The utilization of nutritious side streams from food industry for human consumption - the so-called "upcycling" - is desirable to introduce healthy and sustainable food products into the market. While snack products with upcycled ingredients are on the rise, their applications in bakery and sweet pastry products is quite challenging due to side streams differing from the composition and functionality of traditional ingredients. This makes clear, that product design should be carried out interdisciplinary and based on an understanding of the fundamental composition and interplay of ingredients, as well as the effect on the organoleptic properties of intermediates and end products such as texture and taste. The overview on side streams and their potential outlined in this article may be a first step to understanding their relevance in cereal technology and the need to thoroughly understand their properties for food product development.
