Because food and poultry industries are demanding an improvement in written communication skills among graduates, research paper writing should be an integral part of a senior undergraduate class. However, scientific writing assignments are often treated as secondary to developing the technical skills of the students. Scientific research paper writing has been emphasized in an undergraduate course on advanced food microbiology taught in the Poultry Science Department at Texas A&M University (College Station, TX). Students' opinions suggest that research paper writing as part of a senior course in Poultry Science provides students with scientific communication skills and useful training for their career, but more emphasis on reading and understanding scientific literature may be required. The culling of day-old male chicks has caused ethical and economic concerns. Traditional approaches for detecting the in ovo sex of chicken embryos involve opening the eggshell and inner membrane, which are destructive, time-consuming, and inefficient. Therefore, noncontact optical sensing techniques have been examined for the in ovo sexing of chicken embryos. Compared with traditional methods, optical sensing can increase determination throughput and frequency for the rapid sexing of chicken embryos. This paper presented a comprehensive review of the different optical sensing techniques used for the in ovo sexing of chicken embryos, including visible and near-infrared (Vis-NIR) spectroscopy, hyperspectral imaging, Raman spectroscopy, fluorescence spectroscopy, and machine vision, discussing their advantages and disadvantages. In addition, the latest research regarding different detection algorithms and models for the in ovo sexing of chicken embryos was summarized. Routine antibiotic administration has been used in intensive animal industries for a long time for health and production benefits. There is now a concerted effort to limit antibiotics administration to only treatment of clinically affected animals and to look for other alternative solutions combined with better husbandry practices for the benefits routine antibiotic administration seems to provide in intensive farming systems. In this paper it is argued that the benefits from routine antibiotics in chickens administration in lay are from suppression of the effects of mycoplasma infections. Mycoplasma freedom has been recommended but is not always practical. Vaccination of mycoplasma negative chickens with live mycoplasma vaccines is now being used (with biosecurity) to decrease antibiotic dependence in lay of poultry in many parts of the world. The tons of keratin waste are produced by the poultry and meat industry which is an insoluble and protein-rich material found in hair, feathers, wool, and some epidermal wastes. These waste products could be degraded and recycled to recover protein, which can save our environment. One of the potential strategy to achieve this target is use of microbial biotreatment which is more convenient, cost-effective, and environment-friendly by formulating hydrolysate complexes that could be administered as protein supplements, bioactive peptides, or animal feed ingredients. Keratin degradation shows great promise for long-term protein and amino acid recycling. According to the MEROPS database, known keratinolytic enzymes currently belong to at least 14 different protease families, including S1, S8, S9, S10, S16, M3, M4, M14, M16, M28, M32, M36, M38, and M55. In addition to exogenous attack (proteases from families S9, S10, M14, M28, M38, and M55), the various keratinolytic enzymes also function via endo-attack (proteases from families S1, S8, S16, M4, M16, and M36). Biotechnological methods have shown great promise for enhancing keratinase expression in different strains of microbes and different protein engineering techniques in genetically modified microbes such as bacteria and some fungi to enhance keratinase production and activity. Some microbes produce specific keratinolytic enzymes that can effectively degrade keratin substrates. Keratinases have been successfully used in the leather, textile, and pharmaceutical industries. However, the production and efficiency of existing enzymes need to be optimized before they can be used more widely in other processes, such as the cost-effective pretreatment of chicken waste. These can be improved more effectively by using various biotechnological applications which could serve as the best and novel approach for recycling and degrading biomass. This paper provides practical insights about molecular strategies to enhance keratinase expression to effectively utilize various poultry wastes like feathers and feed ingredients like soybean pulp. Furthermore, it describes the future implications of engineered keratinases for environment friendly utilization of wastes and crop byproducts for their better use in the poultry feed industry. Feather pecking is a multi-factorial behavioral disorder and a serious welfare issue in the poultry industry. Several studies report early life experience with litter to be a major determinant in the development of feather pecking. The current study aimed to test the large-scale on-farm efficiency of a simple and cheap husbandry procedure applied during the rearing period with the ultimate goal of reducing the incidence of feather pecking and plumage damage during the production stage in laying hens. Five laying hen-rearing farmers from across Norway participated in the study. These farmers were asked to create divisions within their hen rearing houses and to separate their chicks into 2 groups: one reared with access to a paper substrate from the first d of age, the other a control group without access to paper substrate during rearing. All flocks were visited at the production farms at 30 wk of age and observed for pecking behavior and feather damage. Birds in the control group had higher odds of having more feather damage compared to the birds from the treatment group. In addition, flocks provided with environmental enrichment at the production farms had a reduced incidence of feather pecking, irrespective of the treatment. These results indicate that husbandry procedures during both rearing and production stages have the potential to alleviate feather pecking and increase laying hen welfare. [ABSTRACT FROM AUTHOR]

The increasing separation of the public from production agriculture means there is often a lack of knowledge among consumers about current production practices and a perception that increased productivity and economic efficiency are necessarily associated with a decline in animal welfare. A symposium was organized to present information about animal welfare issues and the challenges they pose for both scientists and the poultry and allied industries. Companion papers provide information about understanding public attitudes and physiological/immunological approaches to welfare assessment, while this paper outlines current and future challenges to egg and meat production and industry responses to those challenges. For broiler chickens, increases in growth rate result in corollary increases in metabolic heat generation and water consumption, leading to the need for continuing improvements in housing, ventilation, and litter management. Stocking densities, lighting programs, muscle myopathies, and use of antibiotics are also areas that require research attention. In the layer industry, the key challenge is housing, with the industry undergoing a shift from conventional cage housing to alternatives like enriched colonies or cage-free. While these alternative systems have hen welfare advantages, there are also welfare disadvantages that require the development of mitigation strategies, and it is also essential to address associated issues including economic, environmental, egg safety, and worker health impacts. Concerns on the horizon include euthanasia of surplus male chicks and spent hens as well as beak-trimming. The humaneness of slaughter methods is an important welfare and consumer confidence issue, and the current regulations for poultry slaughter in the USA are discussed and compared to those for livestock. The poultry and allied industries, including retailers, are responding to these concerns by consulting with experts, developing sciencebased animal care standards and auditing programs, strengthening training and oversight programs, promoting research, and improving communication channels. In future, intensifying multi-disciplinary research efforts and developing mechanisms to improve communication between scientists and stakeholders, including the public, will be critical to addressing these issues. Hedonic modeling and retail scanner data were utilized to investigate the influence of local, organic, nutrition benefits, and other attributes of shell eggs on retail price premium in Hawaii. Within a revealed preference framework, the analysis of local and organic attributes, simultaneously, under a single unified setting is important, as such work is highly deficient in the published literature. This paper finds high to moderate price premiums in four key attributes of shell eggs -- organic (64%), local (40%), nutrition benefits claimed (33%), and brown shell (18.4%). Large and extra-large sized eggs also experience price premiums over medium sized eggs. With each larger packing size, the estimated coefficients were negative, indicating a price discount, relative to the baseline packing size. However, there is no evidence to support the overwhelming influence of "local" over "organic", as hypothesized in other research work. Overall, the findings in this paper suggest industry producers and retailers should highlight and market effusively the primary attributes of their shell eggs, including "local", to remain competitive in the marketplace. The year 2014 marked the tenth anniversary since the sequence of the chicken genome was published. Two other publications occurred during that time frame in different disciplines, and all 3 have affected poultry scientists. The purpose of this paper is to briefly review 2 publications that are better known to those in animal agriculture. The third paper will be addressed in more detail because it is one that many in poultry science probably have not read. The subject matter involves the avian brain and its future impact and is related to an announcement made by the president of the United States in April 2013. Due to the recent, rapid advances in the understanding of the vertebrate brain and behavior, a national goal was announced by President Obama to map the human brain in more detail than ever before to accelerate the understanding of brain function in health and disease. The main objective is to review the third paper published a decade ago to show that it laid the foundation for the chicken and other avian species to serve as relevant animal models to advance the understanding of the human brain. Emphasis will be placed on the forebrain. The overall goal is to show that the brain of birds is not that different from the mammalian brain and therefore can serve as an excellent comparative biomodel to understand fundamental principles of brain structure and function. Controlling Salmonella in poultry is an ongoing food safety measure and while significant progress has been made, there is a need to continue to evaluate different strategies that include understanding Salmonella -poultry interaction, Salmonella -microbiota interactions, Salmonella genetics and response to adverse conditions, and preharvest and postharvest parameters that enable persistence. The purpose of this symposium is to discuss different strategies to consider from feed milling to the farm to the processing environment. This Poultry Science Association symposium paper is divided into 5 different sections that covers 1) immunological aspects of Salmonella control, 2) application of Salmonella genetics for targeted control strategies in poultry production, 3) improving poultry feed hygienics: utilizing feed manufacture techniques and equipment to improve feed hygienics, 4) practical on farm interventions for controlling Salmonella —what works and what may not work, and 5) monitoring and mitigating Salmonella in poultry. These topics elucidate the critical need to establish control strategies that will improve poultry gut health and limit conditions that exposes Salmonella to stress causing alterations to virulence and pathogenicity both at preharvest and postharvest poultry production. The paper aimed to study the effects of lighting pattern and photoperiod alone and in combination on egg production, egg quality in Beijing You Chicken (BYC). A total of 630 19-wk-old BYC laying hens were randomly allocated to 6 groups with 105 birds each, 3 replicates per group, reared in individually lit floor pens with separate outdoor areas. A 2 × 3 factorial experiment (2 lighting patterns: continuous and intermittent lighting; 3 photoperiods: 16, 14, 12 h) was arranged, including 16L:8D (6:00 to 22:00) for group 1; 12L:2D:4L:6D (6:00 to 18:00, 20:00 to 24:00) for group 2; 14L:10D (6:00 to 20:00) for group 3; 10L:2D:4L:8D (6:00 to 16:00, 18:00 to 22:00) for group 4; 12L:12D (6:00 to 18:00) for group 5, and 8L:4D:4L:8D (6:00 to 14:00, 18:00 to 22:00) for group 6, respectively. Egg production parameters were calculated for 22 to 43, 44 to 57, and 22 to 57 wk, and egg quality parameters were measured at the end of 37 and 57 wk. The results showed that the egg production of BYC was not significantly affected by lighting pattern, photoperiod alone, or in combination during 22 to 43 and 22 to 57 wk (P > 0.05), but average feed intake in 12 h groups was significantly higher than those in 14 and 16 h groups during 22 to 43 and 22 to 57 wk (P < 0.05). Egg mass and feed egg ratio were significantly affected by lighting pattern, photoperiod alone, and in combination during 44 to 57 wk (P < 0.05). Egg mass was significantly higher (P = 0.05) and feed egg ratio was significantly lower (P = 0.03) in continuous groups than in intermittent groups. There were significant effects for eggshell thickness, albumen height, haugh unit, and egg grade by lighting pattern alone (P < 0.05) at 37 wk. The study suggested that 1) the egg production was not significantly affected by lighting pattern alone during 22 to 57 wk (P > 0.05), but the photoperiod significantly affected average feed intake (P < 0.05); 2) continuous lighting is better for the egg production during 44 to 57 wk, and intermittent lighting is better for egg quality of the native bird at 37 wk; 3) 12 h lighting is enough for meeting the requirement of the native chicken during the laying period; (4) no change in photoperiod from the rearing to the production phase (12 to 12 L) will have long-lasting effects on egg production or egg quality under the present condition. Stocking density, the amount of space available per animal, greatly affects the welfare of commercial turkeys. For example, stocking density has been found to affect behavior such as injurious pecking; production, such as growth rates and feed efficiency; and health-related aspects, such as leg health and the incidence of airsacculitis. Current industry guidelines and standards for turkey space requirements and stocking densities vary, and they are different from those that have been examined scientifically. Scientific research into stocking density effects on turkey behavior, welfare, and productivity have been conducted in experimental settings with flock sizes that are much different from those in the commercial turkey industry. There is currently little information available regarding how much space turkeys require for particular behavioral activities. "What are you going to do next?" is a common question often asked of a student who has recently graduated with either an MSc or PhD degree. We should not be surprised to hear the answer "I do not know yet." I have talked with many poultry science graduate students who usually start thinking about their future careers a few months before defending their thesis. I personally believe that nothing happens overnight in this world (excluding political-related issues), so we as graduate students need to have a comprehensible and pragmatic strategy when it comes to answering the question "What to do next?" This paper is not about how graduate students can find a job because there are numerous sources of information that are readily available elsewhere. One of the key messages of this paper is that networking is of paramount importance when it comes to moving in the right direction after graduation. Consequences of any decision made at this stage will often have a far-reaching unseen influence on us for many years into the future. I am also fully aware that there are many things over which we do not have any control, but as graduate students, are we doing our best to prepare ourselves for the real world? The existing literature is inconsistent with respect to optimal dietary concentrations of glycine (Gly) and serine (Ser) in broiler feed. Therefore, we conducted a meta-analysis to investigate the response of broilers to dietary levels of Gly using a full quadratic model based on mixed model methodology. Response was measured as ADG (g/d), ADFI (g/d), and G:F (g/g). In addition, the influence of other dietary constituents was evaluated. This meta-analysis was based on a data set comprising a total of 9,626 broilers in 10 peer-reviewed papers that investigated the response of broilers to different dietary concentrations of Gly, achieved by addition of free Gly. The fitted quadratic model, with either Gly+Ser or the calculated glycine equivalent (Glyequi) of both amino acids as the independent variable, revealed that all model terms were significant (P ≤ 0.05), and hence proved a curvilinear relationship between these independent variables and response traits. The R² value and root MS error confirmed a strong relationship between observed and predicted traits. A comparison of the influence of Gly+Ser and Glyequi on response traits revealed that both approaches produced similar results. Because Glyequi should meet the physiological values of a diet better than Gly+Ser, models with 2 independent variables were conducted using Glyequi. The second independent variables were methionine (Met):TSAA ratio and the concentrations of cysteine (Cys) and CP. In models with one or 2 independent variables, the impact of dietary Gly on ADFI was low. By contrast, G:F was markedly influenced by dietary Gly; this effect intensified at lower Met:TSAA ratios and higher Cys and CP levels. ADG was also a function of Glyequi and the second independent variables. For ADG, an optimal Met:TSAA ratio of 0.655 and Cys concentration of 0.302% was calculated. Following the nonlinear nature of relationship, generally applicable replacement values could not be calculated. However, it was concluded that consideration of dietary Cys can diminish the requirement for Glyequi, and therefore, enable a reduction in the CP of broiler diets without limiting growth performance. The intestinal microbiota has attracted tremendous attention in the field of the poultry industry due to its critical role in the modulation of nutrient utilization, immune system, and consequently the improvement of the host health and production performance. Accumulating evidence implies intestinal microbiota of laying hens is a potential mediator to improve the prevalent issues in terms of egg quality decline in the late phase of laying production. However, the regulatory effect of intestinal microbiota on egg quality in laying hens remains elusive, which requires consideration of microbial baseline composition and succession during their long lifespans. Notable, although Firmicutes, Bacteroidetes, and Proteobacteria form the vast majority of intestinal microbiota in layer hens, dynamic intestinal microbiota succession occurs throughout all laying periods. In addition to the direct effects on egg safety, intestinal microbiota and its metabolites such as short-chain fatty acids, bile acids, and tryptophan derivatives, are suggested to indirectly modulate egg quality through the microbiota-gut-liver/brain-reproductive tract axis. These findings can extend our understanding of the crosstalk between intestinal microbiota and the host to improve egg quality and safety. This paper reviews the compositions of intestinal microbiota in different physiological stages of laying hens and their effects on egg quality and proposes that intestinal microbiota may become a potential target for modulating egg quality and safety by nutritional strategies in the future. The objectives of this paper were to identify the phenotypic egg-laying patterns in a White Leghorn line mainly selected for egg production, to estimate genetic parameters of traits related to egg production and to evaluate the genetic association between these by principal components analysis to identify trait(s) that could be used as selection criteria to improve egg production. Records of 54 wk of egg production from a White Leghorn population were used. The data set contained records of the length:width ratio of eggs at 32, 37, and 40 wk of age; egg weight at 32, 37, and 40 wk of age; BW at 54 and 62 wk of age; age at first egg; early partial egg production rate from 17 to 30 wk and from 17 to 40 wk of age; late partial egg production rate from 30 to 70 wk and from 40 to 70 wk of age; and total egg production rate (TEP). The estimates of genetic parameters between these traits were estimated by the restricted maximum likelihood method. Multivariate analyses were performed: a hierarchical cluster analysis, a nonhierarchical clustering analysis by the k-means method of weekly egg production rate to describe the egg-laying patterns of hens, and a principal components analysis using the breeding values of all traits. The highest heritability estimates were obtained for BW at 54 wk of age (0.68 ± 0.07) and age at first egg (0.53 ± 0.07). It is recommended that a preliminary clustering analysis be performed to obtain the population structure that takes into account the pattern of egg production, rather than the TEP, because hens may have the same final egg production with different patterns of egg laying. Early partial production periods were not good indicators for use in improving total egg production because these traits presented an overestimated genetic correlation with TEP because of the part-whole genetic correlation component. Education and research in poultry science have resulted in outstanding contributions to the poultry industry. Despite the advancements in the poultry industry, the number of active poultry science departments has declined dramatically over the years, and this decline has been more significant in the United States. As a PhD student at the time of this writing, I have tried to discuss factors that might have contributed to this situation. The key message of this paper is that enhancement of the relationship between research centers and the poultry industry should always be one of our main concerns. The practice of beak trimming in the poultry industry occurs to prevent excessive body pecking, cannibalism, and to avoid feed wastage. To assess the welfare implications of the procedure, an emphasis of this paper has been placed on the anatomical structures that comprise the beak and mouth parts and a representation of the structures removed following beak trimming. Five animal welfare concerns regarding the procedure have been addressed, including the following: loss of normal beak function, short-term pain and temporary debilitation, tongue and nostril damage, neuromas and scar tissue, and long-term and phantom limb pain. Because all of the concerns involve the nervous system, the current knowledge of the avian somatosensory system was summarized. The critical components include touch, pain, and thermal receptors in the buccal cavity and bill, the trigeminal system, and neural projections mapped to the pallium (cortical-like tissue in the avian forebrain). At the present time, a need remains to continue the practice of beak trimming in the poultry industry to prevent head, feather, and vent pecking in some lines of birds. The procedure, however, should involve conservative trimming and be limited to young birds. Importantly, data show that removing 50% or less of the beak of chicks can prevent the formation of neuromas and allow regeneration of keratinized tissue to prevent deformed beaks and therefore positively affect the quality of life of birds during their lifetime. In the past decade, the poultry industry has faced the occurrence of growth-related muscular abnormalities that mainly affect, with a high incidence rate, the Pectoralis major of the fast-growing genotypes selected for their production performances (high growth rate and breast yield). These myopathies are termed as White Striping, Wooden Breast, and Spaghetti Meat and exhibit distinctive phenotypes. A spatiotemporal distribution has been demonstrated for these disorders as in the early stage they primarily affect the superficial area in the cranial portion of the muscle and, as the birds grow older, involve the entire tissue. Aside from their distinctive phenotypes, these myopathies share common histological features. Thus, it might be speculated that common causative mechanisms might be responsible for the physiological and structural perturbations in the muscle associated with these conditions and might underpin their occurrence. The present review paper aims to represent a critical survey of the outcomes of all the histologic and ultrastructural observations carried out on White Striping, Wooden Breast, and Spaghetti Meat affected muscles. Our analysis has been performed by combining these outcomes with the findings of the genetic studies, trying to identify possible initial causative mechanisms triggering the onset and the time-series of the events ultimately resulting in the development and progression of the growth-related myopathies currently affecting broilers Pectoralis major muscles. Several evidences support the hypothesis that sarcoplasmic reticulum stress, primarily induced an accumulation of misfolded proteins (but also driven by other factors including altered calcium homeostasis and accumulation of fatty acids), may be responsible for the onset of these growth-related myopathies in broilers. At the same time, the development of hypoxic conditions, as a direct consequence of an inadequate vascularization, triggers a time-series sequence of events (i.e., phlebitis, oxidative stress, etc.) resulting in the activation of response mechanisms (i.e., modifications in the energetic metabolism, inflammation, degeneration, and regeneration) which are all strictly related to the progression of these myopathic disorders. To meet the growing consumer demand for chicken meat, the poultry industry has selected broiler chickens for increasing efficiency and breast yield. While this high productivity means affordable and consistent product, it has come at a cost to broiler welfare. There has been increasing advocacy and consumer pressure on primary breeders, producers, processors, and retailers to improve the welfare of the billions of chickens processed annually. Several small-scale studies have reported better welfare outcomes for slower-growing strains compared to fast-growing, conventional strains. However, these studies often housed birds with range access or used strains with vastly different growth rates. Additionally, there may be traits other than growth, such as body conformation, that influence welfare. As the global poultry industries consider the implications of using slower growing strains, there was a need for a comprehensive, multidisciplinary examination of broiler chickens with a wide range of genotypes differing in growth rate and other phenotypic traits. To meet this need, our team designed a study to benchmark data on conventional and slower-growing strains of broiler chickens reared in standardized laboratory conditions. Over a 2-year period, we studied 7,528 broilers from 16 different genetic strains. In this paper, we compare the growth, efficiency, and mortality of broilers to one of two target weights (TW): 2.1 kg (TW1) and 3.2 kg (TW2). We categorized strains by their growth rate to TW2 as conventional (CONV), fastest-slow strains (FAST), moderate-slow strains (MOD), and slowest-slow strains (SLOW). When incubated, hatched, housed, managed, and fed the same, the categories of strains differed in body weights, growth rates, feed intake, and feed efficiency. At 48 d of age, strains in the CONV category were 835 to 1,264 g heavier than strains in the other categories. By TW2, differences in body weights and feed intake resulted in a 22 to 43-point difference in feed conversion ratios. Categories of strains did not differ in their overall mortality rates.
