The adsorption of a sunflower protein extract at two air-water and oil-water interfaces is investigated using tensiometry, dilational viscoelasticity, and ellipsometry. For both interfaces, a three step mechanism was evidenced thanks to master curve representations of the data taken at different aging times and protein concentrations. At short times, a diffusion limited adsorption of proteins at interfaces is demonstrated. First, a two-dimensional protein film is formed with a partition of the polypeptide chains in the two phases that depends strongly on the nature of the hydrophobic phase: most of the film is in the aqueous phase at the air-water interface, while it is mostly in the organic phase at the oil-water interface. Then a three-dimensional saturated monolayer of proteins is formed. At short times, adsorption mechanisms are analogous to those found with typical globular proteins, while strong divergences are observed at longer adsorption times. Following the saturation step, a thick layer expands in the aqueous phase and appears associated with the release of large objects in the bulk. The kinetic evolution of this second layer is compatible with a diffusion limited adsorption of the minor population of polymeric complexes with hydrodynamic radius R H ∼ 80 nm, evidenced in equilibrium with hexameric globulins ( R H ∼ 6 nm) in solution. These complexes could result from the presence of residual polyphenols in the extract and raise the question of the role of these compounds in the interfacial properties of plant protein extracts.

A single-drop experiment based on the collision of one drop of liquid on a small solid target is used to produce liquid sheets that are visualized with a fast camera. Upon impact, the drop flattens into a sheet that is bounded by a thicker rim and radially expanding in air. Emulsion-based liquid sheets are destabilized through the nucleation of holes that perforate the sheet during its expansion. The holes grow until they merge together and form a web of ligaments, which are then destabilized into drops. We propose the perforation mechanism as a sequence of two necessary steps. The emulsion oil droplets first enter the air/water interface, and then spread at the interface. We show that the formulation of the emulsion is a critical parameter to control the perforation as the addition of salt or amphiphilic copolymers can trigger or completely inhibit the perforation mechanism. We demonstrate that the entering of the droplets at the air/water interface is the limiting step of the mechanism. Thin-film forces such as electrostatic or steric repulsion forces stabilize the thin film formed between the interface and the approaching oil droplets, thus preventing the entering of droplets at the interface and in turn inhibiting the perforation process. We theoretically rationalize the successive steps in the approach and entering of an oil droplet at the film interface and the role of salt and amphiphilic polymer in the different steps.

We investigate by scattering techniques the structure of water-based soft composite materials comprising a crystal made of Pluronic block-copolymer micelles arranged in a face-centered cubic lattice and a small amount (at most 2% by volume) of silica nanoparticles, of size comparable to that of the micelles. The copolymer is thermosensitive: it is hydrophilic and fully dissolved in water at low temperature (T ~ 0 °C), and self-assembles into micelles at room temperature, where the block-copolymer is amphiphilic. We use contrast matching small-angle neuron scattering experiments to independently probe the structure of the nanoparticles and that of the polymer. We find that the nanoparticles do not perturb the crystalline order. In addition, a structure peak is measured for the silica nanoparticles dispersed in the polycrystalline samples. This implies that the samples are spatially heterogeneous and comprise, without macroscopic phase separation, silica-poor and silica-rich regions. We show that the nanoparticle concentration in the silica-rich regions is about 10-fold the average concentration. These regions are grain boundaries between crystallites, where nanoparticles concentrate, as shown by static light scattering and by light microscopy imaging of the samples. We show that the temperature rate at which the sample is prepared strongly influence the segregation of the nanoparticles in the grain-boundaries.

We have investigated the nonlinear rheology of a soft composite transient network made of a solution of surfactant wormlike micelles (WM) in the semidilute regime that are reversibly bridged by telechelic polymers. The samples are well described, in the linear regime, as two Maxwell fluids components blends, characterized by two markedly different characteristic times. The slow mode is mainly related to the transient network of entangled WM, and the fast mode to the network of telechelic chains. In this paper we investigate the nonlinear viscoelasticity and show that the nonlinear behavior reflects as well the behavior of two coupled networks. On one hand, stress relaxation experiments and time-resolved stress response following the application of a constant shear rate show that, in the weakly nonlinear regime, these novel composite networks stiffen. A fourfold increase of the elastic modulus with respect to the linear value is reached for strain amplitude of about 200%. This strain hardening is due to the nonlinear stretching of the telechelic polymer chains. On the other hand, the samples exhibit shear banding in the highly nonlinear regime, similarly to pure semidilute solutions of WM.

We show that small amounts of copolymer that decorate an oil/water interface can greatly enhance the stability of swollen surfactant hexagonal phases, comprising oil tubes regularly arranged in a water matrix. Both the radius of the tubes and the thickness of the aqueous channel between the tubes can be controlled independently over large ranges. Such soft composite materials offer a potential interest for the synthesis of mesoporous materials.

We report the preparation of direct hexagonal liquid crystals, constituted of oil-swollen cylinders arranged on a triangular lattice in water. The volume ratio of oil over water, rho can be as large as 3.8. From the lattice parameter measured by small-angle X-ray scattering, we show that all the oil is indeed incorporated into the cylinders, thus allowing the diameter of the cylinders to be controlled over one decade range, provided that the ionic strength of the aqueous medium and rho are varied concomitantly. These hexagonal swollen liquid crystals (SLCs) have been first reported with sodium dodecyl sulfate as anionic surfactant, cyclohexane as solvent, 1-pentanol as co-surfactant, and sodium chloride as salt (Ramos, L.; Fabre, P. Langmuir 1997, 13, 13). The stability of these liquid crystals is investigated when the pH of the aqueous medium or the chemical nature of the components (salt and surfactant) is changed. We demonstrate that the range of stability is quite extended, rendering swollen hexagonal phases potentially useful for the fabrication of nanomaterials. As illustrations, we finally show that gelation of inorganic particles in the continuous aqueous medium of a SLC and polymerization within the oil-swollen cylinders of a SLC can be conducted without disrupting the hexagonal order of the system.

We study mixtures of charged surfactants, which alone in solution form uni- and multilamellar vesicles, and oppositely charged polyelectrolytes (PEs). The phase behavior is investigated at fixed surfactant concentration as a function of the PE-to-surfactant charge ratio, x. We find that, for x > 0, aggregates form. Light microscopy and X-ray scattering experiments show that the isoelectric point plays a crucial role, since the morphology and the microscopic structure of the aggregates are different before (x < or = 1) and after the isoelectric point (x > 1). To better understand the dynamics for the formation of PE/surfactant complexes, we perform light microscopy experiments where we follow in real time the effect of a PE solution on one multilamellar vesicle (MLV). We find that the PE induces a peeling of the bilayers of the MLV one by one. The peeling is accompanied by strong shape fluctuations of the MLV and leads ultimately to a pile of small aggregates. This novel phenomenon is analyzed in detail and discussed in terms of PE-induced tension and pore formation and growth in a surfactant bilayer.

We have recently shown (Langmuir 2000, 16, 5846) that a soft surfactant hexagonal phase exhibits, above a critical shear rate, a shear-melting transition, where a two-dimensional polycrystalline texture is converted into a liquid of rods aligned along the flow. Moreover, after abrupt cessation of high shear, a monocrystal-like structure is obtained. In this paper, we investigate the kinetics of crystallization from the shear-melted phase by means of time-resolved synchrotron X-ray scattering experiments. After a latency time, the sample is found to continuously evolve from a liquid of rods to a monocrystal of rods. We show that the crystallization results from a coupling between bulk crystallization and interfacial crystallization, due to a specific anchoring of the liquid crystal at the walls of the shear cell. A detailed analysis of the experimental data allows the evaluation of the propagation of the interfacial front and the time evolution of the size of the crystallites. We find that the size scales as t(v) with v approximately equal to 0.3, in fair agreement with recent theories and simulations on grain rotation-induced grain growth of columnar polycrystalline structures.
