The Indian dietary pattern has undergone major changes over the past 40 years. Many of these changes involve modification in dietary intake of fats and oils. In developing countries like India, vegetable oils are replacing animal fats because of the cost and health concerns. A wide range of vegetable oils are available in the market but the choice of healthy cooking oil has been a controversial subject since ideas keep on changing as new evidence accumulates. One of the factors holding back the increased use of value-added healthy oils in India is that most potential consumers are genuinely not aware of their health benefits. Edible oil consumption is primarily a community-driven phenomenon in India. The purpose of this paper is to highlight the current scenario of edible oils in India, their composition, health benefits, food applications, stability issues and future aspects as buying the right oil for health has become of great importance. systematic collection of Jatropha curcas germplasm was carried out from five distinct ecogeographic zones of peninsular India in 2008. This involved recording passport data, documentation of important plant traits in situ, ecogeographic parameters and assessment of variability in 82 accessions. Extraction of oil was done by the Soxhlet method which gave an average yield of 38%. Oil content of collected accessions was determined by nuclear magnetic resonance and Soxhlet extraction. Oil variability ranged from 45.5% in JC-8 to 11.5% in JC-30. The level of unsaturated fatty acid ranged from 85% in JC-57 to 75.5% in JC-10. Saturated fatty acids ranged from 24% in JC-43 to 15% in JC-54, the oxidative stability index was highest at 2.1 in JC-30 and lowest at 0.68 in JC-17. The seed weight was greatest in JC-8 and the lowest in JC-30. This paper provides information that will facilitate the selection of promising accessions for genetic enhancement of Jatropha germplasm through conventional breeding. [ABSTRACT FROM AUTHOR]

The fatty acid composition of 27 samples of commercial hydrogenated vegetable oils and 23 samples of refined oils such as sunflower oil, rice bran oil, soybean oil and RBD palmolein marketed in India were analyzed. Total cis, trans unsaturated fatty acids (TFA) and saturated fatty acids (SFA) were determined. Out of the 27 hydrogenated fats, 11 % had TFA about 1 % where as 11 % had more than 5 % TFA with an average value of about 13.1 %. The 18:1 trans isomers, elaidic acid was the major trans contributor found to have an average value of about 10.8 % among the fats. The unsaturated fatty acids like cis-oleic acid, linoleic acid and α-linolenic acid were in the range of 21.8-40.2, 1.9-12.2, 0.0-0.7 % respectively. Out of the samples, eight fats had fatty acid profiles of low TFA (less than 10 %) and high polyunsaturated fatty acids (PUFA) such as linoleic and α-linolenic acid. They had a maximum TFA content of 7.3 % and PUFA of 11.7 %. Among the samples of refined oils, rice bran oil (5.8 %) and sunflower oil (4.4 %) had the maximum TFA content. RBD palmolein and rice bran oils had maximum saturated fatty acids content of 45.1 and 24.4 % respectively. RBD palmolein had a high monounsaturated fatty acids (MUFA) content of about 43.4 %, sunflower oil had a high linoleic acid content of about 56.1 % and soybean oil had a high α-linolenic acid content of about 5.3 %. The present study is focused on the quantification of glycerides and free fatty acid in oils extracted from various seeds for biodiesel production from Indian territory. A new method based on H- and C-NMR spectroscopic techniques was developed in order to estimate triglycerides (TG), diglycerides, monoglycerides, free fatty acids (FFA) and various other components such as para-substituted phenols, silylated methyl esters, aromatic acids, naphthalenes, etc. Iodine values of the extracted oils were estimated using the developed H-NMR spectroscopic method, which was correlated with the TG content present in the sample. Results by the NMR method were validated by the blend preparation, fatty acid composition determined by the GC and from the iodine value of the samples. The developed method is direct, rapid and no sample treatment is required. The results from these comprehensive studies indicated that NMR spectroscopic technique is useful for the quantification of extracted oils and can be used effectively for the development and monitoring of biodiesel production and determining the fuel quality. According to the proposed National Mission on biodiesel in India, we have undertaken studies on the stability of biodiesel from tree-borne non-edible oil seeds like Pongamia pinnata. Neat Pongamia methyl ester (PoME) exhibited an oxidation stability (OS) of 2.54 h and research was conducted to investigate the effect of the presence of transition metals likely to be present in the metallurgy of storage tanks and barrels, on the OS of PoME. It was found that the influence of metal was detrimental to OS and was catalytic, as even small concentrations of metal contaminants showed nearly the same influence on OS as large amounts. Copper showed the strongest detrimental and catalytic effect on OS. The OS of metal-contaminated PoME was found to increase with an increase in the dosage of antioxidant but the dosage required for copper-contaminated PoME became approximately four times than required for neat PoME. The dependence of the OS on the type of metal showed that long-term storage tests in different types of metal containers for examining the influence of container material on OS of biodiesel may be replaced by the significantly faster Rancimat test serving as an accelerated storage test. Baccaurea courtallensis Muell. Arg., a moderately sized evergreen tree of the Euphorbiaceae, is endemic to Western Ghats. Its fruits are edible, sour in taste, and contain 2–4 seeds. The native residents harvest the fruits for their medicinal value and for pickling. The seed weight is 0.28 g or 1.0 kg contains 3,500 seeds with a seed coat. The fruit to seed weight ratio is 34:1. Virtually, no work on the chemistry of the seeds or fruit of the species has been reported. Seeds of the species contain 22.5% oil on a dry kernel weight basis. Analysis of the composition of the oil revealed two major fatty acids palmitic acid (42.59%) and oleic acid (36.15%). Stearic acid content was 16.20% and myristic acid was 4.28% of the oil. Two minor acids present were lauric acid (0.40%) and linoleic acid (0.38%) and also including traces of linolenic acid. Physico-chemical properties of the oil showed an acid value of 1.402, a saponification value of 166.89, a refractive index of 0.4239, a specific gravity of −0.938, and an optical rotation of α at 29 °C + 0.35° ( λ = 589 nm).
