Evaluation of the body chemical composition of beef cattle can only be measured postmortem and those data cannot be used in real production scenarios to adjust nutritional plans. The objective of this study was to develop multiple linear regression equations from in vivo measurements, such as ultrasound parameters [backfat thickness (uBFT, mm), rump fat thickness (uRF, mm), and ribeye area (uLMA, cm2)], shrunk body weight (SBW, kg), age (AG, d), hip height (HH, m), as well as from postmortem measurements (composition of the 9th to 11th rib section) to predict the empty body and carcass chemical composition for Nellore cattle. Thirty-three young bulls were used (339 ± 36.15 kg and 448 ± 17.78 d for initial weight and age, respectively). Empty body chemical composition (protein, fat, water, and ash in kg) was obtained by combining noncarcass and carcass components. Data were analyzed using the PROC REG procedure of SAS software. Mallows' Cp values were close to the ideal value of number of independent variables in the prediction equations plus one. Equations to predict chemical components of both empty body and carcass using in vivo measurements presented higher R2 values than those determined by postmortem measurements. Chemical composition of the empty body using in vivo measurements was predicted with R2 > 0.73. Equations to predict chemical composition of the carcass from in vivo measurements showed R2 lower (R2< 0.68) than observed for empty body, except for the water (R2 = 0.84). The independent variables SBW, uRF, and AG were sufficient to predict the fat, water, energy components of the empty body, whereas for estimation of protein content the uRF, HH, and SBW were satisfactory. For the calculation of the ash, the SBW variable in the equation was sufficient. Chemical compounds from components of the empty body of Nellore cattle can be calculated by the following equations: protein (kg) = 47.92 + 0.18 × SBW - 1.46 × uRF - 30.72 × HH (R2 = 0.94, RMSPE = 1.79); fat (kg) = 11.33 + 0.16 × SBW + 2.09 × uRF - 0.06 × AG (R2 = 0.74, RMSPE = 4.18); water (kg) = - 34.00 + 0.55 × SBW + 0.10 × AG - 2.34 × uRF (R2 = 0.96, RMSPE = 5.47). In conclusion, the coefficients of determination (for determining the chemical composition of the empty body) of the equations derived from in vivo measures were higher than those of the equations obtained from rib section measurements taken postmortem, and better than coefficients of determination of the equations to predict the chemical composition of the carcass.

Data from 156 Nellore males were used to develop equations for the prediction of retail beef yield and carcass fat content, expressed as kilograms and as a percentage, from live animal and carcass measurements. Longissimus muscle area and backfat and rump fat thickness were measured by ultrasound up to 5 d before slaughter and fasted live weight was determined 1 d before slaughter. The same traits were obtained after slaughter. The carcass edible portion (CEP in kg and CEP% in percentage; n = 116) was calculated by the sum of the edible portions of primal cuts: hindquarter, forequarter, and spare ribs. Trimmable fat from the carcass boning process, with the standardization of about 3 mm of fat on retail beef, was considered to be representative of carcass fat content. Most of the variation in CEP was explained by fasted live weight or carcass weight (R(2) of 0.92 and 0.96); the same occurred for CEP% (R(2) of 0.15 and 0.13), and for CEP, the inclusion of LM area and fat thickness reduced the equation bias (lower value of Mallow's Cp statistics). For trimmable fat, most variation could be explained by weight or rump fat thickness. In general, the equations developed from live animal measurements showed a predictive power similar to the equations using carcass measurements. In all cases, the traits expressed as kilograms were better predicted (R(2) of 0.39 to 0.96) than traits expressed as a percentage (R(2) of 0.08 to 0.42).

The objectives of this study were to estimate genetic parameters for indicator traits of feed efficiency and to recommend traits that would result in better responses to selection for increased weaning weight (weaning weight adjusted to 210 d of age [W210]), ADG, and metabolic BW (BW(0.75)) and lower DMI. Records of W210 from 8,004 Nellore animals born between 1978 and 2011 and postweaning performance test records from 678 males and females born between 2004 and 2011 were used. The following feed efficiency traits were evaluated: G:F, partial efficiency of growth (PEG), relative growth rate (RGR), Kleiber's ratio (KR), residual feed intake (RFI), residual weight gain (RWG), and residual intake and gain (RIG). Covariance and variance components were estimated by the restricted maximum likelihood method using multitrait analysis under an animal model. Estimates of genetic gain and correlated responses were obtained considering single-stage and 2-stage selection. Heritability estimates were 0.22 ± 0.03 (W210), 0.60 ± 0.08 (DMI), 0.42 ± 0.08 (ADG), 0.56 ± 0.06 (BW(0.75)), 0.19 ± 0.07 (G:F), 0.25 ± 0.09 (PEG), 0.19 ± 0.07 (RGR), 0.22 ± 0.07 (KR), 0.33 ± 0.10 (RFI), 0.13 ± 0.07 (RWG), and 0.19 ± 0.08 (RIG). The genetic correlations of DMI with W210 (0.64 ± 0.10), ADG (0.87 ± 0.06), and BW(0.75) (0.84 ± 0.05) were high. The only efficiency traits showing favorable responses to selection for lower DMI were G:F, PEG, RFI, and RIG. However, the use of G:F, PEG, or RFI as a selection criterion results in unfavorable correlated responses in some growth traits. The linear combination of RFI and RWG through RIG is the best selection criterion to obtain favorable responses in postweaning growth and feed intake of Nellore cattle in single-stage selection. Genetic gains in feed efficiency are expected even after preselection for W210 and subsequent feed efficiency testing of the preselected animals.

Empty body and carcass chemical compositions, expressed as content of water, ether extract, protein, minerals, and energy, were evaluated in Nellore bulls with different residual feed intakes (RFI). Forty-nine not castrated males, with 343 kg of average initial BW and 398 kg of average slaughter BW, were studied. Animals were divided in two subgroups: reference group (RG) and ad libitum feeding group. At the end of the adaptation period, animals of subgroup RG were slaughtered and the other animals were finished in individual pens for approximately 100 d, until they reached a subcutaneous fat thickness over the LM of 4 mm, and were slaughtered at an average age of 540 d. Body composition was obtained after grinding, homogenizing, sampling, analyzing, and combining blood, hide, head + feet, viscera, and carcass. Tissue deposition rates and chemical composition of gain were also measured based on gains estimated by comparative slaughter technique. No significant differences in slaughter BW (P = 0.8639), empty BW (P = 0.7288), HCW (P = 0.6563), or empty body and carcass rates of gain were observed between RFI groups, demonstrating that the low (-0.331 kg DM/d) and high (+0.325 kg DM/d) RFI animals presented similar body sizes and growth rates. No significant differences in empty body or carcass content of water, ether extract, protein, minerals, and energy were observed between the low and high RFI animals. And also there were no significant differences in empty BW or carcass gain, demonstrating that low and high RFI animals had a similar growth potential. More efficient animals (low RFI) consumed less feed than less efficient animals (high RFI) but presented similar body sizes, growth rates, and empty body and carcass chemical composition.

Supplementation of grass-fed cattle with low-cost feeding alternatives may be an attractive way to improve efficiency of cattle production. We hypothesized that inclusion of crude glycerin (CG) in supplements provided to grass-fed cattle could improve feed conversion without negative effects on growth performance while reducing methane emissions. Our hypothesis was tested using Nellore bulls grazing tropical pasture (n = 50; initial BW of 427 ± 19.41 kg; age of 17 ± 2 mo) supplemented with increasing concentrations (0, 70, 140, 210, and 280 g/kg DM basis of supplement) of CG and corn gluten replacing corn grain. A second experiment was conducted using 10 ruminally cannulated Nellore steers (490.1 ± 47.8 kg BW; age of 25 mo) to assess the impact of different concentrations of glycerin in the supplement on ruminal VFA concentration. Inclusion of CG did not affect total DMI (P = 0.53), DMI of forage (P = 0.41), supplement DMI (P = 0.47), organic matter intake (P = 0.50), crude protein intake (P = 0.24), NDF intake (P = 0.49), GE intake (P = 0.50), NDF digestibility (P = 0.17), final BW (P = 0.17), LM area (P = 0.50), rib fat thickness (P = 0.87), or carcass gain (P = 0.13). The inclusion of CG in the supplement linearly increased (P < 0.001) the molar proportion of propionate, butyrate, and valerate; linearly decreased acetate (P = 0.001); and did not affect the molar proportion of isovalerate (P = 0.31) and isobutyrate (P = 0.63), thereby reducing the acetate to propionate ratio (P < 0.001). The increase of CG supplementation of young bulls in pasture had a quadratic effect on BW gain (P = 0.002), with lower BW gain with 140 g/kg DM of CG in the supplement and tended (P = 0.06) to improve G:F. Inclusion of CG did not affect ruminal CH4 emission expressed in kilograms per year (P = 0.74), grams per kilogram of DMI (P = 0.69), and grams per kilogram of carcass gain (P = 0.48). Crude glycerin supplementation was not effective as a strategy to reduce CH4 emission in grass-fed cattle. The objective of this study was to determine whether visual scores used as selection criteria in Nellore breeding programs are effective indicators of carcass traits measured after slaughter. Additionally, this study evaluated the effect of different structures of the relationship matrix (A and H) on the estimation of genetic parameters and on the prediction accuracy of breeding values. There were 13,524 animals for visual scores of conformation (CS), finishing precocity (FP), and muscling (MS) and 1,753, 1,747, and 1,564 for LM area (LMA), backfat thickness (BF), and HCW, respectively. Of these, 1,566 animals were genotyped using a high-density panel containing 777,962 SNP. Six analyses were performed using multitrait animal models, each including the 3 visual scores and 1 carcass trait. For the visual scores, the model included direct additive genetic and residual random effects and the fixed effects of contemporary group (defined by year of birth, management group at yearling, and farm) and the linear effect of age of animal at yearling. The same model was used for the carcass traits, replacing the effect of age of animal at yearling with the linear effect of age of animal at slaughter. The variance and covariance components were estimated by the REML method in analyses using the numerator relationship matrix (A) or combining the genomic and the numerator relationship matrices (H). The heritability estimates for the visual scores obtained with the 2 methods were similar and of moderate magnitude (0.23-0.34), indicating that these traits should response to direct selection. The heritabilities for LMA, BF, and HCW were 0.13, 0.07, and 0.17, respectively, using matrix A and 0.29, 0.16, and 0.23, respectively, using matrix H. The genetic correlations between the visual scores and carcass traits were positive, and higher correlations were generally obtained when matrix H was used. Considering the difficulties and cost of measuring carcass traits postmortem, visual scores of CS, FP, and MS could be used as selection criteria to improve HCW, BF, and LMA. The use of genomic information permitted the detection of greater additive genetic variability for LMA and BF. For HCW, the high magnitude of the genetic correlations with visual scores was probably sufficient to recover genetic variability. This study was conducted to evaluate associations of performance traits, feed efficiency, and blood variables with residual feed intake (RFI) in growing Nellore cattle. A total of 118 growing Nellore animals, 62 males and 56 females, were used. A diet containing 2 Mcal/kg was offered ad libitum and individual DMI was measured over a period of 84 d. Animals were classified as low (≤0.128 kg/d; n = 40), medium (-0.128 to 0.135 kg/d; n = 42), or high RFI (>0.135 kg/d; n = 36). Blood samples were collected at the beginning and at the end of the test for determination of plasma concentrations of different blood variables. Data were analyzed using a mixed model that included the random effect of facility the fixed effects of sex, RFI class, and linear effect of the covariate age within sex; and the interaction between RFI class and sex. Least squares means were compared using a t-test. Animals of different RFI classes presented similar performance traits and different DMI. Low-RFI animals consumed, on average, 0.670 kg/d less DM than high-RFI animals. Among the blood variables analyzed, significant differences among RFI classes were observed for urea, IGF-1, and insulin. Plasma urea concentrations were lower (5.58 vs. 5.91 mmol/L) and insulin (4.45 vs. 3.70 μIU/mL) and IGF-1 (433 vs. 399 ng/mL) concentrations were higher in low-RFI animals when compared to high- RFI animals. The study reported here evaluated genotype × environment interaction in individual performance and progeny tests in beef cattle. Genetic parameters for final weight (FW), ADG, and scrotal circumference (SC) of 33,013 Nellore young bulls tested on pasture or in feedlots were analyzed. The posterior means (and highest posterior density interval with 90% of samples [HPD90]) of heritability for traits measured on pasture-raised and feedlot-raised animals were 0.44 (HPD90 = 0.40 to 0.48) and 0.50 (HPD90 = 0.43 to 0.56) for FW, 0.26 (HPD90 = 0.23 to 0.29) and 0.26 (HPD90 = 0.20 to 0.32) for ADG, and 0.53 (HPD90 = 0.48 to 0.59) and 0.65 (HPD90 = 0.55 to 0.74) for SC, respectively. The posterior means (and HPD90) of genetic correlations for FW, ADG, and SC on pasture and in feedlots were 0.75 (HPD90 = 0.66 to 0.87), 0.49 (HPD90 = 0.31 to 0.66), and 0.89 (HPD90 = 0.83 to 0.97), respectively. When the selection intensity was kept the same for both the environments, the greatest direct responses for FW and ADG were exhibited by the animals reared and selected in feedlots. The correlated responses relative to production on pasture and based on selection in feedlots were similar to the direct responses, whereas the correlated responses for production in feedlots and based on selection on pasture were lower than the direct responses. When the selection intensity on pasture was higher than the selection intensity in feedlots, the responses to direct selection were similar for both the environments and correlated responses obtained in feedlots by selection on pasture were similar to the direct responses in feedlots. Analyses of few or poor indicators of genotype × environment interaction result in incorrect interpretations of its existence and implications. The present work demonstrated that traits with lower heritability are more susceptible to genotype × environment interaction and that selection intensity plays an important role in the study of genotype × environment interaction in beef cattle. The objective of this study was to evaluate the genetic variability of body composition traits measured by ultrasound, growth traits, and visual scores as well as their genetic associations in Nelore cattle. A total of 9,765, 13,285, 13,061, 12,811, 3,484, 3,484, 3,483, and 3,303 records of weight at time of ultrasound measure (W550), 12th-13th rib LM area (LMA), backfat thickness (BF), rump fat thickness (RF), visual scores for body structure (BS), finishing precocity (FP), muscling (MS), and sheath and navel characteristics (SN), respectively, were used. The model included contemporary group (defined as year and season of birth, sex, and management group) as a fixed effect and age of dam at calving and age of the animal (linear and quadratic effects) as covariates. The direct additive genetic effect was included as a random effect. The analyses also included 46,157 observations of BW adjusted to 120 d. The (co)variance components were estimated by the restricted maximum likelihood method using a multitrait animal model. Heritability estimates for W550, LMA, BF, RF, BS, FP, MS, and SN were 0.37 ± 0.030, 0.33 ± 0.03, 0.24 ± 0.02, 0.28 ± 0.03, 0.24 ± 0.04, 0.38 ± 0.05, 0.29 ± 0.05, and 0.38 ± 0.06, respectively. The estimated genetic correlations between visual scores and LMA were moderate and positive, ranging from 0.37 to 0.44. Similar results were obtained for the estimated genetic correlations between FP and MS with fat thickness measures (BF and RF). Low genetic correlations were estimated between SN and BS and between SN and the body composition traits, indicating that selection for body composition traits and BS will not affect sheath and navel size. The estimated genetic correlations between weight adjusted to 120 d of age (W120) and W550 and BS were high (0.87 and 0.91) and moderate with LMA (0.49 and 0.55), FP (0.37 and 0.41), and MS (0.47 and 0.55). The visual scores and ultrasound-measured body composition traits have enough genetic variation for selection purposes in Nelore cattle. Selection based on visual scores for body structure, finishing precocity and muscling should lead to desired changes in body composition albeit much more slowly than direct selection on those traits measured by ultrasound. The aim of the present study was to estimate genetic parameters for flight speed and its association with growth traits in Nellore beef cattle. The flight speed (FS) of 7,402 yearling animals was measured, using a device composed of a pair of photoelectric cells. Time interval data (s) were converted to speed (m/s) and faster animals were regarded as more reactive. The growth traits analyzed were weaning weight (WW), ADG from weaning to yearling age, and yearling scrotal circumference (SC). The (co)variance components were estimated using REML in a multitrait analysis applying an animal model. The model included random direct additive genetic and residual effects, fixed effects of contemporary groups, age of dam (classes), and age of animal as covariable. For WW, the model also included maternal genetic and permanent environmental random effects. The direct heritability estimate for FS was 0.26 ± 0.05 and direct heritability estimates for WW, SC, and ADG were 0.30 ±0.01, 0.48 ± 0.02, and 0.19 ± 0.01, respectively. Estimates of the genetic correlation between FS and the growth traits were -0.12 ± 0.07 (WW), -0.13 ± 0.08 (ADG), and -0.11 ± 0.07 (SC). Although the values were low, these correlations showed that animals with better temperaments (slower FS) tended to present better performance. It is possible to infer that long-term selection for weight and scrotal circumference can promote a positive genetic response in the temperament of animals. Nevertheless, to obtain faster genetic progress in temperament, it would be necessary to perform direct selection for such trait. ABSTRACT: The objective of this study was to determine the possible use of heifer pregnancy at 16 mo as a selection criterion and its possible genetic associations with hip height, yearling weight, and visual scores of conformation, finishing, and muscling. The data set contained records of 56,458 Nelore yearlings for the traits described above. Covariance components were estimated by bivariate animal models assuming a linear model for hip height, yearling weight and conformation, and finishing and muscling scores, and a nonlinear (threshold) model for heifer pregnancy. Variance components were estimated using Bayesian inference. Flat distributions were used for all (co)variance components and genetic correlations. The first 5,000 rounds were considered as the burn-in period and discarded. The heritability estimate of heifer pregnancy indicates that the trait can be used as a selection criterion. Long-term selection for heifer pregnancy will result in a reduction of animal height. However, selection for increasing yearling weight should be possible in this population of Nelore cattle without having major effects on fertility. Selection for increasing visual scores of conformation, finishing, and muscling will result in small or no response in heifer pregnancy at 16 mo. [ABSTRACT FROM AUTHOR]

The aim of this study was to evaluate the relationship between temperament in Nellore bulls with carcass and meat quality traits. In total, 1,400 bulls were studied, and temperament was assessed using two measurements: movement score (MOV) and flight speed test (FS). Both MOV and FS were measured at two time points, with background (MOVb and FSb) temperament measured at yearling age, ~550 d after birth, and the preslaughter (MOVps and FSps) temperament measured at the end of the feedlot period. The change of temperament resulting in an increase or decrease in reactivity was also used to measure meat quality. The traits used to define carcass and meat quality included carcass bruises (BRU), hot carcass weight (HCW, kg), ribeye area (REA , cm2), backfat thickness (BFT , cm), marbling score (MS), meat pH after thawing (pH), presence or absence of dark cutters, color parameters of luminosity (L*), redness (a*) and yellowness (b*), cooking loss (CL , %), and Warner–Bratzler shear force (WBSF , kg). A principal component (PC) analysis was initially applied to the carcass and meat quality traits, followed by logistic regression models and linear mixed models to evaluate the effects of temperament on carcass and meat quality. The risks of carcass bruises and dark cutters did not differ as a function of any temperament trait (P > 0.05). In turn, animals classified as high MOVb (reactive) had lower PC3 values (P = 0.05), CL (P = 0.02), and tended to have lower MS (P = 0.08). In addition, animals classified as high FSb (faster and reactive cattle) produced carcasses with smaller REA (P < 0.01), higher meat pH (P < 0.01), lower color gradients (L*, P = 0.04; b*, P < 0.01), and lower PC1 and PC4 scores (P < 0.01) when compared with the low FSb class. For preslaughter temperament, high MOVps was related to lower color a* (P = 0.04), whereas high FSps was related to lower HCW, MS, and PC2 (P < 0.01) than the calmer ones (low FSps). The reduction in MOV was related to more tender meat, and the reduction in FS to heavier carcass and brighter meat. We conclude that excitable temperament in Nellore cattle may have negative effects in some of the carcass and meat quality attributes assessed, mainly those related to muscle deposition on carcass and color gradients. Measurement of temperament before the cattle entered the feedlot was a better predictor of carcass and meat quality traits, compared with temperament assessment at the end of the feeding period.
