The objective of this study was to assess the relationship between the main physico-chemical parameters of the milk obtained from cows that grazed on the subalpine grasslands of the Bucegi Mountains. Milk samples were collected and analyzed in the period 2017−2019, during the grazing months (June, July and August), twice a month. A total of 270 milk samples were analyzed in the laboratory and the results were processed using Principal component Analysis (PCA) and correlation analysis. According to the analysis, the first two components had a coverage of about 81.36% of the total variation of the data, and about 18% were not explained by the total variation of the data. The first major component (PC1) accounted for 65.23% of the total variation and included: solids nonfat, density, protein, lactose and cryoscopic point. The second main component (PC2) was milk fat, accounting for 16,14% of the total variation in the data. There were statistically assured correlations between all the physicochemical parameters analyzed in the milk samples, except for the fat content, which had statistically insignificant correlations with the other parameters (p>0.05). The multivariate techniques used, Principal component Analysis (PCA) and correlation analysis, proved useful in explaining the relationship between the quality parameters of cow’s milk, obtained from cows grazed on subalpine grasslands of Bucegi Mountains.
