Artificial olfaction, also known as an electronic nose, is a gas identification device that replicates the human olfactory organ. This system integrates sensor arrays to detect gases, data acquisition for signal processing, and data analysis for precise identification, enabling it to assess gases both qualitatively and quantitatively in complex settings. This article provides a brief overview of the research progress in electronic nose technology, which is divided into three main elements, focusing on gas-sensitive materials, electronic nose applications, and data analysis methods. Furthermore, the review explores both traditional MOS materials and the newer porous materials like MOFs for gas sensors, summarizing the applications of electronic noses across diverse fields including disease diagnosis, environmental monitoring, food safety, and agricultural production. Additionally, it covers electronic nose pattern recognition and signal drift suppression algorithms. Ultimately, the summary identifies challenges faced by current systems and offers innovative solutions for future advancements. Currently, the market for wearable devices is expanding, with a growing trend towards the use of these devices for continuous-monitoring applications. Among these, real-time posture monitoring and assessment stands out as a crucial application given the rising prevalence of conditions like forward head posture (FHP). This paper proposes a wearable device that combines the acquisition of electromyographic signals from the cervical region with inertial data from inertial measurement units (IMUs) to assess the occurrence of FHP. To improve electronics integration and wearability, e-textiles are explored for the development of surface electrodes and conductive tracks that connect the different electronic modules. Tensile strength and abrasion tests of 22 samples consisting of textile electrodes and conductive tracks produced with three fiber types (two from Shieldex and one from Imbut) were conducted. Imbut's Elitex fiber outperformed Shieldex's fibers in both tests. The developed surface electromyography (sEMG) acquisition hardware and textile electrodes were also tested and benchmarked against an electromyography (EMG) gold standard in dynamic and isometric conditions, with results showing slightly better root mean square error (RMSE) values (for 4 × 2 textile electrodes (10.02%) in comparison to commercial Ag/AgCl electrodes (11.11%). The posture monitoring module was also validated in terms of joint angle estimation and presented an overall error of 4.77° for a controlled angular velocity of 40°/s as benchmarked against a UR10 robotic arm. An electronic device based on the detection of volatile substances was developed in response to the need to distinguish between fungal infestations in food and was applied to wheat grains. The most common pathogens belong to the fungi of the genus Fusarium: F. avenaceum, F. langsethiae, F. poae, and F. sporotrichioides. The electronic nose prototype is a low-cost device based on commercially available TGS series sensors from Figaro Corp. Two types of gas sensors that respond to the perturbation are used to collect signals useful for discriminating between the samples under study. First, an electronic nose detects the transient response of the sensors to a change in operating conditions from clean air to the presence of the gas being measured. A simple gas chamber was used to create a sudden change in gas composition near the sensors. An inexpensive pneumatic system consisting of a pump and a carbon filter was used to supply the system with clean air. It was also used to clean the sensors between measurement cycles. The second function of the electronic nose is to detect the response of the sensor to temperature disturbances of the sensor heater in the presence of the gas to be measured. It has been shown that features extracted from the transient response of the sensor to perturbations by modulating the temperature of the sensor heater resulted in better classification performance than when the machine learning model was built from features extracted from the response of the sensor in the gas adsorption phase. By combining features from both phases of the sensor response, a further improvement in classification performance was achieved. The E-nose enabled the differentiation of F. poae from the other fungal species tested with excellent performance. In the electronic nose (E-nose) systems, gas type recognition and accurate concentration prediction are some of the most challenging issues. This study introduced an innovative pattern recognition method of time–frequency attention convolutional neural network (TFA-CNN). A time–frequency attention block was designed in the network, aiming to excavate and effectively integrate the temporal and frequency domain information in the E-nose signals to enhance the performance of gas classification and concentration prediction tasks. Additionally, a novel data augmentation strategy was developed, manipulating the feature channels and time dimensions to reduce the interference of sensor drift and redundant information, thereby enhancing the model's robustness and adaptability. Utilizing two types of metal-oxide-semiconductor gas sensors, this research conducted qualitative and quantitative analysis on five target gases. The evaluation results showed that the classification accuracy could reach 100%, and the coefficient of the determination (R2) score of the regression task was up to 0.99. The Pearson correlation coefficient (r) was 0.99, and the mean absolute error (MAE) was 1.54 ppm. The experimental test results were almost consistent with the system predictions, and the MAE was 1.39 ppm. This study provides a method of network learning that combines time–frequency domain information, exhibiting high performance in gas classification and concentration prediction within the E-nose system. Milk and dairy products are included in the list of the Food Security Doctrine and are of paramount importance in the diet of the human population. At the same time, the presence of many macro- and microcomponents in milk, as available sources of carbon and energy, as well as the high activity of water, cause the rapid development of native and pathogen microorganisms in it. The goal of the work was to assess the possibility of using an array of gas chemical sensors based on piezoquartz microbalances with polycomposite coatings to assess the microbiological indicators of milk quality and to compare the microflora of milk samples. Piezosensors with polycomposite coatings with high sensitivity to volatile compounds were obtained. The gas phase of raw milk was analyzed using the sensors; in parallel, the physicochemical and microbiological parameters were determined for these samples, and species identification of the microorganisms was carried out for the isolated microorganisms in milk. The most informative output data of the sensor array for the assessment of microbiological indicators were established. Regression models were constructed to predict the quantity of microorganisms in milk samples based on the informative sensors' data with an error of no more than 17%. The limit of determination of QMAFAnM in milk was 243 ± 174 CFU/cm3. Ways to improve the accuracy and specificity of the determination of microorganisms in milk samples were proposed. To evaluate the suitability of an analytical instrument, essential figures of merit such as the limit of detection (LOD) and the limit of quantification (LOQ) can be employed. However, as the definitions k nown in the literature are mostly applicable to one signal per sample, estimating the LOD for substances with instruments yielding multidimensional results like electronic noses (eNoses) is still challenging. In this paper, we will compare and present different approaches to estimate the LOD for eNoses by employing commonly used multivariate data analysis and regression techniques, including principal component analysis (PCA), principal component regression (PCR), as well as partial least squares regression (PLSR). These methods could subsequently be used to assess the suitability of eNoses to help control and steer processes where volatiles are key process parameters. As a use case, we determined the LODs for key compounds involved in beer maturation, namely acetaldehyde, diacetyl, dimethyl sulfide, ethyl acetate, isobutanol, and 2-phenylethanol, and discussed the suitability of our eNose for that dertermination process. The results of the methods performed demonstrated differences of up to a factor of eight. For diacetyl, the LOD and the LOQ were sufficiently low to suggest potential for monitoring via eNose. Providing employees with proper work conditions should be one of the main concerns of any employer. Even so, in many cases, work shifts chronically expose the workers to a wide range of potentially harmful compounds, such as ammonia. Ammonia has been present in the composition of products commonly used in a wide range of industries, namely production in lines, and also laboratories, schools, hospitals, and others. Chronic exposure to ammonia can yield several diseases, such as irritation and pruritus, as well as inflammation of ocular, cutaneous, and respiratory tissues. In more extreme cases, exposure to ammonia is also related to dyspnea, progressive cyanosis, and pulmonary edema. As such, the use of ammonia needs to be properly regulated and monitored to ensure safer work environments. The Occupational Safety and Health Administration and the European Agency for Safety and Health at Work have already commissioned regulations on the acceptable limits of exposure to ammonia. Nevertheless, the monitoring of ammonia gas is still not normalized because appropriate sensors can be difficult to find as commercially available products. To compare apple aroma intensities, apples were analyzed from the calyx side (on the opposite side of the stem) using an electronic nose (e-nose) sensor device and direct mass spectrometry. The results indicated that the sensor value tended to increase in accordance with the total intensity of apple aroma components measured by direct mass spectrometry. In addition, the e-nose sensor values for apple aroma did not correlate with the sugar content and ripeness measurements using optical sensors. Moreover, the relative standard deviations of repeatability and intermediate precision in the measurement of apple flavor (apple lip balm) were within 1.36–9.96%. The early identification of rotten potatoes is one of the most important challenges in a storage facility because of the inconspicuous symptoms of rot, the high density of storage, and environmental factors (such as temperature, humidity, and ambient gases). An electronic nose system based on an ensemble convolutional neural network (ECNN, a powerful feature extraction method) was developed to detect potatoes with different degrees of rot. Three types of potatoes were detected: normal samples, slightly rotten samples, and totally rotten samples. A feature discretization method was proposed to optimize the impact of ambient gases on electronic nose signals by eliminating redundant information from the features. The ECNN based on original features presented good results for the prediction of rotten potatoes in both laboratory and storage environments, and the accuracy of the prediction results was 94.70% and 90.76%, respectively. Moreover, the application of the feature discretization method significantly improved the prediction results, and the accuracy of prediction results improved by 1.59% and 3.73%, respectively. Above all, the electronic nose system performed well in the identification of three types of potatoes by using the ECNN, and the proposed feature discretization method was helpful in reducing the interference of ambient gases. This study proposes an optimization method for temperature modulation in chemiresistor-type gas sensors based on Bayesian optimization (BO), and its applicability was investigated. As voltage for a sensor heater, our previously proposed waveform was employed, and the parameters determining the voltage range were optimized. Employing the Bouldin–Davies index (DBI) as an objective function (OBJ), BO was utilized to minimize the DBI calculated from a feature matrix built from the collected data followed by pre-processing. The sensor responses were measured using five test gases with five concentrations, amounting to 2500 data points per parameter set. After seven trials with four initial parameter sets (ten parameter sets were tested in total), the DBI was successfully reduced from 2.1 to 1.5. The classification accuracy for the test gases based on the support vector machine tends to increase with decreasing the DBI, indicating that the DBI acts as a good OBJ. Additionally, the accuracy itself increased from 85.4% to 93.2% through optimization. The deviation from the tendency that the accuracy increases with decreasing the DBI for some parameter sets was also discussed. The electronic nose is a non-invasive technology suitable for the analysis of edible oils. One of the practical applications in the olive oil industry is the classification of virgin oils based on their sensory characteristics. Notwithstanding that this technology, at this stage, cannot realistically replace the currently used methods, it is fruitful for a preliminary analysis of the oil quality. This work makes use of this technology to develop a methodology for the detection of the threshold by which an extra-virgin olive oil (EVOO) drops into the virgin olive oil (VOO) category. With this aim, two features were studied: the level of fruitiness level and the type of defect. The results showed a greater influence of the level of fruitiness than the type of defect in the determination of the detection threshold. Furthermore, three of the sensors (S2, S7 and S9) of the commercial e-nose PEN3 were identified as the most discriminating in the classification between EVOO and VOO oils. [ABSTRACT FROM AUTHOR]

Electronic nose devices stand out as pioneering innovations in contemporary technological research, addressing the arduous challenge of replicating the complex sense of smell found in humans. Currently, sensor instruments find application in a variety of fields, including environmental, (bio)medical, food, pharmaceutical, and materials production. Particularly the latter, has seen a significant increase in the adoption of technological tools to assess food quality, gradually supplanting human panelists and thus reshaping the entire quality control paradigm in the sector. This process is happening even more rapidly in the world of wine, where olfactory sensory analysis has always played a central role in attributing certain qualities to a wine. In this review, conducted using sources such as PubMed, Science Direct, and Web of Science, we examined papers published between January 2015 and January 2024. The aim was to explore prevailing trends in the use of human panels and sensory tools (such as the E-nose) in the wine industry. The focus was on the evaluation of wine quality attributes by paying specific attention to geographical origin, sensory defects, and monitoring of production trends. Analyzed results show that the application of E-nose-type sensors performs satisfactorily in that trajectory. Nevertheless, the integration of this type of analysis with more classical methods, such as the trained sensory panel test and with the application of destructive instrument volatile compound (VOC) detection (e.g., gas chromatography), still seems necessary to better explore and investigate the aromatic characteristics of wines. This study was focused on the analysis of the emission of volatile compounds as an indicator of changes in the quality degradation of corn groats with 14% and 17% moisture content (wet basis) using an electronic nose (Agrinose) at changing vertical pressure values. The corn groats were used in this study in an unconsolidated state of 0 kPa (the upper free layer of bulk material in the silo) and under a consolidation pressure of 40 kPa (approximately 3 m from the upper layer towards the bottom of the silo) and 80 kPa (approximately 6 m from the upper layer towards the bottom of the silo). The consolidation pressures corresponded to the vertical pressures acting on the layers of the bulk material bed in medium-slender and low silos. Chromatographic determinations of volatile organic compounds were performed as reference tests. The investigations confirmed the correlation of the electronic nose response with the quality degradation of the groats as a function of storage time. An important conclusion supported by the research results is that, based on the determined levels of intensity of volatile compound emission, the electronic nose is able to distinguish the individual layers of the bulk material bed undergoing different degrees of quality degradation. In areas where livestock are bred, there is a demand for accurate, real-time, and stable monitoring of ammonia concentration in the breeding environment. However, existing electronic nose systems have slow response times and limited detection accuracy. In this study, we introduce a novel solution: the bionic chamber construction of the electronic nose is optimized, and the sensor response data in the chamber are analyzed using an intelligent algorithm. We analyze the structure of the biomimetic chamber and the surface airflow of the sensor array to determine the sensing units of the system. The system employs an electronic nose to detect ammonia and ethanol gases in a circulating airflow within a closed box. The captured signals are processed, followed by the application of classification and regression models for data prediction. Our results suggest that the system, leveraging the biomimetic chamber, offers rapid gas detection response times. A high classification prediction accuracy, with a determination coefficient R2 value of 0.99 for single-output regression and over 0.98 for multi-output regression predictions, is achieved by incorporating a backpropagation (BP) neural network algorithm. These outcomes demonstrate the effectiveness of the electronic nose, based on an optimized bionic chamber combined with a BP neural network algorithm, in accurately detecting ammonia emitted during livestock excreta fermentation, satisfying the ammonia detection requirements of breeding farms. Anti-drift is a new and serious challenge in the field related to gas sensors. Gas sensor drift causes the probability distribution of the measured data to be inconsistent with the probability distribution of the calibrated data, which leads to the failure of the original classification algorithm. In order to make the probability distributions of the drifted data and the regular data consistent, we introduce the Conditional Adversarial Domain Adaptation Network (CDAN)+ Sharpness Aware Minimization (SAM) optimizer—a state-of-the-art deep transfer learning method.The core approach involves the construction of feature extractors and domain discriminators designed to extract shared features from both drift and clean data. These extracted features are subsequently input into a classifier, thereby amplifying the overall model's generalization capabilities. The method boasts three key advantages: (1) Implementation of semi-supervised learning, thereby negating the necessity for labels on drift data. (2) Unlike conventional deep transfer learning methods such as the Domain-adversarial Neural Network (DANN) and Wasserstein Domain-adversarial Neural Network (WDANN), it accommodates inter-class correlations. (3) It exhibits enhanced ease of training and convergence compared to traditional deep transfer learning networks. Through rigorous experimentation on two publicly available datasets, we substantiate the efficiency and effectiveness of our proposed anti-drift methodology when juxtaposed with state-of-the-art techniques. Volatile organic compounds (VOCs) in exhaled human breath serve as pivotal biomarkers for disease identification and medical diagnostics. In the context of diabetes mellitus, the noninvasive detection of acetone, a primary biomarker using electronic noses (e-noses), has gained significant attention. However, employing e-noses requires pre-trained algorithms for precise diabetes detection, often requiring a computer with a programming environment to classify newly acquired data. This study focuses on the development of an embedded system integrating Tiny Machine Learning (TinyML) and an e-nose equipped with Metal Oxide Semiconductor (MOS) sensors for real-time diabetes detection. The study encompassed 44 individuals, comprising 22 healthy individuals and 22 diagnosed with various types of diabetes mellitus. Test results highlight the XGBoost Machine Learning algorithm's achievement of 95% detection accuracy. Additionally, the integration of deep learning algorithms, particularly deep neural networks (DNNs) and one-dimensional convolutional neural network (1D-CNN), yielded a detection efficacy of 94.44%. This study focuses on an applicability of the device designed for monitoring dough fermentation. The device combines a complex system of thermodynamic sensors (TDSs) with an electronic nose (E-nose). The device's behavior was tested in experiments with dough samples. The configuration of the sensors in the thermodynamic system was explored and their response to various positions of the heat source was investigated. When the distance of the heat source and its intensity from two thermodynamic sensors changes, the output signal of the thermodynamic system changes as well. Thus, as the distance of the heat source decreases or the intensity increases, there is a higher change in the output signal of the system. The linear trend of this change reaches an R2 value of 0.936. Characteristics of the doughs prepared from traditional and non-traditional flours were successfully detected using the electronic nose. To validate findings, the results of the measurements were compared with signals from the rheofermentometer Rheo F4, and the correlation between the output signals was closely monitored. The data after statistical evaluation show that the measurements using thermodynamic sensors and electronic nose directly correlate the most with the measured values of the fermenting dough volume. Pearson's correlation coefficient for TDSs and rheofermentometer reaches up to 0.932. The E-nose signals also correlate well with dough volume development, up to 0.973. The data and their analysis provided by this study declare that the used system configuration and methods are fully usable for this type of food analysis and also could be usable in other types of food based on the controlled fermentation. Fusarium graminearum and F. culmorum are considered some of the most dangerous pathogens of plant diseases. They are also considerably dangerous to humans as they contaminate stored grain, causing a reduction in yield and deterioration in grain quality by producing mycotoxins. Detecting Fusarium fungi is possible using various diagnostic methods. In the manuscript, qPCR tests were used to determine the level of wheat grain spoilage by estimating the amount of DNA present. High-performance liquid chromatography was performed to determine the concentration of DON and ZEA mycotoxins produced by the fungi. GC-MS analysis was used to identify volatile organic components produced by two studied species of Fusarium. A custom-made, low-cost, electronic nose was used for measurements of three categories of samples, and Random Forests machine learning models were trained for classification between healthy and infected samples. A detection performance with recall in the range of 88–94%, precision in the range of 90–96%, and accuracy in the range of 85–93% was achieved for various models. Two methods of data collection during electronic nose measurements were tested and compared: sensor response to immersion in the odor and response to sensor temperature modulation. The field of organic-borne biomarkers has been gaining relevance due to its suitability for diagnosing pathologies and health conditions in a rapid, accurate, non-invasive, painless and low-cost way. Due to the lack of analytical techniques with features capable of analysing such a complex matrix as the human breath, the academic community has focused on developing electronic noses based on arrays of gas sensors. These sensors are assembled considering the excitability, sensitivity and sensing capacities of a specific nanocomposite, graphene. In this way, graphene-based sensors can be employed for a vast range of applications that vary from environmental to medical applications. This review work aims to gather the most relevant published papers under the scope of "Graphene sensors" and "Biomarkers" in order to assess the state of the art in the field of graphene sensors for the purposes of biomarker identification. During the bibliographic search, a total of six pathologies were identified as the focus of the work. They were lung cancer, gastric cancer, chronic kidney diseases, respiratory diseases that involve inflammatory processes of the airways, like asthma and chronic obstructive pulmonary disease, sleep apnoea and diabetes. The achieved results, current development of the sensing sensors, and main limitations or challenges of the field of graphene sensors are discussed throughout the paper, as well as the features of the experiments addressed. Currently, e-noses are used for measuring odorous compounds at wastewater treatment plants. These devices mimic the mammalian olfactory sense, comprising an array of multiple non-specific gas sensors. An array of sensors creates a unique set of signals called a "gas fingerprint", which enables it to differentiate between the analyzed samples of gas mixtures. However, appropriate advanced analyses of multidimensional data need to be conducted for this purpose. The failures of the wastewater treatment process are directly connected to the odor nuisance of bioreactors and are reflected in the level of pollution indicators. Thus, it can be assumed that using the appropriately selected methods of data analysis from a gas sensors array, it will be possible to distinguish and classify the operating states of bioreactors (i.e., phases of normal operation), as well as the occurrence of malfunction. This work focuses on developing a complete protocol for analyzing and interpreting multidimensional data from a gas sensor array measuring the properties of the air headspace in a bioreactor. These methods include dimensionality reduction and visualization in two-dimensional space using the principal component analysis (PCA) method, application of data clustering using an unsupervised method by Density-Based Spatial Clustering of Applications with Noise (DBSCAN) algorithm, and at the last stage, application of extra trees as a supervised machine learning method to achieve the best possible accuracy and precision in data classification. Nowadays, it is well known that sensors have an enormous impact on our life, using streams of data to make life-changing decisions. Every single aspect of our day is monitored via thousands of sensors, and the benefits we can obtain are enormous. With the increasing demand for food quality, food safety has become one of the main focuses of our society. However, fresh foods are subject to spoilage due to the action of microorganisms, enzymes, and oxidation during storage. Nanotechnology can be applied in the food industry to support packaged products and extend their shelf life. Chemical composition and sensory attributes are quality markers which require innovative assessment methods, as existing ones are rather difficult to implement, labour-intensive, and expensive. E-sensing devices, such as vision systems, electronic noses, and electronic tongues, overcome many of these drawbacks. Nanotechnology holds great promise to provide benefits not just within food products but also around food products. In fact, nanotechnology introduces new chances for innovation in the food industry at immense speed. Detecting volatile organic compounds is a fundamental step in water quality analysis. Methylisoborneol (MIB) provides a lousy odor to water, whereas geosmin (GEO) is responsible for its sour taste. A widely-used technique for their detection is gas-phase chromatography. On the other hand, an electronic nose from organic thin-film transistors is a cheaper and faster alternative. Poly(2,5-bis(3-tetradecyl-thiophen-2-yl)thieno[3,2-b]thiophene) (PBTTT-C14) features semiconducting properties suitable for organic electronics. However, in order to expose the active layer in a bottom-gate transistor structure with photolithographically patterned electrodes, a cross-linked dielectric such as poly(4-vinyl phenol) (PVP) is necessary. In this work, the cross-linking was demonstrated using FTIR and Raman spectroscopies, as well as high-k capacitors with a dielectric constant of 5.3 . The presence of enhanced crystallinity with terrace formation in the semiconducting film was confirmed with UV-visible spectrophotometry, atomic force microscopy, and X-ray diffraction. Finally, for the first time, a PBTTT-C14 transistor on cross-linked PVP was shown to respond to isoborneol with a sensitivity of up to 6% change in mobility per ppm. Fusarium is a genus of fungi found throughout the world. It includes many pathogenic species that produce toxins of agricultural importance. These fungi are also found in buildings and the toxins they spread can be harmful to humans. Distinguishing Fusarium species can be important for selecting effective preventive measures against their spread. A low-cost electronic nose applying six commercially available TGS-series gas sensors from Figaro Inc. was used in our research. Different modes of operation of the electronic nose were applied and compared, namely, gas adsorption and desorption, as well as modulation of the sensor's heating voltage. Classification models using the random forest technique were applied to differentiate between measured sample categories of four species: F. avenaceum, F. culmorum, F. greaminarum, and F. oxysporum. In our research, it was found that the mode of operation with modulation of the heating voltage had the advantage of collecting data from which features can be extracted, leading to the training of machine learning classification models with better performance compared to cases where the sensor's response to the change in composition of the measured gas was exploited. The optimization of the data collection time was investigated and led to the conclusion that the response of the sensor at the beginning of the heating voltage modulation provides the most useful information. This Editorial provides summaries and an overview of research and review articles published in the Sensors journal, volumes 21 (2021), 22 (2022), and 23 (2023), within the biomedical Special Issue "Portable Electronic-Nose Devices for Noninvasive Early Disease Detection", which focused on recent sensors, biosensors, and clinical instruments developed for noninvasive early detection and diagnosis of human and animal diseases. The ten articles published in this Special Issue provide new information associated with recent electronic-nose (e-nose) and related volatile organic compound (VOC)-detection technologies developed to improve the effectiveness and efficiency of diagnostic methodologies for early disease detection prior to symptom development. For review purposes, the summarized articles were placed into three broad groupings or topic areas, including veterinary-wildlife pathology, human clinical pathology, and the detection of dietary effects on VOC emissions. These specified categories were used to define sectional headings devoted to related research studies with a commonality based on a particular disease being investigated or type of analytical instrument used in analyses. Apple is an important cash crop in China, and the prediction of its freshness can effectively reduce its storage risk and avoid economic loss. The change in the concentration of odor information such as ethylene, carbon dioxide, and ethanol emitted during apple storage is an important feature to characterize the freshness of apples. In order to accurately predict the freshness level of apples, an electronic nose system based on a gas sensor array and wireless transmission module is designed, and a neural network prediction model using an improved Sparrow Search Algorithm (SSA) based on chaotic sequence (Tent) to optimize Back Propagation (BP) is proposed. The odor information emitted by apples is studied to complete an apple freshness prediction. Furthermore, by fitting the relationship between the prediction coefficient and the input vector, the accuracy benchmark of the prediction model is set, which further improves the prediction accuracy of apple odor information. Compared with the traditional prediction method, the system has the characteristics of simple operation, low cost, reliable results, mobile portability, and it avoids the damage to apples in the process of freshness prediction to realize non-destructive testing. Food quality assurance is an important field that directly affects public health. The organoleptic aroma of food is of crucial significance to evaluate and confirm food quality and origin. The volatile organic compound (VOC) emissions (detectable aroma) from foods are unique and provide a basis to predict and evaluate food quality. Soybean and corn oils were added to sesame oil (to simulate adulteration) at four different mixture percentages (25–100%) and then chemically analyzed using an experimental 9-sensor metal oxide semiconducting (MOS) electronic nose (e-nose) and gas chromatography–mass spectroscopy (GC-MS) for comparisons in detecting unadulterated sesame oil controls. GC-MS analysis revealed eleven major VOC components identified within 82–91% of oil samples. Principle component analysis (PCA) and linear detection analysis (LDA) were employed to visualize different levels of adulteration detected by the e-nose. Artificial neural networks (ANNs) and support vector machines (SVMs) were also used for statistical modeling. The sensitivity and specificity obtained for SVM were 0.987 and 0.977, respectively, while these values for the ANN method were 0.949 and 0.953, respectively. E-nose-based technology is a quick and effective method for the detection of sesame oil adulteration due to its simplicity (ease of application), rapid analysis, and accuracy. GC-MS data provided corroborative chemical evidence to show differences in volatile emissions from virgin and adulterated sesame oil samples and the precise VOCs explaining differences in e-nose signature patterns derived from each sample type. Among the five human senses, light, sound, and force perceived by the eye, ear, and skin, respectively are physical phenomena, and therefore can be easily measured and expressed as objective, univocal, and simple digital data with physical quantity. However, as taste and odor molecules perceived by the tongue and nose are chemical phenomena, it has been difficult to express them as objective and univocal digital data, since no reference chemicals can be defined. Therefore, while the recording, saving, transmitting to remote locations, and replaying of human visual, auditory, and tactile information as digital data in digital devices have been realized (this series of data flow is defined as DX (digital transformation) in this review), the DX of human taste and odor information is not yet in the realization stage. Particularly, since there are at least 400,000 types of odor molecules and an infinite number of complex odors that are mixtures of these molecules, it has been considered extremely difficult to realize "human olfactory DX" by converting all odors perceived by human olfaction into digital data. In this review, we discuss the current status and future prospects of the development of "human olfactory DX", which we believe can be realized by utilizing odor sensors that employ the olfactory receptors (ORs) that support human olfaction as sensing molecules (i.e., human OR sensor). Pisco is an alcoholic beverage obtained from grape juice distillation. Considered the flagship drink of Peru, it is produced following strict and specific quality standards. In this work, sensing results for volatile compounds in pisco, obtained with an electronic nose, were analyzed through the application of machine learning algorithms for the differentiation of pisco varieties. This differentiation aids in verifying beverage quality, considering the parameters established in its Designation of Origin". For signal processing, neural networks, multiclass support vector machines and random forest machine learning algorithms were implemented in MATLAB. In addition, data augmentation was performed using a proposed procedure based on interpolation–extrapolation. All algorithms trained with augmented data showed an increase in performance and more reliable predictions compared to those trained with raw data. This special issue (SI) focused on the novel methods developed using contactless sensors for food, beverages and packaging. The use of traditional methods to evaluate food, beverages, and packaging tends to be time-consuming, labour-intensive, and usually involves high costs due to the need for expensive equipment, regular refill of consumables, skilled personnel and, in the case of sensory evaluation, incentives or payments involved for participants recruitment and/or panelists training and participation. Other papers focus on the use of other specific sensors, such as a low-cost and portable electronic nose (e-nose) to predict aromas and roasting intensity in coffee [[5]] and the use of flexible sensors for monitoring oyster survival rates [[6]]. Nowadays, the electronic nose (e-nose) has gained a huge amount of attention due to its ability to detect and differentiate mixtures of various gases and odors using a limited number of sensors. Its applications in the environmental fields include analysis of the parameters for environmental control, process control, and confirming the efficiency of the odor-control systems. The e-nose has been developed by mimicking the olfactory system of mammals. This paper investigates e-noses and their sensors for the detection of environmental contaminants. Among different types of gas chemical sensors, metal oxide semiconductor sensors (MOXs) can be used for the detection of volatile compounds in air at ppm and sub-ppm levels. In this regard, the advantages and disadvantages of MOX sensors and the solutions to solve the problems arising upon these sensors' applications are addressed, and the research works in the field of environmental contamination monitoring are overviewed. These studies have revealed the suitability of e-noses for most of the reported applications, especially when the tools were specifically developed for that application, e.g., in the facilities of water and wastewater management systems. As a general rule, the literature review discusses the aspects related to various applications as well as the development of effective solutions. However, the main limitation in the expansion of the use of e-noses as an environmental monitoring tool is their complexity and lack of specific standards, which can be corrected through appropriate data processing methods applications. Recently a hand-held, carbon-nanotube-based electronic nose became available on the market. Such an electronic nose could be interesting for applications in the food industry, health monitoring, environmental monitoring, and security services. However, not much is known about the performance of such an electronic nose. In a series of measurements, the instrument was exposed to low ppm vapor concentrations of four volatile organic compounds with different scent profiles and polarities. Detection limits, linearity of response, repeatability, reproducibility, and scent patterns were determined. The results indicate detection limits in the range of 0.1–0.5 ppm and a linear signal response in the range of 0.5–8.0 ppm. The repeatability of the scent patterns at compound concentrations of 2 ppm allowed the identification of the tested volatiles based on their scent pattern. However, the reproducibility was not sufficient, since different scent profiles were produced on different measurement days. In addition, it was noted that the response of the instrument diminished over time (over several months) possibly by sensor poisoning. Detection and monitoring of airborne hazards using e-noses has been lifesaving and prevented accidents in real-world scenarios. E-noses generate unique signature patterns for various volatile organic compounds (VOCs) and, by leveraging artificial intelligence, detect the presence of various VOCs, gases, and smokes onsite. Widespread monitoring of airborne hazards across many remote locations is possible by creating a network of gas sensors using Internet connectivity, which consumes significant power. Long-range (LoRa)-based wireless networks do not require Internet connectivity while operating independently. Therefore, we propose a networked intelligent gas sensor system (N-IGSS) which uses a LoRa low-power wide-area networking protocol for real-time airborne pollution hazard detection and monitoring. We developed a gas sensor node by using an array of seven cross-selective tin-oxide-based metal-oxide semiconductor (MOX) gas sensor elements interfaced with a low-power microcontroller and a LoRa module. Experimentally, we exposed the sensor node to six classes i.e., five VOCs plus ambient air and as released by burning samples of tobacco, paints, carpets, alcohol, and incense sticks. Using the proposed two-stage analysis space transformation approach, the captured dataset was first preprocessed using the standardized linear discriminant analysis (SLDA) method. Four different classifiers, namely AdaBoost, XGBoost, Random Forest (RF), and Multi-Layer Perceptron (MLP), were then trained and tested in the SLDA transformation space. The proposed N-IGSS achieved "all correct" identification of 30 unknown test samples with a low mean squared error (MSE) of 1.42 × 10−4 over a distance of 590 m. [ABSTRACT FROM AUTHOR]

E-nose and e-tongue are advanced technologies that allow for the fast and precise analysis of smells and flavours using special sensors. Both technologies are widely used, especially in the food industry, where they are implemented, e.g., for identifying ingredients and product quality, detecting contamination, and assessing their stability and shelf life. Therefore, the aim of this article is to provide a comprehensive review of the application of e-nose and e-tongue in various industries, focusing in particular on the use of these technologies in the fruit and vegetable juice industry. For this purpose, an analysis of research carried out worldwide over the last five years, concerning the possibility of using the considered multisensory systems to test the quality and taste and aroma profiles of juices is included. In addition, the review contains a brief characterization of these innovative devices through information such as their origin, mode of operation, types, advantages and disadvantages, challenges and perspectives, as well as the possibility of their applications in other industries besides the juice industry. Wood rot fungus Fulvifomes siamensis infects multiple urban tree species commonly planted in Singapore. A commercial e-nose (Cyranose 320) was used to differentiate some plant and fungi volatiles. The e-nose distinctly clustered the volatiles at 0.25 ppm, and this sensitivity was further increased to 0.05 ppm with the use of nitrogen gas to purge the system and set up the baseline. Nitrogen gas baseline resulted in a higher magnitude of sensor responses and a higher number of responsive sensors. The specificity of the e-nose for F. siamensis was demonstrated by distinctive clustering of its pure culture, fruiting bodies collected from different tree species, and in diseased tissues infected by F. siamensis with a 15-min incubation time. This good specificity was supported by the unique volatile profiles revealed by SPME GC-MS analysis, which also identified the signature volatile for F. siamensis—1,2,4,5-tetrachloro-3,6-dimethoxybenzene. In field conditions, the e-nose successfully identified F. siamensis fruiting bodies on different tree species. The findings of concentration-based clustering and host-tree-specific volatile profiles for fruiting bodies provide further insights into the complexity of volatile-based diagnosis that should be taken into consideration for future studies. Accurate and rapid prediction of pesticides in groundwater is important to protect human health. Thus, an electronic nose was used to recognize pesticides in groundwater. However, the e-nose response signals for pesticides are different in groundwater samples from various regions, so a prediction model built on one region's samples might be ineffective when tested in another. Moreover, the establishment of a new prediction model requires a large number of sample data, which will cost too much resources and time. To resolve this issue, this study introduced the TrAdaBoost transfer learning method to recognize the pesticide in groundwater using the e-nose. The main work was divided into two steps: (1) qualitatively checking the pesticide type and (2) semi-quantitatively predicting the pesticide concentration. The support vector machine integrated with the TrAdaBoost was adopted to complete these two steps, and the recognition rate can be 19.3% and 22.2% higher than that of methods without transfer learning. These results demonstrated the potential of the TrAdaBoost based on support vector machine approaches in recognizing the pesticide in groundwater when there were few samples in the target domain. Relative humidity (RH) is a common interferent in chemical gas sensors, influencing their baselines and sensitivity, which can limit the performance of e-nose systems. Tuning the composition of the sensing materials is a possible strategy to control the impact of RH in gas sensors. Hybrid gel materials used as gas sensors contain self-assembled droplets of ionic liquid and liquid crystal molecules encapsulated in a polymeric matrix. In this work, we assessed the effect of the matrix hydrophobic properties in the performance of hybrid gel materials for VOC sensing in humid conditions (50% RH). We used two different polymers, the hydrophobic PDMS and the hydrophilic bovine gelatin, as polymeric matrices in hybrid gel materials containing imidazolium-based ionic liquids, [BMIM][Cl] and [BMIM][DCA], and the thermotropic liquid crystal 5CB. Better accuracy of VOC prediction is obtained for the hybrid gels composed of a PDMS matrix combined with the [BMIM][Cl] ionic liquid, and the use of this hydrophobic matrix reduces the effect of humidity on the sensing performance when compared to the gelatin counterpart. VOCs interact with all the moieties of the hybrid gel multicomponent system; thus, VOC correct classification depends not only on the polymeric matrix used, but also on the IL selected, which seems to be key to achieve VOCs discrimination at 50% RH. The response of resistive In2O3−x sensing devices was investigated as a function of the NO2 concentration in different operative conditions. Sensing layers are 150 nm thick films manufactured by oxygen-free room temperature magnetron sputtering deposition. This technique allows for a facile and fast manufacturing process, at same time providing advantages in terms of gas sensing performances. The oxygen deficiency during growth provides high densities of oxygen vacancies, both on the surface, where they are favoring NO2 absorption reactions, and in the bulk, where they act as donors. This n-type doping allows for conveniently lowering the thin film resistivity, thus avoiding the sophisticated electronic readout required in the case of very high resistance sensing layers. The semiconductor layer was characterized in terms of morphology, composition and electronic properties. The sensor baseline resistance is in the order of kilohms and exhibits remarkable performances with respect to gas sensitivity. The sensor response to NO2 was studied experimentally both in oxygen-rich and oxygen-free atmospheres for different NO2 concentrations and working temperatures. Experimental tests revealed a response of 32%/ppm at 10 ppm NO2 and response times of approximately 2 min at an optimal working temperature of 200 °C. The inherent cross-sensitivity of semiconductor gas sensors makes them extremely challenging to accurately detect mixed gases. In order to solve this problem, this paper designed an electronic nose (E-nose) with seven gas sensors and proposed a rapid method for identifying CH4, CO, and their mixtures. Most reported methods for E-nose were based on analyzing the entire response process and employing complex algorithms, such as neural network, which result in long time-consuming processes for gas detection and identification. To overcome these shortcomings, this paper firstly proposes a way to shorten the gas detection time by analyzing only the start stage of the E-nose response instead of the entire response process. Subsequently, two polynomial fitting methods for extracting gas features are designed according to the characteristics of the E-nose response curves. Finally, in order to shorten the time consumption of calculation and reduce the complexity of the identification model, linear discriminant analysis (LDA) is introduced to reduce the dimensionality of the extracted feature datasets, and an XGBoost-based gas identification model is trained using the LDA optimized feature datasets. The experimental results show that the proposed method can shorten the gas detection time, obtain sufficient gas features, and achieve nearly 100% identification accuracy for CH4, CO, and their mixed gases. The established efficacy of electronic volatile organic compound (VOC) detection technologies as diagnostic tools for noninvasive early detection of COVID-19 and related coronaviruses has been demonstrated from multiple studies using a variety of experimental and commercial electronic devices capable of detecting precise mixtures of VOC emissions in human breath. The activities of numerous global research teams, developing novel electronic-nose (e-nose) devices and diagnostic methods, have generated empirical laboratory and clinical trial test results based on the detection of different types of host VOC-biomarker metabolites from specific chemical classes. COVID-19-specific volatile biomarkers are derived from disease-induced changes in host metabolic pathways by SARS-CoV-2 viral pathogenesis. The unique mechanisms proposed from recent researchers to explain how COVID-19 causes damage to multiple organ systems throughout the body are associated with unique symptom combinations, cytokine storms and physiological cascades that disrupt normal biochemical processes through gene dysregulation to generate disease-specific VOC metabolites targeted for e-nose detection. This paper reviewed recent methods and applications of e-nose and related VOC-detection devices for early, noninvasive diagnosis of SARS-CoV-2 infections. In addition, metabolomic (quantitative) COVID-19 disease-specific chemical biomarkers, consisting of host-derived VOCs identified from exhaled breath of patients, were summarized as possible sources of volatile metabolic biomarkers useful for confirming and supporting e-nose diagnoses. Ensuring safe food supplies has recently become a serious problem all over the world. Controlling the quality, spoilage, and standing time for products with a short shelf life is a quite difficult problem. However, electronic noses can make all these controls possible. In this study, which aims to develop a different approach to the solution of this problem, electronic nose data obtained from 12 different beef cuts were classified. In the dataset, there are four classes (1: excellent, 2: good, 3: acceptable, and 4: spoiled) indicating beef quality. The classifications were performed separately for each cut and all cut shapes. The ANOVA method was used to determine the active features in the dataset with data for 12 features. The same classification processes were carried out by using the three active features selected by the ANOVA method. Three different machine learning methods, Artificial Neural Network, K Nearest Neighbor, and Logistic Regression, which are frequently used in the literature, were used in classifications. In the experimental studies, a classification accuracy of 100% was obtained as a result of the classification performed with ANN using the data obtained by combining all the tables in the dataset. Forests are increasingly exposed to natural disturbances, including drought, wildfires, pest outbreaks, and windthrow events. Due to prolonged droughts in the last years in Europe, European forest stands significantly lost vitality, and their health condition deteriorated, leading to high mortality rates, especially, but not limited to, Norway spruce. This phenomenon is growing, and new regions are being affected; thus, it is necessary to identify stress in the early stages when actions can be taken to protect the forest and living trees. Current detection methods are based on field walks by forest workers or deploying remote sensing methods for coverage of the larger territory. These methods are based on changes in spectral reflectance that can detect attacks only at an advanced stage after the significant changes in the canopy. An innovative approach appears to be a method based on odor mapping, specifically detecting chemical substances which are present in the forest stands and indicate triggering of constitutive defense of stressed trees. The bark beetle attacking a tree, for example, produces a several times higher amount of defense-related volatile organic compounds. At the same time, the bark beetle has an aggregation pheromone to attract conspecifics to overcome the tree defense by mass attack. These substances can be detected using conventional chemical methods (solid-phase microextraction fibers and cartridges), and it is proven that they are detectable by dogs. The disadvantage of classic chemical analysis methods is the long sampling time in the forest, and at the same time, the results must be analyzed in the laboratory using a gas chromatograph. A potential alternative novel device appears to be an electronic nose, which is designed to detect chemical substances online (for example, dangerous gas leaks or measure concentrations above landfills, volcanic activity, etc.). We tested the possibility of early-stage stress detection in the forest stands using an electronic nose Sniffer4D and compared the individual sensors in it for detecting the presence of attacked and dead trees. Exhaled nitric oxide trace gas at the ppb level is a biomarker of human airway inflammation. To detect this, we developed a method for the collection of active pumping electronic nose bionic chamber gas. An optimization algorithm based on multivariate regression (MR) and genetic algorithm–back propagation (GA-BP) was proposed to improve the accuracy of trace-level gas detection. An electronic nose was used to detect NO gas at the ppb level by substituting breathing gas with a sample gas. The impact of the pump suction flow capacity variation on the response of the electronic nose system was determined using an ANOVA. Further, the optimization algorithm based on MR and GA-BP was studied for flow correction. The results of this study demonstrate an increase in the detection accuracy of the system by more than twofold, from 17.40%FS before correction to 6.86%FS after correction. This work presents an approach for the estimation of the adsorbed mass of 1,5-diaminopentane (cadaverine) on a functionalized piezoelectrically driven microcantilever (PD-MC) sensor, using a polynomial developed from the characterization of the resonance frequency response to the known added mass. This work supplements the previous studies we carried out on the development of an electronic nose for the measurement of cadaverine in meat and fish, as a determinant of its freshness. An analytical transverse vibration analysis of a chosen microcantilever beam with given dimensions and desired resonance frequency (>10 kHz) was conducted. Since the beam is considered stepped with both geometrical and material non-uniformity, a modal solution for stepped beams, extendable to clamped-free beams of any shape and structure, is derived and used for free and forced vibration analyses of the beam. The forced vibration analysis is then used for transformation to an equivalent electrical model, to address the fact that the microcantilever is both electronically actuated and read. An analytical resonance frequency response to the mass added is obtained by adding simulated masses to the free end of the beam. Experimental verification of the resonance frequency response is carried out, by applying known masses to the microcantilever while measuring the resonance frequency response using an impedance analyzer. The obtained response is then transformed into a resonance frequency to the added mass response polynomial using a polynomial fit. The resulting polynomial is then verified for performance using different masses of cantilever functionalization solution. The functionalized cantilever is then exposed to different concentrations of cadaverine while measuring the resonance frequency and mass of cadaverine adsorbed estimated using the previously obtained polynomial. The result is that there is the possibility of using this approach to estimate the mass of cadaverine gas adsorbed on a functionalized microcantilever, but the effectiveness of this approach is highly dependent on the known masses used for the development of the response polynomial model. The quality and shelf life of meat and meat products are key factors that are usually evaluated by complex and laborious protocols and intricate sensory methods. Devices with attractive characteristics (fast reading, portability, and relatively low operational costs) that facilitate the measurement of meat and meat products characteristics are of great value. This review aims to provide an overview of the fundamentals of electronic nose (E-nose), eye (E-eye), and tongue (E-tongue), data preprocessing, chemometrics, the application in the evaluation of quality and shelf life of meat and meat products, and advantages and disadvantages related to these electronic systems. E-nose is the most versatile technology among all three electronic systems and comprises applications to distinguish the application of different preservation methods (chilling vs. frozen, for instance), processing conditions (especially temperature and time), detect adulteration (meat from different species), and the monitoring of shelf life. Emerging applications include the detection of pathogenic microorganisms using E-nose. E-tongue is another relevant technology to determine adulteration, processing conditions, and to monitor shelf life. Finally, E-eye has been providing accurate measuring of color evaluation and grade marbling levels in fresh meat. However, advances are necessary to obtain information that are more related to industrial conditions. In the construction of electronic nose devices, two groups of measurement setups could be distinguished when we take into account the design of electronic nose chambers. The simpler one consists of placing the sensors directly in the environment of the measured gas, which has an important advantage, in that the composition of the gas is not changed as the gas is not diluted. However, that has an important drawback in that it is difficult to clean sensors between measurement cycles. The second, more advanced construction, contains a pneumatic system transporting the gas inside a specially designed sensor chamber. A new design of an electronic nose gas sensor chamber is proposed, which consists of a sensor chamber with a sliding chamber shutter, equipped with a simple pneumatic system for cleaning the air. The proposal combines the advantages of both approaches to the sensor chamber designs. The sensors can be effectively cleared by the flow of clean air, while the measurements are performed in the open state when the sensors are directly exposed to the measured gas. Airflow simulations were performed to confirm the efficiency of clean air transport used for sensors' cleaning. The demonstrated electronic nose applies eight Figaro Co. MOS TGS series sensors, in which a transient response caused by a change of the exposition to measured gas, and change of heater voltage, was collected. The new electronic nose was tested as applied to the differentiation between the samples of Ciboria batschiana fungi, which is one of the most harmful pathogens of stored acorns. The samples with various coverage, thus various concentrations of the studied odor, were measured. The tested device demonstrated low noise and a good level of repetition of the measurements, with stable results during several hours of repetitive measurements during an experiment lasting five consecutive days. Dough fermentation in gluten-free bakery products is problematic due to the absence of gluten, which provides advantageous rheological properties. A thermodynamic sensor (TDS) system combined with an electronic nose was tested as an alternative to conventional methods monitoring dough development based on mechanical properties. In the first part, the configuration of the sensors in the thermodynamic system and their response to different heat-source positions, which significantly affect the output signal from the measurement system, were investigated. The practical contribution lies in the application of the measurements to the example of gluten-free doughs with and without edible insect enrichment. An optimized configuration of the thermodynamic system (one sensor on the inner wall of the container at the bottom and another in the middle of the container closer to the top of the dough) in combination with an experimental electronic nose was used for the aforementioned measurement. In some cases, up to 87% correlation between the signal from the TDS and the signals from a professional rheofermentometer Rheo F-4 (Chopin) was demonstrated. The differences between the results can be explained by the use of different techniques. Using a combination of sensor systems in one place, one time and one sample can lead to more comprehensive and robust results. Furthermore, it was shown that the fermentation activity increased in corn dough with the addition of insects compared to dough without the addition. The work represents a successful attempt to combine a gas sensors array with instrumentation (hardware), and machine learning methods as the basis for creating numerical codes (software), together constituting an electronic nose, to correct the classification of the various stages of the wastewater treatment process. To evaluate the multidimensional measurement derived from the gas sensors array, dimensionality reduction was performed using the t-SNE method, which (unlike the commonly used PCA method) preserves the local structure of the data by minimizing the Kullback-Leibler divergence between the two distributions with respect to the location of points on the map. The k-median method was used to evaluate the discretization potential of the collected multidimensional data. It showed that observations from different stages of the wastewater treatment process have varying chemical fingerprints. In the final stage of data analysis, a supervised machine learning method, in the form of a random forest, was used to classify observations based on the measurements from the sensors array. The quality of the resulting model was assessed based on several measures commonly used in classification tasks. All the measures used confirmed that the classification model perfectly assigned classes to the observations from the test set, which also confirmed the absence of model overfitting. Industrial environments are frequently composed of potentially toxic and hazardous compounds. Volatile organic compounds (VOCs) are one of the most concerning categories of analytes commonly existent in the indoor air of factories' facilities. The sources of VOCs in the industrial context are abundant and a vast range of human health conditions and pathologies are known to be caused by both short- and long-term exposures. Hence, accurate and rapid detection, identification, and quantification of VOCs in industrial environments are mandatory issues. This work demonstrates that graphene oxide (GO) thin films can be used to distinguish acetic acid, ethanol, isopropanol, and methanol, major analytes for the field of industrial air quality, using the electronic nose concept based on impedance spectra measurements. The data were treated by principal component analysis. The sensor consists of polyethyleneimine (PEI) and GO layer-by-layer films deposited on ceramic supports coated with gold interdigitated electrodes. The electrical characterization of this sensor in the presence of the VOCs allows the identification of acetic acid in the concentration range from 24 to 120 ppm, and of ethanol, isopropanol, and methanol in a concentration range from 18 to 90 ppm, respectively. Moreover, the results allows the quantification of acetic acid, ethanol, and isopropanol concentrations with sensitivity values of (3.03 ± 0.12) ∗ 10 4 , (− 1.15 ± 0.19) ∗ 10 4 , and (− 1.1 ± 0.50) ∗ 10 4 mL−1, respectively. The resolution of this sensor to detect the different analytes is lower than 0.04 ppm, which means it is an interesting sensor for use as an electronic nose for the detection of VOCs. The geographical traceability of extra virgin olive oils (EVOO) is of paramount importance for oil chain actors and consumers. Oils produced in two adjacent Portuguese regions, Côa (36 oils) and Douro (31 oils), were evaluated and fulfilled the European legal thresholds for EVOO categorization. Compared to the Douro region, oils from Côa had higher total phenol contents (505 versus 279 mg GAE/kg) and greater oxidative stabilities (17.5 versus 10.6 h). The majority of Côa oils were fruity-green, bitter, and pungent oils. Conversely, Douro oils exhibited a more intense fruity-ripe and sweet sensation. Accordingly, different volatiles were detected, belonging to eight chemical families, from which aldehydes were the most abundant. Additionally, all oils were evaluated using a lab-made electronic nose, with metal oxide semiconductor sensors. The electrical fingerprints, together with principal component analysis, enabled the unsupervised recognition of the oils' geographical origin, and their successful supervised linear discrimination (sensitivity of 98.5% and specificity of 98.4%; internal validation). The E-nose also quantified the contents of the two main volatile chemical classes (alcohols and aldehydes) and of the total volatiles content, for the studied olive oils split by geographical origin, using multivariate linear regression models (0.981 ≤ R2 ≤ 0.998 and 0.40 ≤ RMSE ≤ 2.79 mg/kg oil; internal validation). The E-nose-MOS was shown to be a fast, green, non-invasive and cost-effective tool for authenticating the geographical origin of the studied olive oils and to estimate the contents of the most abundant chemical classes of volatiles. Sensor drift is a well-known disadvantage of electronic nose (eNose) technology and may affect the accuracy of diagnostic algorithms. Correction for this phenomenon is not routinely performed. The aim of this study was to investigate the influence of eNose sensor drift on the development of a disease-specific algorithm in a real-life cohort of inflammatory bowel disease patients (IBD). In this multi-center cohort, patients undergoing colonoscopy collected a fecal sample prior to bowel lavage. Mucosal disease activity was assessed based on endoscopy. Controls underwent colonoscopy for various reasons and had no endoscopic abnormalities. Fecal eNose profiles were measured using Cyranose 320®. Fecal samples of 63 IBD patients and 63 controls were measured on four subsequent days. Sensor data displayed associations with date of measurement, which was reproducible across all samples irrespective of disease state, disease activity state, disease localization and diet of participants. Based on logistic regression, corrections for sensor drift improved accuracy to differentiate between IBD patients and controls based on the significant differences of six sensors (p = 0.004; p < 0.001; p = 0.001; p = 0.028; p < 0.001 and p = 0.005) with an accuracy of 0.68. In this clinical study, short-term sensor drift affected fecal eNose profiles more profoundly than clinical features. These outcomes emphasize the importance of sensor drift correction to improve reliability and repeatability, both within and across eNose studies. [ABSTRACT FROM AUTHOR]
