The acid-base equilibria and reduction-oxidation chemistry of mitochondrial cytochromes c from cucumber, spinach and sweet potato were investigated via direct electrochemical measurements as well as electronic and (super 1)H nuclear magnetic resonance spectroscopies. The cytochromes have solution behaviors that closely resemble, but not totally reproduce, those of homologous eukaryotic species. In addition, the plant cytochromes are very similar to bacterial cytochromes c(sub 2) with respect to pH and temperature ranges of existence of different protein conformers.
