Introduction: Famine, with its pathological consequences was, apart from climacteric events, used by various dictatorships as a weapon for genocide, This was the case of Nazi Germany using food confiscation from occupied populations, affecting, in particular, the incarcerated Jews, Although food production in the 20th century was sufficient for the global population, World War II lead to a wide range of famine in Europe. The condition resulting from starvation led, in the survivors, to a multi-system Shoah syndrome, with propensity to generational inheritance.

The volatile fractions of Cape gooseberry and blueberry were determined by headspace solid-phase microextraction coupled with comprehensive two-dimensional gas chromatography with time-of-flight mass spectrometry (HS-SPME/GC×GC-TOFMS). The highest amount of alcohol (51.8%), ester (32.8%) and carboxylic acid (6.9%) was in blueberry in comparison with gooseberry and oppositely ketones (14.7%), aldehydes (9.9%) and terpenes (8%) were found in gooseberry. The bioactive compounds and antioxidant capacities were higher in blueberries than in gooseberries. Three dimensional fluorescence emission spectrometry (3D-FL) was applied to determine and to compare experimentally found binding parameters of berries extracts with human serum albumin (HSA). The fluorescence quenching of HSA by polyphenols from berries was a result of the formation of a polyphenol-HSA complex. The binding abilities of berries were highly correlated with the bioactivity of polyphenols and volatile substances. Kiwifruit is a subtropical fruit that is very popular among consumers. Kiwifruit 'Hayward' ( Actinidia deliciosa C.F. Liang et A.R. Ferguson) is an important source of bioactive compounds and possesses high antioxidant capacity, but its value can be changed during ripening. The aim of this study was to compare the levels of total polyphenols (TP), ascorbic acid (AA), and total antioxidant capacities (TACs) of ethylene-treated and nontreated kiwifruits 'Hayward' from conventional and organic farming. The influence of these fruits on lipid profile, TAC, and liver enzymes in plasma of rats fed diets with cholesterol was studied. Ethylene treatment shortened the ripening of kiwifruits. Ethylene-treated kiwifruits from organic farming (OHE) have the highest contents of TP and TAC. The experiment in vivo was performed during 33 days on male Wistar rats (111 ± 5 g), divided into six groups: one without cholesterol, control (C), and five groups with 1% of cholesterol (Chol). Four groups with cholesterol were supplemented with 5% of lyophilized kiwifruits: ethylene treated, organic (Chol/OHE) or conventional (Chol/CHE); and untreated, organic (Chol/OHC) or conventional (Chol/CHC). Cholesterol diets supplemented with kiwifruit influenced the palatability and feed intake, body gain, and FER. Diets containing kiwifruits significantly influenced the decrease of TG (61%), TC (29%), LDL-C (38%), atherogenic index TC/HDL-C (25%), and atherogenic index (AI, 32%), without differences between treatments. A significant increase of TAC in plasma of rats fed kiwifruit was obtained by DPPH (18%), FRAP (55%), and ABTS (55%). Aspartate aminotransferase (AST) activity in serum was significantly lower for all groups with kiwifruit supplementation. Alanine aminotransferase (ALT) was lower only in diet groups supplemented with conventional fruits in comparison with the cholesterol group. Glucose levels were higher in groups with kiwifruit supplementation than in C and Chol groups. Supplementation of Chol groups with organic kiwifruits influenced the prothrombin index and significantly decreased the amount of platelets (PLT) in blood. In conclusion, studied kiwifruit 'Hayward' can be a very good ingredient of the diet, especially for patients suffering from hypercholesterolemia and with other cardiovascular diseases, but not for diabetic patients.

Intrinsic fluorescence and SDS-PAGE analysis were employed to study the seasonal qualitative and quantitative changes of phytoplankton composition at Varna Bay (Black Sea). Variation in the maximum emission wavelength (lambda(max)) of the phytoplankton proteins (398 nm in the summer and 340 nm in the spring) was observed. In addition, a decrease in fluorescence intensity, and a shift in lambda(max) as a result of changes in phytoplankton protein stability, according to the season, was noted. Similarly, SDS-PAGE analysis showed different protein patterns for each season, for example in summertime the major protein constituents were of 14, 37, 48 and 70 kDa, while in the springtime the sizes ranged between 38 and 48 kDa. In general, higher carbohydrate and protein contents correlated with larger phytoplankton biomass found during the summer. The dominant species, the Bacillariophyceae and Dinophyceae, were found to be present in the water body in an alternate pattern. All of these changes could be accounted for by the adaptation of the organism to seasonal variations that modify the sea environment at Varna Bay.

The effects of short-term moderate beer consumption (MBC) on plasma circulating fibrinogen (PCF) in patients suffering from coronary atherosclerosis were investigated by use of 2-dimensional electrophoresis (2-DE), circular dichroism (CD), and Fourier transform infrared spectroscopy (FT-IR). Forty-eight volunteers after coronary bypass surgery were divided into experimental (EG) and control (CG) groups, each of 24. Patients of the EG group consumed 330 mL of beer/day (about 20 g of alcohol) for 30 consecutive days, and CG volunteers drank mineral water instead of beer. Blood samples were collected before and after the experiment. In 21 out of 24 patients after beer consumption the plasma circulating fibrinogen was compromised: changes in its secondary structure were found. These changes were expressed in relatively low electrophoretic mobility and charge heterogeneity, decrease in alpha-helix and increase in beta-sheet, and in slight shift of amide I and II bands. Our findings indicate that one of the positive benefits of moderate beer consumption is to diminish the production of fibrinogen and its stability, which reduces the potential risk exerted by this protein. Thus, in most of beer-consuming patients some qualitative structural changes in plasma circulating fibrinogen were detected.
