The aim of the study was to assess the nutrition of selected fermented dairy products available in Polish supermarkets and how many of them meet the criterion set by the European Parliament and Council Act (UE) no. 1924/2006 form 20 December 2006 on nutrition and health claims made on foods regarding low sugar content in a solid product. In the study 100 fermented products, widely available in Polish supermarkets, were selected, and their nutrition was analysed based on the information placed on the producer's label, and the carbohydrate content was compared against the recommended 5 g per 100 g of the solid product. As a result, it was determined that among natural products, 92% of the kefirs and 36% fulfilled the carbohydrate content criterion, whereas out of the analysed flavoured products, only one. This paper provided an ecological and phytochemical evaluation of the aquatic macrophytes at El-Rayah El-Nasery and El-Noubaria Canal of the Nile River, Egypt. Throughout the study period from spring 2015 to winter 2016, 12 macrophyte species related to 6 families and 8 genera were recorded, one floating species, three submerged and eight emergent. Myriophyllum spicatum L., Echinochloa stagnina (Retz.) P. Beauv, Potamogeton perfoliatus L. and Cyperus articulatus L. were found as the most frequent species. In comparison, autumn, spring and the sites (N7, N8) at the end of El-Noubaria Canal were recorded as the richest seasons and sites in species numbers. The analysis of the macrophyte biochemical composition revealed the presence of species specificity as well as temporal and spatial variations. In the two studied areas, nitrogen-free extracts constitute the major part of the macrophyte organic matter content, while total lipid constitutes the minor one. Among all the analyzed macrophyte samples, the highest values of protein, digestible crude protein and nitrogen were found in autumn samples of P. perfoliatus from site N5 (after the confluence of El-Rayah with El-Noubaria Canal), while the highest energy value and metabolized energy were obtained from the winter samples of M. spicatum from site N4 (the beginning of El-Noubaria Canal). There were different relationships between the different macrophyte species, their chemical composition and the ambient water variables. Therefore, it is difficult to detect a main single factor affecting their pattern of variation. Three cowpea fodder varieties (BL-1, BL-2 and BL-4) developed by IGFRI were evaluated against check Kohinoor for their nutritional attributes by in vitro and in vivo means. Varieties were grown under identical agronomic practices in Kharif 2016 and animal feeding was started at flower initiation stage. For feeding trial, 20 growing sheep (mean body weight 19.85±0.45 kg) were randomly distributed to 4 varieties (Kohinoor, BL-1, BL-2 and BL-4) with 5 animals to each. After 3 weeks of feeding, a digestion cum-metabolism trial was conducted to assess the nutrients intake, digestibility and nitrogen balance in sheep. The cowpea fodder varieties CP, NDF and lignin contents differed and values ranged between 22.23-23.41, 50.54-55.10 and 8.48-10.76%, respectively. Protein and carbohydrate fractions of cowpea varieties were similar except the NSC (% DM) and CC (% CHO) which were lower and higher, respectively in BL-2. Cowpea varieties energy values as TDN, DE, NEL, NEM and NEG were identical. In vitro gas and methane production (ml/g DM) was lower from Kohinoor (86.57 and 10.67) and BL-2 (90.79 and 11.40) than BL-1 (104.83 and 13.96) and BL-4 (98.86 and 13.08), respectively. Short chain fatty acids, partition factor and efficiency for microbial production differed significantly amongst the cowpea varieties. Sheep DM, CP and ME intake (% body wt and g/kg W0.75) was comparable on evaluated cowpea varieties. Digestibility of DM, OM and CP in sheep was similar on cowpea varieties; however, NDF and ADF digestibility tended to be lower of BL-4 (63.88 and 61.70%) than BL-2. Sheep nitrogen balance was identical on all the cowpea varieties and ranged between 16.92-18.32 g/d. Cowpea varieties DCP and DE contents were similar and ranged between 18.36-20.30% and 13.63-14.72 kjoules/g DM, respectively. Results showed that nutritive value of cowpea varieties differed significantly in terms of CP, NDF, NSC%DM, fermentation pattern, and cell wall (NDF and ADF) digestibility. [ABSTRACT FROM AUTHOR]

Abstract: A sample of dried fermented goat milk product (Oggtt) obtained from the local market of Riyadh city in The Kingdom of Saudi Arabia, was stored for 6months at 4°C and subjected to chemical composition analysis before and after storage. The result showed that the sample moisture increased significantly (P ⩽0.05) after storage from 7% to 10%, total ash decreased non-significantly (P ⩽0.05) from 8% to 7.6%, total carbohydrates decreased non-significantly (P ⩽0.05) from 35.5% to 33.8%, protein increased non-significantly (P ⩽0.05) from 16 to 16.1g/l, fat content was found to have the same values in all samples before and after storage at 5%, lactose increased (P ⩽0.05) non-significantly from 28.4% to 29%, acidity decreased (P ⩽0.05) significantly from 0.45% to 0.39%, and pH decreased (P ⩽0.05) non-significantly from 4.3% to 4%. On the other hand, mineral composition showed (P ⩽0.05) non-significant results before and after storage. Ca concentration decreased from 118 to 1149mg/kg and K concentration increased from 185.8 to 1888mg/kg. While Mg increased from 105 to 123mg/kg, Zn increased from 8.3 to 8.6mg/kg, Mn and Fe were found to have the same values of concentrations before and after storage which were 0.2 and 0.1mg/kg, respectively. Accordingly, we can conclude that Oggtt is a stable product and have a good nutritional value in comparison to daily required amounts for healthy human life. [Copyright &y& Elsevier]

The article presents the findings of a research which evaluates the energy of dietary fiber Hydrogenated resistant maltodextrin (H-RMD). It mentions that the methodology including in vitro digestion test, in vivo blood glucose measurement and in vitro fermentability test were used to conduct the research. The research reveals that the digestibility of H-RMD with human salivary amylase and mucosal enzymes of the rat small intestine is very low, when compared to digestible maltodextrin.

The aim of the present study was to develop a mixed leather of açaí, banana, peanut, and guaraná syrup with nutritional characteristics, high fiber content and energy value using hydrocolloids agar and gellan gum as a binding agent. For this purpose, different concentrations of these hydrocolloids were evaluated in the development of mixed leather. The following formulations were developed: agar (0.50%) and gellan gum (0.50%), as (A050/G050); agar (0.75%) and gellan gum (0.25%), as (A075/G025); and agar (1.0%), as (A1). The concentration of dietary fiber in the formulation containing 0.50% of agar demonstrated significant differences in comparison to the other samples (p < 0.05). The addition of 0.75% of agar presented a higher average for carbohydrates (56.85 mg 100/g). The most negative impact on the bioaccessibility of the total phenolic compounds (TPC) and antioxidant activity (ABTS and FRAP) was in the A050/G050 sample. Regarding rupture strength, the sample A1 showed the lowest value (2.42 N) among all of the mixed leathers. The drying process contributed to the shrinkage of the polymer network of agar and gellan gum, resulting in a more compact mixed leather. This polymer net, in turn, trapped the lipid content, as well as the TPC (after gastrointestinal digestion) of mixed leather A1, thus providing beneficial effects to the body. Finally, the addition of 1% of agar stood out for presenting greater results for these parameters, offering a viable alternative for the production of a more nutritious product. • The determination of totals sugars can influence morphological characteristics. • The mixed leather was high in fiber, carbohydrates and energy value. • The mixed leather with added 1% agar showed higher lipid content.
