We prove, in a purely combinatorial way, the spectral curve topological recursion for the problem of enumeration of bi-colored maps, which are dual objects to dessins d'enfant. Furthermore, we give a proof of the quantum spectral curve equation for this problem. We identify the Givental formula for the ancestor formal Gromov-Witten potential with a version of the topological recursion procedure for a collection of isolated local germs of the spectral curve. As an application we prove a conjecture of Norbury and Scott on the reconstruction of the stationary sector of the Gromov-Witten potential of $\CP1$ via a particular spectral curve., Comment: 36 pages

Following the works of Alexandrov, Mironov and Morozov, we show that the symplectic invariants of \cite{EOinvariants} built from a given spectral curve satisfy a set of Virasoro constraints associated to each pole of the differential form $ydx$ and each zero of $dx$ . We then show that they satisfy the same constraints as the partition function of the Matrix M-theory defined by Alexandrov, Mironov and Morozov. The duality between the different matrix models of this theory is made clear as a special case of dualities between symplectic invariants. Indeed, a symplectic invariant admits two decomposition: as a product of Kontsevich integrals on the one hand, and as a product of 1 hermitian matrix integral on the other hand. We study the Gaussian hermitian random matrix ensemble with an external matrix which has an arbitrary number of eigenvalues with arbitrary multiplicity. We compute the limiting eigenvalues correlations when the size of the matrix goes to infinity in non-critical regimes. We show that they exhibit universal behavior and can be expressed with the Sine and Airy kernels. The 2-matrix model has been introduced to study Ising model on random surfaces. Since then, the link between matrix models and combinatorics of discrete surfaces has strongly tightened. This manuscript aims to investigate these deep links and extend them beyond the matrix models, following my work's evolution. First, I take care to define properly the hermitian 2 matrix model which gives rise to generating functions of discrete surfaces equipped with a spin structure. Then, I show how to compute all the terms in the topological expansion of any observable by using algebraic geometry tools. They are obtained as differential forms on an algebraic curve associated to the model: the spectral curve. In a second part, I show how to define such differentials on any algebraic curve even if it does not come from a matrix model. I then study their numerous symmetry properties under deformations of the algebraic curve. In particular, I show that these objects coincide with the topological expansion of the observable of a matrix model if the algebraic curve is the spectral curve of this model. Finally, I show that fine tuning the parameters ensure that these objects can be promoted to modular invariants and satisfy the holomorphic anomaly equation of the Kodaira-Spencer theory. Using loop equation technics, we compute all mixed traces correlation functions of the 2-matrix model to large N leading order. The solution turns out to be a sort of Bethe Ansatz, i.e. all correlation functions can be decomposed on products of 2-point functions.
