Nowadays, innovation in food technologies is fundamental and consumers are increasingly aware and demanding. To create a final product that is more and more appealing, health and safety guidelines are pushing towards new challenges. It is precisely due to the high quality required by the producers that the aim discussed in this project has been conceived. Until today, the controls on the entire production line have been slowed down by the limitations of the technologies involved, including the high cost of instrumentation for microbiological analysis, the need for qualified personnel to carry them out, the long execution times and the invasiveness of the techniques themselves. This project has, therefore, proposed a user-friendly solution that is minimally invasive, fast and at a lower cost. This system makes use of classical microbiological analysis and, in parallel, use of an innovative electronic-nose small sensor system (S3+), which can be trained to recognize the volatile fingerprint of a specific product and customized for a specific use. The aim of this project was to develop a system that is able to detect the mold contamination on fruit and vegetable jams and marmalades, using a new kind of innovative metal semiconductor gas sensor (MOS) device. The application of this technology has, therefore, made it possible to classify various samples of uncontaminated and contaminated fruit and vegetable preparations. Thanks to the classification implemented by a data-driven algorithm, it has been possible to build an anomaly detector that is able to recognize the occurrence of possible contamination, thus acting as an early alert system in the food chain. All this will occur in less than 1 min once the system is trained, in contrast with classical microbiological or chemical techniques that normally require longer timeframes to obtain a result and involve the use of reagents, increasing the costs. Oxygen adsorption at metal oxide (MOX) surfaces and the formation of sub-surface depletion zones in thin nanometric sheets of MOX materials are theoretically investigated. It is shown that—under conditions of sufficient oxygen mobility—the bulk thermal generation of oxygen vacancy donors and the adsorption of surface oxygen ions cooperate in a self-organizing manner to form narrow sub-surface depletion zones which optimally fit into the limited spaces of MOX layers with nanometric cross sections. With this self-organization process in place, both the oxygen adsorption at free surfaces and the bulk generation of oxygen vacancy donors continuously increases as the MOX sheet thickness L is reduced, maintaining at the same time overall electro-neutrality and a state of perfect volume depletion of free carriers in bulk. This process comes to an end when MOX sheet thicknesses of L ≈ 1 nm are approached and when 3d-volumes of about 1 nm3 contain only one single double-donor and two surface oxygen ions on average. It is argued that at this limit of miniaturization, different interpretations of MOX gas sensing phenomena might be required than on larger length scales. [ABSTRACT FROM AUTHOR]

Over the last 40 years, the term "electronic nose" (EN) has defined a device equipped with an array of not selective gas sensors capable of providing a response as a function of a stimulus provided by volatile chemical compounds (VOCs). Numerous studies have started from this idea, which have led to significant improvements and advantages, especially useful for providing a device capable of monitoring situations and applications in real-time. Applications that have strongly pushed the evolution of the "electronic nose" technology away from the laboratories and closer to more complex and stimulating real situations (Comini and Sberveglieri, 2010). One of the very initial goals of the EN was to simulate the mammalian nose to obtain a fast response regarding the characteristics of the analyte, high sensitivity for odours and high discrimination between them. In the last few years, a lot of upgrades have been made to the EN technology, thanks to artificial intelligence, machine learning evolutions, stability of the sensing elements, cloud processing, predictive algorithms, etc. Thanks to this strong commitment of all, this technology is reopening great interest in the industrial and consumers application field, managing to arrive directly in the transformation chains. The types of gas sensors used are various and are based on the modification of a physical or chemical parameter caused by the gases themselves. Conductometer sensors are the most common, being able to transduce a chemical signal in an electrical resistance signal. Other types of sensors have been developed and can be part of a functional array: Optical sensor, polymer sensor, electrochemical gas sensor, Quartz microbalances or SAW (Paolesse et al., 2017). In this presentation we will review the different sensor arrays most commonly used and a brief history of their evolution. From the point of view of sensor preparation technology, the one based on MEMS is becoming more and more widespread. A brief mention will also be made of the sensors used in the EN standard (called S3+) made by Nano Sensor Systems S.r.l. spin-off of the University of Brescia. We will conclude by presenting the evolution of sensors in recent years to better understand how the multisensory, multidisciplinary and cloud computing approach has positively influenced the real potential of Electronic Noses. Biogas is becoming one of the most used and profitable renewable sources. It is obtained through many different processes that frequently involve different green renewable sources. During the different steps of the process, it generates several by-products that could be reused as organic fertilizers. The aim of this work was to study the volatile fraction and determine the volatile fingerprint of 6 different organic samples involved in biogas production by the innovative Small Sensor System (S3) based on Semiconductor Metal Oxide (MOX) gas sensors. Obtained results show the volatile profile of each sample that at the same time support the sensor's device results. S3 result shows a perfect discrimination of the volatile fraction of the different studied matrices based on the different composition of their volatile set. matrix and shows how the sensors are able, in real time, to cluster and discriminate the fingerprint of these renewable sources. In the end, S3 results are very promising to enhance the traceability and the origin of the sources in the biogas industry at each specific stage of production, focusing on the possible release of off-flavors in the environment from different types of organic biomass and the reuse of their by-products supporting circular economy. The aim of this work was to find and identify the VOCs set that characterizes different types of organic renewable sources through the use of the tailor made Small Sensor Systems S3 to distinguish between different odor sources based on their qualitative and quantitative differences in VOCs profile, in order to be able in the future to produce a user friendly fast, economic and with auto learning capabilities to support the aforementioned green industrial processes. The marmalade and jam market is growing worldwide, with the European countries being the main producers in this sector. The market has ancient origins and the production is aimed at conserving the surplus fruits during some period of the year. Nowadays, the automatic production processes are wide-ranging but start with high-quality raw materials and follow an appropriate cooking process to conserve the main features of the final product. On the other hand, cases of overcooking may occur which lead to the production of hydroxy-methyl-furfural and derivatives with consequent browning and poor organoleptic characteristics of the final product. This study aimed to use chemical oxide nanowire gas sensors device S3 coupled with optical techniques and recognizing algorithms to create a multi-actor platform able to control the production process of jams and marmalades with a fast response time, to assist the production process and avoid economical losses in the sector. PCA shows that this innovative technology can recognize changes in the volatile fingerprint, distinguishing when the positive and more natural organoleptic characteristics of the fruit are still present from the appearance of the organoleptic defects due to a faulty production process. There are different methods to extract and brew coffee, therefore, coffee processing is an important factor and should be studied in detail. Herein, coffee was brewed by means of a new espresso professional coffee machine, using coffee powder or portioned coffee (capsule). Four different kinds of coffees (Biologico, Dolce, Deciso, Guatemala) were investigated with and without capsules and the goal was to classify the volatiloma of each one by Small Sensor System (S3). The response of the semiconductor metal oxide sensors (MOX) of S3 where recorded, for all 288 replicates and after normalization ∆R/R0 was extracted as a feature. PCA analysis was used to compare and differentiate the same kind of coffee sample with and without a capsule. It could be concluded that the coffee capsules affect the quality, changing on the flavor profile of espresso coffee when extracted different methods confirming the use of s3 device as a rapid and user-friendly tool in the food quality control chain. Metal oxide (MOX) gas sensors and gas sensor arrays are widely used to detect toxic, combustible, and corrosive gases and gas mixtures inside ambient air. Important but poorly researched effects counteracting reliable detection are the phenomena of sensor baseline drift and changes in gas response upon long-term operation of MOX gas sensors. In this paper, it is shown that baseline drift is not limited to materials with poor crystallinity, but that this phenomenon principally also occurs in materials with almost perfect crystalline order. Building on this result, a theoretical framework for the analysis of such phenomena is developed. This analysis indicates that sensor drift is caused by the slow annealing of quenched-in non-equilibrium oxygen-vacancy donors as MOX gas sensors are operated at moderate temperatures for prolonged periods of time. Most interestingly, our analysis predicts that sensor drift in n-type MOX materials can potentially be mitigated or even suppressed by doping with metal impurities with chemical valences higher than those of the core metal constituents of the host crystals. Antibiotics are widely used to prevent and treat bacterial infections in livestock animals, aquaculture, and humans. However, the unconditional use of those drugs as a growth promoter for livestock animals and the wrong usage as a treatment for infections in humans has led to high antibiotics pollution, especially in water resources. The elevated presence of antibiotics in water has resulted in the phenomenon known as the bacterial antibiotics resistance. To prevent ecological catastrophe, continuous real-time monitoring of water sources is necessary. The aim of this research work is to compare the abilities of three different techniques: novel electromagnetic wave spectroscopy, UV-Vis spectrophotometry, and capacitance sensing system for the real-time detection and quantification of antibiotics in water. Tylosin and lincomycin antibiotics were selected to the study, as both are regularly found in water sources. Two novel microwave sensor configurations were used: a planar sensor with interdigitated electrode pattern and a hairpin resonator sensor, as a means of real-time water analysis. Reflected S11 power signals were analyzed in GHz frequency range for microwave sensors. In parallel, UV-Vis spectrophotometry was used, where change in the optical absorbance was used as an indicator of water pollution, whereas change in the value of a capacitance in low frequency range has signalled the change in the dielectric properties of the solution. It was found that in all cases the changes in the measured parameters were dependent on both the type of antibiotic present in water and on its concentration. Fusion of all these techniques into a comprehensive sensing platform provides adequate real-time assessment of the water pollution with antibiotics and would allow adequate management of environment for safety and sustainable development. In particular, the lowest lincomycin samples’ concentration, 0.25 μg/l, was measured with a hairpin resonator sensor, while the lowest tylosin samples’ concentration, 0.20 μg/l, was measured with an IDE sensor. Since concentration in groundwater were 0.36 μg/l of lincomycin and 1.5 μg/l of tylosin, it is demonstrating a high-sensing platform utility. [ABSTRACT FROM AUTHOR]

Transparent conductive thin films of nanocrystalline tin oxide:antimony (SnO2:Sb) were deposited on a preheated glass substrate at 400°C via spray pyrolysis technique. The effects of Sb doping concentration on morphological, structural and optical properties of the films were investigated by ultraviolet (UV)-visible absorption, x-ray diffraction (XRD) and scanning electron microscopy (SEM) techniques. The XRD study revealed that all the films had a polycrystalline nature, which increased with the Sb doping up to 4 wt.% and then decreased with further Sb doping. Similarly, the SEM images highlighted that the grain size of the SnO2:Sb thin films increased with Sb doping from 2 wt.% to 4 wt.% and then decreased for 6 wt.%. UV-visible study demonstrated that the average transmission in the visible region was found to vary from 35% to 75% depending on the Sb doping concentration. As a proof of concept, we implemented the SnO2:Sb thin films with different Sb doping for gas-sensing applications. To measure the selectivity of the SnO2:Sb thin films, the Sb-doped and -undoped films were exposed to different types of gases with varied concentration. The results of this work demonstrated that the SnO2:Sb thin film-based gas sensor had a high potential for NH3 at a low temperature (100°C). Metal oxide (MOX) gas sensors sensitively respond to a wide variety of combustible, explosive and poisonous gases. However, due to the lack of a built-in self-test capability, MOX gas sensors have not yet been able to penetrate safety-critical applications. In the present work we report on gas sensing experiments performed on MOX gas sensors embedded in ceramic micro-reaction chambers. With the help of an external micro-pump, such systems can be operated in a periodic manner alternating between flow and no-flow conditions, thus allowing repetitive measurements of the sensor resistances under clean air, R0, and under gas exposure, Rgas, to be obtained, even under field conditions. With these pairs of resistance values, eventual drifts in the sensor baseline resistance can be detected and drift-corrected values of the relative resistance response Resp = (R0−Rgas)/R0 can be determined. Residual poisoning-induced changes in the relative resistance response can be detected by reference to humidity measurements taken with room-temperature-operated capacitive humidity sensors which are insensitive to the poisoning processes operative on heated MOX gas sensors. Metal oxide 1D nanowires are probably themost promising structures to develop cheap stable and selective chemical sensors. The purpose of this contribution is to review almost two-decades of research activity at the Sensor Lab Brescia on their preparation during by vapor solid (n-type In2O3, ZnO), vapor liquid solid (n-type SnO2 and p-type NiO) and thermal evaporation and oxidation (n-type ZnO, WO3 and p-type CuO) methods. For each material we've assessed the chemical sensing performance in relation to the preparation conditions and established a rank in the detection of environmental and industrial pollutants: SnO2 nanowires were effective in DMMP detection, ZnO nanowires in NO2, acetone and ethanol detection, WO3 for ammonia and CuO for ozone. To determine the originality of a typical Italian Parmigiano Reggiano cheese, it is crucial to define and characterize its quality, ripening period, and geographical origin. Different analytical techniques have been applied aimed at studying the organoleptic and characteristic volatile organic compounds (VOCs) profile of this cheese. However, most of the classical methods are time consuming and costly. The aim of this work was to illustrate a new simple, portable, fast, reliable, non-destructive, and economic sensor device S3 based on an array of six metal oxide semiconductor nanowire gas sensors to assess and discriminate the quality ranking of grated Parmigiano Reggiano cheese samples and to identify the VOC biomarkers using a headspace SPME-GC-MS. The device could clearly differentiate cheese samples varying in quality and ripening time when the results were analyzed by multivariate statistical analysis involving principal component analysis (PCA). Similarly, the volatile constituents of Parmigiano Reggiano identified were consistent with the compounds intimated in the literature. The obtained results show the applicability of an S3 device combined with SPME-GC-MS and sensory evaluation for a fast and high-sensitivity analysis of VOCs in Parmigiano Reggiano cheese and for the quality control of this class of cheese. Conductometric gas sensors made of gas permeable metal oxide ultrathin membranes can combine the functions of a selective filter, preconcentrator, and sensing element and thus can be particularly promising for the active sampling of diluted analytes. Here we report a case study of the electron transport and gas sensing properties of such a membrane made of nanoporous Ta2O5. These membranes demonstrated a noticeable chemical sensitivity toward ammonia, ethanol, and acetone at high temperatures above 400 °C. Different from traditional thin films, such gas permeable, ultrathin gas sensing elements can be made suspended enabling advanced architectures of ultrasensitive analytical systems operating at high temperatures and in harsh environments. Silicon Oxycarbonitride (Si OCN) functionalization is proposed for stable, reproducible, reliable, and enhanced gas-sensing properties in carbon nanotube ( CNT) gas sensors. The process is very simple: liquid precursor completely coats the surfaces of the CNTs without requiring any surface modification and a thin layer of semiconductor ceramic Si OCN is created on the CNTs after heat treatment. This new kind of conductometric gas sensors can detect 10 ppm NH3 and 2 ppm NO2 at temperatures up to 350°C. The stability of the functionalized CNT sensor is verified up to 520°C, while the CNT sensor without the Si OCN coating lost conductance after 250°C due to the structural modification. SiOCN functionalization of CNT changes the recovery from irreversible to reversible and the recovery time decreases from 60 min at 100°C to 19 min at 350°C. [ABSTRACT FROM AUTHOR]

We demonstrate a fast and large area-scalable methodology for the fabrication of efficient dye sensitized solar cells (DSSCs) by simple addition of graphene micro-platelets to TiO2 nanoparticulate paste (graphene concentration in the range of 0 to 1.5 wt%). Two dimensional (2D) Raman spectroscopy, scanning electron microscopy (SEM) and atomic force microscopy (AFM) confirm the presence of graphene after 500 °C annealing for 30 minutes. Graphene addition increases the photocurrent density from 12.4 mA cm−2 in bare TiO2 to 17.1 mA cm−2 in an optimized photoanode (0.01 wt% graphene, much lower than those reported in previous studies), boosting the photoconversion efficiency (PCE) from 6.3 up to 8.8%. The investigation of the 2D graphene distribution showed that an optimized concentration is far below the percolation threshold, indicating that the increased PCE does not rely on the formation of an interconnected network, as inferred by prior investigations, but rather, on increased charge injection from TiO2 to the front electrode. These results give insights into the role of graphene in improving the functional properties of DSSCs and identifying a straightforward methodology for the synthesis of new photoanodes. In the present work we demonstrate the fabrication of self-assembled and highly aligned Nb2O5 nanotubes by means of electrochemical anodization of metallic Nb at room temperature. We have investigated the effect of anodization parameters (the type and the concentration of the electrolyte, the anodization voltage and the current) on the formation of Nb2O5 nanotube arrays. The structural properties of the nanotubes as a function of annealing treatment conditions (temperature and duration) have been studied. The current-voltage characterization of the samples in the dark and under UV light illumination has been carried out. Cell walls of the commercial silicon carbide (SiC)-based foams were decorated by one-dimensional tin dioxide (SnO2) nanostructures. Thermal evaporation of SnO2 powder with the assistance of a Au catalyst in inert atmosphere caused the formation of SnO2 nanobelts on the pore surfaces. The room temperature ( RT) ammonia ( NH3) and nitrogen dioxide ( NO2) gas sensing behaviors were investigated systematically in both dry and humid air atmosphere with/without UV activation. The results were compared to those for bare SnO2 and SiC. It was shown that SiC/SnO2 composite was efficient to detect low concentration of NH3 (10-50 ppm) and NO2 (1-5 ppm) under humid air and UV activation at RT. [ABSTRACT FROM AUTHOR]

A systematic study on the fabrication of quantum dots sensitized solar cells (QDSSCs) exploiting hybrid networks of semiconducting light harvesters is presented, which shows how the engineering of band gaps of the device components by a very simple technique allows improving the solar energy conversion performances. Panchromatic devices are fabricated and tested, and correspondent functional parameters analyzed in order to highlight both advantages and drawbacks of the most common (CdS, CdSe, PbS) quantum dots applied for light collection in QDSSCs. Judicious engineering of the light harvester layer is demonstrated as a simple and powerful strategy for boosting device performances, through the management of light collection in a rather broad range of solar spectrum and photogenerated charges injection and collection. The fabrication methods and the basic properties of the metal-oxide nanostructures referred as nanowires are presented and reviewed in this paper, with particular emphasis to the electrical and optical properties and their useful implementation for chemical and biochemical sensing. The field of chemical sensors has benefited by the wealth of highly crystalline nanostructures produced by physical and chemical methods. Large variation in bulk electrical conductivity, structural stability upon high temperature operation, high degree of crystalline ordering, large impact of point defects and surface states have unveiled the potential for the sensing field and have opened up new perspectives of application and for the realization of novel device architectures. This paper will summarize various techniques for preparation and characterization; then, the growth mechanisms and working principles will be discussed. Synthesis--particularly by electrochemical anodization-, growth mechanism and chemical sensing properties of pure, doped and mixed titania tubular arrays are reviewed. The first part deals on how anodization parameters affect the size, shape and morphology of titania nanotubes. In the second part fabrication of sensing devices based on titania nanotubes is presented, together with their most notable gas sensing performances. The photoluminescence emission of ZnO nanowires was modified by means of plasma etching, inducing a strong increase in the Near Band Edge emission (NBE) in the UV region (3.26 eV). In contrast, annealing treatment at 600 °C quenched the NBE peak. This opens the possibility to modify the emission properties of ZnO nanowires by means of surface treatment, and is of great importance in view of the application of ZnO as an emitting material. ZnO nanowires were prepared by the vapour phase growth technique in a tubular furnace. Morphological and structural characterization was carried out by scanning and transmission electron microscopy, showing no modifications to the morphology and crystalline arrangements after plasma etching. The nanowires are single crystalline with a high aspect ratio and diameters in the 50–100 nm range. The optical properties of the ZnO nanowires were studied by continuous wave photoluminescence (PL). Ar and O2 plasma etching treatment caused modification of the PL spectrum, inducing a strong enhancement of the NBE peak, and an increased ratio of NBE over Deep Level Emission (DLE), thus indicating a better sample quality after the treatment. The effect of the Ar treatment is higher than the effect of O2 treatment, since the ratio of NBE : DLE obtained for O2 plasma etching is smaller than the ratio observed for Ar. Conversely, annealing at 600 °C in an O2 or Ar atmosphere induced the quenching of the NBE and an increase of the DLE in the PL spectrum of the ZnO nanowires. The variations in the spectroscopic features are discussed in terms of hydrogen diffusion and the passivation of states responsible for non-radiative recombination. [ABSTRACT FROM AUTHOR]

In this study, for the first time, we report the gas sensing behavior of aerogel-derived silicon oxycarbide (SiOC) glasses. The SiOC glass pyrolyzed at 1400°C has specific surface area of 150 m2/g with pore size in the 2-20 nm range. SiOC sensor shows good response to 5 ppm NO2 at 300°C. NO2 response completely disappears at 400°C, and from this temperature SiOC sensor starts respond to H2. The optimum sensitivity for H2 is obtained at 500°C. SiOC sensor is very selective; it is not sensitive to other gases such as acetone vapor or CO, even at high concentrations. [ABSTRACT FROM AUTHOR]

In this work we report on metal oxide (MOX) based gas sensors, presenting the work done at the SENSOR laboratory of the CNR-IDASC and University of Brescia, Italy since the 80s up to the latest results achieved in recent times. In particular we report the strategies followed at SENSOR during these 30 years to increase the performance of MOX sensors through the development of different preparation techniques, from Rheotaxial Growth Thermal Oxidation (RGTO) to nanowire technology to address sensitivity and stability, and the development of electronic nose systems and pattern recognition techniques to address selectivity.
