Baseline data on the boreal jack pine associated chanterelle (Cantharellus cibarius Fr.) and pine mushrooms (Tricholoma magnivelare (Peck) Redhead) in the Boreal Plain Ecozone of Saskatchewan were collected in five ecosites of productive mushroom areas. It investigated hourly weather parameters correlated with daily purchase volumes over 4 yrs; yield data over 5 yrs; and varying age, tree density, and species for presence of mushrooms in over 100 stands. All plots fell within the lichen jack pine (jP) ecosite with an overstory entirely of jack pine. The understory was dominated by reindeer lichen, bearberry, and blueberry. Plots were well- to rapidly drained, subxeric to submesic, with low nutrient regime. Both chanterelle and pine mushrooms were present in jack pine stands of −1. Chanterelle cap diameter was a good predictor of fresh weight and proxy for yield. Pine mushroom was −1 over 4 yrs based on 5 days picking. With future climate predictions of warmer and moister conditions, timing of fruiting body appearance is anticipated to advance.

The paper presents a novel method for predictive modelling of chanterelle mushrooms' drying kinetics. Use of computational techniques and mathematical modelling for chanterelle mushrooms were employed in analysing the drying process using heat pump dryer. Mushrooms were sliced into 20 mm × 20 mm × 30 mm cuboids and 20 mm × O40 mm cylinders. Drying air temperatures of 40 °C, 48 °C, and 56 °C were studied. Determination of the best mushrooms' drying process using selected thin layer and computational intelligence models was examined. Drying curves showed a falling rate period while moisture ratio decreased with temperature rise from 40 °C to 56 °C. Mushrooms’ moisture diffusivities rose from 23.709 × 10−8 m2s−1 to 41.035 × 10−8 m2s−1 as temperature rose from 40 °C to 56 °C for the cuboid slices. Similarly, diffusivities for cylindrical mushrooms rose from 9.322 × 10−8 m2s−1 to 12.1585 × 10−8 m2s−1. The activation energy of cuboidal mushrooms was 29.3908 kJmol-1 while that of cylindrical sample was 14.2856 kJmol-1. Statistical parameters used showed that Midilli et al. was the most superior thin-layer drying model in predicting drying kinetics of chanterelle mushrooms. 1–3 ANN architecture was the best architectures in predicting drying process of chanterelle mushrooms. Standardized Pearson universal kernel was the best SVM filter. A k = 5 value was the best kNN values tested in predicting the chanterelle mushrooms drying process. However, tested data for standardized Pearson universal kernel was the most superior among conventional and intelligent models used. Consequently, computational intelligence modelling especially the standardized Pearson universal kernel was recommendable in modelling drying kinetics of chanterelle mushrooms under heat pump dryer.

Mushrooms are appreciated not only for their nutritional value and bioavailability, but also for their medicinal properties. There are a growing number of the studies focused on investigating medical preparation base on natural compounds, including those isolated from a number of fungi species of fungi species. The aim of this study is to compare anti-inflammatory, analgesic and antiulcer effects of extracts of shiitake mushrooms and chanterelle mushrooms in an experiment on rats. Materials and methods. The experiment involved 30 white female rats weighing 170-210 g., divided into 5 groups: group 1 included intact animals; group 2 included animals with modelled pathology; group 3 included animals, which received chanterelle extract; group 4 involved animals, which received shiitake mushroom extract, and group-5 rats received the reference drug. Observation of changes over the inflammatory process in the model of carrageenan-induced inflammation in the paw of the rats revealed an anti-exudative effect of varying intensity that made up 36.84% for the of chanterelle mushroom extract and 15.79% for shiitake mushroom extract. The dynamics of trypsin-induced inflammatory process showed moderate anti-inflammatory activity, 32.02%, during the courses of the therapy with chanterelle mushroom extract. According to the indicator of analgesic effects produced by the studied extracts, the highest indicator was reached by the chanterelle mushroom extract (33.53%) that exceeded the analgesic effect of the shiitake mushroom extract (17.65%). Therapeutic and prophylactic administration of the chanterelle mushroom extract in a dose of 10 mg / kg in the model of aspirin-induced gastric ulcer in rats showed a pronounced anti-ulcer effect which made up 66.7% compared with that by shiitake mushroom extract (33.4%) and the reference drug “Altan” (100%). Conclusion. The obtained data have demonstrated the promise of using the extracts of chanterelle and shiitake mushrooms for the therapeutic and prophylactic purposes.

The paper analyzes plant communities with Cantharellus cibarius Fr. in southern taiga and sub-taiga forests in the Kirov Region. Golden chanterelle occurs mostly in pure pine forests and pine forests mixed with spruce and birch of green-moss, lichen and cowberry types in young to maturing stands; the crown density is low or medium. Species richness of herbaceous-shrub storey in the studied communities varied from 5 to 29. The ecological preferences of C. cibarius, defined with Ellenberg (1974) scales, allow to characterize the species in the following way: temperate climate species, shade-resistant, rarely found in conditions of total shading; mesophyte regarding soil humidity, prefers acidic soils with low nitrogen, but, as an exception, marked on neutral soils rich in nitrogen. The differences in the species ecological preferences in conditions of southern taiga and sub-taiga are insignificant. The hemeroby index varied from 0,05 to 0,33 for the studied communities. The average share of species tolerant to human impact was 13,23%, and the share of anthropophobic species – 86,77%. These data characterise C. cibarius as the species capable of tolerating moderate human impact in southern taiga subzone, but being less tolerant to human impact in sub-taiga areas and coniferous-broadleaved forests.

For the accurate quantitation of kokumi-enhancing and bitter-tasting octadecadien-12-ynoic and octadecadienoic acids in chanterelles (Cantharellus cibarius Fr.), a sensitive ultra-high-performance liquid chromatography-differential ion mobility spectrometry-tandem mass spectrometry method was developed. On the basis of these quantitative data and the taste thresholds, dose-over-threshold factors were calculated to determine the contribution of these sensometabolites to the kokumi and bitter taste of chanterelles; e.g., 14,15-dehydrocrepenynic acid (3) and (9Z,15E)-14-oxooctadeca-9,15-dien-12-ynoic acid (7) were identified as key kokumi substances in raw chanterelles. Quantitative profiling of these compounds in various mushroom species demonstrated a unique accumulation of octadecadien-12-ynoic acids in Cantharellus. Furthermore, storage experiments highlighted dynamic processes, including the biosynthesis of these substances as a result of lipid peroxidation mechanisms.

White chanterelles (Basidiomycota), lacking the orange pigments and apricot-like odour of typical chanterelles, were found recently in the Canadian provinces of Québec (QC) and Newfoundland & Labrador (NL). Our phylogenetic analyses confirmed the identification of all white chanterelles from NL and QC as Cantharellus enelensis; we name these forma acolodorus. We characterized carotenoid pigments, lipids, phenolics, and volatile compounds in these and related chanterelles. White mutants of C. enelensis lacked detectable β-carotene, confirmed to be the primary pigment of wild-type, golden-orange individuals, and could also be distinguished by their profiles of fatty acids and phenolic acids, and by the ketone and terpene composition of their volatiles. We detected single base substitutions in the phytoene desaturase (Al-1) and phytoene synthase (Al-2) genes of the white mutant, which are predicted to result in altered amino acids in their gene products and may be responsible for the loss of β-carotene synthesis in that form.

Species of fleshy yellow Cantharellus are known as chanterelles, which are among the most popular wild edible mycorrhizal mushrooms in the world. However, pure culture isolates of Cantharellus are rare. We report an efficient isolation technique of the Japanese golden chanterelle, Cantharellus anzutake, from its ectomycorrhizal root tips. Field-sampled fresh ectomycorrhizal root tips of C. anzutake on various hosts such as pines, spruce, and oaks were vortexed with 0.005% Tween 80 solution, surface sterilized with 1% calcium hypochlorite solution, rinsed with sterilized distilled water, and placed on modified Norkrans’ C (MNC) agar plate medium. Most ectomycorrhizal root tips of C. anzutake produced yellowish mycelial colonies within a few months. In contrast, tissue isolation from basidiomata provided limited cultures of C. anzutake but much contamination of bacteria and molds, even on media that contained antibiotics. The established C. anzutake cultures had clamp connections on the hyphae and contained intracellular oily droplets. These cultured isolates were identified as C. anzutake by sequence analysis of the rRNA internal transcribed spacer (ITS) region and translation elongation factor EF1-alpha (tef-1) genes.

Cantharellus is a well-known genus of edible mushrooms, belonging to the family Hydnaceae in the class Agaricomycetes. In this study, a phylogenetic overview of Cantharellus subg. Cinnabarinus and C. subg. Parvocantharellus in China is carried out with the description of four new species. Species description are based on morphological characters of basidiomata and phylogenetic analyses of multi-locus dataset of 28S + tef1 + rpb2. Among the new species, two species, C. chrysanthus and C. sinocinnabarinus, belong to C. subg. Cinnabarinus and two new species, C. convexus and C. neopersicinus, belong to C. subg. Parvocantharellus. Species delimitation characters of the new taxa are compared with closely related species. In addition, three new records of Cantharellus are reported for China: C. albovenosus and C. citrinus of subg. Cinnabarinus and C. koreanus of subg. Parvocantharellus. A key to the species of subg. Cinnabarinus in China was provided.

Opisthorchiasis is a dangerous parasitic disease caused by trematodes in the family Opisthorchiidae. One of the causes of this infection is the species Opisthorchis felineus, which is common in the Russian Federation and Western Europe. The disease has a large number of complications and relatively few effective treatments, so nowadays it is relevant to look for new drugs for the treatment of opisthorchiasis, with the maximum antiparasitic and minimal side effect. In this work, a potentially anthelmintic effect of the methanol extract of the golden chanterelle mushroom (Cantharellus cibarius) was investigated. In in vitro experiments, the significantly reduced mobility and survival rates of juvenile O. felineus specimens with increasing concentrations (10-1000 pg/ml) of the C. cibarius extract were shown. In in vivo studies, administration of the C. cibarius extract on the first day after parasitic infection of inbred C57BL/6 mice resulted in a decrease of the number of helminths in the bile ducts of the liver, evaluated 6 weeks after infection. In another series of experiments, administration of the C. cibarius extract for 7 days to mice infected with O. felineus for five weeks had no anthelmintic effect. In both cases, the state of the infected hosts, evaluated by a number of physiological and biochemical parameters (relative weight of organs, blood indices), did not deteriorate, indicating that there was no adverse effect of the C. cibarius extract. The results obtained suggest that the C. cibarius extract might have anthelmintic properties if applied as parasite larvae excyst.

The nutritional value of mushrooms is not great but, from the dietary point of view, fungi can bring in many beneficial nutrients such as selenium and some vitamins. In addition, a number of compounds of functional importance have been isolated from fungi. The purpose of this study is to evaluate the effect of the drying process and extraction process from fruiting bodies of selected edible mushrooms for inhibitory activity against cholinesterases and complexation of aluminium ions Al3+. Such mushrooms as champignon (Agaricus bisporus), oyster mushroom (Pleurotus ostereatus), porcini (Boletus edulis), bay bolete (Boletus badius) and golden chanterelle (Cantharellus cibarius) were examined. It was shown that the tested samples exhibited inhibitory activity against acetylcholinesterase and butyrylcholinesterase. The extracts also had the ability to complex aluminum ions, with the porcini and oyster mushroom extracts characterized by the highest ability among the samples tested. The activity did not depend on how the extraction process was carried out. Convection drying, however, proved to be a more favorable dehydration method compared to freeze drying in terms of the properties tested.

The authors discuss several African Cantharellus Adans.: Fr. species with lilac-purplish tinges on the pileus or stipe surface collected in the Central African rain forest or West African gallery forests. The morphology of C. longisporus Heinem. is discussed on the basis of new Central African collections and found profoundly different from two previously described subspecies from Madagascar which are here recombined as C. littoralis (Buyck & Randrianjohany) Buyck, comb. et stat. nov., and C. isaloensis (Buyck & Eyssartier) Buyck, comb. et stat. nov. Cantharellus xanthocyaneus Ndolo Ebika & Buyck, sp. nov., a new look-alike of C. cyanoxanthus R.Heim ex Heinem. with considerably smaller basidiospores is described, as well as a new chanterelle species from Togo, viz. C. violaceoflavescens De Kesel, Guelly, L.A.Parra & Buyck, sp. nov., that in the field is reminiscent of C. littoralis (Buyck & Randrianjohany) Buyck, comb. et stat. nov. A multigene phylogeny places both new species Cantharellus xanthocyaneus Ndolo Ebika & Buyck, sp. nov., and Cantharellus violaceoflavescens De Kesel, Guelly, L.A.Parra & Buyck, sp. nov., in the subgenera Parvocantharellus Eyssart. & Buyck and Pseudocantharellus Eyssart. & Buyck respectively, and Cantharellus littoralis (Buyck & Randrianjohany) Buyck, comb. et stat. nov., in the subgenus Cinnabarini Buyck & V.Hofst.

The golden chanterelle represents one of the commonly found, edible mushrooms that is highly valued in various cuisines. The present study focused on assessing the requirements of Cantharellus cibarius such as pH, temperature, as well as the carbon and nitrogen sources for mycelial growth. Optimization of the growth parameters was carried out by one-factor-at-a-time method. The optimal pH and temperature were determined to be 6.0 and 22.5 °C, respectively. Among the various carbon sources studied, sucrose at a concentration of 2% gave maximum mycelial growth and proved to be the most suitable one. Amongst the nitrogen sources studied, peptone, ammonium sulphate, and sodium nitrate, gave the maximum mycelial growth at an optimized concentration of 0.5%. In the presence of beef extract and yeast extract, a change in colony pigmentation from yellow to dark grey was observed. Finally, the carbon to nitrogen ratio of 2:0.5 proved to be optimal for mycelial growth. This study is the first report on the optimisation of in vitro growth requirements of C. cibarius.

The Japanese golden chanterelle commonly identified as Cantharellus cibarius was sampled in a broad range of forest vegetation. A total of 90 fresh and 11 herbarium specimens were examined microscopically, subjected to sequencing analysis of their nuclear ribosomal RNA (rDNA) and tef-1 genes, and their characteristics were compared with those of European C. cibarius. Based on morphological and ecological characteristics, basidioma samples from Japan were divided into four species. While specimens of Cantharellus sp. 4 from Hokkaido Island were included in the European C. cibarius clade phylogenetically, the other three species formed three unique clades. Among these, Cantharellus anzutake sp. nov. is sister to the clade of C. cibarius and was widely sampled from the northern limit of Honshu Island to the southern limit of Kumejima Island in Ryukyu Islands. Although C. anzutake was morphologically similar to C. cibarius, the two species were phylogenetically distinct. Other morphologically similar but genetically distinct chanterelle species from India exhibited macroscopic and microscopic differences compared with C. anzutake.

Genidentity coupled with material continuity is proposed as a minimum conception of biological individuality, and then theoretical individuation is employed to identify multiple kinds of biological individuals in a single example from mycology, a patch of chanterelle mushrooms. Of the many candidate materially continuous genidenticals found in a mushroom patch, only those with functional roles in biological theory are notable as biological individuals. Evolutionary and physiological theories pick out multiple kinds of functional individuals in mushrooms, so a pluralistic account of mushroom individuality is warranted.

Mushrooms are considered as potential bio-remediation agents in soil polluted with heavy metals, while many species which efficiently accumulate them in flesh are edible. Question is if there is any possible culinary use of edible mushrooms with high heavy metal contents? This study aimed to investigate and discuss a fate of cadmium (Cd) in common household-treated fruitbodies of common chanterelle Cantharellus cibarius. The samples of Cantharellus cibarius Fr. were collected from five spatially distanced sites in Poland in 2011-2012. We examined from 267 to 358 fruiting bodies per collection, and in total 1565 fruiting bodies were used. Cadmium in fungal materials from all treatments and processes (mushrooms dried, deep frozen, blanched and pickled) was determined using validated methods by inductively coupled plasma mass spectrometry with dynamic reaction cell. Blanching of fresh chanterelles caused decrease of Cd by around 11 ± 7 to 36 ± 7%, while blanching of deep-frozen mushrooms by around 40 ± 6%. A rate of Cd decrease in chanterelles was similar when the fruiting bodies were blanched for 5 or 15 min and when used was potable or deionized water. Pickling of blanched chanterelles with a diluted vinegar marinade had a pronounced effect on further removal of Cd. Blanched chanterelles when pickled lost an extra 37-71% of Cd. Total leaching rate of Cd from fresh or deep-frozen fruitbodies of chanterelle when blanched and further pickled was between 77 ± 7 and 91 ± 4%. Blanching and pickling highly decreased content of Cd in C. cibarius.

In this work, the influence of different drying methods on the aroma composition and sensory quality of chanterelle mushrooms (Cantharellus cibarius Fr.) was evaluated. The drying methods tested were convective drying (CD), freeze drying (FD), vacuum microwave drying (VMD) and a combination of convective pre-drying and vacuum microwave finish drying (CPD-VMFD).; Results: Analyses of fresh and dried chanterelle samples by HS-SPME and GC/MS and GC-FID showed the presence of 39 volatile compounds at different concentrations. The most abundant compounds in fresh chanterelle were 1-hexanol (33.4 μg per 100 g dry basis (db)), 1-octen-3-ol (80.2 μg per 100 g db) and 2-octen-1-ol (19.3 μg per 100 g db). The results showed that fresh and dried chanterelle contained very low levels of aroma compounds; however, the highest contents of volatile compounds were found in samples after (i) CD at 80 °C (129 μg per 100 g db), (ii) CPD-VMFD at 70 °C-480/240 W (136 μg per 100 g db) and (iii) CPD-VMFD at 80 °C-480/240 W (136 μg per 100 g db).; Conclusion: The best dehydration methods, which resulted in high contents of volatile compounds and appropriate sensory quality, according to descriptive sensory analysis and PCA tools, were CD at 70 and 80 °C. Chanterelles are some of the most popular wild mushrooms in Indiana and throughout the Midwest. These attractive orange and yellow fungi are a natural delicacy, and the global trade in chanterelles exceeds $1 billion per year. Like so many other clades of fungi, only a fraction of the chanterelles’ true diversity in North America is known to science. Given their economic and ecological value, I believe that chanterelles deserve a phylogenetic analysis using the full capabilities of modern DNA sequencing technology. This project will determine how many species of chanterelles there are within Indiana and how they are related to each other and species across the world. DNA was extracted from over 100 chanterelle specimens collected during the recent Indiana Mycoflora Project, and the genes for transcription elongation factor 1 (TEF1) and the large ribosomal subunit (LSU) were used as barcode regions. Incorporating observations of each specimen’s morphology, the sequence data were compared with previous database entries and published literature on Midwestern chanterelles. Evidence of chanterelle species never before recorded in the Midwest was found, and some specimens may represent species new to science. Further phylogenetic analysis will clarify chanterelle taxonomy, identifying synonymous and divergent species and establishing the evolutionary relationship between them. The project will contribute nearly 200 barcode sequences of Indiana chanterelles to public databases, and hopefully generate public interest in mycology from mushroom hunters throughout the state and beyond.

Yellow chanterelles are among the most popular wild edible ectomycorrhizal mushrooms worldwide. The representative European golden chanterelle, Cantharellus cibarius, has only once been reported to fruit under greenhouse conditions, due to the difficulty of establishing pure culture. Recently, we developed a new technique for establishing a pure culture of a Japanese golden chanterelle (Cantharellus anzutake), and conducted in vitro ectomycorrhizal synthesis using established strains and Pinus densiflora. Acclimated pine mycorrhizal seedlings colonized with C. anzutake in a pot system under laboratory conditions produced small but distinct basidiomata with developed basidiospores. C. anzutake mycorrhizae were established on Quercus serrata seedlings by inoculation of mycorrhizal root tips of the fungus synthesized on P. densiflora. A scaled-up C. anzutake–host system in larger pots (4 L soil volume) exhibited repeated fruiting at 20–24 °C under continuous light illumination at 150 μmol m−2 s−1 during a 2-year incubation period. Therefore, a C. anzutake cultivation trial is practical under controlled environmental conditions.

The article reviews medicinal properties of Cantharellus cibarius. Fruiting bodies of this species are a promising source of extracts with vitamins, carbohydrates, proteins, polysaccharides, sterols, phenolic acids, which various biological properties.

The purpose of this work was to perform a comparative study of the chemical composition of Cantharellus cibarius Fr. and Hydnum repandum Fr. and the revision of the data in the occurrence of carotenoids, ergocaliferol, tocopherols and phenolic compounds. Substances extracted with 80% ethanol from dried fruit bodies of both fungi were investigated. The fatty acids quantitative and qualitative contents were examined by Gas chromatography Mass Spectrometry (GC-MS). Lipophilic substances of hexane extract were investigated by chemical reactions and Thin-layer chromatography (TLC) after the separation of compounds from this fraction on a silica gel column. It was determined that the hexane fraction of both mushrooms contained a large amount of higher fatty acids and their esters. Linoleic acid (31.42 %) and oleic acid (57.89 %) were the dominant components in Cantharellus cibarius and Hydnum repandum accordingly. Tocopherols, carotenoids and ergocalciferol were also found in the hexane extracted fraction. The estimated content of tocopherols was ≈0.82% of the total mass of ethanolic extract for chanterelle and ≈0.22% for hedgehog mushroom, respectively. Chloroform and ethyl acetate fractions did not contain tocopherols, carotenoids and ergocalciferol and their mass was insignificant. Carbohydrates content was ≈ 54% and ≈ 49 % of the total mass of ethanolic extract and the content of aminoacids was found as ≈ 4.5% and ≈ 4.7% for Cantharellus cibarius and Hydnum repandum accordingly. Flavonoids, phenolic substances and hydroxycinnamic acids were not found in the fractions of ethanol extracts of both mushrooms.

The authors report on a brown chanterelle collected in the sandy soils of Madagascar's east coast. As this specimen agrees entirely with the protologue of C. avellaneus, it is here described and proposed as epitype for this apparently rare chanterelle that was first described in 1924 by Narcisse Patouillard. Its systematic placement as part of Cantharellus subg. Parvocantharellus sect. Congolenses is demonstrated using a multigene phylogeny and its complete ITS barcode sequence is provided.

A comprehensive characterization of polysaccharides from the chanterelle was performed. Experiments included both linkage analysis by methylation and GC–MS, monosaccharide composition analysis by methanolysis, SEC-MALLS and several NMR experiments including COSY, HSQC, TOCSY, HSQC-TOCSY, NOESY, and HMBC. A 671 kDa (1 → 6)-linked α- d -mannan with single and short (1 → 2)-linked side chains (WCcF1b) was isolated from the hot water extract, after protease treatment and fractionation by size exclusion chromatography. The hot 1 M NaOH extract contained two types of β-glucan; a water soluble (1 → 6)-linked β- d -glucan with single and short (1 → 3)-linked β-glucan side chains (ACcSw) and a less branched (1 → 3)-linked β- d -glucan (ACcIw/ACcId), proposed to contain short side chains in O -4. Chemical shifts assignments of the α-mannan and β-glucan are presented as well as chemical shift values obtained from a (1 → 6)/(1 → 3)-β- d -glucan derived from Saccharomyces cerevisiae which was used as reference.

The activity concentrations of (137)Cs and (40)K in mushrooms of the genus Cantharellus (Cantharellus cibarius, Cantharellus tubaeformis, and Cantharellus minor) collected across Poland from 1997 to 2013 and in Yunnan province of China in 2013 were determined using gamma spectrometry with an HPGe detector, respectively. Activity concentrations of (137)Cs in C. cibarius from the places in Poland varied from 64 ± 3 to 1600 ± 47 Bq kg(-1) db in 1997-2004 and 4.2 ± 1.2 to 1400 ± 15 Bq kg(-1) db in 2006-2013. In the Chinese Cantharellus mushrooms, the activity level of (137)Cs was very low, i.e., at a range1.2 to 1.2 ± 0.6 Bq kg(-1) dry biomass. The natural radionuclide (40)K was at similar activity level in C. cibarius collected across Poland and in China, and fluctuations in levels of (40)K over the years and locations in Poland were small. In C. cibarius from diverse sites in Poland, content of (137)Cs highly fluctuated in 1998-2013 but no clear downward trend was visible (Fig. 1). Published activity levels of (137)Cs in fruitbodies of Cantharellus such Cantharellus californicus, Cantharellus cascadensis, C. cibarius, Cantharellus cinnabarius, Cantharellus formosus, Cantharellus iuteocomus, Cantharellus lutescens, Cantharellus minor, Cantharellus pallens [current name C. cibarius], Cantharellus subalbidus, Cantharellus subpruinosus, and C. tubaeformis collected worldwide were compared. In the Polish cuisine, mushrooms of the genus Cantharellus are blanched before frying or pickling, and this kind of treatment, and additionally also pickling, both very efficiently remove alkali elements (and radioactivity from (134/137)Cs) from flesh of the species.

Recent molecular systematic studies of Cantharellus cibarius sensu lato have revealed previously unknown species in different regions of North America. This study investigates yellow chanterelles in the Midwest using phylogenetic analysis of three DNA regions: nuc rDNA internal transcribed spacer 2 (ITS2) and 28S sequences and translation elongation factor 1α gene (EF1α). This analysis reveals a locally common taxon Cantharellus chicagoensis sp. nov. as distinct from sympatric species present in northeastern Illinois, northwestern Indiana and Wisconsin. This chanterelle features a pileus that often has a greenish yellow margin when immature, a squamulose disk when mature, a yellow spore print and the absence of a fragrant odor. Multiple Cantharellus specimens group with C. flavus and C. phasmatis, expanding their known range, and others with C. roseocanus Our observations highlight the diversity of Cantharellus in midwestern USA and further document the need for additional systematic focus on the region's fungi.

Lentinula edodes is among the five globally cultivated edible mushrooms, which are wood decaying spore bearing Basidiomycetes possessing separate hyphae. Specific identification of this fungus from others in the division Basidiomycota using specific primers enables a fast and accurate detection through polymerase chain reaction (PCR). As a prelude to additional nutritional and sequence characterization research, we have developed a species-specific PCR assay for this fungus after screening four primer-pairs and two universal primer pairs. The primer-pair LE1F/R was specific in amplifications of ATCC-defined L. edodes strains and did not amplify DNA from six medicinally and nutritionally important fungal reference strains, Oyster (Pleurotus ostreatus), Maitake (Grifola frondosa), Enoki (Flammulina velutipes), Baby bella (Agaricus bisporus), Porcini (Boletus edulis), and Chanterelle (Cantharellus cibarius). However, amplifications using the universal primers were positive for all six strains. This assay will therefore serve to validate morphology-based-identifications of L. edodes strains. Craterellus tubaeformis (Funnel Chanterelle) is among the most abundant wild mushrooms in Finland. Three polysaccharide fractions were sequentially extracted from the fruiting bodies of C. tubaeformis, using hot water, 2% and 25% KOH solutions, respectively, and purified. The monomer composition, molecular weight, and chemical structure were determined using chromatographic and spectroscopic methods. Thermogravimetric analysis was performed as well. The hot water extract consisted mainly of high-molecular weight → 2,6)-α-Man-(1 → and → 6)-α-Gal-(1 → chains, covalently bound to proteins. The alkali extracts consisted of acidic → 6)-β-Glc-(1→, with branches of short → 3)-β-Glc-(1 → chains or single β-Glc residues. The use of alkali influenced the glycosidic linkages, molecular mass and thermal stability of the polysaccharide fractions. The use of KOH 2% increased the amount of low molecular weight polysaccharides, resulting in bimodal molecular weight distributions, with little impact on the thermal stability. Conversely, extraction with KOH 25% provided low molecular weight polysaccharides with substantially reduced thermal stability.

The golden chanterelle mushroom, Cantharellus cibarius, is an edible mushroom with medicinal value. Given that this species has good radical scavenging activity and strong antioxidant potential and bactericidal effects, this study was designed to investigate the anti-inflammatory and wound-healing activity of C. cibarius extract in rats. For this experimental study, circular excision and linear incision wound models were used in 4 groups of male Wistar rats: nontreated, vehicle-treated, treated with C. cibarius extract ointment (2% w/w), and treated with the reference drug (Madecassol). All the animals were treated topically once a day. The circular and linear wounds were treated for 9 and 17 days, respectively. At the end of the study, samples from healing wounds were taken for histopathological assessment to determine the in vivo anti-inflammatory activity and investigate immunohistochemistry by cyclooxygenase-2 (COX-2). Significant wound-healing activity in each wound model was observed in the C. cibarius extract-treated and Madecassol-treated groups compared with the nontreated and vehicle-treated groups (P < 0.05). Histological assessment showed complete repair of the epidermal layer, increased collagen production, and a remarkable degree of neovascularization and epithelization in the extract group, which were significantly different from those in the other groups (P < 0.05). In addition, a significantly lower rate of COX-2 expression was detected in the extract group than in the nontreated and vehicle-treated groups (P < 0.0001). Therefore, the experimental data reveal that C. cibarius extract showed significant wound-healing and anti-inflammatory effects, which could be the scientific rationale for the medicinal use of the golden chanterelle mushroom in treating wounds.

This paper gives an up-to-date information on accumulation, occurrence, intake and possible health risks associated with noxious metallic elements (Ag, Cd, Hg, Pb) among mineral constituents (Ag, Al, Ba, Ca, Cd, Co, Cr, Cu, Fe, Hg, K, Mg, Mn, Na, Ni, P, Pb, Rb, Sr and Zn) contained in Common Chanterelle (Cantharellus cibarius) mushrooms, a species subjected to a broad use within the domestic market of Poland and widely exported abroad, and presents a short review of data from the available literature. The tasty values of C. cibarius seem to be more rated than the essential minerals contained in its flesh and nominally taken with 1,000 g of fresh fruiting bodies eaten per capita annually, while the contents of toxic or potentially toxic metals, such as Cd, Pb, Hg and Ag, are much below the tolerance limits.

The elemental composition of four wild edible mushroom species was determined by inductively coupled plasma optical emission spectrometry (ICP OES): scotch bonnet (Marasmius oreades), chanterelle (Cantarellus cibarius), porcini (Boletus edulis), and peppery milk-cap (Lactarius piperatus). Mushrooms are a potassium-rich food, which was confirmed in this study. M. oreades contained the highest concentration of almost all elements, except for cadmium, potassium, phosphorus, and lead. Lead and cadmium were present but at concentrations that are not hazardous to human health. A principal component analysis loading plot for elemental composition demonstrated that 95.51 percent of the total variance was present in the first two principal components. Cluster analysis separated the elements into three statistical significant clusters.

A stereocontrolled synthesis of a thioketal system that is a direct precursor of an active compound isolated from chanterelle was accomplished by using readily available methyl 11-[2-(2-oxoethyl)-1,3-dithian-2-yl]undec-9-ynoate as a key intermediate. The synthesis involves simple and straightforward reactions, such as addition of a lithiated alkyne to an aldehyde, alkyne hydrogenation using nickel boride, alcohol oxidation with Dess–Martin periodinane, and Z-to-E enone isomerization.

The methanolic extract of the wild edible mushroom Cantharellus cibarius Fr. (chanterelle) was analyzed for in vitro antioxidative, cytotoxic, antihypertensive and antibacterial activities. Various primary and secondary metabolites were found. Phenols were the major antioxidant components found in the extract (49.8 mg g(-1)), followed by flavonoids, whose content was approximately 86% of the total phenol content. Antioxidant activity, measured by four different methods, was high for inhibition of lipid peroxidation (EC50 = 1.21 mg mL(-1)) and chelating ability (EC50 = 0.64 mg mL(-1)). The antioxidant activity of the C. cibarius methanol extract was achieved through chelating iron compared to hydrogen atom and/or electron transfer. The extract showed good selectivity in cytotoxicity on human cervix adenocarcinoma HeLa, breast carcinoma MDA-MB-453 and human myelogenous leukemia K562, compared to normal control human fetal lung fibroblasts MRC-5 and human lung bronchial epithelial cells BEAS-2B. The extract had inhibitory activity against angiotensin converting I enzyme (ACE) (IC50 = 0.063 mg mL(-1)). The extract revealed selective antimicrobial activity against Gram-positive bacteria with the highest potential against E. faecalis. The medicinal and health benefits, observed in wild C. cibarius mushroom, seem an additional reason for its traditional use as a popular delicacy food.

Cantharellus rubescens is described and illustrated as new species from the semiarid of Northeastern Brazil. It is recognized by orange-yellow basidiomes, hymenophore and contex with a strong reddening-orange reaction, scaly stipe, basidiospores measuring 6-7.5(-9) × 4-5(-5.5) µm and having thick-walled (1-1.5 µm), terminal elements in the pileipellis. Morphological differences with other, orange-yellow Brazilian Cantharellus species are discussed, such as C. aurantioconspicuus, C. guyanensis and C. protectus.

Despite recent advances in understanding the microbiome of eukaryotes, little is known about microbial communities in fungi. Here we investigate the structure of bacterial communities in mushrooms, including common edible ones, with respect to biotic and abiotic factors in the boreal forest. Using a combination of culture-based and Illumina high-throughput sequencing, we characterized the bacterial communities in fruitbodies of fungi from eight genera spanning four orders of the class Agaricomycetes (Basidiomycota). Our results revealed that soil pH followed by fungal identity are the main determinants of the structure of bacterial communities in mushrooms. While almost half of fruitbody bacteria were also detected from soil, the abundance of several bacterial taxa differed considerably between the two environments. The effect of host identity was significant at the fungal genus and order level and could to considerable extent be ascribed to the distinct bacterial community of the chanterelle, representing Cantharellales – the earliest diverged group of mushroom-forming basidiomycetes. These data suggest that besides the substantial contribution of soil as a major taxa source and environmental determinant of bacterial communities in mushrooms, the structure of these communities is to a great degree affected by the identity of the host. Thus, bacteria inhabiting fungal fruitbodies may be non-randomly selected from environment based on their symbiotic functions and/or habitat requirements.

Successful spore dispersal is a crucial part of the fungi life cycle, and many species achieve this using sporocarps which extend above the forest floor. The shape of sporocarps is known to affect dispersal success, but the local abiotic factors driving their morphology is understudied. In this study we examined the plasticity of sporocarp morphology and its effects on spore dispersal in the Pacific golden chanterelle (Cantharellus formosus). C. formosus that developed in sheltered microhabitats (n = 79), were measured to have significantly taller (P = 0.01) stipes and larger caps (P < 0.01) for a given stipe width compared to those developing in open microhabitats (n = 97). We were unable to detect increased dispersal success of C. formosus in field (n = 10). Longer stipes and larger caps are associated with increased dispersal abilities, while increased stipe thickness is connected to better stability. We suggest that sheltered C. formosus may grow into the open headspace, thus facilitating more effective spore dispersal. C. formosus growing in the open forest floor do not exhibit impeded dispersal and are thus shorter and smaller. Taken together, it is unlikely that there is a trade-off between morphologies that improve long distance dispersal or sporocarp stability.

Finnish non-timber forest products (NTFPs) are valued on the national and international markets. Yet, the annual marketed quantities vary considerably, causing instability in supply chains. Thus, climatic and economic factors affecting the annually aggregated supply of top-marketed mushrooms (ceps, milk caps, and chanterelle) and berries (bilberry, cowberry, and cloudberry) in Finland were studied. Data on mushroom and berry market prices (&euro, /kg) and quantities (kg) were obtained from the statistics on annual quantities of berries and mushrooms bought by organized trade and industry in Finland (1978&ndash, 2016). The species-specific supply functions were described as linear regression models, where annually aggregated quantities were predicted as a function of climatic and economic variables. Our results suggested that climatic variables influenced the marketed quantities of NTFPs through the biological yields of berries and mushrooms, and that the market price had a negative effect on the marketed quantities of ceps, milk caps, and berries. The markets for NTFPs have become more international at the second half of the study period (1999&ndash, 2016), modifying the price-quantity relationships of ceps, milk caps and cloudberries. Additionally, the number of visas issued to Thai pickers increased the marketed quantities of bilberries and cowberries.

Blue chanterelle (Polyozellus multiplex), known as an edible mushroom, was extracted using methanol to screen on anti-viral agent. Syncytium formation in Newcastle disease virus (NDV)-infected baby hamster kidney (BHK) cell originates from the trafficking of viral glycoprotein into cell-surface. Blue chanterelle inhibited not only syncytium formation, but also trafficking of glycoprotein, hemagglutinin-neuramidase (HN), onto cell-surface. Viral glycoprotein is processed within the endoplasmic reticulum during routing to surface. Blue chanterelle extracts showed the inhibitory activities (IC50 10 μg/mL) against α-glucosidase. These results suggested that blue chanterelle extracts inhibited the cell-surface expression of NDV-HN glycoprotein without significantly affecting HN glycoprotein synthesis in NDV-infected BHK cells.

Fruiting bodies of Pleurotus ostreatus (oyster) and Cantharellus cibarius (chanterelle) mushrooms underwent acid fermentation using 3 strains of lactic acid bacteria (LAB) as starter cultures. Polyphenol contents, antioxidant activities, and phenolic acid contents in fresh, blanched, and fermented mushrooms were investigated. Fruiting bodies of oyster mushrooms exhibited higher total phenolic contents than chanterelle mushrooms. Blanching caused a decrease in polyphenol contents and antioxidant activities in both mushroom types. No important differences were observed in total phenolic compound contents (measured using Folin-Ciocalteau reagent) in mushrooms using different LAB strains. Lactobacillus plantarum was the most useful microorganism for lactic acid fermentation of fruiting bodies for reduction of the pH value. The highest concentrations of single phenolic acids: gallic, homogentisic, and ferulic acids were present in mushrooms fermented using L. plantarum.

This study examines the influence of some climate elements on the collected quantities of two commercially most significant types of mushrooms in Serbia (porcini and chanterelle). The main objective of the research is to determine the extent of the collected quantity of porcini and chanterelle, which can be expected in different scenarios of climate change (А1Bmin, А1Bmax, A2min и A2max), based on forecasts of temperature and rainfall changes. The general (dialectical) and specific (modelling methods) are used in the research, as well as the classical scientific methods of reasoning. The calculation of the average annual exponential growth rate (IS) was carried out by forming exponential regression models of the trend of porcini and chanterelle collected quantities. In the research it was found that, according to the data related to the period up to 2014, one can expect a decrease in the movement of both porcini and chanterelle IS, and thus a decrease in the collected quantities. On the other hand, according to the data related to the period up to 2040, in both cases one can expect some fluctuation (increase and decrease) in the movement of IS. According to the data related to periods after 2041 (especially for the period until 2100), in both cases, one can expect a decrease in the collected quantities, as a result of changes in T and P, caused by the assumed climate change.

This study determined the vitamin B₁₂ content of six wild edible mushrooms which are consumed by European vegetarians. Zero or trace levels (0.01-0.09 µg/100 g dry weight) of vitamin B₁₂ were determined in porcini mushrooms (Boletus spp.), parasol mushrooms (Macrolepiota procera), oyster mushrooms (Pleurotus ostreatus), and black morels (Morchella conica). By contrast, black trumpet (Craterellus cornucopioides) and golden chanterelle (Cantharellus cibarius) mushrooms contained considerable levels (1.09-2.65 µg/100 g dry weight) of vitamin B₁₂. To determine whether C. cornucopioides or C. cibarius contained vitamin B₁₂ or other corrinoid compounds that are inactive in humans, we purified a corrinoid compound using an immunoaffinity column and identified it as vitamin B₁₂ based on LC/ESI-MS/MS chromatograms.

Wild edible mushroom demand has increased substantially in OECD countries in the last few years. Nevertheless, few studies have been published in recent years on these markets. The main objective of this paper is to characterise the saffron milk cap (Lactarius deliciosus Fr.) demand in Spain. Data sources in this study come from main Central Markets in Spain. Using econometric methods, we have found that the consequence of an increase in the price of the saffron milk cap has a negative effect on demand. However, changes in the percentage of persons born in Catalonia every year exercise a positive effect, and price increases in the Madrid market could also induce an increase in the Lactarius deliciosus demand in the Barcelona Central Market. The consequences of chanterelle imports on the Catalan demand for the saffron milk cap appear to be negative. Finally, results indicate that the saffron milk cap and oyster mushroom behave as complementary goods and, therefore, consumption of one of these mushrooms reinforces the other's consumption.

White button, crimini, shiitake, maitake, enoki, oyster, chanterelle, morel, portabella, and uv-treated portabella mushrooms were sampled from U.S. retail outlets and major producers. Folate [5-methyltetrahydrofolate (5-CH3-H4folate), 10-formyl folate (10-HCO-folate), 5-formyltetrahydrofolate (5-HCOH4folate)] was analysed using a validated LC–MS method in four composites of each product, including an in-house mushroom control composite and a reference material (BCR 485 Lyophilised Mixed Vegetables). Chanterelle and morel had the lowest total folate (2–6 lg/100 g), oyster had the highest (mean, 44.2 lg/100 g); other types contained 12.4 lg/100 g (shiitake) to 29.8 lg/100 g (vitamin D-enhanced portabella). Enoki and oyster had almost exclusively 5-CH3-H4folate. Morel and chanterelle contained predominately formyl folates. Other species had similar amounts of 5-CH3-H4folate and formyl folates. Vitamin D(2) (ergocalciferol) and sterols were analyzed in mushrooms sampled nationwide in the United States to update the USDA Nutrient Database for Standard Reference. Vitamin D(2) was assayed using HPLC with [(3)H]-vitamin D(3) internal standard and sterols by GC-FID mass spectrometric (MS) confirmation. Vitamin D(2) was low (0.1-0.3 μg/100 g) in Agaricus bisporus (white button, crimini, portabella) and enoki, moderate in shiitake and oyster (0.4-0.7 μg/100 g), and high in morel, chanterelle, maitake (5.2-28.1 μg/100 g) and UV-treated portabella (3.4-20.9 μg/100 g), with significant variability among composites for some types. The genus Cantharellus is known to have a global distribution and to form ectomycorrhizal associations with a diverse set of host plants. Here we describe Cantharellus pseudoformosus as a species new to science with a possible association with Cedrus deodara. ITS and LSU data demonstrated that the material from India is distinct from Cantharellus formosus and other closely related species.

Acetylenic specialized metabolites containing one or more carbon-carbon triple bonds are widespread, being found in fungi, vascular and lower plants, marine sponges and algae, and insects. Plants, moss, and most recently, insects, have been shown to employ an energetically difficult, sequential dehydrogenation mechanism for acetylenic bond formation. Here, we describe the cloning and heterologous expression in yeast of a linoleoyl 12-desaturase (acetylenase) and a bifunctional desaturase with Δ12-/Δ14-regiospecificity from the Pacific golden chanterelle. The acetylenase gene, which is the first identified from a fungus, is phylogenetically distinct from known plant and fungal desaturases. Together, the bifunctional desaturase and the acetylenase provide the enzymatic activities required to drive oleate through linoleate to crepenynate and the conjugated enyne (14Z)-dehydrocrepenynate, the branchpoint precursors to a major class of acetylenic natural products.
