This paper studied the influence of salt concentration on the volatile flavor compounds during the fermentation of Northeast farmhouse soybean paste. HS-SPME-GC-MS combined with electronic nose technology were used to analyze the changes of volatile flavor substances and flavor characteristics of soybean paste with different salt concentrations (8%, 10%, 12%) during the fermentation process (0, 30, 60 d). The differences between samples were statistically analyzed through PCA and cluster analysis. The results of HS-SPME-GC-MS showed that there were 2 flavors with OAV≥0.1 at 0 days of fermentation. At the time of 30 days, 8%, 10% and 12% salt concentration samples of flavor substances with OAV≥0.1 increased to 12, 8 and 8, respectively. At the time of 60 days, 8%, 10% and 12% salt concentration samples of the flavor substances with OAV≥0.1 increased to 19, 11 and 10, respectively. And the OAV values of most flavor substances decreased with the increase of salt concentration. This indicated that salt concentration affected the type and content of volatile flavor compounds. The results of the electronic nose showed that the increase in salt concentration would promote the production of organic sulfur compounds and inhibit the production of alkanes, alcohols and hydride compounds. With the extension of the fermentation time, the methyl, alcohol, aldehyde and ketone compounds in the soybean paste would gradually increase, while the ammonia, short-chain alkanes and organic sulfides would gradually decrease. The results of PCA and cluster analysis showed that the difference between samples with different salt concentrations fermented for 0 days was very small, and with the extension of the fermentation time, the difference between the soybean paste with different salt concentrations would become more and more significant. To sum up, the salt concentration has a significant effect on the volatile flavor components in the Northeast farmhouse soybean paste.

Objective To evaluate clinical efficacy of omalizumab in the treatment of chronic spontaneous urticaria (CSU) by analyzing real-world data. Methods We retrospectively analyzed the data of 61 cases with CSU treated with omalizumab for 3 sessions in Guangzhou Institute of Dermatology from September 2020 to November 2022. Urticaria activity score over 7 days (UAS7) and dermatology life quality index (DLQI) score were used to determine the severity of disease. The changes in UAS7 and DLQI scores over the time were analyzed following the treatment with omalizumab. Patients were grouped according to the UAS7 score, and differences in baseline clinical and laboratory data among patients with different efficacy and response rates were compared. Results A total of 61 patients with CSU were treated with omalizumab for 12 weeks. Following the treatment with omalizumab, UAS7 scores decreased from 28.00 (14.00,35.00) points at baseline to 6.00 (0,14.00) points in the first month, and to 0 (0,4.00) points in the third month. Likewise, DLQI scores decreased from 8.00 (4.00,12.00) points at baseline to 2.00(0,6.50) points in the first month and to 0 (0,2.50) points in the third month. Background Cardiopulmonary exercise testing (CPET) is essential for assessing the maximal exercise capacity of patients with chronic obstructive pulmonary disease (COPD) and for developing rehabilitation prescriptions. Body composition has been shown to be associated with CPET results, which is complex, time-consuming, contraindicated, and risky, and cannot be performed in some COPD patients, whereas body composition analysis is simple and fast. Objective This paper focuses on the correlation between body composition and CPET in patients with COPD, and provides a basis for predicting maximal exercise capacity, formulating rehabilitation prescriptions, and rational nutritional support for patients with COPD who are unable to complete cardiopulmonary exercise testing. Methods Stable COPD patients were enrolled in the outpatient respiratory clinic of China-Japan Friendship Hospital between July 2021 and March 2022, and were sequentially subjected to body composition measurements and CPET with continuous incremental loading, and the test results were analyzed to assess the relationship between body composition and CPET results, and to analyze the value of the body composition indexes in predicting the results of CPET. Objective: This study aimed the role of the CCL5/CCR5 axis in the perineural invasion of salivary adenoid cystic carcinoma (SACC) cells., Methods: Immunohistochemical analysis and flow cytometric analysis were conducted to detect the expression of the chemokine receptor CCR5 in SACC cells. Enzyme linked immunosorbent assay (ELISA) was performed to determine the expression of CCL5 in the supernate of human nerve cells. The flow cytometric analysis was applied to observe the changes in F-actin in SACC-LM cells, which were pretreated with CCL5. To assess the effects of the CCL5/CCR5 axis on the migration and invasion of SACC-LM cells, we performed a scratch test and invasion assay under CCL5 stimulation., Results: CCR5 was highly expressed in SACC cells. The concentration of CCL5 in the supernatant of human nerve cells was (359.2±15.8), (696.4±22.6) pg·mL⁻¹. The CCL5/CCR5 axis promoted the migration and invasion of SACC-LM cells., Conclusions: The CCL5/CCR5 axis may be involved in the perineural invasion of SACC cells.
