- Abstract
Red chili is one of the plants that are widely cultivated in Indonesia because of its high economic value. However, chili production in Indonesia has not been able to meet the needs. The low productivity of chili is caused by the growth of spoilage microorganisms along with the physiological changes of the product during post-harvest. This study aims to determine the effect of concentration and duration of beeswax immersion on the shelf life of chili (Capsicum annum L.) with the addition of galangal for anthracnose resistance. This research was conducted at the Horticulture Laboratory, Department of Agrotechnology, Faculty of Agriculture, Syiah Kuala University Darussalam Banda Aceh from January to February 2022. This study used a Factorial Completely Randomized Design (CRD). The first factor is the concentration of beeswax with the addition of 10% galangal extract at each concentration and the second factor is the length of immersion of beeswax, with 3 replications. The results showed that giving beeswax at a concentration of 4% and 6% with the addition of galangal extract could maintain weight loss, moisture content, vitamin C, intensity of disease attack and had the highest value on organoleptic tests on scent.
