Graphical Abstract:

Ziel dieser Arbeit ist die Beschreibung der Entwicklung einer webbasierten, interaktiven Darstellung von maximalen tolerierbaren Verzehrmengen für ausgewählte Lebensmittel, die beispielsweise in einer Ereignissituation als potenziell kontaminiert angenommen werden („Kontaminantenrechner“). Die vorliegende Arbeit beschreibt einen Katalog wissenschaftlicher Anwendungskriterien für einen solchen Kontaminantenrechner. Als Anwendungsbeispiel wird der Fipronil-Ereignisfall im Sommer 2017 verwendet.

Hintergrund und Ziel der Arbeit: Bei der Kariesprophylaxe spielt eine wirksame und sichere Fluoridanwendung eine wichtige Rolle. Fluoride machen den Zahnschmelz widerstandsfähiger und schützen vor Karies. Dieser Beitrag gibt einen Überblick über die Fluoridanwendung aus unterschiedlichen Quellen zur Kariesprophylaxe bei Kindern und Jugendlichen in Deutschland.

The concentrations of dioxins [polychlorinated dibenzo-p-dioxins (PCDDs) and polychlorinated dibenzofurans (PCDFs)], and dioxin-like polychlorinated biphenyls (DL-PCBs) in Atlantic herring depend on the fishing area. These substances originate from various anthropogenic sources and accumulate in the environment and in food. The influence of country-specific contaminant concentrations on human dietary exposure was studied exemplary for herring to show the influence of fish origin. PCDD/F and DL-PCB concentrations in herring from the Norwegian Sea and the Baltic Sea were combined with country-specific herring consumption. Herring concentrations showed geographical variation. For herring consumers, the 50th percentile dietary exposure to the total sum of PCDD/Fs and DL-PCBs amounted to 1.2 and 8.9 pg WHO-2005-TEQ/kg BW/week for Norway and Germany, respectively. The different exposure was mainly related to higher concentrations in herring from the Baltic Sea, rather than in herring from the Norwegian Sea. If contaminant concentrations are influenced by geographical origin, this should be integrated into the dietary exposure assessments. For herring, relevant fishing areas should be integrated into the sampling strategy to generate concentration data. The usage of country-specific data could refine exposure assessments.

Global sourcing of food may lead to variability in concentrations of contaminants or pesticide residues. It would be important to incorporate origin influences in dietary exposure assessment. To characterise uncertainties, substance concentrations from GFM (German Food Monitoring), chosen based on the highest CV (coefficient of variation), and food consumption from NVS II (German National Nutrition Survey II) were combined in standard scenarios. Averages or higher percentiles of non-grouped concentrations were used. Additional origin-related scenarios used concentrations grouped by origin. For bromide in tomatoes the most conservative origin-related scenario for Italian tomatoes resulted in the highest exposure of 0.015 mg/d/kg BW. The impact of origin was not covered by the conservative standard scenario (0.006 mg/d/kg BW). For ethephon in pineapples and aluminium in kiwifruits, the highest intake estimates were obtained with the conservative standard scenario resulting in 0.895 μg/d/kg BW and 0.023 mg/week/kg BW, respectively. In these two cases, standard scenarios cover origin influences but the conservative origin-related scenario based on origins with higher concentrations identifies lower exposures of 0.835 μg/d/kg BW for ethephon from African pineapples and 0.014 mg/week/kg BW for aluminium from non-EU kiwifruits. Hence, the inclusion of origin information can refine exposure assessment.

Es wird ein Verfahren zur Berechnung des notwendigen Stichprobenumfangs in einem Pooling-Design zur Ermittlung des Substanzgehalts in Lebensmitteln beschrieben. Mit diesem kann die Poolgröße und die Anzahl notwendiger Messungen zur Bestimmung eines Mittelwerts mit einer vorgegebenen Konfidenzintervallbreite berechnet werden. Wie stark sich die Anzahl analytischer Messungen durch Pooling mehrerer Proben in einer Sammelprobe reduzieren lässt, hängt dabei von der Relation zwischen biologischer Varianz (Variation zwischen Proben unterschiedlichen Ursprungs) und technischer Varianz (Variation zwischen Wiederholungsmessungen) ab. Die Anwendung der Methode wird am Beispiel der Bestimmung von Dioxinen und polychlorierten Biphenylen (PCB) in Hühnereiern erläutert, kann jedoch auf andere Kontaminanten und Lebensmittel übertragen werden.
