Water scarcity is among the main challenges making vulnerable the livestock farming systems in drylands. The water footprint (WF) indicator was proposed as a metric to measure the impacts of livestock production on freshwater resources. Therefore, this study aimed to assess water use in five different Tunisian sheep production systems using the Water Footprint Network methodology. The primary data were obtained from 1050 sheep farms located in 13 Tunisian provinces. A multivariate analysis was performed to characterize the different farming systems. A validation step of the WF modeled values of sheep meat was conducted in 12 sheep farms belonging to two different farming systems. This was done through year-round monitoring of on-farm practices using water metres and recording equipment’s taking into account the direct and indirect water use. The typology analysis came up with five sheep farming systems that are the mixed sheep-cereal (MSC), the agro-sylvo-pastoral (ASP), the agro-pastoral (AP), the extensive agro-pastoral (EAP) and the mixed sheep-olive tree farming systems. The WF of sheep meat produced under the target farming systems ranged from 8654 to 13 056 l/kg live weight. The evaluation of WF of five different sheep production systems figured out that sheep raised under the EAP farming system had the greatest WF per ton of live animal. However, the ASP farming system exhibited the lowest WF. Water used to grow feedstuffs for sheep production accounts for 98% of the total WF of sheep. The green WF accounts for more than 92% of the total WF in all farming systems. Results of monitoring water use at farm scale show that the modeled values of WF are overestimated by an average of 23.3% and 24.1% for the selected farms assigned to the MSC and AP farming systems, respectively. Water use for sheep production is high in most of the Tunisian farms. Therefore, the general assumption that ‘meat production is a driver of water scarcity’ is supported and should be considered as an important focal point in agricultural and water policies. Particular attention should be given to forage crops with low WFs and high contribution to dry matter to provide ration with low WF. The efficient use of green water along the meat value chain is essential to minimize the depletion of blue water resources and to reduce the economic dependency on virtual water through the import of feedstuffs.

Over the past 23 years (1990 to 2012), French beef cattle farms have expanded in size and increased labour productivity by over 60%, chiefly, though not exclusively, through capital intensification (labour–capital substitution) and simplifying herd feeding practices (more concentrates used). The technical efficiency of beef sector production systems, as measured by the ratio of the volume value (in constant euros) of farm output excluding aids to volume of intermediate consumption, has fallen by nearly 20% while income per worker has held stable thanks to subsidies and the labour productivity gains made. This aggregate technical efficiency of beef cattle systems is positively correlated to feed self-sufficiency, which is in turn negatively correlated to farm and herd size. While volume of farm output per hectare of agricultural area has not changed, forage feed self-sufficiency decreased by 6 percentage points. The continual increase in farm size and labour productivity has come at a cost of lower production-system efficiency – a loss of technical efficiency that 20 years of genetic, technical, technological and knowledge-driven progress has barely managed to offset.

Eight sustainability themes were considered: Animal Welfare (AW), Animal Health (AH), Breeding Programmes (BP), Environment (EN), Meat Safety (MS), Market Conformity (MC), Economy (EC) and Working Conditions (WC). A total of 37 primary indicators were identified and used for the evaluation of 15 much contrasted pig farming systems in five EU countries. The results show that the eight themes were not redundant and all contributed to the observed variation between systems. The tool was very robust for highlighting the strengths and weaknesses of the systems along the eight themes that were considered. The number of primary indicators could be reduced from 37 to 18 with limited impact on the strengths/weaknesses profile of the individual systems. Integrating the eight theme evaluations into a single sustainability score is based on hypotheses or presumptions on the relative weights that should be given to the eight themes, which are very dependent on the context and on the purpose of the users of the tool. Therefore, the present paper does not have the ambition to provide a ready-for-use tool, rather to suggest an approach for the integrated evaluation of the sustainability of pig farming systems.

The selected tool IDEA was tested on a sample of farms from 15 contrasted systems in Europe. A statistical analysis was carried out to check the capacity of the indicators to illustrate the variability of the population and to analyze which of these indicators contributed the most towards it. The scores obtained for the farms were consistent with the reality of pig production; the variable distribution showed an important variability of the sample. The principal component analysis and cluster analysis separated the sample into five subgroups, in which the six main indicators significantly differed, which underlines the robustness of the tool. The IDEA method was proven to be easily comprehensible, requiring few initial variables and with an efficient benchmarking system; all six indicators contributed to fully describe a varied and contrasted population.

Although a few studies consider the sustainability of animal farming systems along the three classical main pillars (economy, environment and society), most studies on pig farming systems address only one of these pillars. The present paper is the introduction to a series of companion papers presenting the results of a study undertaken within the EU-supported project Q-PorkChains, aiming at building a comprehensive tool for the evaluation of pig farming systems, which is robust to accommodate the large variability of systems existing in Europe. The tool is mostly based on questions to farmers and comprises a total of 37 dimensions distributed along eight themes: Animal Welfare, Animal Health, Breeding Programmes, Environmental Sustainability, Meat Safety, Market Conformity, Economy and Working Conditions. The paper describes the procedure that was used for building the tool, using it on 15 contrasted pig farming systems and analysing the results. The evaluated systems are briefly described and a short overview of the dimensions is provided. Detailed descriptions of the theme-wise tools and results, as well as the results of an integrated evaluation, are available in the companion papers.

Prompted by current concerns about energy resources and greenhouse gas emissions, we sought to assess the impact of certain key factors on energy efficiency in sheep-for-meat production and to evaluate the main directions for improvement. We used a modelling approach to simulate the functioning and performances of sheep-for-meat production systems integrating an energy balance calculation module. In the first step of this study, we reconstructed system functions and technical and economic results of four typological groups of farms in plainland areas. This served as a basis for calculating their energy efficiency in order to focus on the main factors of energy efficiency, such as high levels of fodder self-sufficiency (low concentrate consumption) and high ewe productivity. The Graze system presented the highest energy efficiency (EE) for sheep unit (EEs = 0.62) with the lowest consumption of equivalent fuel litres requirements (FuReq) per kilogram of lamb carcass produced (1.47), while the ‘sheep and cash crop’ system had the lowest EEs (0.36) and the highest FuReq per kg carcass (2.54). We then took the ‘mixed-farming system’ (a 130 ha farm, including 610 ewes and 40 ha of cropland) and studied three adaptations designed to increase the EEs: improvement of feed self-sufficiency (increased proportion of concentrate produced on-farm), introduction of legumes into the rotation (removal of bought-in nitrogen fertilisers), and production of fuel-oil (from rapeseed) with the flock using oil cakes. The most effective adaptation was the removal of the nitrogen fertilisers. The successive adaptations make it possible to cut energy consumption from 2.2 FuReq/kg carcass down to 0.98 after the optimisations, thereby increasing EEs from 0.42 to 0.93. Finally, we went on to study the energy impact of four factors influencing flock functioning and farm structure, i.e. ewe productivity, lamb weight, distances between plots, and flock size. Ewe productivity and lamb weight had a strong positive impact on EEs. When ewe productivity switched from 0.80 to 1.70, EEs increased from 0.29 to 0.48 while FuReq per kilogram carcass dropped from 3.39 to 1.88. When flock size was increased to over 1000 ewes, there were little or no energy-related economies of scale, as farm area also increased and most of the systems required more equipment.
