Abstract

Research was conducted to examine the microstructure and texture of steam cooked, vacuum packed potatoes as compared to that of water cooked potatoes. Uniaxial compression, scanning electron microscopy and light microscopy were used on well-defined tissue samples for a range of cooking times. Results indicate an increase in firmness after more than 30 minutes of cooking which may be related to the lesser leakage of pectic substances and a higher cementing of cell walls.
