The objective of the current study was to measure reticuloruminal pH in cattle in a commercial feedlot setting to determine the incidence and extent of low reticuloruminal pH for steers and heifers as they transition to a high-concentrate finishing diet. Reticuloruminal pH was measured in 16 "mixed breed" steers (4 steers/pen with 4 pens) and 16 "mixed breed" heifers (4 heifers/pen with 4 pens) housed in commercial feedlot pens, with 227 ± 13 and 249 ± 6 cattle/pen cohort steers and heifers, respectively, for the diet transition period. Cattle were transitioned from a diet of 53.5% forage and 46.5% concentrate to a diet of 9.5% forage and 90.5% concentrate on a DM basis using a 40-d transition with 5 dietary steps with the diets containing 41.4, 44.8, 49.8, 52.5, 55.1, and 64.0% nonfibrous carbohydrate. In addition, wheat replaced barley as the grain source during the dietary transition. Reticuloruminal pH was measured using orally administered pH measurement devices that were retrieved at slaughter. Data were analyzed using a mixed model including the fixed effects of sex, diet, and the 2-way interaction to evaluate the effect of diet and sex and with the fixed effects of sex, diet, and day relative to each dietary change along with the 2- and 3-way interactions to evaluate temporal responses as a result of diet change. A repeated measures statement was included for the effect of day. Both the mean and minimum reticuloruminal pH values decreased as the proportion of concentrate in the diet increased (0.001). The area and duration that pH was5.6 increased with greater inclusion of concentrate in the diet (0.001). The number of cattle experiencing low reticuloruminal pH, defined as pH5.6 for180 min, increased with increasing concentrate, and by the end of the 40-d dietary transition, 83% of the cattle had experienced at least 1 bout of low reticuloruminal pH, with most experiencing between 1 and 3 bouts/diet. These data are interpreted to suggest that cattle are at high risk for experiencing low reticuloruminal pH during the dietary transition but that the extent of low reticuloruminal pH is mild. Moreover, the data suggest that the risk for low reticuloruminal pH increases with increasing proportion of concentrate in the diet. The results also suggest that susceptibility to low reticuloruminal pH may differ between steers and heifers.

The objective of this study was to determine if cinnamaldehyde (CIN) could be used to improve feed intake, digestion, and immune status in growing beef heifers fed high-concentrate diets. The experiment was designed as a 4 x 4 Latin square using 4 ruminally and duodenally cannulated beef heifers with 4 treatments: control (no CIN added), 400 mg/d of CIN (low), 800 mg/d of CIN (medium), and 1,600 mg/d of CIN (high), and four 21-d periods. Feed intake, rumen pH and fermentation characteristics, site and extent of digestion, microbial N synthesis, blood metabolites, and acute phase protein response were measured. The diets consisted of 15% barley silage, 80% dry-rolled barley grain, and 5% supplement (DM basis). Intakes (kg/d) of DM, OM, NDF, starch, and N were quadratically (P = 0.04) changed with increasing CIN supplementation. The amount of OM fermented in the rumen quadratically (P = 0.02) decreased with increasing CIN. Digestibilities (% of intake) of OM, NDF, and N in the rumen were not affected by supplementing with low and medium CIN, but they were reduced by 8% (P = 0.10), 31% (P = 0.05), and 17% (P = 0.05), respectively, with high CIN. Similarly, digestibilities of OM and NDF in the total tract also tended to be reduced by 7% (P = 0.10) and 20% (P = 0.10), respectively, with high CIN because supplementation of CIN had minimal effects on intestinal digestibility. Flows (g/d) of microbial N and other nutrients to the duodenum were not affected by CIN supplementation, even though the amount of ruminal fermented OM varied with level of CIN supplementation. Rumen pH, total VFA concentration, and molar proportions of individual VFA were not affected by CIN. Although concentrations of NEFA (P = 0.06) and triglyceride (P = 0.01) were quadratically changed with increasing CIN supplementation, blood concentrations of glucose and urea N, white blood cell counts, serum amyloid A, and lipopolysaccharide in plasma were not affected by CIN. Plasma haptoglobin numerically (P = 0.11) decreased with the medium dose of CIN fed compared with control. The results indicate that supplementation of a high-concentrate diet with a low dose of CIN resulted in small increases in nutrient availability in the rumen due to increased feed intake and greater ruminal digestion of OM. However, feed intake and ruminal digestion of feeds were adversely affected when a high dose of CIN was used.

Four wethers fitted with ruminal, duodenal and ileal cannulas were used to study effects of maturity of alfalfa hay on intake, digestion and rate of passage of nutrients in various sites of the digestive tract. Pre-, early-, and mid-bloom hays were harvested from the same field; full-bloom hay was acquired from elsewhere due to weather conditions. Dry matter intake decreased (P c .05) as intakes of NDF and ADF increased. This was attributed to decreased digestibility and increased retention time of undigested residues. Digestion of OM in the stomach (% of intake) was 44.2, 47.4, 38.8 and 35.1 for pre-, early-, mid- and full-bloom hay, respectively. Digestion of ADF in the stomach was lower for mid-bloom than for pre and early-bloom hay (P c .05). Degradation of alfalfa protein in the rumen was 94, 88, 81 and 78% for pre-, early-, mid- and full-bloom hay, respectively. Concentration of ruminal NH3 N, flow of N at the duodenum, fecal N and urinary N decreased as maturity advanced (P c .05), but they appeared to be related primarily to the N content of the hay and to N intake. Digestion of N in the small intestine (g/d) decreased as maturity advanced (P c .05). Duodenal flow of total amino acids was greater (P c .05) when animals consumed pre-bloom hay than when they consumed more mature hays. Relative feed value calculated from the detergent fiber analysis correlated with actual value determined biologically (r = +.81). Growth performance, forestomach development, and carcass and meat quality of veal calves fed a milk replacer diet (Control) were compared to those obtained from calves fed the same liquid diet plus 250 g x calf(-1) x d(-1) of dried beet pulp or wheat straw. Three groups of 46 Polish Friesian calves, balanced according to initial BW, were assigned to the three dietary treatments in a fattening trial, which lasted 160 d. The provision of either solid feed did not affect the milk replacer intake. However, calves' ADG was increased (P0.01) only by feeding the beet pulp diet. The administration of both solid feeds improved calves' health status; calves fed solid feeds required fewer iron treatments for low hemoglobin and needed less medical treatments for respiratory or gastrointestinal diseases. In comparison to the Control calves, the provision of wheat straw and beet pulp increased iron intake throughout the fattening period by 41 and 130%, respectively. However, only calves fed beet pulp showed higher levels of hemoglobin and plasma iron concentrations (P0.05), whereas the same blood parameters were similar between Control calves and those fed wheat straw. At slaughter, both solid feeds led to empty forestomach weights heavier than those of Controls without reducing dressing percentage. The reticulorumen was heaviest in calves fed beet pulp, whereas wheat straw promoted omasal development. The administration of beet pulp resulted in a better carcass conformation than did the Control diet or wheat straw, but it had a detrimental effect on carcass color, which was graded as the darkest (P0.001). Consistent with this result, meat color of calves fed beet pulp was darker than that of Control calves and those fed wheat straw, because of the higher hematin concentration measured at the muscle level. No differences in carcass and meat color were observed between Control calves and calves fed wheat straw. The administration of solid feeds for welfare purposes does not always prevent the production of veal meat fulfilling the color standards required by the market. There is not a straight-forward relationship between a solid feed's iron content and the "redness" of veal meat, which should be related to the capability of the calves to use the iron provided by the roughage.

We assessed the effects of a long and severe period of underfeeding, followed by a rapid refeeding with a high-concentrate diet, on weight, protein mass, and cellularity of the splanchnic organs in adult ewes. Twenty-four ewes, allocated to four groups of six, were fed a forage diet (50% regrowth of natural grassland hay and 50% wheat straw) either at maintenance (groups M and MO) or at 40% maintenance (groups U and UO) for 78 d. Groups M and U were then slaughtered, and groups MO and UO were subsequently overfed a high-concentrate diet (52% hay, 20% barley, 16% rapeseed meal, 4% fish meal, and 8% Megalac) at 236% maintenance for 26 d before being slaughtered. During the experiment, feed was adjusted to maintain feed supply at a constant percentage of animal requirements. After slaughter, fresh weight, dry weight, and protein mass of the reticulorumen, omasum, abomasum, small intestine, large intestine, and liver were measured. Cellularity was assessed from nucleic acids and protein contents for both ruminal mucosa and muscular-serosa layers, jejunum, and liver. The concentrations of ubiquitin and cathepsin D mRNA were measured in ruminal mucosa and muscular-serosa layers and in jejunum. Underfeeding decreased protein mass of splanchnic organs, especially in liver (-29%) and reticulorumen (-39%). Refeeding previously underfed animals increased protein mass of liver (+102%) and small intestine (+59%). No carry-over effect of the previous level of intake (UO vs. MO) was observed on the protein mass of splanchnic tissues after 26 d of refeeding. Variations in liver mass were mainly due to hypertrophy, as determined by the protein:DNA ratio, whereas variations in small intestinal mass were mainly due to hyperplasia, as determined by the amount of DNA. By contrast, changes in rumen mass associated with increasing ME intake seemed to be related to hypertrophy in the muscular-serosal component and hyperplasia in the epithelial component. The concentrations of ubiquitin and cathepsin D mRNA in the rumen and jejunum were not modified by feeding level, demonstrating that the expression of these genes for proteolytic enzymes was unchanged under these conditions.

To determine the effect of dry (D); reconstituted and ensiled (R); reconstituted and acid-treated (A); and urea-treated, high-moisture (U) sorghum grain on starch digestibility, four Angus x Hereford steers (means BW = 350 kg) with duodenal and ileal cannulas were used in a 4 x 4 Latin square design. Diets consisting of 69% ground sorghum grain were fed every 2 h in equal portions (8.2 kg/d). Diets averaged 46.5% starch and 12% CP, except for U, which averaged 14% CP due to urea treatment. Ytterbium attached to sorghum was used as a particulate marker. Duodenal, ileal, and fecal samples were taken 1 h postfeeding after a 14-d adaption to diets. Whole samples were analyzed. Preduodenal starch digestion (%) was 89, 83, 76, and 70, and starch digestion over the total tract was 99, 97, 95 and 91 for R, U, A, and D, respectively. Starch digestion proximal to each site (duodenum and ileum) was enhanced (P less than .05) by R and U compared with D. Within the small intestine, there was a linear relationship (P less than .003) between starch digestion and daily starch supply. However, digestibility of starch in the small intestine (mean = 45%) was not different among diets. Apparent digestibility of starch in the large intestine was not significantly different from digestibility in the small intestine. Urea-treated sorghum grain was equivalent to reconstituted, ensiled sorghum in digestion characteristics and was superior to dry sorghum.

Three trials were conducted to assess effects of metabolizable protein and NE deficiencies on changes in body composition, organ mass and metabolism, and animal growth performance during restriction and realimentation. Growth of lambs was restricted to achieve no change in BW for periods of 5 to 6 wk by limiting intake of metabolizable protein or NE. In Trial 1, changes in body composition and visceral organ mass and metabolism during restriction were compared to unrestricted controls using 36 lambs. Trial 2 was designed to investigate changes in growth, body composition, and visceral organs during restriction and realimentation periods using 44 lambs. Trial 3 was limited to evaluation of differences in performance and carcass characteristics of previously restricted and unrestricted ram lambs (15 total). Results of Trial 1 indicated that liver weights were decreased with nutrient restrictions. Body protein mass was conserved in energy-restricted (ER) lambs and lost in protein-restricted (PR) lambs. Fat was mobilized at similar rates for PR and ER lambs. In Trial 2, liver and intestinal weights, as well as in vitro oxygen consumption by liver slices, were decreased with nutrient restrictions. The reductions persisted after 2 wk of realimentation, yet no compensatory growth was observed. Feed intakes were increased gradually during the first 2 wk of realimentation. Composition of gain during the realimentation period was similar to that of unrestricted lambs. In Trial 3, neither gain nor feed efficiency during realimentation was enhanced as a result of previous nutrient deficiencies. Absence of compensatory growth in Trial 3 is possibly attributable to differences in gastrointestinal fill. Lambs subjected to short-term PR and ER seem to have similar recuperative capacity.

Effects of Mo and S on the digestion of dietary DM, ash, OM, NDF, CP, and nonprotein OM were evaluated using four Holstein steers, each with cannulas in the rumen, proximal duodenum (PD), and terminal ileum (TI). Steers were continuously fed diets with high (13.3 mg/kg DM) and low (1.8 mg/kg DM) Mo (HM and LM, respectively) and high (3.9 g/kg DM) and low (1.3 g/kg DM) S (HS and LS, respectively) as combinations LMLS, LMHS, HMLS, and HMHS in a 4 x 4 Latin square design. Daily flows of dietary components at the PD and TI and as fecal excretion were estimated using dysprosium as an inert marker. With HM diets, the balance between absorption and endogenous input in the stomach was such that there was a lower (P less than .10) net (intake minus duodenal flow) output of mineral from the stomach. A lower (P less than .10) net output of diaminopimelic acid as an indicator of bacterial CP and DM was associated with a lower (P less than .10) net output of CP from the stomach of steers fed HM diets. This lower net output of CP from the stomach, coupled with no effect (P greater than .10) of Mo on CP in the small intestine, indicated that less CP was absorbed from the small intestine. Supplemental Mo in association with S appeared to prevent (P less than .10) an apparent higher net output of methionine from the stomach when supplemental S alone was in the diet. Effects of supplemental S were minor compared with those of supplemental Mo. Dietary Mo had negative effects on ash as an indicator of mineral balance in the stomach of steers and on the output of CP as bacterial CP and of DM of bacterial origin from the stomach of steers.

Ten abomasally cannulated crossbred wether lambs (avg wt, 33 kg) were used in a replicated 5 x 5 latin square design to determine the site and extent of apparent absorption of Mg when fed different sources of Mg. Lambs were fed twice daily 220 g of chopped mixed grass hay and 180 g of a corn-based supplement (control; .13% mg, DM basis), or the control diet supplemented with Mg (.26% Mg, DM basis) from MgO, magnesium citrate (MgC), smectite-vermiculite (Mg-Mica) or MgOH. Lambs were maintained in metabolism stalls during each of the five experimental periods. Each period consisted of a 7-d dietary adjustment followed by a 3-d collection of abomasal samples, feces and urine. Abomasal contents were sampled four times daily during the 3-d collection period. The diet contained .5% chromium oxide as a digestion marker. Apparent absorption of Mg was .17, .55, .85, .78 and .82 g/d for lambs fed the control, MgO, MgC, Mg-Mica and MgOH diets, respectively. Apparent absorption of Mg (g/d) was similar (P greater than .05) in the lambs fed the supplemented diets and greater (P less than .05) than in those fed the control diet. Preintestinal absorption of Mg was .21, .57, 1.08, .14 and .92 g/d when the control, MgO, MgC, Mg-Mica and MgOH diets were fed. Lambs fed the control and Mg-Mica diets absorbed similar (P greater than .05) quantities of Mg in the preintestinal region and less (P less than .05) than lambs fed the MgO, MgC and MgOH diets.(ABSTRACT TRUNCATED AT 250 WORDS)

Four experiments were conducted to study factors affecting digestibility of forages in cattle, sheep, goats and white-tailed deer. In a series of digestion trials (Exp. 1), the dry matter digestibility of a moderately high fiber diet was greater in cattle than in deer. Digestibilities of the diet in sheep and goats were intermediate and not different from either extreme. In a second series of trials (Exp. 2), relative organic matter digestibilities were for goats more than sheep more than deer. However, in Exp. 2, intake in goats was very low and digestibility appeared to be positively related to retention time and inversely related to turnover rate. Results of three trials (Exp. 3) suggested that rate of digestion was related more to diet than to the animal species consuming the diet. In grazing animals (Exp. 4), goats digested a smaller percentage of consumed material than either cows or sheep during three of four seasons even though diets were of similar in vitro digestibility. This difference was related to a faster turnover and shorter retention time in goats. These data support the concept that there are species differences in gastrointestinal dynamics which may be which may be important determinants of adaptability to grazing conditions.

Effects of time of day and dietary monensin in the distribution of size of digesta particles in different digestive tract sites and their intersite relationships were examined in six heifers (290 kg BW) with ruminal, duodenal and ileal cannulas given ad libitum access to corn silage, with or without 100 mg monensin.head-1.d-1, in a two-period crossover design. Ingestive masticate and digesta of corn silage were collected via esophageal, ruminal or intestinal cannulas. The distribution of particulate matter retained on sieves with apertures larger than 20 microm was determined by wet-sieving. The cumulative distribution of particulate matter on a series of sieves was regressed on retaining sieve aperture to estimate the sieve aperture that would retain 50% weight of the particulate matter (median retaining aperture, MRA). The MRA of masticate was 6,494 microm. The MRA of digesta particles decreased (P less than .05) from ventral rumen (1,847 microm) to dorsal rumen (1,797 microm) to duodenum (346 microm), but increased to the rectum (359 microm). The MRA was lower (P = .044) for the monensin treatment only in feces. The MRA of particulate matter in the dorsal and ventral rumen, duodenum and rectum all changed (P less than .05) over 24 h. An inverse pattern between the MRA of ruminal and duodenal digesta occurred, presumably the result of a nycterohemeral pattern of eating and ruminating activity. Across sampling times, an inverse relationship existed between MRA of ventral rumen and duodenal digesta. This relationship suggests that a ruminal digesta raft composed of larger particles (immediately following major meals) is more effective than a raft of smaller particles (prior to such meals) in preventing flux of large particles to the duodenum.

Eighteen wether lambs, surgically equipped with abomasal and ileal cannulae, were used in two metabolism trials. Two levels of dietary Mg (.1 and .2%) and three levels of K (.6, 2.4 and 4.8%, dry basis) were fed with a 2 x 3 factorial arrangement. Each trial consisted of a 10-d preliminary period, a 7-d collection of feed, feces and urine for determining mineral balance and a 6-d sampling of feed, abomasal and ileal fluid and feces to determine flow and site of mineral absorption. Magnesium absorption occurred before the small intestine. Feeding 2.4 and 4.8% K decreased (P less than .05) Mg absorption by 24.4 and 61.2%, respectively. Preintestinal absorption of Mg was depressed linearly with increases in dietary potassium. Larger amounts of Mg flowed to the small intestine and were excreted in the feces when the high level of Mg was fed. A net secretion of Mg into the small intestine followed by a small amount of Mg absorption in the large intestine was also found. Serum Mg was depressed 7 and 10% when diets containing 2.4 and 4.8% potassium were fed, respectively. Magnesium level did not affect K absorption or balance. Potassium absorption, retention and urinary excretion increased (P less than .05) with increasing K level. Animals fed the low K diet had a negative absorption of K preintestinally with the small intestine being the main site of absorption. Increasing K level resulted in approximately equal amounts of K being absorbed in the stomach and small intestine.

Six 5- to 6-month-old sheep fitted with rumen fistulas and reentrant cannulas in the duodenum and in the ileum were adapted to two dies low in thiamin and containing different percentages of urea nitrogen. The sheep were subjected to seven thiamin balance experiments, with continuous feeding and total collection of duodenal and ideal contents and feces for periods of 6 day each. Thiamin and dry matter were determined in aliquots of collected digesta and feces. Daily thiamin intake was always less than .3 mg, but average daily flow of thiamin into the duodenum was between 1.53 and 3.46 milligrams. Microbial net synthesis of thiamin in the forestomach system was between 1.44 and 3.23 mg/day, so 90 to 96% of thiamin entering the duodenum was of microbial origin. Disappearance of thiamin from the small intestines approximately equaled thiamin net synthesis in the forestomachs, indicating high absorption of microbially produced thiamin. In five experiments, thiamin balance in the large intestines was positive, but no measurements were made of thiamin breakdown within, and absorption from, the large intestines.
