The liveweight profile of Merino ewes is related to the production and profitability of the sheep enterprise, but few producers measure liveweight to manage the nutrition of Merino ewes. In this paper we examine the relationship between changes in liveweight and condition score using data from the Lifetimewool project and compare condition score and fat score as alternative monitoring tools. Analyses of liveweight and condition score data from 15 flocks of Merino ewes representing a range of different genotypes and environments showed that the relationship between change in liveweight and condition score was on average 9.2 kg per unit change in condition score or 0.19 times the standard reference weight of the flock. In two experiments experienced operators were used to estimate the condition score and fat score in over 200 ewes and accredited ultrasound scanners measured the eye muscle and fat depth at the C site in the same ewes. All assessments were repeated several times in random order. Within 24 h of the assessments the sheep were slaughtered at local abattoirs where the tissue depth at the GR site was measured on the hot carcasses. Both condition score and fat score were highly repeatable though subject to operator bias. They were related to each other and to the objective measures of fat and eye muscle depth at the C site. However, 95% of sheep below condition score 2.5 had a tissue depth (muscle and fat) at the GR site ≤3 mm, by definition equal to fat score 1. As the condition score of ewes on commercial properties often fluctuates between scores 2 and 3, and small changes in condition score within this range can have large effects on welfare and profit, we conclude that condition score is the most appropriate alternative to liveweight for managing the nutritional profile of ewes.

Lamb growth to weaning, and during the period immediately following weaning, influences post-weaning mortality and may affect mature size. The hypothesis tested in the experiments reported in this paper was that changes in the maternal liveweight of Merino ewes during pregnancy and lactation could predict the weight at weaning, post-weaning survival and mature size of their progeny. At two sites (Vic. and WA) in each of two years, a wide range in the liveweight profiles of ewes was generated during pregnancy and lactation by varying the amount of supplements fed and feed on offer grazed. Across the four experiments this resulted in progeny weights ranging from 13.8 to 28.3 kg just before weaning. Lamb growth was primarily related to the amount of feed on offer during lactation, but was also related to the liveweight change of the ewe during pregnancy. These relationships were consistent in both experiments at each site. Weaning weight was strongly associated with post-weaning survival at the Vic. site. Survival rates decreased significantly when weaning weights were below 20 kg. These results indicate that management of ewe and lamb nutrition to maximise growth of lambs before weaning and growing weaners at 30 g/day or more after weaning are important for optimal post-weaning survival. The findings also suggest that the mature size of offspring is unlikely to be adversely affected by pre-weaning nutrition within the range of nutritional scenarios during pregnancy and lactation that are likely to be experienced within the Australian sheep industry.

The single largest influence on the survival of lambs in the first few days of life is their birthweight. Fetal growth and birthweight are regulated by genotype of the fetus, maternal genotype, maternal nutrition and the external environment. In this paper we report the extent to which the changes in maternal liveweight during pregnancy and lactation (liveweight profile) of Merino ewes can be used to predict the birthweight and survival of their progeny to weaning. At two sites [Victoria (Vic.) ~700 ewes and Western Australia (WA) ~300 ewes] in each of 2 years, a similar experiment used adult Merino ewes to explore effects of nutrition from joining to Day 100 of pregnancy and from Day 100 of pregnancy to weaning. The average difference between extreme treatments at Day 100 of pregnancy were 7 kg in ewe liveweight and 0.7 of a condition score (CS) and at lambing 11.9 kg and 1.3 of a CS. This resulted in average birthweights of progeny from different treatments ranging from 4.0 to 5.4 kg and survival to weaning ranging from 68 to 92%. Across the four experiments between 68 and 85% of all lamb deaths to weaning occurred within 48 h of birth. Lambs born to ewes in CS 2 at Day 100 of pregnancy were lighter (P < 0.05) in both years at the Vic. site than those from ewes in CS 3 at Day 100 of pregnancy. Lambs born to the ewes grazing a feed on offer of 800 kg DM/ha during late pregnancy were also lighter than those from other levels of feed on offer between 1100 and 3000 kg DM/ha at the Vic. site in both years and at the WA site in 1 year (P < 0.001). Lambs from the 800 kg DM/ha treatment during late pregnancy at the Vic. site had a lower survival than other treatments, especially in the second year. There were no significant effects of treatments on lamb survival at the WA site; however, the results were in the same direction. The birthweight of individual lambs was significantly related to the liveweight profile of their mothers. Their liveweight at joining, change in liveweight to Day 100 of pregnancy and change in liveweight from Day 100 to lambing all contributed (P < 0.05) to the prediction of the birthweight of their lambs. The responses were consistent across experimental sites and years, lamb birth rank and sex, and confirmed that the effects of poor nutrition up until Day 100 of pregnancy could be completely overcome by improving nutrition during late pregnancy. At the Vic. site, survival to 48 h was most influenced by the birthweight of the lamb and survival was significantly higher in single- than twin-born lambs and female than male lambs after adjusting for differences in birthweight. A higher chill index during the 48 h after birth reduced survival of both single and twin lambs to a similar extent, but reduced survival of male lambs more than female lambs. There were no effects of birthweight or chill index on lamb survival at the WA site where most lambs weighed more than 4 kg at birth and climatic conditions during lambing were less extreme. Overall, these results supported our hypothesis that improving the nutrition of Merino ewes during pregnancy increases birthweight and this leads to improved survival of their progeny.

This paper describes the performance of a prototype telemetric intraruminal bolus that measures and records pH continuously, can be delivered orally to the reticulum via bolling gun, has no external attachments and allows unrestricted activity of the animal. When interrogated by wireless the bolus transmits the recorded data to an operator standing beside the animal with a handheld receiving station. Boluses were placed in fistulated animals to enable direct comparison with samples obtained directly from the rumen and measured with a laboratory instrument. Overall, the mean (±s.d.) pH recorded on the manually collected samples (pH 6.64 ± 0.67) was generally less than that of the continuously measured telemetric system (pH 7.03 ± 0.54) with a correlation of r = 0.93 (P < 0.01). Data are presented to show typical diurnal and grain-enforced changes in pH recorded in a rumen over a 70-day period. The development of the Well Cow pH bolus device potentially enables researchers, dairy farmers and feedlot managers to monitor rumen function of any ruminant over prolonged periods without the need for invasive sampling. Enemark et al. (2003) considered that a 14–21-day observational period is required to properly monitor for conditions such as subacute ruminal acidosis. Whilst significant correlation (P < 0.01; r = 0.982) existed between the two readings for the first 40 days of continuous recording, the Well Cow pH bolus reading started to deviate significantly from the directly measured value thereafter. Regardless, a continuously measuring functional life of up to 40 days indicates that the current prototype has the capacity to accurately detect subacute ruminal acidosis.

Estimated breeding values for the selection of more profitable sheep for the sheep meat and wool industries are currently based on pedigree and phenotypic records. With the advent of a medium-density DNA marker array, which genotypes ~50 000 ovine single nucleotide polymorphisms, a third source of information has become available. The aim of this paper was to determine whether this genomic information can be used to predict estimated breeding values for wool and meat traits. The effects of all single nucleotide polymorphism markers in a multi-breed sheep reference population of 7180 individuals with phenotypic records were estimated to derive prediction equations for genomic estimated breeding values (GEBV) for greasy fleece weight, fibre diameter, staple strength, breech wrinkle score, weight at ultrasound scanning, scanned eye muscle depth and scanned fat depth. Five hundred and forty industry sires with very accurate Australian sheep breeding values were used as a validation population and the accuracies of GEBV were assessed according to correlations between GEBV and Australian sheep breeding values . The accuracies of GEBV ranged from 0.15 to 0.79 for wool traits in Merino sheep and from –0.07 to 0.57 for meat traits in all breeds studied. Merino industry sires tended to have more accurate GEBV than terminal and maternal breeds because the reference population consisted mainly of Merino haplotypes. The lower accuracy for terminal and maternal breeds suggests that the density of genetic markers used was not high enough for accurate across-breed prediction of marker effects. Our results indicate that an increase in the size of the reference population will increase the accuracy of GEBV.

Whole-farm decision making is complex as many factors influence the profitability of pasture-based lamb production systems and other influences such as skills and attitudes also affect the behaviours of individual farmers. In this paper we used bioeconomic modelling to identify the relative importance of manipulating components of lamb production systems in south-west Victoria and quantified their likely impacts on whole-farm profitability. Four lamb production systems that varied in relation to the genotype of the ewes and the time of sale of the lambs were examined in the analysis. Two ‘systems’ were based on first-cross Border Leicester × Merino ewes that were mated to a terminal sire and the lambs were either sold as finished slaughter lambs at 45 kg liveweight or as stores at weaning at 30 kg liveweight. The other two ‘systems’ were based on a self-replacing composite breed (Romney × Coopworth base) and the lambs were sold as finished slaughter lambs or stores. Based on the assumptions used the analysis highlighted that the potential economic gain per unit change was high for several factors examined and the relative importance of these critical control points differed between production systems. Matching lamb turn-off (finished or store) to existing ewe genotype improved profitability by more than $100/ha or 50% and optimising pasture utilisation was also important regardless of production system. A 20% increase in pasture utilisation up to the optimum increased whole-farm profit by more than $100/ha. The impacts of improving pasture growth just after the break of season and through early winter on whole-farm profit were even greater. An extra 20 kg of pasture growth per day at this time of the year is potentially worth about $200/ha due to increases in whole-farm stocking rate. Extra pasture growth in early summer also has significant value for later lambing flocks. When farmers have optimised these factors the second-order control points were cost of replacement ewes for the first-cross system, age at first mating and reproduction efficiency in adult ewes. The management and production factors that will provide the greatest return on effort for individual farmers will depend on the potential economic gain per unit change in the target factor, their current management and production levels and the ease with which the management change or increase in production potential can be achieved in the farming system.

The aim of this paper was to describe the genetic relationship among expressions at different ages of seven wool traits: greasy and clean fleece weights, fibre diameter, coefficient of variation of fibre diameter, staple length and strength, and mean fibre curvature. Genetic correlations among measurements at different ages for the same trait were moderate to high, and ranged from ~0.6 for both fleece weights to 0.9 and higher for mean fibre diameter and curvature. Generally, low to moderate genetic correlations (0.3–0.4) were estimated between fleece weights and fibre diameter, clean fleece weight and staple length, and fibre diameter and staple strength. Small positive genetic correlations (0.2) were estimated between greasy and clean fleece weight with fibre diameter coefficient of variation, and between fibre diameter and staple length. Mean fibre curvature had a negative genetic correlation (approximately –0.4) with most other wool traits, the exceptions were staple strength (~0.0) and coefficient of variation of fibre diameter (approximately –0.1). Fibre diameter, staple length and staple strength had negative genetic correlations with coefficient of variation of fibre diameter (–0.15, –0.10, and –0.61, respectively). The results indicate that for most wool traits only one measurement across ages is required to make accurate selection decisions. The relationships between traits are generally moderate to low suggesting that simultaneous genetic improvement is possible.

This paper investigates the contribution of single fibre stress-strain properties to variations in staple strength induced by both selective breeding for staple strength and nutritional manipulation. Merino weaners (n = 40), selected from ‘sound’ and ‘tender’ lines of staple strength selection flocks, were allocated to feeding regimes designed to induce liveweight changes simulating typical Mediterranean seasonal changes. Average staple strength differed by 5 N/ktex between ‘sound’ and ‘tender’ selection flocks and 18 N/ktex between extreme nutritional treatments. The force-extension properties of individual wool fibres (n = 100 per sheep) were measured using a single fibre strength meter. After normalising for differences in fibre cross-sectional area at the point of break, the key parameters used to describe the stress-strain curve for each fibre were: Young’s modulus (GPa), yield stress (MPa), stress at 15% strain (MPa), stress at break (MPa), strain at break (%) and work to break (MPa). The average stress-strain properties of single fibres differed widely between individual sheep. Stress at break ranged from 163 to 235 MPa (44% range), strain at break ranged from 21 to 44% (103% range) and work to break from 43 to 71 MPa (65% range). There were no significant differences in any of the single fibre properties between the staple strength selection flocks, nor was there any significant interaction (P > 0.05) between staple strength selection flock and nutritional regimes. Nutritional regime had a significant effect on stress at break, strain at break and work to break, but none of the single fibre stress-strain properties removed any appreciable variance in staple strength over and above that accounted for by differences in along- and between-fibre diameter variation. There appears to be little scope for improvement of single fibre stress-strain properties as a means of increasing staple strength in normal production environments. Selection directly for staple strength or indirectly using the fibre diameter variability traits is an effective method to improve staple strength.

The steer progeny of sires genetically diverse for fatness and meat yield were grown at different rates from weaning to feedlot entry and effects on growth, carcass and meat-quality traits were examined. The present paper, the second of a series, reports the effects of genetic and growth treatments on carcass traits. A total of 43 sires, within three ‘carcass class’ categories, defined as high potential for meat yield, marbling or both traits, was used. Where available, estimated breeding values for the carcass traits of retail beef yield (RBY%) and intramuscular fat (IMF%) were used in selection of the sires, which were drawn from Angus, Charolais, Limousin, Black Wagyu and Red Wagyu breeds, to provide a range of carcass sire types across the three carcass classes. Steer progeny of Hereford dams were grown at either conventional (slow: ~0.5 kg/day) or accelerated (fast: ~0.7 kg/day) rates from weaning to feedlot entry weight, with group means of ~400 kg. Accelerated and conventionally grown groups from successive calvings were managed to enter the feedlot at similar mean feedlot entry weights at the same time for the 100-day finish under identical conditions. Faster-backgrounded groups had greater fat levels in the carcass than did slower-backgrounded groups. Dressing percentages and fat colour were unaffected by growth treatment, whereas differences in ossification score and meat colour were explained by age at slaughter. There were significant effects of sire type for virtually all carcass traits measured in the progeny. Differences in hot standard carcass weight showed a clear advantage to European types, with variable outcomes for the Angus and Wagyu progeny. Sire selection by estimated breeding values (within the Angus breed) for yield and/or fat traits resulted in expected differences in the progeny for those traits. There were large differences in both meat yield and fatness among the types of greatest divergence in genetic potential for those traits, with the Black Wagyu and the Angus IMF clearly superior for IMF%, and the European types for RBY%. The Angus IMF progeny performed as well as that of the Black Wagyu for all fatness traits. Differences in RBY% among types were generally reflected by similar differences in eye muscle area. Results here provide guidelines for selecting sire types to target carcass traits for specific markets. The absence of interactions between growth and genetic treatments ensures that consistent responses can be expected across varying management and production systems.

The present study is a component of a multi-site experiment, using Bos taurus cattle generated at four locations across southern Australia, designed to examine postweaning growth pathways for progeny whose sires were extreme in retail beef yield and intramuscular fat. Treatment and interaction effects on beef production and meat quality were examined within and across sites. The present paper describes the effect of postweaning growth and sire carcass type on liveweight and carcass traits at the Hamilton site. Angus sires selected on estimated breeding values for extremes in retail beef yield (RBY%), intramuscular fat (IMF%) (estimated breeding values for IMF% are derived by using live-animal ultrasound scanning) or both and sire breed types considered to be more extreme in those traits (Limousin, and Belgian Blue for yield, and Wagyu for intramuscular fat) were joined to crossbred and straight-bred cows. After weaning, the resultant 645 steer and heifer progeny were grown on a fast and slow growth path to ~550 kg and slaughtered, averaging 0.68 kg/day and 22.2 months, and 0.49 kg/day and 27.8 months for growth rate and age at slaughter, respectively. Growth path, sire carcass type and sex affected carcass traits; however, there were no sire carcass type by growth treatment interactions. The fast growth-path cattle were fatter, had more intramuscular fat (measured chemically), a higher Meat Standards of Australia (MSA) USA and AUS marble score, and a higher predicted MSA eating-quality score. Progeny of Wagyu sires were lighter at weaning and slaughter and had a lower hot standard carcass weight than the other sire carcass types. The Belgian Blue and Limousin progeny had a higher dressing percentage, a higher RBY% and a lower P8 and rib-fat depth and lower IMF% than the other sire breed types. Progeny of the high RBY% Angus had a lower rib-fat depth, a lower IMF% and higher RBY% than those selected for high IMF%. There was no difference in IMF% between the Wagyu or the high IMF% Angus. Progeny from the Belgian Blue, Limousin and Wagyu had a larger eye muscle area than the other sire breeds. The results indicate that simultaneous selection for supposedly antagonistic traits of IMF% and RBY% would result in carcass having high values of both measurements. Females were lighter than steers at slaughter, had a lower hot standard carcass weight, were fatter at the P8 and rib, and had a higher marble score and IMF%, a lower yield and a lower MSA-predicted eating-quality score than did steers. There was no interaction between postweaning growth and sire carcass type. These results indicate that with the use of appropriate sire carcass types and BREEDPLAN, and post-weaning nutrition, beef producers can confidently change carcass parameters to suit market specifications.
