Healthy foods with few artificial additives are in high demand among consumers. Preserving conventional pesticides, frequently used as chemicals to control phytopathogens, is challenging. Therefore, we proposed an innovative approach to protect agricultural products in this review. Biocontrol bacteria are safe alternatives with low stability and low efficiency in the free-form formulation. The encapsulation technique for covering active compounds (e.g., antimicrobials) represents a more efficient protection technology because encapsulation causes the controlled release of bioactive materials and reduces the application doses. Of the biopolymers able to form a capsule, starch exhibits several advantages, such as its ready availability, cost-effectively, edible, colorless, and tasteless. Nevertheless, the poor mechanical properties of starch can be improved with other edible biopolymers. In addition, applying formulations incorporated with more than one antimicrobial material offers synergistic effects. This review presented the starch-based capsules used to enclose antimicrobial agents as effective tools against phytopathogens.

Pullulan is a microbial exopolysaccharide produced from Aureobasidium pullulans by submerged fermentation of a medium supplemented with carbon, nitrogen and other essential nutrients. These nutrients are expensive which increase the cost of pullulan production. The requirement of alternative cost-effective substrates for pullulan production is a prerequisite. Agro-based industries generate a large volume of solid/liquid waste and its accumulation generates a severe environmental impact. These wastes are composed of carbohydrates, proteins and other constituents, and can be used as substrates for the development of low-cost processes for the production of various microbial products. This could be a good environmental friendly waste management system. Pullulan production from agro-industrial wastes can be carried out by both submerged and solid-state fermentation by A. pullulans. Owing to its unique properties, pullulan has wide applications in many food-based industries. This review highlights pullulan production from agro-industrial wastes and potential applications of pullulan in various food industries.

This article, although not a scientific paper, traces the history of the development of interests and research in carbohydrate polymers leading to the inception of the journal Carbohydrate Polymers and its progress in the first forty years. The article is based on the experiences and input to the journal by the surviving founding editor-in-chief and looks not only at what has happened in forty years of the journal's publication but extends to the author's personal views on what the journal can be expected to contain over the next forty years. The author also includes comments on the principles and development of how papers submitted for publication have been handled and what can be expected in future editorial automation, and in strategies to avoid fraudulent publications.

In this study, spray drying mechanism was used to optimize the nanoencapsulation of iron and zinc using potato starch at constant proportion and variable maltodextrin and core material to keep the total solids of spray drier feed solution at 10, 20, 30 and 40% levels. Results exhibited that stable nanoencapsulates of iron and zinc were formed at 30% level with maximum in-vitro bioavailability and encapsulation efficiency of 90.68 and 89.36%, respectively. At this level the particle size and zeta potential of iron and zinc nanoencapsulates were 340.9 and 354.5 nm; 0.372 and 11.40 mV, respectively. Further, FTIR and XRD analysis of Fe 30 and Zn 30 nanoencapsulates exhibited that core material was successfully encapsulated by existence of functional groups and a semi-crystalline structure, respectively. Thus, study suggests the suitability of cheap carriers like potato starch and maltodextrin in successful encapsulation of iron and zinc indicating application potentiality in food fortification.
