Fatty acid (FA), tocopherol, and phytosterol profiles are used in avocado oil purity standards. However, blends with other oils can mimic the profile of pure avocado oil, resulting in similar ranges for these molecules. Therefore, fatty alcohol esters (FAEs) uniquely of Persea spp. were assessed as complementary markers in the chemical profile of pure avocado oil. Utilizing HPLC-TOF-MS and UPLC-MS/MS for identification and HPLC-DAD-ELSD for quantification, major FAEs were analyzed in nine cultivars. Major FAEs included Persin (20-48%), AcO-avocadyne (11-44%), Persenone A (12-30%), and AcO-avocadene (3-24%). Metabolic balance between the main FAs (C18:1n-9, C16:0, C16:1n-9, and C18:2n-6), vaccenic (C18:1n-7), two C17-FAs, and low levels of C18:3n-3 and stearic acid marked the pattern. Relationships between avocado FAs and FAEs were assessed, reinforcing the relevance of both metabolite groups to the fingerprinting of avocado oil and as novel composition biomarkers.

Avocado fruit extracts are known to exhibit antimicrobial properties. However, the effects on bacterial endospores and the identity of antimicrobial compounds have not been fully elucidated. In this study, avocado seed extracts were tested against Clostridium sporogenes vegetative cells and active endospores. Bioassay-guided purification of a crude extract based on inhibitory properties linked antimicrobial action to six lipid derivatives from the family of acetogenin compounds. Two new structures and four compounds known to exist in nature were identified as responsible for the activity. Structurally, most potent molecules shared features of an acetyl moiety and a trans-enone group. All extracts produced inhibition zones on vegetative cells and active endospores. Minimum inhibitory concentrations (MIC) of isolated molecules ranged from 7.8 to 15.6 μg/mL, and bactericidal effects were observed for an enriched fraction at 19.5 μg/mL. Identified molecules showed potential as natural alternatives to additives and antibiotics used by the food and pharmaceutical industries to inhibit Gram-positive spore-forming bacteria.

Folates are essential micronutrients for humans, and their deficiency causes several detrimental effects on human health. Papaya fruit is an important natural source of some micronutrients. This paper presents a first complete characterization of folate derivatives accumulated in cv. Maradol papaya during fruit development and ripening processes. During postharvest ripening, the fruit accumulated up to 24.5% of the daily folate recommended dietary allowance (RDA) for an adult in a 1 cup (145 g) portion. Tetrahydrofolate (THF) and 5-methyl-THF were the predominant folate classes observed. Surprisingly, an unusually long polyglutamylation profile of tentatively up to 17 glutamates linked to 5-methyl-THF was detected; to the authors' knowledge, this very long polyglutamyl tail has not been reported for any organism, and it is probably characteristic of this plant species. This polyglutamylation degree changed throughout fruit development and ripening, showing the largest differences at the onset of ripening. This work raises questions about the functional role of folate derivatives in fruit development.
