U radu smo ispitivali organoleptičke osobine toplotno obrađenog mesa jagnjadi meleza svrljiške pramenke i merino lanšaf ovce i mesa virtemberške jagnjadi. Koristili smo senzorne metode ispitivanja mesa, u kojima je učestvovalo šest obučenih ocenjivača. Rezultati ispitivanja u kojima su korišćene numeričko-deskriptivne skale, prikazani su tabelarno.
