This paper discussed the selection criteria for Ordinary Urban Heritage (OUH) in Rattanakosin, the historic center of Bangkok through the case of ordinary restaurants and everyday foods. The OUH stands for an alternative approach to heritage understanding and conservation, derived from the notion of ordinary heritage, vernacular heritage, and urban heritage emphasizing the heritages of the everydayness of ordinary people. The OUHs have co-existed and inherited through the evolution of the city but are overlooked by the official conservation process. Ordinary restaurants and everyday foods were selected by 5 criteria, 1) appeared for more than 50 years; 2) created, developed, and used by ordinary people; 3) found as the clusters; 4) able to be adapted to the urban context; 5) exist until the present day. The methodology applied to the analysis of the historical documents and Bangkok maps from 1887 to 1974, and the selection criteria developed from past research in another old commercial district of Bangkok were also reinvestigated with observational surveys. Food-borne pathogen Listeria monocytogenes is abundantly present in nature and accountable for sporadic and epidemic cases of listeriosis in humans. The objective of this study was to screen common food sources for L. monocytogenes using biochemical and molecular methods to detect and characterise its toxin genes as well as for biofilm formation. A total of 92 samples, comprising dairy and street food products, were randomly collected from various sources for this investigation. The collected samples were processed for biochemical and molecular methods to detect L. monocytogenes. Additionally, virulence factors associated genes, antibiogram profiles and biofilm formation related assays were determined. L. monocytogenes presence was confirmed using molecular detection methods targeting prs and lmo 1030 genes, along with MALDI-TOF MS. Following 16 S rRNA sequencing, the identified Listeria species were further categorised into two groups. L. monocytogenes was detected in two (2.17%) food samples tested (L-23 and L-74). Multiplex PCR indicated the presence of seven virulence-related genes in L. monocytogenes isolates, i.e., inl A, inl B, prf A, iap , act A, plc B, and hly A. In addition, 17 antibiotics were tested, whereby two isolates showed resistance to clindamycin and azithromycin, while one isolate (L-74) was also resistant to nalidixic acid, co-trimoxazole, ampicillin, norfloxacin, and cefotaxime. L-23 and L-74 isolates showed biofilm formation, especially at pH 8.6 and 37°C. Besides the demonstration of the presence of L. monocytogenes in some dairy and street food products, this study underscores the need to increase the standards of hygiene on the one hand and the importance of the surveillance of food-borne pathogens on the other. Nutritional anthropology is the study of human subsistence, diet and nutrition in comparative social and evolutionary perspective. Many factors influence the nutritional health and well-being of populations, including evolutionary, ecological, social, cultural and historical ones. Most usually, biocultural approaches are used in nutritional anthropology, incorporating methods and theory from social science as well as nutritional and evolutionary science. This review describes approaches used in the nutritional anthropology of past and present-day societies. Issues of concern for nutritional anthropology in the world now include: understanding how undernutrition and food insecurity are produced at local, regional and international levels; how food systems are constructed using social, biological and biocultural perspectives; and obesity from a biocultural viewpoint. By critiquing framings of present-day diet in an evolutionary context, nutritional anthropology asks 'what should be eaten?', rather than 'what can be eaten?', and 'how cheaply can people be fed?'. Licchavi kingdom was an ancient kingdom in Nepal, which existed in the Kathmandu Valley from approximately from ca. CE 300 to ca. 879. Centuries earlier at the start of the Buddhist era, a powerful republic known as Licchavi existed in what is today Bihar. It is to be mentioned here, some legendary sources from the Kathmandu Valley also describe the Kirātas as early rulers there, taken over from earlier Gopāls or Ᾱbhiras, both of whom may have been cow herding tribes. The food habit of ancient inhabitants of Nepal was very simple. Paddy was the most important food grain. Different kinds of fishes were available at that time. Pāniya-goṣṭhikās, Pranālī - goṣṭhikās were formed to supply water for various purposes. The preservation custom seems to be practiced from very ancient time. The oil press (Tailaśālā), copper smithies (Tāmrakuṭaśālā), Pharmaceutical laboratories (Ārogyśālā) and indigo processing workshops (Nīlīśālā) were given lands. Background: Food and nutrition insecurity continues to be one of the persistent challenges in Ethiopia. The country has been responding to the challenges in various ways to foster sustainable development. Objectives: The objective of the study is to assess national food and nutrition security policy and strategic responses. Method: A qualitative review of policies, strategies, programs, guidelines, and a government commitment, document was conducted. Interviews with experts from food and nutrition-implementing governmental and nongovernmental organizations were also employed. Thematic analysis with description was used. Results: The results of the study revealed that global initiatives stimulated Ethiopia to progressively take various strategic directions to address the ongoing food and nutrition challenges. In addition to various policy directions, the country has been implementing nutrition-specific and nutrition-sensitive programs under the multisectoral approach. The concepts and practices of food and nutrition security shifted from simply balancing the demand and supply of food to a broader and more inclusive food system approach with the involvement of multiple actors. However, more has been said than done. The policy, strategic objectives, and initiatives have not been adequately translated into practices. Actions toward ensuring food and nutrition security, on the other hand, are constrained by institutional, environmental, technological, and emerging priorities like an outbreak of a pandemic and political instability. Conclusion: The study concluded that available policy and strategic intents have sufficiently addressed food and nutrition challenges in documents and need to be fully translated into practices. In Jordan, the public is still unaware of the fate and impact of pesticide application. This study aimed to evaluate the attitudes, knowledge and practices of undergraduate students enrolled in various academic departments at the Faculty of Agriculture, Mutah University, Jordan toward pesticides' residues in food and feed. Students were questioned about their social aspects, and food and feed safety knowledge and resources. Responses have been obtained from 209 responding students. Results indicated that the cross-section through the Faculty of Agriculture, Mutah University, Jordan appears a satisfactory. The findings show that respondents are very highly concerned about human health, food safety, and the risk of environmental pollution, and they have a real desire to reduce the use of pesticides. Respondents had a moderate level of knowledge about food safety, pesticides' side effects, pesticides' residues in food or feed, and usage of pesticides in homes and gardens. According to the respondents, the most common way that people are exposed to pesticide residues is by consuming pesticide residues in food. The respondents expressed a moderate level of concern about their attitudes toward organic farming adoption. Correlations between demographic variables and knowledge of food and feed safety, involving a workshop on food/feed safety, care about human health as well as environmental pollution, and looking for information on food/feed safety were reported in the study. The need for underutilized leafy vegetables as food has been greatly emphasized owing to the increase in knowledge of the value of the essential nutrients they can provide. In this study, an assessment of the nutritional value of underutilized leafy vegetables collected in Southwestern Nigeria, and their content for mineral nutrients (K, Na, P, Ca, and Mg), essential vitamins (A, C, and E), and proximate composition was carried out on ten vegetables: Jatropha tanjorensis, Solanum nigrum, Talinum triangulare, Solanecio biafrae, Vernonia amygdalina, Crassocephalum crepidoides, Telfairea occidentalis, Amaranthus hydridus, Launaea taraxacifolia and Solanum macrocarpon. From this study, it was observed that the ten vegetables provide mineral concentrations exceeding 0.01%, essential vitamins exceeding 0.5%, ash exceeding 5%, moisture exceeding 5% of plant dry matter, crude fiber exceeding 10%, protein, crude fat exceeding 5%, and carbohydrate exceeding 30%. High levels of potassium, vitamin A, vitamin C, crude fat, and carbohydrates were noticed in Jatropha tanjorensis. High levels of both sodium and calcium were noticed in Solanecio biafrae. Amaranthus hydridus, Vernonia amygdalina, and Solanum nigrum were noted to be good sources of protein. The range of values of mineral nutrients, essential vitamins, proximate composition, and recommended dietary allowances of the studied leafy vegetables are very similar to those obtained in typical conventional edible leafy vegetables. The results therefore provide evidence that these underutilized leafy vegetables are well endowed with essential nutrients and could be important contributors to improving the nutritional content of humans. What lessons have we learned from the changing landscape of the food habitus in Okinawa? This study focuses on the narrative of a centenarian regarding his childhood memories of food. Food is closely related to the environment; hence, inhabitants internalize their environment through food habitus. Okinawa was famous for its longevity, but now, owing to globalization and Americanization, it has lost its prestigious status. Nostalgically remembering the past is not enough to create a sustainable future. We need to notice the importance of the present: the present will be the past when seen from the viewpoint of the future. With such transition of standpoint, the present food habitus should be viewed differently. Our centenarian's long life resulted from his life on the island. Islandness, or fudo in this study, supported his hundred years of life. However, repeating his life is impossible for us. We can look our past and future in order to observe our present differently. Supplier evaluation has a crucial role in maintaining efficiency in the food industry supply chain. Machine learning approaches can be employed to formulate models aimed at analyzing and evaluating supplier performance. Previous research has successfully designed decision tree and neural network models for assessing suppliers in the food industry with accuracies of 84.2% and 92.8% separately. Recognizing the opportunity to improve the model's performance, this study aims to advancing the machine learning models accuracy for analyzing and evaluating suppliers in the food industry. Two main models are proposed to enhance model accuracy: ensemble methods and support vector machine. This research has successfully designed a supplier evaluation model and demonstrated that the ensemble method - gradient boosting model outperforms other ensemble methods and support vector machine which is achieved a accuracy of 93.6% on a cross-validation dataset. The development of a dashboard is required to implement the supplier evaluation model using machine learning, facilitating decision-makers in evaluating and controlling supplier performance. Objectives: Although less frequently described than in dogs, it is also well recognised in cats that chronic gastrointestinal (GI) disease can fully respond to dietary changes only. So far, no study has assessed how much dietary information can be obtained during veterinary consultations. Methods: We retrospectively evaluated how much dietary information was available when owners presenting their cats to our gastroenterology (GE) and internal medicine (IM) service between October 2017 and January 2020 were questioned during consultations. Because of the larger IM caseload, for each week the first two cats presenting with chronic GI signs were selected for the IM group. Data from 80 cats presenting for first GE consultations were compared with data from 84 cats presenting with chronic GI signs for first IM consultations. Results: Referrals comprised 42/80 (53%) GE cats and 53/84 (63%) IM cats. Referral documents mentioned the previously fed diet in 12/42 (29%) GE and 4/53 (8%) IM cats, and response to that previous diet trial was recorded in the referral documents of 4/12 (33%) GE and 3/4 (75%) IM cats. No cat had received more than one previous diet trial. During consultations, owners of 61/80 (76%) GE and 53/84 (63%) IM cats were asked about diet. Irrespective of referral status, previous dietary trials had been performed in 27/61 (44%) GE and 19/53 (36%) IM cats. The specific diet fed at the time of consultation could be named by 37/61 (61%) GE and 11/53 (21%) IM cat owners. Conclusions and relevance: Overall dietary information gained from referring veterinarians and owners was often incomplete. Although more information could be gained from owners during GE consultations vs IM consultations, awareness of the importance of diet in cats with GI disease still appears to be low among veterinarians and cat owners. Objective: In this text we want to know the scientific production from 2011 - 2021 as part of the research entitled "Administrative competencies for the management of financial management in restaurants". Method: to achieve the proposed purpose, the quantitative methodology was used, the descriptive study method, the technique of analysis was descriptive statistics in academic and scientific texts, and the documents indexed in the meta-search engine Scopus were used as a source of information. Results: the intellectual production in the restaurant sector referring to financial management is quite low, the years of highest publication were 2014, 2015, 2017 and 2018. Discussion and Conclusions: The restaurant sector constitutes an important source of the economy of sucre, more than all in the generation of employment, the findings evidence that the managerial competencies of restaurant managers for the good management of finances should be further studied, as a conclusion, the generation of knowledge in the financial management of restaurant from the acquisition of administrative competence should be strengthened. Academicians have been curious about the ways in which people of different cultures communicate with one another in the context of diaspora ever since globalization first started to gain a foothold around the world. The intensity of people's voices increased as a result of their proximity to one another, which was powered by subsequent causes such as migration and trade that brought people together. Food, a vital aspect of culture, has also gone through such discursive transformations as civilizations merged and overlapped with one another. This allows a cultural and anthropological approach to food studies, which diverges from the extant scientific and nutritional approaches taken to food to a great extent. Memory Studies, on the other hand, has broadened its scope beyond a purely physiological one and has stepped into the psychological and sociological realms on account of recent discoveries and studies in the subject area. Conducive to both these developments in the respective disciplines, this article presents a reading of the novel Those Delicious Letters by Sandeepa Mukherjee Datta, set in a transnational diasporic setting that unravels the role of collective food memory in Bengali culture. The expressions of transnational collective memory are investigated by examining the gastronomic elements present in the story of the Bengali American author. It is accomplished via the negotiation of unique personal experiences of characters in the novel and a collective understanding of natives of the culture, both of which confirm one another. In sexually size-dimorphic bird species, rearing costs of sons and daughters usually differ and may be important in the evolution of offspring sex ratio adjustment. Raptors have reversed sexual size dimorphism and the smaller males are sometimes found to be overrepresented in food-poor territories or years. As a raptor with small reversed sexual dimorphism (6% in body mass), the European Honey Buzzard Pernis apivorus is expected to show little or no brood sex ratio bias in relation to environmental conditions. We molecularly sexed 311 chicks of 195 broods in and around The Netherlands, during 1996–2014. We examined which environmental factors explained brood sex ratio variation best. Overall, sex ratio was not biased (all nests pooled: 50.8% females) but more females were produced in years when on average Honey Buzzards bred earlier (32% sex ratio change over a ten-day range in annual mean laying date). Within-year laying date variation, hatching order, abundance of wasp (Vespinae) nests (main food source) and summer weather did not explain sex ratio variation. In the Veluwe and Drenthe (1974–2014), Honey Buzzards laid eggs earlier when the spring was warmer, which resulted in a c. 9-day advance in laying date over 40 years. As warm spring weather was also a predictor of a higher density of wasp colonies, we expected female chicks to benefit more from growing up in wasp-rich years than males, if the sex ratio biases were adaptive. However, this differential growth benefit was not noticeable in chick body mass; chick body mass was best explained by negative effects of relative laying date (within a year) and hatching order. The potential benefit for female nestlings (compared to males) of growing up in years with warm springs, when egg laying occurs early and wasp colonies are more abundant, remains unknown. In this paper, the author introduces the reader to the term food crime. After a literature review focusing on scholarship that has been done in the food crime area, the author illustrates what is particularly dangerous about American food, especially ultraprocessed foods high in salt, sugar, fat, and additives. The purpose of the paper is to refocus the food crime literature on problems with food itself by conducting a literature review of scholarship on food contents. The major finding of the paper is that the typical American diet is associated with more death and illness than all street crime combined, and this fact alone should make the paper of interest to criminologists. Objective: To describe how Indigenous Peoples understand their own traditional food system, health, and well-being and other cultural circumstances. Subjects and setting: Interview were conducted with 6 families of Indigenous Gujjar-Bakarwals including 8 women and 2 men in their home community. The interview was completed over a period of one week. The efforts to record the Gujjar-Bakarwals’ food system, health and activities has been welcomed by the community and considered successful. Result: The food system of Gujjar-Bakarwals’ is inextricably connected to land, which in turn is interlinked with livelihoods, physical and traditional activities. The cultural diet and the integrity of the ecosystem promotes health and well-being of the community people. Conclusion: The case study of Gujjar-Bakarwals give important information on locally produced, collected, or hunted foods, activities, and health status. Gujjar-Bakarwals’ reflections on their local food systems and activities should be encouraged and acted upon to protect and promote sustainability of the cultures. The Gujjar-Bakarwals’ food system and active practices clearly have many excellent health benefits. Thus, the cultural activities promote fitness and serve the Gujjar-Bakarwals well. The relationships of the variety and quantity of different sources of dietary proteins with hypertension remain uncertain. We aimed to investigate associations between the variety and quantity of proteins intake from 8 major food sources and new-onset hypertension among 12 177 participants from the China Health and Nutrition Survey. Dietary intake was measured by 3 consecutive 24-hour dietary recalls combined with a household food inventory. The variety score of protein sources was defined as the number of protein sources consumed at the appropriate level, accounting for types and quantity of proteins. New-onset hypertension was defined as systolic blood pressure ≥140 mm Hg and diastolic blood pressure ≥90 mm Hg, or physician-diagnosed hypertension or receiving antihypertensive treatment, during the follow-up. During a median follow-up of 6.1 years, there were U-shaped associations of percentages energy from total, unprocessed or processed red meat-derived, whole grain-derived, and poultry-derived proteins with new-onset hypertension; an reverse J-shaped association of fish-derived protein with new-onset hypertension; L-shaped associations of eggs-derived and legumes-derived proteins with new-onset hypertension; and an reverse L-shaped association of refined grain-derived protein with new-onset hypertension (all P values for nonlinearity <0.001). That is, for each protein, there is a window of consumption (appropriate level) where the risk of hypertension is lower. Moreover, a significantly lower risk of new-onset hypertension was found in those with higher variety score of protein sources (per score increment, hazard ratio, 0.74 [95% CI, 0.72-0.76]). Purpose: This study aimed to translate and test the content validity and reliability of an English questionnaire used in the American food and health survey. Methods: The questionnaire was developed using 6 stages, then examined for test–retest. A total of 672 participants were recruited for validation and reliability. Validity test was performed using a correlation coefficient to measure the linear correlation between 2 questions at one given time. Moreover, the Kaiser-Meyer-Olkin, Measure of Sampling Adequacy, and Bartlett's Test of Sphericity were performed to statistically determine the suitability for conducting exploratory factor analysis. Furthermore, reliability tests using Cronbach α was used to estimate the reliability coefficient properties of the translated scale. Finally, the most important correlated questions was plotted using a color-coded correlogram. Results: The test–retest reliability of all tested items was significantly correlated. The reliability test for all questions was 0.9. The cross-correlation test showed that all questions of the translated questionnaire were correlated significantly (P <.05) indicating reliability of the questionnaire. Conclusion: The tested questionnaire is applicable and may be used in population-based studies to raise awareness regarding health, food consumption, nutrition, and food safety among people in Jordan and/or other Arab countries. The material turn in the environmental humanities drastically changes our perception of who we are and challenges our attitude toward nature. In this article, the author argues that there is a critical connection between the works of Sunwoo Kim, one of the most prominent ecofeminist poets of Korea, and the trans-corporeal poetics of new materialist feminism. By resuscitating "dead" nature and recognizing the agency of things in the world, Sunwoo Kim deconstructs humanity's prestigious position of all-powerful subjects and repositions them as equal actors with other nonhuman beings. Trans-corporeal poetics allows her to combine the two most conspicuous trends of her poetry: her feminist poetics and her ecological poetics. Owing to her new recognition of our essential corporeality, Kim rescues the female body from the patriarchal society's debasement and brings it back to its original status. The meaning of her trans-corporeal body is most apparent in her poems on eating, since eating shares matter across corporeal boundaries. Because foodways are a major contributor toward climate change, Kim's articulation of the trans-corporeal nature of food and her insistence on the mindful eating deserves our full attention, if we are to halt our mad rush into ecological disaster. In the agriculture industry, determining the ripeness level of fruits is a very important aspect. This is related to maintaining the quality of the production, and during the distribution process. Currently, human sensory tests are still commonly used to evaluate food products with inconsistent results. This study developed a system to discriminate the durian ripeness level using gas sensors and neural network based on the character of the fruit aroma. This system succeeded in distinguishing the ripeness of durian including unripe, ripe and overripe with performance evaluation values above 91%. [ABSTRACT FROM AUTHOR]

Eating is a fundamental human activity, and food has always been a necessary part of daily life. In addition to being essential for one's survival, food is inextricably linked with one's identity, belief, socioeconomic status, and culture. This article examines Jim Crace's The Devil's Larder, a cumulative novel with sixty-four collections of stories that explores how one's choices of food preferences actually impact their identity and culture in both their personal and professional life. It reflects a series of societal and individual changes that have occurred throughout one's lifetime, many of which have been quite radical. The central significance of food and eating, as well as i ts many connotations, necessitates a connection to cultural materialism, which is concerned with the turbulence and creativity brought on by a radical conception of food and culture as well as the social negotiations expressed through the medium of food, especially its role in social etiquette, familial interactions, commercial relations, and social exchanges. The world war and the evolutionary heaven of Internet, amalgamated with IT, cloud computing, IoT, with data streaming, accessibility made easy, no frills and hassle free, impacting the civilians with Vedic culture, rooting to 21st century and thus shaping business culture and spending gut, impacting food culture thus maintaining the cycle, and eyeing and evolving till IoT. Purpose:There is one truth of this universe, that drenched the toe tips to head of ancient India. The Vedic truth impacts the 21st century leadership, through food culture, business gut and innovation. Methodology:A confirmatory factor analysis was carried out on Vedic truth to focus on dimensionality. The relationship of Vedic truth with food culture dimensionality, business gut, innovation was studied. SEM was carried for dimensions of vedic truth as process, tools, and culture mapped with innovation, risk-taking and pro-activeness. The qualitative metrics study was carried from the ancient heritage, and repository leadership of science based works of divine masters and Nobel laureates. Finding: Positive process tools and culture impact for healthy sustainable innovation, calculated risk taking, and pro-activeness. This study is science, religion and spiritual faith based and reflected in terms of spiritual divine faith eyes, with evolutionary heaven and degreeableness in spiritual maturity.
