Polysaccharides and polyphenols are important active substances in many foods and their raw materials. The interaction of polysaccharide and polyphenol may affect their physicochemical properties and functional activity respective, which also alter the nutritional and sensory qualities of food. This paper describes the means of characterizing food-derived polysaccharide and polyphenol interactions, including Fourier transform infrared (FT-IR) spectroscopy and nuclear magnetic resonance (NMR) spectroscopy, and interaction mechanisms such as enzyme-catalyzed reactions and free radical-induced reactions was also summarized. In addition, this paper focuses on the effects of concentration, pH, temperature and ionic strength on the interaction between polysaccharides and polyphenols, and further generalizes the alteration of physicochemical properties such as solubility and crystallinity, as well as bioactivities such as antioxidant and antimicrobial activities of polysaccharides and polyphenols under the interaction. Numerous research indicated that the formation of polysaccharide-polyphenol complexes had excellent biological activity and stability, promising good application prospects in food industry, healthcare, and other fields. This paper took the medium-early-maturing variety 'Cuixiang' kiwifruit as the research object. The normal harvested fruits were the control group, and the fruits with 1~4 weeks of delayed harvesting were the treatment group. The control and treatment fruits were subjected to three treatments: at harvest (AH), room temperature maturation (RTM) and low-temperature maturation (LTM). In this paper, the effects of delayed harvesting on the quality of 'Cuixiang' kiwifruit based on fruit shape and weight, physicochemical indexes, storage characteristics, sensory and nutritional qualities were analyzed. The results showed that with delayed harvesting, the fruit shape and weight of kiwifruit were not affected, and the hardness decreased significantly (P<0.05). Delayed harvesting significantly increased the sugar-acid ratio in the AH group and decreased the soluble solids content in the RTM and LTM groups (P<0.05). Delayed harvesting for 1 week effectively suppressed the development of rot and chilling injury. Delayed harvesting significantly reduced the b* value of fruits (P<0.05), but maintained the textural quality of fruits in the LTM group, significantly reduced the ascorbic acid content of fruits in the AH group (P<0.05), and slowed down the degradation of ascorbic acid in the LTM fruits and maintained their antioxidant capacity. To address potential unnecessary shutdowns caused by quality-unrelated faults during batch fermentation processes, the paper proposed a noise semi-supervised stacked auto-encoder (NSSAE) to differentiate the quality-relevant and the quality-irrelevant faults. First, mutual information was applied to calculate the contribution from the process variables to quality variables, where artificial noised was introduced to enhance the performance. Second, an NSSAE-based monitoring model was established, wherein indicators for faults and quality variations were separately constructed from the first layer and the last layer of the model. Upon which, kernel density estimation was used to calculate the thresholds for the indicators. Lastly, deep reconstruction-based contribution was used to locate the root cause. Based on the results of numerical simulations and lactic acid bacteria batch fermentation experiments, the NSSAE algorithm proposed in this paper demonstrated the ability to accurately distinguish between quality-related and quality-irrelevant faults. The fault detection rate using the detection index of the first layer of residual space approached 100%. Moreover, the detection index in the final layer of latent space could precisely identify both quality-related and quality-irrelevant faults. Utilizing the DRBC diagnostic method, the specific variable causing the fault can be accurately pinpointed post-fault occurrence. These findings suggest a practical and effective process monitoring method for addressing quality-related and quality-irrelevant fault monitoring issues in the batch fermentation process.
