders indicated that they were in the need oftechnical assistance about cattle rearing, and 31%of them who neededassisstance got this knowledge through College of Veterinary. In most of theenterprises (43%), breeders based on allof the general signs of heat and cows in the 83%of the enterprises cows areinseminated in the first heat after birth.While 66%of the breeders usedartificial insemination, 97%of breeders who used this method claimed that theywere happy with this practice.It was determined that in 47%of the enterprisescolostrum is not offered to new-born calves. In the enterprises that colostrumis offered to calves, they got the colostrum by sucking their dams (40%) or bymilk bottles (57%). Furthermore, 84%of breeders stated that they fed theircalves by colostrum less than 3 days. Milk feeding period for calves wereusually 4-5 months (51%)., Bu araştırma,sığır yetiştiricilerinin çiftlik yönetimi ve buzağı yetiştirme uygulamalarınıbelirlemek amacıyla Erzurum İli Narman İlçesi’nde yapılmıştır. Bu amaçla Narmanilçe ve köylerinde 208 işletme sahibiyle yüz yüze anket çalışması yapılarakveriler elde edilmiştir. Ankete katılan yetiştiricilerin sadece % 13,5'i, düzenliolarak kayıt tuttuğunu ifade etmiştir. İşletmelerin % 59’unun teknik bilgidesteği alma ihtiyacı hissettiklerini ve çoğunlukla (% 31) bu bilgiyi VeterinerFakültesi vasıtasıyla edindikleri belirlenmiştir. İneklerin kızgınlığa gelme belirtisi olarak işletmelerin çoğunluğunun (%43) genel belirtilerin hepsini esas aldığı ve yetiştiricilerin % 83’ünün doğumsonrası ilk kızgınlıkta tohumlama yaptıkları tespit edilmiştir. Yetiştiricilerin % 66’sının sunitohumlama yaptırırken % 97’si bu uygulamadan memnun kaldığını bildirmiştir.İşletmelerin % 47’sinde buzağılara ağız sütü verilmediği belirlenmiş, verilenişletmelerde ise buzağıların ağız sütünü annesini emerek (% 40) ya da biberonla(% 57) aldığı saptanmıştır. Ayrıca, yetiştiricilerin % 84 ü üç günden daha azsüreyle ağız sütü verdiklerini ifade etmişlerdir. Buzağılara normal süt vermesüreleri ise çoğunlukla 4-5 (% 51) aydır.

Thestudy was carried out to investigate the magnitude of non-genetic factorsaffecting linear type traits in Brown Swiss cattle. For this purpose, 474 observations for the 16 linear type traits on 135 cattlewere made. Statistical model used in this research included fixed effects ofherd, parity, scorer, stage of lactation, season at classification. Additionally,the age at classification was included to the model as linear and quadraticcovariates. Average linear scores for chest width, body depth, angularity, footangle, rear leg (side view), rear leg (rear view), rump angle, rump width, foreudder attachment, rear udder attachment width, rear udder attachment height,teat placement (rear view), teat placement (side view), teat length, centralligament and udder depth were 5.5±0.1, 6.1±0.1, 5.2±0.1, 4.7±0.1, 4.4±0.1,4.4±0.1, 5.6±0.1, 5.0±0.1, 5.8±0.1, 5.4±0.1, 6.1±0.1, 5.1±0.1, 4.1±0.1,5.8±0.1, 5.8±0.1, 6.6±0.1 respectively. Scorers did not have significant effecton all type traits except for the body depth and rear udder attachment width(P, Bu çalışma, Esmer sığırlarda linear tip özelliklerini etkileyen çevresel faktörlerin incelenmesi amacıyla yürütülmüştür. Bu amaçla, 135 sığırda 16 adet tip özelliğine ait 474 adet gözlem yapılmıştır. Araştırmada kullanılan istatistiksel modele sürü, laktasyon sırası, hakem, laktasyon dönemi, değerlendirmenin yapıldığı mevsimin etkileri dahil edildi. Ayrıca, değerlendirmenin yapıldığı dönemdeki ineğin yaşı da linear ve kuadratik kovariyet olarak modele ilave edildi. Göğüs genişliği, vücut derinliği, açısallık, arka bacak açısı, arka bacak (yandan görünüm), arka bacak (arkadan görünüm), sağrı eğimi, sağrı genişliği, ön meme bağlantısı, arkadan meme bağlantısı genişliği, arka meme bağlantısı yüksekliği, meme başı yerleşimi (arkadan görünüm), meme başı yerleşimi (yandan görünüm), meme başı uzunluğu, meme merkez bağı ve meme derinliğine ait ortalama doğrusal puanlar sırasıyla 5,5±0,1; 6,1±0,1; 5,.2±0,1; 4,7±0,1; 4,4±0,1; 4,4±0,1; 5,6±0,1; 5,0±0,1; 5,8±0,1; 5,4±0,1; 6,1±0,1; 5,1±0,1; 4,1±0,1; 5,8±0,1; 5,8±0,1; 6,6±0,1 dır. Vücut derinliği ve arkadan meme bağlantısı genişliği dışındaki bütün tip özellikleri üzerine hakemlerin etkisi önemsiz bulunmuştur. Öte yandan, sürü, laktasyon sırası, laktasyon dönemi ve değerlendirmenin yapıldığı mevsim bir çok doğrusal tip özelliklerini önemli derecede etkilemiştir. Değerlendirme sırasındaki yaşın bir çok doğrusal tip özellikleri üzerine linear ve kuadratik etkileri de önemli bulunmuştur. Doğrusal tip özellikleri arasındaki fenotipik korelasyonlar da düşükten orta dereceye kadar değişim göstermiştir.

The study was carried out to investigate the magnitude of nongenetic factors influencing linear type traits and to estimate phenotypic correlations among these traits in Simmental cows. The 16 linear type traits were recorded for 148 Simmental cows reared in a private farm in Eastern Turkey. A statistical model used in this research included fixed effects of stage of lactation, parity, season at time of classification and classifier. The age at time of classification was included to the statistical model as co-variable. Parity, stage of lactation, season at time of classification and classifier effect was significant (P<0.01-0.05) for chest width, angularity, teat placement side view, body depth. Parity, stage of lactation, season at time of classification effect was significant (P<0.01-0.05) for rear leg rear view, rump width, suspensory ligament and udder depth. Linear and quadratic effects of age at time of classification were also significant (P<0.01-0.05) for rump width, rump angle, teat placement rear view, foot angle, suspensory ligament and udder depth. This study was carried out to identify the HSPA1A, TNF, IL1B and IL6 mRNA gene expression levels of Holstein dairy cattle sheltered in different floor types. Nineteen Holstein cows were used in this study. The cattle taken into research were divided into two groups as concrete (CON; n= 10) or rubber mat (RUB; n=9). HSPA1A, TNF, IL1B and IL6 mRNA genes are isolated from milk somatic cells and the gene expression is identified by Real-Time PCR. Between the groups, the HSPA1A (P< 0.01) and IL1B (P< 0.05) gene expression levels were found to be statistically significant, while IL6 and TNF gene expressions were not significant. While the IL6 and TNF gene expression differences are insignificant between the groups, numerically higher level of gene expression was observed in the CON group. Overall results of the study suggested that the rubber mat floor type has a positive impact on both the animal welfare and the udder health. [ABSTRACT FROM AUTHOR]

The purpose of this study was to determine effects of the combination of direct-fed microbials (DFM) with exogenous feed enzymes (EFE) on the growth performance, feed efficiency ratio as well as some behavioural traits of Brown Swiss x Eastern Anatolian Red F1 calves reared in Eastern Region of Turkey. Twenty crossbred calves (10 males and 10 females) were assigned to treatment (DFM plus EFE additive) and control groups. Calves in DFM plus EFE group had 3.05 kg and 5.11 kg higher (P<0.05) weights at weaning and 3 months of ages than these in control group. Growth rate of the DFM plus EFE supplemented calves was significantly greater (P<0.05) than calves in control group in pre-weaning as well as between birth and 3 months of age. The feeding of DFM plus EFE additives to crossbred calves resulted in beneficial effect on the feed efficiency ratio in the pre-weaning period, and amount of dry matter of feed consumed per kg weight gain was significantly (P<0.05) decreased in the calves in the treatment group. Gains in front shank circumferences from body measurements was also significantly higher (P<0.05) in the calves fed DFM plus EFE supplement compared to these in the control group. Behavioural activities of the calves were not significantly affected by DFM plus EFE additives. In conclusion, feeding combination of DFM and EFE to the crossbred calves resulted in significant beneficial effect on the growth performance and feed efficiency ratio of the young animals. The study was carried out to evaluate the effect of feeding direct-fed microbials (DFM) plus exogenous feed enzymes on milk yield and milk composition of primiparous and multiparous Holstein Friesian cows. Nineteen lactating cows were subjected to two dietary treatments (control and DFM plus enzyme groups) during 305 days. Evening (PM) and total daily milk productions of the cows were 12.7% and 11.5% higher than these of animals in the control group. Morning (AM), PM and total daily milk yields were significantly (P<0.01) affected by parity. Multiparous cows produced 16.8%, 15.4% and 16.1% higher AM, PM and total daily milk than primiparous cows. Total daily milk productions expressed as 4% FCM and SCM yields were also significantly affected by diet (P<0.05) and parity (P<0.01). Although Holstein cows fed diet supplemented with DFM plus enzymes resulted in 163.9 kg and 2.7 kg greater 305-days milk and milk fat productions respectively than cows in control group, the difference was not significant. Feeding of diet with DFM plus enzymes did not have significant influence on the percentages of the milk fat, protein, lactose, ash, dry matter, solids-non-fat as well as density and pH of the milk. Body condition score was significantly affected by parity (P<0.01) but not by feeding of DFM plus enzyme supplement. DFM plus enzymes had no apparent effect on count of fecal Escherichia coli flora. 22. The effect of addition Eriobotrya japonica L. marmalade on physicochemical, microbiological, and sensory properties of probiotic yogurts.

This study investigated the effects of loquat ( Eriobotrya japonica L.) marmalade (LM) supplementation in probiotic yogurt during a 21 days storage period. In addition, the viability of Bifidobacterium and its effect on yogurt quality were investigated. Four types of yogurt, including plain yogurt (LM0) and yogurts with 5%, 10%, and 15% LM, were prepared. On days 1, 7, 14, and 21 of storage, physicochemical properties, microbial growth, and textural and sensory properties were investigated. The addition of LM to yogurt significantly affected the total dry matter, fat, pH, titratable acidity, syneresis, water holding capacity, and color parameters (L*, a*, b*). The addition of LM caused a decrease in L* (from 87.52 to 81.78) and an increase in a* values (from -35.42 to -30.14). Yogurts containing 10 and 15% LM demonstrated lower syneresis than control samples during storage. During storage, the pH of yogurts continuously decreased ( P < 0.01). The viability of Bifidobacterium in yogurt was not affected by the LM addition. During storage, the viable count of Bifidobacterium ssp. decreased in all yogurt types. Lactobacillus delbrueckii ssp. bulgaricus decreased more than Streptococcus thermophilus did during storage. In all yogurt samples, coliform bacteria stayed below detectable concentrations. 23. Effects of Slaughter Age of Holstein Friesian Bulls on Meat Quality: Chemical Composition, Textural Characteristics, Sensory Attributes and Fatty Acid Profile.

This study aimed to investigate the effects of slaughter age (young vs. old), muscle type (Longissimus dorsi (LD), Gluteus medius (GM)) and fat deposits (kidney knob and channel fat, subcutaneous fat, intramuscular fat) on chemical, organoleptic, textural characteristics and fatty acid composition of Holstein Friesian bull meat. For this purpose, the carcasses of 26 Holstein Friesian bulls that had been fattened on the same private farm were assigned to two experimental groups based on their age at slaughter: a young group (YG) (average age: 17.0 ± 1.0 months old) and an old group (OG) (average age: 22.0 ± 1.0 months old). The percentage of crude protein, panel tenderness score, polyunsaturated fatty acid (PUFA) and saturated fatty acid (SFA) content, the PUFA/SFA ratio and the hypocholesterolemic fatty acid (DFA)/hypercholesterolemic fatty acid (OFA) ratio of the bull carcasses decreased significantly with increasing slaughter age. By contrast, the OFA content of the carcasses significantly increased (p < 0.05) with increasing slaughter age. Advanced slaughter age resulted in lower panel tenderness scores. Additionally, the meat of the bulls in the OG was considered to be less healthy because of the less desirable fatty acid composition and nutritional indices, such as the PUFA/SFA and hypocholesterolemic/hypercholesterolemic ratios, compared to the meat from the bulls in the YG. Furthermore, the intramuscular fat and internal fat contained high percentages of PUFA and SFA and high PUFA/SFA and hypocholesterolemic/hypercholesterolemic ratios. Interestingly, the percentage of OFA content in the internal and intramuscular fat tissues decreased with increasing slaughter age. In conclusion, this study provided evidence that slaughter age and muscle and fat type are essential sources of variations in the textural characteristics, sensory panel attributes and fatty acid profile of meat from Holstein Friesian bulls.
