The effects of A rtemisia afra (African wormwood) essential oil incorporation in diets on meat quality and fatty acid profilers of broilers was assessed. Four hundred Cobb500 day-old chicks were obtained and placed randomly into the following 4 diets replicated 10 times: NC-Negative control (broiler diet without antibiotics), PC-positive control (broiler diet with zinc bacitracin), AA1-broiler diet + 0.1 % A. afra essential oil and AA2 - broiler diet + 0.3% A. afra essential oil. A pen having 10 chicks was regarded as the experimental unit. From the results, all carcass traits were influenced (P < 0.01) by diet apart from the dressing out percentage. The highest slaughter weights (1846g) and hot carcass weight (1427.36g) were obtained in birds fed the AA1 diet. Highest ultimate pH value (6.24) was obtained from the birds fed the AA1 while the highest values for meat lightness (L*) were obtained in birds offered the AA1 and NC diets (55.73 and 55.82). Cooking loss was highest in birds fed the NC (31.01%) diet. Birds fed the AA2 diet (23.7mg/g)) had the highest intramuscular fat followed by the AA1 fed birds. Inclusion of A. afra essential oils in diets also increased the proportion of PUFAs, n-6 and n-3 fatty acids and the PUFA/SFA ratios. In order to investigate the effect of slaughter weight (SW) on carcass characteristics and meat quality, we measured the carcass characteristics, meat quality, and amino acid metabolomics characteristics of longissimus dorsi ( LD ) muscle from Tianfu finishing (TF) pigs. Based on SW, 13 pigs were divided into three groups (100-kg group, 125-kg group, and 150-kg group with 3, 5, 5 pigs in each group, respectively). Raising SW to 125 kg or 150 kg increased average backfat thickness ( P < 0.01) and intramuscular fat content ( P < 0.01), and decreased shear force ( P < 0.01). A total of 231 amino acid metabolome from three amino acid classes identified with metabolomics were analyzed, and 93 differentially expressed metabolites (DEMs) were identified (69 up-regulated DEMs and 24 down-regulated DEMs). The DEMs, including urea, 3-iodo-L-tyrosine, N-glycyl-L-leucine, and N, N-dimethylglycine with amino acid metabolism, were significantly induced ( P < 0.01). KEGG pathway analysis showed that these DEMs were significantly enriched ( P < 0.01) in 135 metabolism pathways, including pathways related to amino acid metabolism, such as arginine and proline metabolism, glycine, serine and threonine metabolism, alanine, aspartate and glutamate metabolism, tryptophan metabolism, and beta-alanine metabolism. Our research findings provided new insights into the impact of SW on amino acid distribution and theoretical support for genetic breeding of meat quality of TF pigs. Study objectives included the assessment of carcass fatty acid composition and meat texture characteristics of younger Holstein Friesian bulls. Three experimental groups were formed based on the weights of the 23 young bulls at slaughter: lighter, medium, and heavier. Samples were taken from the Gluteus medius (GM) and Longissimus thoracis muscles 24 h after slaughter. Fatty acid composition, Warner-Bratzler Meat Shear (WBS) measurements, as well as textural profile analysis (TPA) and sensory analysis of the muscle samples were conducted. The fatty acid composition was determined using Thin Layer Chromatography (HPTLC). Polyunsaturated fatty acids and dietary fatty acids give a neutral hypocholesterolemic effect in direct fluorescent antibody (DFA) contents, DFA/OFA (C14:0+C16:0) ratio, hardness, Warner-Bratzler Shear force and also the chews number - which is desirable - before swallowing (NCBS) the meat were significantly decreased with the increasing slaughter weight. Higher slaughter weight resulted in a larger amount of beef with a better panel tenderness score; however, the meat obtained from the LSW group was less healthy considering the fatty acid profile. Additionally, internal fat contained the highest saturated fatty acids concentrations, while subcutaneous fat contained the highest amount of monounsaturated fatty acids. Furthermore, intramuscular fat levels were highest in PUFA and PUFA/SFA ratio. Our objective was to evaluate the productive parameters of ewes and their lambs in relation to ewe age and to develop models for predicting lamb weight at birth and weaning in a tropical warm-climate pasture. Individual data were collected from 273 ewes and 273 lambs, between 2013 and 2021. During this period all animals were kept on pastures of Brachiaria brizantha cv. Marandu All lambs in the experiments were supplemented in creep-feeding. A descriptive statistical analysis was performed using the PROC SUMMARY procedure in SAS (SAS University Edition, SAS Institute Inc. Cary, CA, USA). Pearson correlation coefficients between variables were estimated using the PROC CORR procedure in SAS (SAS University Edition, SAS Institute Inc. Cary, CA, USA). Model adjustments and variable selection were performed using PROC REG in SAS (SAS University Edition, SAS Institute Inc. Cary, CA, USA). The STEPWISE option and Mallow's C(p) were used to select the variables included in the equations. Outliers were identified by evaluating the studentized residuals based on the predicted values from the equations. Residual analysis was predicted by regression minus observed values and those that fell outside the range of -2.5 to 2.5 were removed. Several statistics were used to assess the predictability of the equations, including the coefficients of determination (r 2 ) and mean standard error (RMSE). The average ewe age at lambing was 3.4 ± 1.7 years, with an average weight of 56.9 ± 8,9 kg and average body condition score (BCS) of 2,4 ± 0.8 points. The average ewe age at weaning was 51.1 ± 7.9, with average BCS of 1.8 ± 0.8 points. The average lamb at birthing was 3.9 ± 0.9 kg. The average lamb at weaning was 21.0 ± 4.9, with daily gain of 0.2 ± 0.1 kg/day and total gain of 17.1 ± 4.7 kg birth to weaning. The lamb produced by ewe at lambing was 5.3 ± 1.7 kg/ewe. The lamb weaned by ewe at weaning was 28.7 ± 10.8 kg/ewe. The ratios of lamb produced per ewe at birth and at weaning were 0.1 ± 0.03 and 0.6 ± 0.2, respectively. The lamb's birth weight showed a positive linear relationship with the age of the ewe, increasing by 115 g per year of age. The regression equations adjusted for ewe age had maximum points ranging from 4.2 to 5.2, occurring at average age of 4,7 years. The other characteristics showed a quadratic tendency. The results suggest the culling of ewes at five years of age to generate lambs with ideal weight at birth and at weaning raised in warm tropical pastures., (© 2023. This study was carried out through two separate experiments aiming at evaluating the effects of two space allowances (0.54 and 0.62 m 2 /pig in summer and 0.44 m 2 /pig and 0.50 m 2 /pig in winter) on the behavioural and physiological response, and meat quality of pigs of two slaughter weights (120 kg and 140 kg). In summer, higher blood haematocrit levels were found at slaughter in heavier pigs transported at a smaller space allowance ( p = 0.04). During lairage, pigs transported at a smaller space allowance started fighting later ( p = 0.04). Fighting behaviour was greater in heavier pigs ( p ≤ 0.05), whilst their drinking activity was lower ( p < 0.05). This resulted in greater exsanguination blood CK levels ( p < 0.01) and drier hams ( p = 0.05) in heavier pigs. In winter, only lower space allowance influenced some meat quality traits ( p < 0.05), but these effects were minor. The effects of space allowance during summer transports on within-truck ambient conditions, post-transport pigs' welfare, and meat quality are similar. Mixing heavier pigs may result in greater aggressiveness and more fatigue-related meat quality variation during summer. Overall, winter transport results may have been biased by the short journey and within-truck load distribution.

The purpose of this study is to investigate the quality characteristics and fatty acid composition of meat from male Akkaraman (AKK) and Bafra × Akkaraman B 1 (BA B 1 ) lambs slaughtered at different live weights. Thirty-six male lambs (18 AKK and 18 BA B 1 ) were slaughtered at three different slaughter weights (35, 40, and 45 kg) after being fattened intensively. Meat physical quality characteristics and fatty acid profiles were used as response variables. Color parameters (L*, a*, and b*) and pH were not significantly influenced by genotype and slaughter weight (SW). Water-holding capacity (WHC) was significantly affected by SW (P < 0.05), cooking loss (CL) by genotype (P < 0.001). Increasing SW, intramuscular fat of the Longissimus thoracis muscle showed increased total unsaturated fatty acids (TUFA) (P < 0.01) and ratios of TUFA/saturated fatty acids (SFA) (P < 0.01), and decreased thrombogenic and atherogenic indices (P < 0.01). Monounsaturated fatty acids (MUFA) (P < 0.05) and polyunsaturated fatty acids (PUFA) (P < 0.01) varied on with the genotypes. In conclusion, genotype and SW did not greatly affect meat quality; however, MUFA and PUFA mutually changed according to the genotype, and fatty acid percentages improved according to the SW., (© 2023. The objective of this study was to understand and predict the intake and performance of Nellore cattle finished in the feedlot. Individual data from 144 non-castrated male Nellore steers finished in the feedlot between the years 2016 and 2020 were used. Descriptive statistical analyses and Pearson's correlation were performed. The outliers were tested by evaluating the studentized residuals in relation to the values predicted by the equations. Residues that were outside the range of - 2.5 to 2.5 were removed. The goodness of fit of the developed equations was evaluated by the coefficients of determination (r 2 ) and root mean square error (RMSE). The mean dry matter intake (DMI) was 10.2 kg/day, neutral detergent fiber intake (NDFI) was 3.4 kg/day, corresponding to 33.3% of DMI, crude protein intake (CPI) was 1.6 kg/day, and total digestible nutrient intake (TDNI) was 7.1 kg/day. The CPI to ADG ratio was 1.3 kg CPI/kg ADG and the TDNI to CPI ratio was 4.5 kg TDNI/kg CPI. The averages of productive performance were 1.3 kg/day for average daily gain (ADG), 152.6 kg for total weight gain (TWG), and 497.8 kg for final body weight (FBW) in average days in the confinement of 115.7 days. The intake measures correlated significantly with the performance measures, except for carcass yield and days in the feedlot. TWG had a high positive correlation with ADG (r = 0.84), while FBW had a positive correlation (r = 0.86) with hot carcass weight (HCW). Measures of intake, performance, and days in the feedlot can be used as predictors of DMI, FBW, HCW, TWG, and ADG. The aim of this study was to investigate effects of dietary ratio of valine to isoleucine [R(V/I)] on carcass characteristics and meat quality of finishing pigs and whether slaughter weight influence the effect. We carried out a 2 × 3 factorial trial with two slaughter weight (105 vs. 130 kg) and three R(V/I) (0.58, 1.23, and 2.60 at 75-100 kg body weight, and 0.70, 1.24, and 2.39 at 100-135 kg body weight for L-, N- and H-R (V/I), respectively). Data show that increasing slaughter weight significantly increased meat color (a* 45 min and b* 45 min ), drip loss and shear force ( P < 0.05). Meanwhile, increasing slaughter weight reduced sarcomere length, the proportion of protein-bound water, and most kinds of muscular total amino acid contents except for tryptophan and arginine, while increased contents of muscular free lysine, tryptophan, leucine, isoleucine, valine, alanine, and arginine in the M. longissimus thoracis ( P < 0.05). Health lipid indices based on fatty acid composition of intramuscular lipid were improved as the slaughter weight increased ( P < 0.05). Notably, pigs received N-R (V/I) diet improved carcass traits in terms of thinner backfat thickness and higher fat-free lean index, as well as increased meat flavor-contributing amino acids at the cost of reduced intramuscular fat content and increased shear force of cooked meat compared with the pigs fed L-R (V/I) and H-R(V/I) diets ( P < 0.05). H-R (V/I) diet decreased ultimate pH value and sarcomere length of the skeletal muscle but increased the proportion of free water ( T 23 < 0.05). In conclusion, both slaughter weight and dietary ratio of valine to isoleucine exerted significant impacts on carcass characteristics, meat quality and nutrition values. In particular, carcass traits and meat color of lighter pigs were more susceptible to the influence of dietary R (V/I) relative to heavier pigs.P < 0.05). The present study aimed to assess the feasibility of increasing the slaughter weight (SW) of non-lean finishing pigs to improve their meat quality. A total of 36 (Landrace × Yorkshire) × Duroc gilts and barrows were slaughtered at 115 (Av), 125 (Hi), or 135 (XHi) kg, followed by physicochemical analyses and sensory evaluation on their longissimus dorsi (LD) and Semimembranosus (SM) muscles. Backfat thickness was greater ( p < 0.05) for the XHi (31.2 mm) and Hi (29.3 mm) groups than for Av (25.0 mm). Dressing percentage and yield of the belly per whole carcass were also slightly greater for XHi and Hi vs. Av. The intramuscular fat (IMF) content of SM was greater for XHi (2.64%) than for Av (1.83%) and Hi (2.04%) and also was correlated with SW ( r = 0.55). The pH value, lightness, redness, drip loss, shear force, and moisture and protein contents of LD and SM, as well as IMF content of LD, were unaffected by SW. Percentages of 14:0, 16:0, and total saturated fatty acids (FA) were less for Hi and XHi vs. Av in SM, those of total unsaturated FA, 18:2, 20:4, and n-6 being opposite; FA composition of LM was not influenced by SW except for a reduced 18:0 percentage for XHi vs. Av. The sensory score was less for XHi vs. Av for odor in fresh LD and SM, and less for Hi and XHi vs. Av for aroma in fresh LM; scores for color, drip loss, marbling, and acceptability were unaffected by SW. As for cooked muscles, none of the scores for color, aroma, flavor, juiciness, tenderness, and acceptability was affected by SW, except for a greater LD color score for Hi and XHi vs. Av. Collectively, the results suggested that the increased yield of the carcass and belly due to increased SW is outbalanced negatively by excessive backfat deposition in production efficiency, whereas the SW increase exerts little influence on overall sensory quality of fresh or cooked meat. Slaughter weight (SW) is critical for dry-cured ham production systems with heavy pigs. A total of 159 C21 Goland pigs (gilts and barrows) at 95 ± 9.0 kg body weight (BW) from three batches were used to investigate the impact of ad libitum feeding on SW, growth performance, feed efficiency, and carcass and green ham characteristics. Diets contained 10 MJ/kg of net energy and 7.4 and 6.0 g/kg of SID-lysine. Slaughter weight classes (SWC) included <165, 165-180, 180-110 and >210 kg BW. In each batch, pigs were sacrificed at 230 or 258 d of age. Left hams were scored for round shape, fat cover thickness, marbling, lean colour, bicolour and veining. Data were analyzed with a model considering SWC, sex and SWC × Sex interactions as fixed factors and the batch as a random factor. The linear, quadratic and cubic effects of SWC were tested, but only linear effects were found. Results showed that pigs with greater SWC had greater average daily gain and feed consumption, with similar feed efficiency and better ham quality traits: greater ham weight, muscularity, and fat coveringin correspondence of semimembranosus muscle. Barrows were heavier and produced hams with slightly better characteristics than gilts.

The aim of this work was to estimate correlated responses in growth traits and their variabilities in an experiment of selection for ovulation rate during 10 generations in rabbits. Individual weight at 28 days old (IW28, kg) and at 63 days old (IW63, kg) was analyzed, as well as individual growth rate (IGR = IW63 - IW28, kg). The variability of each growth trait was calculated as the absolute value of the difference between the individual value and the mean value of their litter. Data were analyzed using Bayesian methodology. The estimated heritabilities of IW28, IW63 and IGR were low, whereas negligible heritabilities were obtained for growth variability traits. The common litter effect was high for all growth traits, around 30% of the phenotypic variance, whereas low maternal effect for all growth traits was obtained. Low genetic correlations between ovulation rate and growth traits were found, and also between ovulation rate and the variability of growth traits. Therefore, genetic trends methods did not show correlated responses in growth traits. A similar result was also obtained using a cryopreserved control population.

Italian dry-cured ham production requires pigs to be slaughtered at 160 ± 16 kg at 9 months of age (control, C). The study explored three alternatives, based on different feeding conditions: (1) allowing pigs to express their growth potential by letting them reach 160 ± 16 kg slaughter weight (SW) at younger slaughter age (SA) (younger Age, YA); (2) allowing pigs to express their growth potential by maximizing their SW at 9 months SA (greater weight, GW); (3) increasing the SA required to reach 160 ± 16 kg SW (older age, OA). Pigs (336 C21 Goland, 95 kg initial body weight) were slaughtered on average at 257, 230, 257, and 273 d SA and 172.7, 172.3, 192.9, and 169.3 SW kg for the four treatments, respectively. C pigs had an average daily gain (ADG) of 715 g/d and feed efficiency (FE) of 0.265 (gain to feed). Compared to C, YA pigs had higher ADG (+32%), FE (+7.5%), and better ham adiposity; GW pigs had higher carcass weight (+12%), ADG (+25%), trimmed ham weight (+10.9%), and better ham adiposity. OA treatment affected ADG (-16.4%), FE (-16.6%), and trimmed ham weight (-3.6%). YA and GW could be promising alternatives to C as they improved FE and ham quality traits.

The effects of live weight on carcass characteristics and meat quality of Australian Rangeland goats were determined. Fifty-two intact-male kid goats were fed Mitchell grass hay and finisher pellets ad libitum for 42 days. Prior to slaughter, kids were categorised into live weight groups: 'Heavy' (≈33.1 kg) or 'Light' ≈ 24.3 kg). Fifteen kids per group were randomly selected, slaughtered and carcass characteristics measured. The longissimus lumborum (LL) and the biceps femoris (BF) muscles were removed for quality measurements. The Heavy group had higher dressing, hindquarters, non-carcass component and offal percentages (P < 0.05). Live weight had no effect on proportion of carcass cuts, muscle meat colour, cooking loss, Warner-Bratzler shear force, total fat or ash (P > 0.05), but influenced the moisture and protein content in the LL and the moisture content in the BF (P < 0.05). Fattening performance, slaughter, and carcass traits of intact and castrated Angora goat kids slaughtered at different slaughter weights were examined. A total of 96 (48 intact, I-kids, and 48 castrated, C-kids) single Angora kids were fattened, and 48 of them (24 I-kids and 24 C-kids) were slaughtered at slaughter weights (SW) of 20, 25, and 30 kg. Castration negatively affected fattening performance, and the kids showed rising daily weight gain with increasing SW. While dressing percentages were not affected by castration, it caused a tendency for a decrease in offal. However, with the increase in SW, dressing percentages increased, and offal decreased. Castration increased non-carcass fat percentages and back fat depth. The proportions of individual cuts did not generally vary because of castration but changed with SW; foreleg percentages decreased (P < 0.001) while neck percentages increased (P < 0.05). Carcass composition was affected by castration; the percentages of carcass lean (P < 0.001) and bone (P < 0.01) dropped, and total fat (P < 0.001) increased. SW had an impact on carcass composition; the percentages of carcass bone (P < 0.001) declined, and lean (P < 0.001) and total fat (P < 0.001) raised as SW increased. The lean/fat ratio was affected by castration (P < 0.001) and increasing SW (P < 0.05). Castration reduced the lean percentage in all cuts. The leg showed the highest lean percentage, whereas the greatest fat ratio was found in the breast+flank in all SW groups. Consequently, castration of Angora male kids negatively affected fattening performance and altered the carcass composition, while the increase in slaughter weight improved fattening performance and slaughter and carcass characteristics.

This research was performed to examine the effects of different slaughter weights (SWs) on some meat quality traits of Anatolian Buffaloes (n = 20). Weaned 5-month-old Anatolian Buffalo calves with an average live weight of 100 kg were used as the animal material of the study. Experimental calves were randomly divided into four different slaughter weight groups 200 kg (SW-1: n = 5), 250 kg (SW-2: n = 5), 300 kg (SW-3: n = 5), and 350 kg (SW-4: n = 5). Anatolian buffalo calves were fed with 30:70 roughage/concentrate feed ration. Meat quality attributes of musculus longissimus dorsi thoracis (LT) muscle of calves slaughtered at target slaughter weight were investigated. The quality traits included 45th minute pH (pH 45min ), 24th hour pH (pH 24h ), 1st and 24th hour color parameters (L* (lightness), a* (redness) and b* (yellowness), water holding capacity (WHC), drip loss (3rd day (DL-3) and 7th day (DL-7)), freeze-thaw loss (FTL), cooking loss (CL), chemical composition), fatty acid, and cholesterol profiles. The differences in LT muscle pH 24h , 24th hour a* and b* color parameters and WHC values of SW groups were not found to be significant (P > 0.05). The lowest DL-3 was observed in SW-1 (6.89%) and the greatest in SW-2 (8.96%) groups. Ether extract (EE) ratios increased (P < 0.01) and polyunsaturated fatty acid (PUFA)/saturated fatty acid (SFA) proportions decreased (P > 0.05) with increasing SWs. The differences in total cholesterol contents of SW groups were not detected to be significant (P > 0.05). Among the SW groups of Anatolian Buffaloes, SW-1 was found to be prominent with high WHC, CP, and PUFA/SFA ratio and the least DL-3 ratio.

This study was conducted to investigate the effects of slaughter weight on chemical composition, physical properties, and fatty acid profile of musculus longissimus dorsi (MLD) in Holstein bulls. The bulls (n = 20) were divided into two slaughter weight groups as light (450-520 kg) and heavy (521-580 kg) according to body weights at slaughter. After resecting MLD from the carcass, its chemical composition, physical properties, and fatty acid profile were determined. The analysis showed that fat, ash, and cholesterol contents of MLD were significantly affected by slaughter weight (P < 0.05). Higher fat, ash, and cholesterol contents were determined in heavy bulls compared with light ones. However, the protein and moisture contents were not significantly different between slaughter weight groups in terms of pH, drip loss, and water holding capacity. With regard to meat color, the a* was significantly higher in light bulls; however, the L* and b* values were similar in both slaughter weight groups. Of all fatty acids, only C:10 was found the highest in heavy bulls (P < 0.05). The n-6/n-3 ratio was significantly lower (P < 0.05) in light bulls compared with heavy ones. Consequently, the best results were obtained from light Holstein bulls in order to achieve better beef quality.

Rabbit commercial maternal lines are usually selected for litter size (LS) and paternal lines for growth rate (GR). Line OR&#95;LS was selected by ovulation rate (OR) and LS to improve LS more efficiently. In this study, growth traits of line OR&#95;LS were evaluated by estimating the correlated response on weaning weight (WW), slaughter weight (SW) and GR during fattening period as well as their variability (DWW, DSW and DGR, respectively). Data were analyzed using Bayesian inference methods. Heritability estimates were low for growth traits (0.09, 0.13 and 0.14 for WW, SW and GR, respectively) and negligible for growth traits variability (0.01, 0.004 and 0.01 for DWW, DSW and DGR, respectively). Moderate common litter effect ratio (c2; 0.35, 0.28 and 0.27) and low maternal effect ratio (m2; 0.11, 0.05 and 0.01) were obtained for WW, SW and GR, respectively. Both c2 and m2 were lower at slaughter than at weaning. In addition, low common litter effect and negligible maternal effect were observed for growth traits variability. Genetic correlations between LS and both growth traits and their variability were close to zero. Positive genetic correlations were observed between OR and growth traits (0.19, 0.38 and 0.36 for WW, SW and GR, respectively) as well as between OR and growth traits variability (0.35, 0.62 and 0.20 for DWW, DSW and DGR, respectively). Positive correlated responses in both periods were obtained for growth traits, WW, SW and GR (0.037, 0.156 and 0.110 kg, respectively). The correlated response found in growth traits might be due to the positive genetic correlations between OR and these traits. However, selection for OR and LS using independent culling levels did not modify the growth traits variability. Therefore, no negative consequences on growth traits can be expected in current commercial maternal lines.

This study was performed to determine the slaughter and carcass traits, meat color, pH, nutrient composition, fatty acids, amino acids, and cholesterol content of local Turkish goose varieties. In the present study, a total of 80 geese from white, black, gray, and multicolored varieties were reared in an extensive production system at 28 wk of age. Quality analysis was performed on breast and thigh meat, as well as on the skin and abdominal fat of studied geese. Slaughter and carcass weights were significantly higher in the white variety (P < 0.01). Measured abdominal fat was lower in black and gray geese. Furthermore, the color and pH values were significantly different on breast, thigh, and skin among varieties. Additionally, measured breast meat b*, thigh meat L*, and b* values were higher in male geese. Breast meat protein levels were lower in black and gray geese, and also lower in the thigh meat of gray geese. Total breast meat amino acids were lower in white geese, and the amino acid content of thigh meat was lower in multicolored varieties. Moreover, differences in fatty acid composition were found among the studied varieties. Non-perforating abomasal lesions are common in Danish Holstein cows, but the impact on production has not been studied. Our objective was to compare milk yield, carcass weight, days to first service and initiation of breeding among cows with different non- perforating abomasal lesion types and locations to cows with no such lesions. The occurrence, type and localisation of non- perforating abomasal lesions were characterised at slaughter in Danish Holstein cows, and first insemination dates (n = 592), milk yield (n = 999) and carcass information (n = 1,317) was also available. Production and reproduction data were retrieved from all other cows from the herds of origin. This information was used to evaluate the expected production performance in the herds. Of the 1,317 cows investigated at slaughter, 572, 428, 677, and 91 cows had at least one lesion Subtype 1a (mucosal erosion), 1b (acute deeper lesion), 1c (chronic deeper lesion) or 1d (scarring following a lesion), respectively. Cows with lesion Subtype 1c and lesions in the pyloric part of the abomasum were generally found to be culled later in lactation than their herd mates. Milk yield and days to first service were not associated with any lesion types. The occurrence of lesion Subtype 1c and lesions in the pylorus were associated with a higher weight at slaughter compared to cows without lesions of this subtype or in this location. Most Subtype 1c lesions was found in the pylorus. Initiation of breeding before 150 days in milk was positively associated with the number of lesions in the corpus of the abomasum. We discovered two sources of selection bias. First, cows with lesions had a higher carcass weight but also remained in the herds for longer after calving than cows without lesions. This would give them more time to overcome the period of negative energy balance in early lactation. Second, although the causes of culling were not known, cows with no lesions generally had a relatively low milk yield and could have been culled for this reason.". While non- perforating abomasal ulcers may have an effect on the production and reproduction data, the observational data presented show no evidence of such a relationship. It may be necessary to employ other study designs to identify any effects that might exist, but if the relationship cannot be demonstrated in a dataset of this magnitude, it is not deemed to be of practical relevance., (Copyright © 2019 Elsevier B.V. One-hundred-twenty crossbred pigs finished at 175-185 days of age were used to investigate the effects of live weights at slaughter on the meat quality, volatile flavor compounds, and sensory attributes of pork meat. Based on the live weights at slaughter, three weight groups (n = 36 per group) were classified as follows: light weight (LW: 100 kg), medium weight (MW: 110 kg), and heavy weight (HW: 120 kg). After slaughter, longissimus dorsi muscle samples were taken and used for the analyses of aforementioned parameters. The HW group had higher fat content and water holding capacity compared to the LW or MW group (p < 0.05). The HW group also showed higher levels for majority of unsaturated fatty acids and total polyunsaturated fatty acids than the LW group (p < 0.05). The slaughter weight significantly affected the amounts of 11 among the 47 flavor compounds identified. Significantly higher amounts of fatty acids oxidation-derived flavor compounds (aldehydes) were found in the HW group than in the other groups. Noticeably, increasing slaughter weight was associated with higher sensorial scores for flavor, juiciness, and acceptance scores (p < 0.05). The aim of this study was to determine the optimum carcass weight for meat quality and fatty acid composition in fat-tailed Chall lambs. Thirty lambs (15 male and 15 female) were allotted to three carcass weight groups: (1) light carcass weight (LCW 10-15 kg), (2) moderate carcass weight (MCW 15-20 kg), and (3) heavy carcass weight (HCW 20-25 kg). Back fat thickness and intramuscular fat (IMF) content were greater (P < 0.05) for HCW and female groups than their counterparts, respectively. Drip loss was lower (P < 0.05) for female and HCW lamb groups than male and LCW group, respectively. Female and LCW lambs had lower (P < 0.05) shear force compared with their corresponding male and HCW groups. Meat from LCW and MCW lambs had higher lightness (L* value; 43.6, 43.5 vs. 39.9), while redness (a* value; 13.6, 13.9 vs. 15.4) was greater for HCW and female (13.7 vs. 14.9) lambs compared with their counterparts (P < 0.05). The MCW lambs produced meat with higher overall acceptability compared with other two groups (P < 0.05). The HCW lambs contained lower polyunsaturated fatty acids (PUFA), polyunsaturated fatty acids to saturated fatty acids (P:S) ratio, and n-3 PUFA compared with LCW group (P < 0.05). Results show that as the animal grow faster and achieved HCW, the IMF content also increased mainly as storage triglyceride, while functional fats consisting long-chain omega-3 did not increase proportionately. In addition, the study also demonstrates that using IMF for predicting or assessing meat quality aspects such as juiciness and flavor or the nutritional value of meat relating to health claimable fatty acids would not be appropriate.

The aim of this trial was to analyse the environmental impact of the rabbit production system, through a cradle to-slaughterhouse gate using a life cycle approach. Since in a rabbit farm the production efficiency depends on the feed conversion and quantity of meat produced, scenarios characterized by different slaughter weights and dissimilar level of mortality during the fattening phase were hypothesized. Climate change determined in the standard rabbit resulted in 3.86 kg CO 2 eq/kg live weight, slightly higher than that of broilers and not different from that of pork. High and Low mortality scenarios resulted in impact changes from +5.22 and -2.31%, respectively, compared with the standard system. An increase of environmental impact values (up to 36%) was registered when live weight enhanced from 2.7 to 2.9 kg for standard and heavy rabbits. Previous research has suggested that cattle predisposed to dark cutting can be identified from live animal or carcass characteristics. This hypothesis was tested using production and phenotype data from an existing data set collected from heifers (n=467) on study at three farms. Carcasses in the data set graded Canada AAA (n=136), AA (n=296), A (n=14), and B4 (dark cutting, n=21). Farm was identified as significant (P=0.0268) by CATMOD analysis and slaughter weight and carcass weight accounted for the variation in dark cutting frequency across the farms. Analysis of variance indicated that dark cutting heifers had reduced weight at weaning (P<0.0001) and at slaughter (P<0.0001), and produced reduced weight carcasses (P<0.0001). Results of logistic regression indicated that the probability of dark cutting was decreased in heifers slaughtered at live weight greater than 550kg and in carcasses weighing greater than 325kg., (Copyright © 2016 Elsevier Ltd. The Liangshan pig is a traditional Chinese small-sized breed; it has a relatively long feeding period and low meat production ability but superior meat quality. This study utilized three non-linear growth models (Von Bertalanffy, Gompertz, and logistic) to fit the growth curve of Liangshan pigs from an unselected, random-bred pig population and estimate the pigs most suitable slaughter weight. The growth development data at 20 time points of 275 Liangshan pigs (from birth to 250 d) were collected. To analyze the relative gene expression related to development, seven slaughter weight phases (50, 58, 66, 74, 82, 90, and 98 kg) (20 pigs per phase) were examined. We found that the Liangshan pig growth curve fit the typical S-curve well and that their growth turning point was 193.4 days at a weight of 62.5 kg, according to the best fit Von Bertalanffy model based on the goodness of fit criteria. Furthermore, we estimated that the most suitable slaughter weight was 62.5 to 74.9 kg based on the growth curve and the relative expression levels of growth-related genes.

The first aim of the study was to compare selected meat quality parameters in porkers without the gene RYR1 (T) (ryanodine receptor gene). These were porkers slaughtered at 100 to 115 kg and 116 to 130 kg live weight. The second aim of the study was to determine the occurrence frequency of standard-quality meat (red, firm, nonexudative [RFN]) and the occurence frequency of defective meat (pale, soft, exudative [PSE] and acid, soft, exudative [ASE]). The analysis was conducted on the longissimus lumborum muscle in 114 crossbred porkers. The porkers were a cross of Camborough 22 sows and boars from lines 337PIC (Pig Improvement Company), Norsvin Landrace and Pietrain. All of the animals were provided with identical environmental and nutritional conditions. The average weight of the slaughtered animals in the light and heavy groups was 110 kg and 122 kg, respectively. Both groups had the same average post-slaughter meatiness (56.5%). A statistical analysis of selected meat-quality parameters did not show any significant differences between the weight groups. On the other hand, the classification based on carcass quality showed an occurence frequency of defective meat in heavier crossbred porkers (116 to 130 kg) that was three times higher than in those crossbred animals which weighed 100 to 115 kg when slaughtered. In porkers without the gene RYR1 (T) , the defective meat types PSE and ASE occurred with a frequency of 17.54%.
