This paper discusses an initiative through which first-year students of the degree in Pharmacy at San Jorge University (USJ) created educational videos about basic operations carried out in the laboratory, aimed at students in Compulsory Secondary Education (ESO) at the San Valero Centre. In addition, the university students used English as their language of communication, demonstrated their skill in handling laboratory material and worked in groups, organising themselves with the aim of completing a common task. 95% of the participating ESO students rated the activity 8 points or higher out of 10, while 83% of the university students considered it suitable for the Degree in Pharmacy, rating it 8 points out of 10. It is worth highlighting that the students receiving the service pointed out the usefulness of the videos in learning how to carry out certain basic laboratory operations and that the teachers recognised that the videos have been useful and interesting for training the students. Se presenta una iniciativa en la que alumnos de primer curso del Grado en Farmacia de la Universidad San Jorge crearon vídeos educativos sobre operaciones básicas de laboratorio. Los alumnos de tercer y cuarto curso de la ESO del Centro San Valero utilizan el material para conocer cómo realizar dichas operaciones. Para los alumnos universitarios, se han diseñado una serie de actividades que además de exigir que apliquen lo aprendido, les obliga a identificar y sintetizar puntos críticos de determinadas operaciones para la elaboración de un vídeo. Asimismo, emplean el inglés como lengua de comunicación, demuestran su destreza y trabajan en grupo. El servicio consiste en emplear los vídeos para formar a alumnos de Educación Secundaria antes de introducirlos en un laboratorio ya que, dada la situación de pandemia, no pueden asistir a las prácticas. Los vídeos se emplean como elemento motivador, que les permita afrontar la entrada al laboratorio con una mejor formación.

Trabajo presentado en el 40th World Congress of Vine and Wine: "Science and Economy, Culture and Education", celebrado en Sofía (Bulgaria), del 29 de mayo al 2 de junio (2017), Crianza de vinos en barricas se realiza para aumentar la estabilidad y lograr aromas más complejos. En los últimos años, sin embargo, la práctica de maceración del vino con fragmentos de roble tostado se ha convertido en cada vez más común. Esto transmite similares gustos, aromas y notas de roble al vino como los obtenidos con la crianza en barrica tradicional, pero mucho más rápido y a una fracción del costo. Sin una regulación adecuada, esto podría conducir a fraudes si vino macerado con chips se ofrece como vino con crianza. En el presente estudio, 75 compuestos volátiles han sido determinados mediante la aplicación de cromatografía de gases – espectrometría de masas (MS) y detección de ionización de llama (FID). Se ha encontrado que compuestos relacionados directamente con la madera tienen mayor poder discriminativo para diferenciar los vinos criados en barricas de los macerados con fragmentos de roble. Por lo tanto, hemos estudiado el efecto de la adición de fragmentos de roble de diferentes orígenes, diferentes tipos de roble, diferentes formatos y sometidos a diferentes procesos de tostado en un conjunto de 320 muestras de 6 vinos de denominaciones de origen españolas (DOs) y frente a esos mismo vinos envejecidos en barricas de roble. A la luz de los resultados, hemos desarrollado un conjunto de criterios que permite distinguir con alto grado de precisión entre los vinos que han envejecido en barricas y macerado con fragmentos de roble. La aplicación de estos criterios a distintos vinos permite la clasificación correcta en más del 90% de los casos.

Póster presentado en la XVI Reunión Científica de la Sociedad Española de Cromatografía y Técnicas Afines (SECyTA 2016), celebrada en Sevilla del 2 al 4 de noviembre de 2016., This paper focuses on the analysis of two groups of molecules in wine, enolones and vanillines. Both types of molecules present a common characteristic, their great polarity. Sotolon, maltol, furaneol and homofuraneol belong to the first group. Their chemical structures present certain similarity among them, which leads to similar physicochemical and olfactory properties. This group of compounds is described with the terms “burnt sugar, candy sugar, caramel and maple”. Sotolon and furaneol are the most powerful aromatic molecules within them, being their odor thresholds estimated in water‐ethanol matrix around 5 μg/L [1, 2]. The other group of molecules, vanillines, contributes to the oak related notes of alcoholic beverages. This work presents an automatized strategy to quantify the following aromatic compounds in wine: maltol, furaneol, homofuraneol, sotolon, vanillin, methyl vanillate, ethyl vanillate and acetovanillone. The development of this strategy implied the use of Gilson system (GX‐ 274 liquid handler). The proposed method is based on a solid phase extraction (SPE) using LiChrolut EN resins (50 mg). Three mL of wine were passed through a LiChrolut EN cartridge. After this, two consecutive washing up steps were applied. The first one consisted of 2mL of an aqueous solution at pH 8.0 containing 1 % of NaHCO3. The second one was 2 mL of pentane containing 5 % (v/v) of dichloromethane. The elution of both kinds of compounds was carried out with 600 μL of dichloromethane with 5% (v/v) of methanol. The extract obtained was injected directly in a gas chromatograph with a quadrupole mass spectrometric detection system (GC‐MS). The method showed good linearity in the range of occurrence for all compounds with a squared correlation coefficient higher than 0.9900, except for the ethyl vanillate that was lower. Matrix effects were not found. The detection limits obtained for all analyzed compounds were lower or equal to 0.7 μg/L. The precision was evaluated in reproducibility terms, obtaining in all cases DSR (%) below 12%. This methodology once optimized and validated was applied to quantify these compounds in a wide set of wines. As a result of these analyses, furaneol and vanillin exhibited odour aroma values, (OAV), higher than the unit in most of the samples.
