During wine aging in barrels, antioxidant molecules from wood, such as ellagitannins, are solubilized and react with wine molecules and oxygen. However, their concentrations are highly variable. Oxygen is an important factor, as it plays a role in wine parameters and organoleptic perceptions. Five barrel modalities were used; three polyphenol indices (IP), classified using the NIRS procedure, and three grain qualities. Barrels were equipped with windows to measure the oxygen using luminescence technology. The ellagitannin concentrations in the wine and its organoleptic properties were monitored. Oxygen concentrations decreased quickly during the first 8 days of aging and this phenomenon was significantly more marked in barrels with a higher IP and medium grain. The ellagitannin concentrations were believed to be correlated with wood classification and oxygen consumption. Furthermore, the organoleptic properties were significantly impacted, as the wine with the lowest ellagitannin level was described as less astringent, bitter, woody, and smoky/toasty. • New C -glucosidic ellagitannin-derived spirit compounds quantification in Cognac eaux-de-vie. • Identification and quantification of a new compound, called brandy tannin B. • Oxidation compounds derived from ellagitannins are identified and quantified for the first time. • Brandy tannin B influences the gustative perception of Cognac eau-de-vie. Ellagitannins are the main extractible phenolic compounds in oak wood. They can be extracted by eaux-de-vie aging in barrels but rapidly undergo chemical transformations, such as hydrolysis, reduction, oxidation, or even substitution reactions. Given gaps in knowledge about their composition in spirits, the goal of this work was to explore ellagitannin behavior during Cognac eaux-de-vie aging and search for new C-glucosidic ellagitannin-derived compounds. A purification protocol was followed to isolate the new formed compounds. UPLC-UV-Q-ToF and NMR spectroscopy were used to characterize a new C-glucosidic ellagitannin, named brandy tannin B. Two new forms of whiskey tannins were also isolated. The new compound, Brandy tannin B along with β -1- O -ethylvescalagin and β -1- O -ethylvescalin, and whiskey tannins were identified and quantified for the first time in Cognac eaux-de-vie. Abstract: The antioxidant capacity of oak wood used in the ageing of wine was studied by four different methods: measurement of scavenging capacity against a given radical (ABTS, DPPH), oxygen radical absorbance capacity (ORAC) and the ferric reducing antioxidant power (FRAP). Although the four methods tested gave comparable results for the antioxidant capacity measured in oak wood extracts, the ORAC method gave results with some differences compared to the other methods. Non-toasted oak wood samples displayed more antioxidant power than toasted ones due to differences in the polyphenol composition. A correlation analysis revealed that ellagitannins were the compounds mainly responsible for the antioxidant capacity of oak wood. Some phenolic acids, mainly gallic acid, also showed a significant correlation with antioxidant capacity. [Copyright &y& Elsevier]

Abstract: In order to shed light on the thermal carbohydrate transformation chemistry, the non-volatile composition of natural and toasted oak wood samples of different origins were studied. GC–MS analysis revealed the presence of monosaccharide anhydrides (MAs) only in toasted oak wood samples. They were formed by the cellulose and hemicelluloses thermal degradation produced during the toasting process, and the content was dependent on the degree of toasting. The principal MAs formed in the oak wood toasting process were 1,6-anhydro-β-d-glucopyranose (levoglucosan), 1,6-anhydro-β-d-galactosane (galactosan) and 1,6-anhydro-β-d-mannopyranose (mannosan), with levoglucosan being the dominant MAs detected. Monosaccharide anhydrides can be considered specific products formed during the thermal treatment of wood; therefore they are proposed as markers of toasted wood and could be used to monitor and determine the intensity of toasting process. Abstract: The oenological quality of Spanish oak wood from Navarra (Quercus petraea Liebl.) in relation to French wood of recognised quality in cooperage has been evaluated. We have studied the effects of the Spanish wood on wine evolution during ageing, in regards to chromatic characteristics, polyphenols, and volatile compounds related to oak wood, in three different mono-varietal wines (cv. Tempranillo, cv. Cabernet Sauvignon and cv. Merlot) from the Origin Denomination Navarra. The results were compared with those obtained for the same wines aged in French oak barrels from central regions of France, obtained from five different French and Spanish cooperages. The wines aged in Spanish oak evolved in the same way as those aged in French. In general, at the end of the ageing process the differences in their chromatic and chemical characteristics were very small, although each wood type added special characteristics, the exact properties of which also depended on the grape variety. The Spanish oak wood (Q. petraea Liebl.) from Navarra has an oenological quality similar to French oak wood of the same species from Central region. [Copyright &y& Elsevier]

Abstract: The contents of the volatile compounds extracted from wood: cis- and trans-whiskylactones, vanillin, syringaldehyde, furfural, 5-methylfurfural, eugenol, guaiacol, p-ethyl-phenol and p-ethylguaicol have been studied in 12 single-variety wines aged in new American oak barrels. The concentration of these compounds were determined after the following combinations of time in wood and time in bottle: 0 months in wood plus 18 months in bottle, 4 months in wood +14 months in bottle, 9 months in wood+9 moths in bottle and 12 months in wood+6 months in bottle. According to the composition of the wines, it is possible to conclude in general, that, the extraction of these compounds was faster during the first four or 9 months of aging in wood, depending on the wines. After 12 months of oak maturation, the extraction of these compounds slowed down. Furthermore, the final concentrations of these volatile compounds were different among studied wines. These differences could be related to some of the values of some of their oenological parameters, such as the contents of tartaric acid and sulphur dioxide of each wine. [Copyright &y& Elsevier]

• A spectrometry method for the quantification of individual oak ellagitannins in distilled spirits and oak wood was validated. • The LC-QQQ combination appeared to be a powerful technique for ellagitannins identification and quantitation. • It has been showed for the first time that young "eaux-de-vie" presented all the eight ellagitannins. • Castalagin constitutes around 40% to 70% of total extracted ellagitannins. Ellagitannins are the main extractible phenolic compounds in oak wood; the monomers vescalagin and castalagin, lyxose/xylose-bearing monomers grandinin and roburin E, dimers roburins A and D and lyxose/xylose-bearing dimers roburins B and C are the principal ones. These compounds are responsible for the high durability of wood and may contribute to the organoleptic quality of wines and spirits (color, astringency, bitterness). Despite their importance, their presence and forms in distilled spirits are not well known. The aim of this work was therefore to develop and validate a method to identify and quantify oak wood ellagitannins in Cognac using high liquid chromatography-triple quadrupole (LC-QQQ) analysis. The method was validated using vescalagin as the standard and by studying sensitivity, linearity in working range, intraday repeatability, and intraday precision in order to quantify individual ellagitannins in this complex matrix.
