Summary: Fermentation may beneficially increase the bioaccessibility of minerals in legumes. In this study, the contents and in vitro bioaccessibilities of Ca, Mg, Fe and Zn were determined in lupin whole seed and dehulled seed during soaking, cooking and then fermentation with Bacillus subtilis into a natto analogue. For total mineral content, a significant loss (P < 0.05) of Mg was observed after cooking for both whole and dehulled seed. During pre‐processing, the Ca bioaccessibilities of whole and dehulled were highest (P < 0.05) in the soaked seed and for Mg was highest (P < 0.05) in the cooked samples. At all fermentation times, the bioaccessibility of all minerals was higher (P < 0.05) in the dehulled than the whole seed. Significant increases (P < 0.05) in bioaccessibility during fermentation were observed for Fe at 48 h and Zn 24 h in dehulled seed, providing the first evidence for the beneficial effect of lupin fermentation by B. subtilis in terms of Fe and Zn availability. The coastal saline zone of West Bengal in India is the home to millions of the world's poorest and most vulnerable people. Due to a gradual increase in salt accumulation on soils of the coastal saline zone of West Bengal in India from winter to summer days, cultivation of the second crop in the winter season becomes possible in a limited area. To address these issues, field experiments was conducted in rainy and winter seasons of 2016–17 and 2017–18 at the farmer's field of the coastal saline zone (CSZ) of West Bengal, India. The experiment was carried out to study the system productivity, nutrient uptake, and profitability vis-à-vis salinity dynamics of the crops in rice-pulse-based cropping systems under different land elevations (medium upland and medium lowland). The experiment was conducted in a strip-split plot design having horizontal factors namely, Factor A: Six dates of sowing of rice at an interval of one week (2nd week of June to 3rd week of July), Factor B: Two land situations (medium upland and medium lowland) and Two Cropping Systems (Rice-Lathyrus and Rice-Lentil) as vertical factor, replicated four times. The results suggest that irrespective of land situation, early sown rice (15 June to 21 June) produces higher dry matter and grain yield compared to late sown crops. This early sowing of rice also facilitated the better performance of subsequent lathyrus and lentil, by avoiding the worst situation of the salinity build-up and drought stress later in the winter. Moreover, significantly higher productions were obtained from medium-lowland situations for both the cropping systems. Sowing date has also significantly influenced macro-nutrient uptake (NPK) by rice and pulse grains. The physicochemical, rheological properties, and digestibility of flours and starches from pigeon pea, cowpea, pinto bean, and navy bean are investigated. Pinto bean flour (PBF) and Pinto bean starch (PBS) show the highest water absorption capacity (WAC), while cowpea flour (CPF) and cowpea starch (CPS) show the highest oil absorption capacity (OAC)‐ than other pulse flour or starches. All pulse flours show higher solubility than all pulse starches. However, the swelling power (SP) of all flours is lower than starches and SP is comparatively different among starches. Paste clarity, and relative crystallinity (RC), are higher in all flours compared to starches. However, pasting properties and consistency index (K) are lower in flour compared to starches. All the flours and starches exhibit CA‐type crystallinity.The Scanning Electron Microscrographs reveals smooth granular surfaces of all starch and flour. Both flours and starches show flow behavior (n < 1) and viscosity decreased with increasing shear rate indicating the non‐Newtonian fluid behavior. All starches show higher rapidly digestible starch (RDS) and resistant starch (RS) content but lower slowly digestible starch (SDS) content than all flours. Stress impairs fertility, at least in part, via inhibition of gonadotropin secretion. Luteinizing hormone (LH) is an important gonadotropin that is released in a pulsatile pattern in males and in females throughout the majority of the ovarian cycle. Several models of stress, including acute metabolic stress, suppress LH pulses via inhibition of neurons in the arcuate nucleus of the hypothalamus that coexpress kisspeptin, neurokinin B, and dynorphin (termed KNDy cells) which form the pulse generator. The mechanism for inhibition of KNDy neurons during stress, however, remains a significant outstanding question. Here, we investigated a population of catecholamine neurons in the nucleus of the solitary tract (NTS), marked by expression of the enzyme dopamine beta-hydroxylase (DBH), in female mice. First, we found that a subpopulation of DBH neurons in the NTS is activated (express c-Fos) during metabolic stress. Then, using chemogenetics, we determined that activation of these cells is sufficient to suppress LH pulses, augment corticosterone secretion, and induce sickness-like behavior. In subsequent studies, we identified evidence for suppression of KNDy cells (rather than downstream signaling pathways) and determined that the suppression of LH pulses was not dependent on the acute rise in glucocorticoids. Technologies associated with using concentrated energy flows are increasingly used in industry due to the need to manufacture products made of hard alloys and other difficult-to-process materials. This work is devoted to expanding knowledge about the processes accompanying the impact of laser pulses on material surfaces. The features of these processes are reflected in the acoustic emission signals, the parameters of which were used as a tool for understanding the accompanying phenomena. The influence of plasma formations above the material surface on self-oscillatory phenomena and the self-regulation process that affects pulse productivity were examined. The stability of plasma formation over time, its influence on the pulse performance, and changes in the heat flux power density were considered. Experimental data show the change in the power density transmitted by laser pulses to the surface when the focal plane is shifted. Experiments on the impact of laser pulses of different powers and durations on the surface of a hard alloy showed a relationship between the amplitude of acoustic emission and the pulse performance. Plant stable carbon (δ13C) and nitrogen (δ15N) isotope values can be used to directly investigate crop husbandry practices such as manuring; a key variable in understanding the scale and intensity of past farming practices. We present new results from a four-year experiment examining the impact of manuring on the δ13C and δ15N values of a heritage cultivar of the broad or faba bean (Vicia faba), the ‘Celtic black broad bean’. This paper builds upon our previous pilot study (Treasure ER, Church MJ, Gröcke DR (2016) The influence of manuring on stable isotopes (δ13C and δ15N) in Celtic bean (Vicia faba L.): archaeobotanical and palaeodietary implications. Archaeol Anthropol 8:555–562. ). Our results indicate that manuring increased δ15N values in beans, with a mean value of 0.5 ± 0.4‰ in control samples compared to a mean value of 2.1 ± 1.3‰ in the most intensively manured plots. It was not always possible to distinguish between an unmanured and manured crop on the basis of δ15N values, although manured crops consistently exhibited larger variation in δ15N. Bean δ13C values show no clear relationship with manuring, although large variability (> 3‰) was found within crops cultivated under the same conditions. Manuring also increased plant biomass production, seed-size and the bean per plant ratio. Overall, we suggest that high δ15N values (> 1.5‰) in archaeobotanical remains of pulses can be attributed to small-scale, intensive cultivation that is typical of gardens where manuring rates are very intensive. Summary: The aim of this study was to characterise gluten‐free breads formulated with alternative flours through technological and sensory (ultra flash profiling, hedonic tests) properties, and to correlate both methodologies for holistically understanding how these variables affect the consumer preference and product quality. Gluten‐free breads formulated by replacing 20% with brown rice, lupine, millet, quinoa, sorghum, teff, buckwheat, rice bran and carob flours were evaluated. The dough hydration and fermentation times were optimised. The formulations presented differences in centesimal composition, specific volume, texture and colour. Significant correlations were established between fermentation time, specific volume, centesimal composition, texture (hardness, gumminess), alveolar structure (porosity, uniformity, cell density), colour (L*), sensory descriptors and overall acceptability. The ultra flash profiling test confirmed different sensory profiles, showing that some descriptors have a high impact in overall acceptability. Multiple factor analysis contributed to understand the interrelationships between technological and sensory properties, identifying the relevant technological parameters that affect the consumer preferences and the final product quality. Pulses assume special significance in the cropping systems and daily diets in India. Traditionally pulses are used for human consumption as dehusked seed splits after minimal processing. They are also the important ingredient of popular Indian snacks. The present paper reviews the research studies done on various components of value chain of pulses and draws upon the learnings. The value chains of pulses in India are long and complexed with a number of actors performing specific roles. The input providers, farmers, aggregators, wholesaler, commission agents, retailers, processors, millers, consumers, financial institutions, ware houses, researchers and policy makers together work to build the pulses value chains in India. Background: The multifaceted importance of pulses in India's agricultural landscape is explored along with its implications particularly the surge in pulse exports to regions such as the Middle East, Southeast Asia and Africa. By highlighting India's pivotal role as a global pulse producer and exporter, shedding light on its impact on foreign exchange earnings, employment generation, comprehensive analysis and overall economic growth is attempted. Two key objectives, relating to pulse production, import and export trends, the direction of pulse trade from India to major importing countries, through Markov Chain Analysis, market dynamics are uncovered. Methods: The data on pulses production and export in terms of quantity and value in India were collected from secondary sources. Result: Pulse production remained relatively stable with moderate variability, exports experienced significant fluctuations, particularly in pulse quantities and values. Compound annual growth rate (CAGR) analysis confirms consistent production growth, with pulses showing positive CAGR figures. Impact of interaction between area and yield was significant as compared to area and yield independently. Pulse exports saw steady growth in both quantity and value. Further, The Markov chain analysis underscored Pakistan's stability as a primary export destination, while Bangladesh, the UAE and others exhibited varying degrees of export retention probabilities. Background: In peninsular India, the frequency of climate-related risks is significantly lowering agricultural productivity and farmers' standard of living. Reducing losses in the agriculture sector requires precise and timely weather information, weather based advisories on crop production, protection and post-harvest. Disseminating agromet advisories directly to the farmers using ICT tools allows farmers to adopt appropriate corrective measures, minimize loss and ensure climate resilient agriculture. In this sense, the Tamil Nadu Agricultural University established an Automated Agromet Advisory Web cum Mobile App (TNAU-AAS) in 2018, which sends location, crop and stage specific agromet advisories directly to farmers' mobile App. Methods: TNAU-AAS App was evaluated in pulse crops as "Piloting pulse produce support system through ICT enabled services" between 2019 and 2021 in three TNAU centers under three different eco systems namely irrigated (Coimbatore), rice fallow (Aduthurai) and rainfed (Kovilpatti). Pulse growing farmers were registered in this smartphone application for agromet advisory based response farming. Result: The TNAU-AAS App had delivered approximately 10-12 advisories to each farmer, tailored to their unique crop and stage during the cropping period. Survey results inferred that the farmers received timely notifications on their mobile phones, 2-3 days in advance, which assisted them in preplanning. Occurrences of pests and diseases were well aligned (68-83%) with TNAU-AAS recommendations and the climate vulnerability of non AAS farmers is more than AAS farmer. According to partial budget analysis, the irrigated, rice fallow and rainfed black gram farmers have gained Rs. 2800, Rs. 2300 and Rs. 1900 per ha, respectively. It is concluded that the ICT-enabled agromet advisory system guarantees timely alerts, boosts labor and land productivity, lowers input loss and shields crops from weather-induced pests and diseases as well as climatic variability risk. With increasing global attention toward the need for mitigating climate change, the transition to sustainable energy sources has become an essential priority. Introducing alternative oilseed crops, such as camelina (Camelina sativa L.), into intercropping systems with staple food crops can mitigate ILUC (indirect land use change) and their negative impact on biofuel production. The present study compared camelina + field pea intercropping (ICw + IP, winter sowing) and camelina + lentil intercropping (ICs + IL, spring sowing) with their respective single crops regarding weed control, soil coverage, yields, and camelina seed quality (1000-seed weight, oil, and fatty acid composition). The comparison between different cropping systems was conducted using a one-way ANOVA. Both intercropping improved weed control at an early stage but no differences in soil coverage were found. Camelina seed yield was negatively affected by the presence of peas, whereas the pulse was unaffected. Conversely, camelina seed yield was not affected when intercropped with lentils while lentils reduced their yield in the intercropping. Furthermore, when camelina was intercropped with lentils, a significant increase was reported in 1000-seed weight and α -linolenic acid (C18:3) compared with the sole-camelina. However, both intercropping systems had a land equivalent ratio (LER, based on total seed yield at maturity) higher than one. The pulse crops are crucial for human nutrition not only because of their rich source of proteins but also for their dietary fibres, complex carbohydrates, resistant starch, vitamin complex and minerals. Pulse crops include mungbean, urdbean, redgram, bengalgram, adzuki bean and cowpea which are agriculturally and economically important crops in tropical and subtropical regions. Bruchid beetles, [Callosobruchus chinensis (L.)] and [C. maculatus (F.)] are the most serious insect pests of Vigna crops especially during storage. Infestation starts in the field and carried to storage godowns, where sometimes it causes total destruction of the seeds within six months. The damage is caused by the grubs, which feed on the entire grain contents leaving only the shell behind. The seeds thus loss its viability and they are rendered unfit for human consumption. Use of resistant cultivars is the best way to manage the bruchids. Hence, the resistant accessions can be effectively used as promising donors for developing bruchid resistant varieties which would ensure food security by reducing postharvest losses under storage conditions. Animal-based foods have a large impact on the environment; for this reason, plant-based meat analogous are now in the spotlight. Although protein concentrates/isolates from soy are the most used raw materials for meat analogues, some concerns about allergenicity, loss of biodiversity, and low sustainability of their production rise from their uses. In this context, high protein fractions obtained by air classification of pulse flours are here proposed as substitutes of protein concentrates. Thus, this work is aimed at understanding the aptitude of high protein fraction from pulses to be transformed into meat analogous through high moisture extrusion process. Differences in functional and rheological properties among high protein fractions resulted in different high moisture extrusion properties and thus products with different appearance. Specifically, the foaming capacity of high protein fraction from red lentil resulted in expansion at the end of the extruder creating a heterogeneous structure, whereas the high lipid content of high protein fraction from chickpea can account for the unsuitability of this raw material to high moisture extrusion. On the contrary, high protein fraction from both fava bean and yellow pea presented a fibrous structure. Background: In recent years, there is growing demand for pulses in Tamil Nadu and the government has implemented various schemes and programmes to promote cultivation. However, the evaluation and categorization of soils for pulse production is crucial in determining the suitability of land for pulse cultivation and offer improvement through the adoption of improved crop management practices. Methods: A systematic soil quality assessment survey was taken up during 2020-2022 in the major pulse growing blocks of Virudhunagar district viz., Sattur, Aruppukottai and Thiruchuli based on past ten years yield data and it was classified into three categories viz., low yielding (< 400 kg ha-1), medium (400 to 700 kg ha-1) and high yielding (>700 kg ha-1) categories. Three hundred samples were collected from these zones. Result: The positive effects of soil physical, chemical and biological qualities on the yield of pulse crops were justified through the yield data of the high yielding zone which ranged from 769 to 989 kg ha-1 with an average pulse yield of 880 kg ha-1. This may be attributed tothe favourable soil physical environment in terms of soil texture (sandy clay loam), higher mean percentage of water stable aggregates (51%) and an optimum pH of 7.52. These parameters coupled with lower bulk density (1.23 Mgm-3), optimum infiltration rate (1.76 cm hr-1) and maximum mean organic carbon status (1.38 mg kg-1) contributed to higher range of soil cation exchange capacity (28.7 to 47.2 cmol p+ kg-1). In addition, the soil respiration rate with mean respiration rate of 4.48 mg CO2 kg-1 d-1 in high yield category compared to that of 2.34 mg CO2 kg-1 d-1 in low yield category. Therefore, this study formulates a clear understanding of the variations in soil quality parameters for adopting efficient nutrient management practices towards obtaining maximum productivity of pulse crops. Pulses are edible seeds belonging to the Leguminosae family for human consumption and consist of various species such as common beans (Phaseolus vulgaris L.), peas (Pisum sativum), lentils (Lens culinaris), chickpeas (Cicer arietinum L.), and faba beans (Vicia faba). Pulses are sustainable sources of nutritional compounds, especially containing almost twice the protein content compared to cereal grains. In addition to becoming an excellent source of macronutrients and micronutrients, they are abundant in phytochemicals, containing bioactive compounds with potential health benefits resulting from various phenolic compounds, as well as antinutritional compounds (e.g. phytic acid, enzyme inhibitors, lectins, saponins), which have received widespread concern by researchers. More essentially, various processing approaches for consumption purposes will result not only in enhanced nutritional and sensory characteristics in pulses but also in affected phytochemicals contents and their bioavailability. In this review, the nutritional and phytochemical compositions of pulses will be first introduced, followed by different common-applied processing methods (thermal and non-thermal), along with their impacts and pulse storage effects on the content of corresponding phytochemicals. Furthermore, through food processing and digestion, the bioaccessibility and bioavailability of pulse phytochemicals will be improved, thus releasing more health benefits, and expressing pharmacological functions in the human body. Societal Impact Statement: The world is increasingly looking to plant‐based sources to meet its protein needs. Multiple factors are driving this progression, ranging from nutritional and ethical considerations to climate change and population growth. As a pulse crop, lentil is ideal to help meet this change in demand. However, plant‐based proteins have limiting amino acids and lower protein digestibility compared to animal‐based proteins. This research identifies genetic markers that can be used to accelerate breeding of protein quality traits in lentil to ultimately help meet the rising demand in high‐quality plant‐based protein and bolster global food and nutritional security. Summary: Lentil (Lens culinaris Medik.) contains ~25% high‐quality protein in addition to high concentrations of prebiotic carbohydrates and micronutrients, such as folate, iron, zinc, and selenium. As animal‐based protein's economic and environmental costs rise, plant‐based protein sources, such as lentil, will become increasingly important to global food systems. Consequently, evaluating and targeting protein quality traits for genomic‐assisted breeding is a valuable objective for lentil breeding programs.A diversity panel of 183 breeding lines was analyzed for protein quality traits, including amino acids and protein digestibility. Genotyping‐by‐sequencing (GBS) data were used to assess population structure and conduct genome‐wide association studies (GWAS). Genes in local linkage disequilibrium (LD) with significant single nucleotide polymorphism (SNP) markers were identified and categorized by homology.Protein quality traits showed a wide range of variation. Repeatability estimates were low to moderate across traits. Twelve traits were strongly correlated with each other (r >.7). Admixture analysis identified six ancestral subpopulations, which also demonstrated clustering in principal component analysis. Ten different traits had significant SNP associations; two loci were shared across multiple traits. Twenty‐seven candidate genes, including glutathione S‐transferase, protease family, and gibberellin 2‐beta‐dioxygenase genes, were identified.This paper identifies SNP markers associated with lentil protein quality traits. Once validated, these SNPs could accelerate lentil protein quality breeding efforts. By targeting lentil's limiting amino acids (methionine and cysteine) and protein digestibility through marker‐assisted selection, the nutritional value of lentil's protein content could be increased without the need to alter total protein content. Globally, India is the largest producer and consumer of pulses. Biofertilizers, a low cost input, help in increasing the crop productivity by way of biological nitrogen fixation, increased availability or uptake of nutrients through solubilization or increased stimulation of plant growth through the synthesis of growth promoting substances such as indole acetic acid (IAA), gibberellins, auxins, ammonia, hydrogen cyanide and siderophore production. Furthermore, biofertilizer inoculation helps to reduce the use of chemical fertilizers. These are environmentally friendly and play a significant role in boosting the pulse crop production. In this review paper, literature regarding different types of biofertilizers and their effect on different pulse crops has been studied. The effect of application of biofertilizer inoculation on biological nitrogen fixation, growth, symbiotic traits, productivity, quality, soil fertility, residual effect and economic benefit has been reviewed and summarized under different headings. Application of biofertilizers increases the plant growth, symbiotic traits (nodule number, nodule weight) and grain yield over no inoculation in different pulse crops without producing any adverse effect on the environment. Moreover, seed inoculation with biofertilizers provides economic benefits over without inoculation. Furthermore, single or dual inoculations of biofertilzers improve the nutrient status of soil and ultimately increase the nutrient uptake by crop along with improvement in protein content. Seed inoculation with biofertilizers also increases organic carbon, available nitrogen, available phosphorus and available potassium and microbial count in the soil after the crop harvest over un-inoculated control. The nitrogen amounts fixed as a result of inoculation leave a net positive N balance in the soil. Lentil (Lens culinaris Medik.) production faces challenges due to shifting environmental conditions, potentially leading to a transition towards cooler or highland Mediterranean environments. This study assessed the responses of five lentil genotypes across five diverse locations (L1–L5) managed under organic cropping systems over two seasons, focusing on key parameters including seed yield (SY), crude protein (CP), cooking time (CT), seed loss percentage (SL), and yield loss per hectare (YL) caused by bruchid (Bruchus sp.). Excessive seasonal rainfall (500 mm), low winter temperatures (−17.9 °C), bruchid SL, and spring sowing were identified as crucial, particularly in challenging environments like highlands. Genotype selection was highlighted as essential for balancing yield and stability, with the small-seeded cultivar 'Dimitra' demonstrating lower YL due to bruchid. Additionally, increased CP was noted in response to heightened bruchid infestations. Specific recommendations were proposed for different environments: In productive lowland areas with low bruchid pressure and high CTs (L1), prioritizing cultivars like 'Samos', 'Dimitra', and 'Thessalia' enhances quality. Locations with high bruchid populations (L4) were not favored organic production but can serve as genetic resistance screening sites. High-elevation environments (L3, L5) proved significantly less productive, underscoring the requirement for earlier and winter-hardy cultivars. The ability to modulate direct expanded product structures improves the versatility and range of product applications. The effect of nucleating agents, namely, talc and calcium carbonate (CC), on the expansion characteristics of pea starch extrudates as impacted by screw speed was explored. Pea starch blends with increasing levels of nucleating agents (0.25%, 1%, and 2%) at 18% moisture (w.b.) were extruded across a range of screw speeds (150, 250, 350, and 450 rpm). The water absorption index, water solubility index (WSI), expansion ratio (ER), unit density, and cell count were determined to evaluate the performance of nucleating agents. The nucleating efficiency of CC, as assessed by cell count, improved with increasing screw speeds. In contrast, the nucleating efficiency of talc was influenced by inclusion levels irrespective of screw speed. ER values ranged from 2.10 to 2.88, where higher nucleating agent inclusions and screw speeds corresponded with lower ER values. Increased nucleating agents and screw speeds corresponded to higher WSI values suggesting the nucleating agents promoted starch degradation. The nucleating agents appeared to promote flow instabilities indicated upon assessment of the extrudate surface. Practical Application: This study provides helpful information on the expanded extrudate structure of pea starch as influenced by screw speed and nucleating agents. These findings may help the food industry select processing parameters and appropriate nucleating agent inclusion levels when producing new expanded products with unique textures. Background: Soil fertility is a significant natural property which decides the health and quality of land resources. Pulse productivity diminishes nowadays under rain fed condition due to improper nutrient management practices. Hence the present study was carried out to assess the soil fertility status under major pulses growing area by using advanced geo statistical tool with ArcGIS. Methods: Soil survey was taken in 14 revenue villages in Melur block, Madurai district. Soil samples were collected and analysed for its nutrient properties. The Parker's Nutrient Index and soil fertility maps were prepared by using ArcGIS. Result: Pulses growing soils were mostly neutral in pH and soluble salt content was low. The organic carbon and available nitrogen content was low to medium. The available phosphorus and potassium status were medium to high. This study aims to investigate the effects of canning variables (cooking time, storage time, volume of vinegar, salt and sugar) on the mineral composition of canned cowpea (Vigna unguiculata (L.) Walp) and which conditions provide optimised preservation of the mineral content of the grains. Different formulations of canned cowpeas were produced following two levels factorial experimental design using five variables. A set of 11 different formulations were evaluated using the desirability function with essential minerals (Ca, Cu, Fe, Mn, Mg, P and Zn) as the response. The optimal multi-response conditions for higher mineral retention were: 360 days of storage at 30 ± 5 °C (ST2), 30 ml of vinegar, 9.0 g of NaCl, 18 min of cooking time, and 9.0 g, 19.5 g or 30 g of sugar (the effect of the sugar content at the evaluated range was not significant at 95% confidence level). In this paper, a design scheme for a dual‐band waveform‐selective metasurface absorber (MSA) is presented based on the combination of two metal resonator structures loaded with nonlinear circuits. Dual‐band MSAs with four different configurations are constructed by loading capacitor/inductor‐based nonlinear circuits into the gaps of two square‐patch (SP) and two square‐ring (SR) resonators, all of which can achieve selective absorption of short pulses and continuous waves (CWs) at two frequencies independently. As a typical example, the dual‐band MSA with the SP resonator loaded with the inductor‐based nonlinear circuit and the SR resonator loaded with the capacitor‐based nonlinear circuit is systematically studied. First, the selective absorption performance of the dual‐band MSA for CWs and pulses under different input powers is demonstrated. Second, the selective absorption properties of the dual‐band MSA for pulses with different pulse widths are studied. Third, the waveform‐selective absorption characteristics of the dual‐band MSA for oblique TE and TM waves are also illustrated. Finally, the influence of circuit component parameters on the selective absorption properties of pulses and CWs is systematically studied. Health and environmental issues regarding dairy consumption have been highlighted in recent years leading to tremendous consumer demand for plant-based substitutes. In this review, we focused on quality and health dimensions of pulse-based dairy alternatives (PuBDA) using chickpeas, lupins and mung beans. Appraisal of existing documents show that there is limited information on PuBDA with the said pulses compared to similar materials such as soy and pea. Most of the studies focused on milk or fermented milks, either in full or partial substitution of the dairy ingredients with the pulses. Issues on stability, sensory properties, shelf life and nutritional quality were underlined by existing literature. Although it was emphasized in some reports the health potential through the bioactive components, there is scarce data on clinical studies showing actual health benefits of the featured PuBDA in this paper. There is also a scant number of these PuBDA that are currently available in the market and in general, these products have inferior nutritional quality compared to the animal-based counterparts. Technological innovations involving physical, biological and chemical techniques can potentially address the quality problems in the use of chickpeas, lupins, and mung beans as raw materials in dairy alternatives. Background: Mung bean (Vigna radiata (L.) Wilczek), is an important pulse crop in the global south. Early flowering and maturation are advantageous traits for adaptation to northern and southern latitudes. This study investigates the genetic basis of the Days-to-Flowering trait (DTF) in mung bean, combining genome-wide association studies (GWAS) in mung bean and comparisons with orthologous genes involved with control of DTF responses in soybean (Glycine max (L) Merr) and Arabidopsis (Arabidopsis thaliana). Results: The most significant associations for DTF were on mung bean chromosomes 1, 2, and 4. Only the SNPs on chromosomes 1 and 4 were heavily investigated using downstream analysis. The chromosome 1 DTF association is tightly linked with a cluster of locally duplicated FERONIA (FER) receptor-like protein kinase genes, and the SNP occurs within one of the FERONIA genes. In Arabidopsis, an orthologous FERONIA gene (AT3G51550), has been reported to regulate the expression of the FLOWERING LOCUS C (FLC). For the chromosome 4 DTF locus, the strongest candidates are Vradi04g00002773 and Vradi04g00002778, orthologous to the Arabidopsis PhyA and PIF3 genes, encoding phytochrome A (a photoreceptor protein sensitive to red to far-red light) and phytochrome-interacting factor 3, respectively. The soybean PhyA orthologs include the classical loci E3 and E4 (genes GmPhyA3, Glyma.19G224200, and GmPhyA2, Glyma.20G090000). The mung bean PhyA ortholog has been previously reported as a candidate for DTF in studies conducted in South Korea. Conclusion: The top two identified SNPs accounted for a significant proportion (~ 65%) of the phenotypic variability in mung bean DTF by the six significant SNPs (39.61%), with a broad-sense heritability of 0.93. The strong associations of DTF with genes that have orthologs with analogous functions in soybean and Arabidopsis provide strong circumstantial evidence that these genes are causal for this trait. The feeding value of grain legumes is mainly defined by their concentration of energy and valuable ingredients. Additionally, variety, concentration and amount of antinutritional factors influence the feeding value and may restrict the use of grain legumes in feeding, particularly of non-ruminant species. In European varieties of peas, beans and lupins, the most prevalent antinutritional factors comprise alkaloids, phenolic compounds, glucopyranosides, enzyme inhibitors, saponins, lectins and phytic acid. According to their chemical structure different procedures are used to diminish concentration or activity of antinutritive factors. Categorized into chemical-biological and physical methods, the latter are more com-mon in practice. The aim of this review is to highlight antinutritional factors found in grain legumes and to evaluate effects when they are fed to farm animals. Moreover, an overview is presented of current possibilities for reducing concentrations or activities of antinutritional factors, which may aid to improve the target-oriented utilization of grain legumes in rations of farm animals. Background: Evolutionarily conserved in plants, the enzyme D-myo-inositol-3-phosphate synthase (MIPS; EC 5.5.1.4) regulates the initial, rate-limiting reaction in the phytic acid biosynthetic pathway. They are reported to be transcriptional regulators involved in various physiological functions in the plants, growth, and biotic/abiotic stress responses. Even though the genomes of most legumes are fully sequenced and available, an all-inclusive study of the MIPS family members in legumes is still ongoing. Results: We found 24 MIPS genes in ten legumes: Arachis hypogea, Cicer arietinum, Cajanus cajan, Glycine max, Lablab purpureus, Medicago truncatula, Pisum sativum, Phaseolus vulgaris, Trifolium pratense and Vigna unguiculata. The total number of MIPS genes found in each species ranged from two to three. The MIPS genes were classified into five clades based on their evolutionary relationships with Arabidopsis genes. The structural patterns of intron/exon and the protein motifs that were conserved in each gene were highly group-specific. In legumes, MIPS genes were inconsistently distributed across their genomes. A comparison of genomes and gene sequences showed that this family was subjected to purifying selection and the gene expansion in MIPS family in legumes was mainly caused by segmental duplication. Through quantitative PCR, expression patterns of MIPS in response to various abiotic stresses, in the vegetative tissues of various legumes were studied. Expression pattern shows that MIPS genes control the development and differentiation of various organs, and have significant responses to salinity and drought stress. Conclusion: The MIPS genes in the genomes of legumes have been identified, characterized and their expression was analysed. The findings pave way for understanding their molecular functions and evolution, and lead to identify the putative MIPS genes associated with different cell and tissue development. Background: Symbiotic associations between legumes and Rhizobia are ancient and fundamental. However, the plant growthpromoting endophytes other than Rhizobia are not yet fully explored for pulses productivity. The present study was aimed to isolate efficient endophytic bacteria from pulses, assess their diversity, screen their plant growth-promoting activities and to test their potential as bio inoculants for pulses. Methods: We have isolated several endophytic bacteria from pulse crops more specifically from blackgram (Vigna mungo) and greengram (Vigna radiata). After careful screening, 15 promising endophytic isolates were selected for this study. The identification of endophytic bacterial isolates was performed by 16S rRNA gene sequencing. The isolates were tested for their potential for the plant growth-promoting traits such as nitrogen fixation, phosphate solubilization, indole-3-acetic acid production, siderophore secretion and antifungal activity. Pot culture experiments were conducted with the screened potential endophytic cultures. Result: The 16S rRNA gene sequencing revealed that species of Enterobacter, Bacillus, Pantoea, Pseudomonas, Acromobacter, Ocrobacterium were found as endophytes in blackgram and greengram. The in vitro screening identified Bacillus pumilus (BG-E6), Pseudomonas fluorescens (BG-E5) and Bacillus licheniformis (BG-E3) from blackgram and Pseudomonas chlororaphis (GG-E2) and Bacillus thuringiensis (GG-E7) from greengram as potential plant growth-promoting endophytes. These strains showed antagonism against plant pathogenic fungi. Upon inoculation of these endophytic PGPR strains, the blackgram and greengram growth and yield got increased. Among the strains, BG-E6 recorded 14.7% increased yield in blackgram and GG-E2 accounted for a 19.5% yield increase in greengram compared to respective uninoculated control. The experimental results showed that there was a host specificity found among the endophytic bacterial cultures with pulses. Background: The concerned scientists of KVK, Ratlam (Madhya Pradesh) had organized front line demonstrations (FLDs) on chickpea production during rabi season of 2017-18 and 2019-20. Methods: During 2017-18 and 2019-20 in rabi season, one hundred seventy five cluster front line demonstrations were conducted on chickpea crop by KVK covering whole Ratlam district at Jaora, Sailana, Alote and Piploda blocks using chickpea variety JAKI 9218 and JG 14. Besides, demonstrations were conducted ensuring timely sowing with recommended seed rate and spacing, balanced use of fertilizers and integrated pest management practices. Result: The results revealed that 26.44 per cent yield increment was observed in the demonstration plots as compared to existing farming practices of chickpea due to adoption of improved package of practices. The effect of two different extraction methods (alkaline extraction isoelectric precipitation––AEIP and salt extraction dialysis––SE) on the production of protein isolates from four different pulse types grown in Canada (yellow pea-YP, green lentil-GL, chickpea-CH and navy bean-NB) were studied for their physicochemical, functional, and nutritional properties. The extraction method and type of pulse had an effect on protein and extraction yields. The method used for extraction had an influence on the surface properties as well as the functionality of the isolated proteins. SE-produced isolates presented higher solubility, foaming capacity and emulsion activity than those prepared through AEIP. Protein quality results showed that higher in-vitro protein digestibility (IVPD) and in-vitro protein digestibility corrected amino-acid scores (IV-PDCAAS) were achieved for proteins obtained through AEIP than those prepared for SE samples. The current study contributes to a better understanding of the effects of extraction methods on the resulting protein characteristics and properties of different pulses grown in Canada, which can impact their suitability for different product applications. Background. Equol (Eq) is the most potent soy isoflavone metabolite but individual people differ in their ability to produce it. It has been highlighted that some dietary factors may play a role in Eq formation. This study examines the hypothesis that there are specific dietary factors that determine the ability to produce Eq in Polish postmenopausal women. Moreover, Eq-producing phenotypes were also identified among. Thirtythree healthy, non-smoking Polish postmenopausal women aged 48-68 years were recruited. The women were asked to take soy isoflavone (100 mg/day) for three consecutive days. Mean daily intakes of energy and nutrients were estimated from 3-day food records. After dietary intervention, 24-hour urine samples were collected. Urinary isoflavones and their metabolites were measured using liquid chromatography with the tandem mass spectrometry method. Eq producers were defined using the cut-off of log10-transformed urinary Eq: daidzein (De) ratios > -1.75. 43.75% of participants excreted Eq. Results. The mean urine Eq excretion ±standard error, corrected for urinary creatinine (Cr), was 41.1 ±9.6 μmol/g-Cr in the Eq producers and 0.2 ±0.07 μmol/g-Cr in the nonproducers. Multivariable logistic regression analysis showed that participants who reported higher pulses intake were more likely to be Eq producers after adjusting for age, BMI and years after menopause (odds ratio: OR = 1.109, 95% CI: 1.033; 1.190; p = 0.004). Current world scenario of hunger and malnutrition problem is posing a great threat to the human civilization. Millions of people are undernourished globally according to the reports of Food and Agriculture Organization (FAO, 2015). Pulses and cereals have been used for their high percentage of proteins and carbohydrates in seeds. Pulse crops also have the ability to enrich the soil fertility due to their nitrogen fixing ability of their root nodules. Further, it is not only the high protein content of pulses for which they are important, but the amino acid profile of these proteins is such that the mixed diet of cereals and pulses has superior biological value than either of the components alone. However, with increase in population, per capita availability of pulses is getting reduced. As against recommended daily requirement of 50-60 grams, current per capita availability of pulses in India is less than 30 grams per day. India is the largest producer and consumer of pulses and depends mostly on pulses and cereals for their food. Urbanization and drastic climatic changes like drought, global warming, different environmental stresses etc. have led to considerable loss of crop productivity throughout the world leading to food insecurity. Scientists all over the world are using sophisticated approaches in developing improved varieties of crop plants that are high yielding and show considerable resistance to drastic environmental changes. Physical and chemical mutagenesis has been proved to be a convenient tool compared to other conventional processes in inducing desirable variability in crop plants related to yield and other components. Pulses are an important protein source for vegetarian people across the world and they have a great potential to improve the human health, contribute to global food and nutritional security. Variety of pulses were grown in India with 25% of global production and 27% of global consumption. Though India is the largest pulses producer in the world, it imports around 3.5 million tons annually to meet the ever-increasing requirement. Less adoption of improved Agro techniques, low fertile soils and unpredictable environment conditions are major factor for low production of pulses. As a results of increasing population, the projected pulses requirement will be 32 million tons by 2030 which necessitate annual growth rate of 4.2%. With adoption of suitable agronomic strategies, the productivity has to be enhanced to meet the demand. This research examined the physicochemical, functional, and nutritional aspects of pea (PPI) and faba bean protein isolates (FBPI) modified using trypsin at varying levels of hydrolysis. Enzyme hydrolysis decreased the protein content for both pulse protein isolates and increased the lipid content for pea. The surface charge became more negative, and the surface hydrophobicity was enhanced. The surface and interfacial tension, in general, decreased upon hydrolysis. The oil holding capacity for both pulses increased while the water holding capacity decreased. The foaming capacity of FBPI was significantly lowered by hydrolysis, while in the case of PPI, it increased at pH 4.5 and was unaffected at 7.0. The foaming stability increased for both pulses at pH 4.5 but was reduced at pH 7.0. At pH 4.5, hydrolysis enhanced the emulsion activity index of FBPI, while it decreased the index of PPI. The indices increased for both pulses at pH 7.0. The emulsion stability index was generally reduced for FBPI but improved for PPI after hydrolysis. All samples were limiting in tryptophan and the sulfur-containing amino acids, and in vitro protein digestibility decreased after hydrolysis for both pulses. As the results of these changes, overall protein quality improved for FBPI but not PPI. The degree of protein hydrolysis was an important factor in determining the functional and nutritional attributes of modified pulse proteins along with pH and pulse type. [ABSTRACT FROM AUTHOR]

Germination is a traditional process and a re-emerging trend in healthy foods, resulting a progressively increase in scientific research on their nutritional traits and phytochemical contents. This review examines the physiological and biochemical changes during the germination sensu stricto in pulses, taking into consideration the genotype, environmental conditions, hormone control, and the metabolic transition from seed to seedling. Germination sensu stricto is achieved as soon as elongation of the radicle, implies heterotrophy metabolism; further thermal processing is needed before consumption. In contrast, seedlings production requires a long period of imbibition and can provide a ready-to-eat food product. Furthermore, proteins, carbohydrates, minerals, vitamins, and antinutritional compounds of pulses are described. Impacts of food processing, such as soaking, germination, and cooking, in nutritional and antinutritional values are also evaluated. The association of soaking, germination, and cooking increases the nutritional values of pulses by increasing protein/starch digestibility and vitamins content and by decreasing antinutritional compounds. The final plant-based product allows versatility in formulation to produce novel food products and/or ingredients with better nutritional content. This can encourage the scientific community, industry, and government to invest in research and development to increase germinated pulse-based food, to replace other products, or to develop new ones. Background: Protein undernutrition is a prevalent health problem in Ethiopia severely affecting the reproductive outcome of women. This is mainly because of inadequate consumption of protein due to the high cost of animal-origin food and the lack of knowledge about the benefits and the methods of preparation of pulses-based foods. Therefore, this trial was conducted to evaluate the effectiveness of nutrition education in improving the consumption of pulses-based foods among female adolescents. Methods: A two-arm pragmatic cluster randomized controlled trial was conducted among female adolescents in Northwest Ethiopia. Clusters were schools assigned into intervention and control groups by cluster randomization. The trial participants were female adolescents. The intervention was pulses-based nutrition education, and the comparator was the usual dietary practice of adolescent girls. The education was delivered over four weeks on a 45–60 min session per week basis. The primary outcome of the intervention was pulses-based food consumption, and the secondary outcomes were knowledge and attitude about pulses food. Data on the outcome and the confounding variables were collected at baseline and end-line of the intervention. The analysis was based on intention-to-treat analysis, and a log-binomial logistic regression model was fitted to the data to calculate relative risk with the corresponding p value adjusted for baseline characteristics. The intervention was considered effective when the p value was < 0.05. Results: A total of 269 intervention and 278 control participants from the four clusters completed the trial making response rates of 92.1% and 95.2%, respectively. The pulses-based nutrition education enabled participants in the intervention group to maintain their pulses-based food consumption state, while participants in the control group significantly reduced their consumption by about threefold [ARR; 95% CI 2.99 (1.87, 4.79)] from harvesting to non-harvesting season. The consumption of pulses-based food was higher by 16% among the intervention participants as compared to the control participants [ARD; 95% CI 0.16 (0.10, 0.21)]. Conclusion: Pulses-based nutrition education is effective in improving the consumption of pulses-based food among female adolescents. Therefore, policies and strategies are required to integrate this intervention in the school nutrition program. Summary: The effect of cooking time and the solid content was analysed in the techno‐functional properties of lentils and common beans aquafaba, and their powders obtained through spray‐drying. Foam drainage kinetic and emulsion destabilisation were successfully modelled showing that lentil aquafaba had better foaming capacity than beans, due to its higher protein content. Moreover, an increase in cooking time results in more liquid incorporated into the foam and a longer lag phase. Bean aquafaba had acceptable emulsifying capacity, attributable to higher soluble carbohydrates. Additionally, microstructure, Fourier Transform Infrared Spectrometry, rehydration capacity, and flowability of aquafaba powders were studied. Microscopy of dried lentil aquafaba showed damaged and collapsed particles, while bean powder consisted of spherical smooth particles. The dominant factor influencing aquafaba functional properties and powder characteristics was the legume type, attributed to their chemical compositions. These findings broaden the insights of alternative sources of aquafaba and enhance the industrial applicability of these residues through highly rehydratable and functional powders. Pulses, endowed with unique ability of nitrogen fixation constitute an important component of crop diversification and resource conservation in farming systems. System of crop intensification (SCI) is an agricultural production strategy that seeks to increase and optimize the benefits that can be derived from making better use of available resources: soil, water, seeds, nutrients, solar radiation and air. System of crop intensification practices enable the crop to grow and develop potentially which provides enhanced production in sustainable and eco-friendly manner. Therefore, classical crop cultivation practices need to overhaul by adopting system of crop intensification for more profitability and sustainability. It includes ecosystem services taking full account of the factors and interactions of time and space so that field operations are conducted in a timely way. System of crop intensification has emerged as a next generation agro-ecological innovation. System of crop intensification principles and practices build upon the productive potentials that derive from plants having larger, more efficient, longer lived root systems and from their symbiotic relationships with a more abundant, diverse and active soil biota. Adoption of system of crop intensification practices in pulses may enhance the productivity and ecological sustainability of the system and reduce the gap between per capita availability and consumption of pulses and also enhancing the resource use efficiency of the system. Legumes have multiple advantages that meet agroecological challenges. However, many farmers are reluctant to include them permanently in their crop rotations. We investigated farmers' motivations for growing pulses in a case study of a French cooperative which has developed a pulses sector, by analyzing data from questionnaires and semi-structured interviews. Environmental and social values were more present among organic than conventional farmers; the latter were more concerned about their image. The results suggest that mechanisms to promote knowledge sharing among farmers would be valuable and highlight the intermediary role between local stakeholders that cooperatives can play to support agroecological policies. Background: Pulses are very crucial to meet the requirements of dietary proteins in the human diet especially for the predominantly vegetarian population in India. Pigeonpea [Cajanus cajan (L.) Millsp.] and chickpea (Cicer arietinum L.) are important pulses grown in India. The seeds of these crops are highly vulnerable to various microorganisms, both in the field and during storage, which play an important role in reducing the seed viability, germination and vigour causing considerable loss in yield and quality. There is no suitable recommendation available to maintain seed quality during storage of pulses, hence present study was undertaken. Methods: Seeds of pigeonpea and chickpea were treated with Captan and Carbendazim 50% WP fungicides @ 2.0 g/Kg of seed and stored under ambient condition. The samples were drawn at three months interval to assess the effect of storage on seed quality parameters. The vigour index I, seed germination and speed of germination of these seed samples were determined using ISTA rules. The detection of seed mycoflora in pigeonpea and chickpea seed samples was carried out by the blotter test as recommended by the International Seed Testing Association. Result: Total sixteen fungal species were recorded on stored seeds. Maximum incidence of Aspergillus fumigatus (19.83%), A. flavus (14.88%), A. niger (12.40%), Alternaria alternata (11.57%), Fusarium oxysporum (8.26%), Rhizopus stolonifer (7.44%) and Penicillium notatum (5.79%) were recorded on untreated seed of pigeonpea cv. P. 2001 after 18 months of storage. The per cent germination, speed of germination and vigour index of the stored seeds decreased with the increase in the storage period whereas the total number of fungi increased with the storage period, irrespective of treatments. Among the tested cultivars, germination in pigeonpea (cv. P. 991) remained above IMSCS (>75%) upto 18 months of storage under ambient storage condition. However, the germination of pigeonpea cv. P. 2001 seed could be maintained above IMSCS (>75%) up to 12 months only. In chickpea (local cultivar) seed, the germination remained above IMSCS (>85%) up to 9 months only under ambient storage, however seed treatment with either Captan or Carbendazim could prolong the longevity upto 12 months of storage. Lentil production in arable, Mediterranean-type climates is limited by acute high temperature (HT) commonly occurring during the reproductive stage. With changing climate and greater weather extremes, there is a need to increase the HT tolerance of lentil to sustain production, and global germplasm provides adaptation opportunities. The current study assessed 81 genotypes for HT tolerance from a range of global climatic zones. Field screening of germplasm was undertaken over two consecutive years (2014 and 2015), in southern Australia, using a late-sowing approach, which included a subset of 22 genotypes that were screened in both years. Partially shaded temperature treatments within a split-plot arrangement were used to generate two different HT profiles. Stress indices, i.e., the yield stability index (YSI), the stress tolerance index (STI), and a third proposed high-temperature tolerance index (HTTI), were applied to rank the HT tolerance of germplasm. In 2014, under field conditions associated with natural temperature ranges that were favorable for screening, the following five landraces with increased temperature tolerance were identified: AGG 73838, AGG 70118, AGG 70951, AGG 70156, and AGG 70549. Among the 10 commercial varieties tested, one variety (i.e., cv. Nipper) was observed to have HT tolerance. For the YSI, which had the greatest amount of consistency in response across the 2 years (11 of the 22 genotypes), there were two genotypes (AGG 71457 and Nipper) which maintained their yield stability. These results demonstrate the opportunity that germplasm provides to improve the adaptation of lentil to HT. Ultimately, the late-sowing approach is one possible methodology to integrate into contemporary breeding programs for improving adaptation of lentil within Mediterranean-type environments. This paper aims to develop an efficient debris-flushing technique for micro-EDM dressing to improve its process stability by providing a rotation to the dielectric medium. A setup was developed in-house in this regard to impart rotation to the dielectric medium at various speeds. To evaluate the efficiency of this flushing approach, the micro-EDM dressing process stability was assessed by monitoring and analyzing debris expulsion in real time with the aid of a high-speed photography and image processing technique on an immerging Ti6Al7Nb biomedical material. The process stability was appraised by monitoring and quantifying the (a) normal and arcing pulses % with the help of a developed pulse discriminating system and (b) the workpiece retraction captured in real time by a laser triangulation displacement sensor for the whole duration of machining. Additionally, the physics behind debris exclusions captured through high-speed photography under dielectric rotation was understood by analyzing the debris flow behavior in the discharge gap using a COMSOL Multiphysics model. The results show that the proposed flushing approach was capable to improve the micro-EDM dressing process stability significantly in comparison to no dielectric medium rotation case. The debris evacuation results were also found in good agreement with the process stability results. From the comparison, it was found that as high as ~17% more normal pulses with a reduction in spindle retraction height by more than 98% were achievable at the highest dielectric rotational speed in comparison to the no rotation condition. Despite the many advantages of pulses, they are characterised by off-flavours that limit their consumption. Off-notes, bitterness and astringency contribute to negative perceptions of pulses. Several hypotheses have assumed that non-volatile compounds, including saponins, phenolic compounds, and alkaloids, are responsible for pulse bitterness and astringency. This review aims to provide an overview highlighting the non-volatile compounds identified in pulses and their bitter and/or astringent characteristics to suggest their potential involvement in pulse off-flavours. Sensorial analyses are mainly used to describe the bitterness and astringency of molecules. However, in vitro cellular assays have shown the activation of bitter taste receptors by many phenolic compounds, suggesting their potential involvement in pulse bitterness. A better knowledge of the non-volatile compounds involved in the off-flavours should enable the creation of efficient strategies to limit their impact on overall perception and increase consumer acceptability. Summary: Considering the high interest in using pulses in the production of staple foods, including pasta, this study aimed at investigating the effect of pre‐gelatinisation on the overall quality of pasta from red lentils. Pre‐gelatinized flours showed a lower gelatinisation temperature (up to about 57 °C vs. about 65 °C) and higher retrogradation tendency than native flour. Such changes resulted in higher water absorption capacity (up to 1.23 vs. 0.98 g g−1) and higher farinographic torque, but did not impact the cooking quality. Conversely, the resistant starch content of cooked pasta decreased (from 14.79 to 10.4 g/100 g total starch) and the starch hydrolysis index increased (from 48.28 to 67.71) when pre‐gelatinised flours were used. In conclusion, pre‐gelatinisation impacted starch, hydration and the mixing properties of red lentils flours, without compromising the cooking behaviour of the related pasta. [ABSTRACT FROM AUTHOR]

There has been a growing demand for pulses due to the nutrition, health benefits, and agronomical advantages, along with the recommendation of international organizations to diversify the use of pulses. Lentil, yellow pea, and chickpea were studied for their effect on the quality of the bread when incorporated into refined wheat flour. The pulse grains were roller milled into different particle sizes (small: 44–59 μm, medium: 70–85 μm, and large: 95–104 μm) with similar composition, and each refined pulse flour was incorporated in refined wheat flour at levels of 5, 12.5, and 20% (wt/wt). The flours were characterized for particle size distribution, starch damage, proximate composition, water retention, and dough mixing properties, followed by baking test and texture analysis. The particle size of the pulse flours did not significantly affect the bread volume or the texture, while increasing the pulse flour incorporation decreased the bread specific volume from 5.0 to 3.4 cm3/g and the hardness of the bread increased from 3.9 to 9.9 N at the maximum incorporation level. The crust color darkened as pulse flour incorporation was increased, while the effect on crumb color was marginable. Among the three pulses, chickpea performed better compared to lentil and yellow pea, and yellow pea resulted in bread with lower volume at all levels of incorporation. Enriched bread can be produced by incorporating pulse flours at up to 12.5% (wt/wt) without significant effect on the quality of bread, with chickpeas possessing better baking properties than yellow pea or lentil. Background: Pulses are one of the most important food crops grown globally owed to their higher protein content. It also accounts for larger financial gains of the agricultural sector by amounting for a large part of the exports. The present study was carried out to determine the factors affecting production of pulse crops in Rajasthan. Methods: This paper based on secondary data collected over the years i.e. from 2000-01 to 2017-18. The Cobb-Douglas production function was used to the observation for the estimation of elasticity of selected variables contributing to the production of pulses in Rajasthan state, Cobb-Douglas type production function was employed to assess the effects of seed, fertilizer, manure, human labour, irrigation, bullock labour and plant protection measures on pulses production. Result: The results from the study have shown that fertilizer and plant protection measures were positively significant while the variable corresponding to irrigation water was negatively significantly affecting the gram production. The variables such as seed and irrigation water were found positive and significant, while plant protection measures had significant negative effect on black gram production. Diet is a key modulator of non‐communicable diseases, and food production represents a major cause of environmental degradation and greenhouse gas emissions. Yet, 'nudging' people to make better food choices is challenging, as factors including affordability, convenience and taste often take priority over the achievement of health and environmental benefits. The overall 'Raising the Pulse' project aim is to bring about a step change in the nutritional value of the UK consumers' diet, and to do so in a way that leads to improved health and greater sustainability within the UK food system. To achieve our objectives, UK‐specific faba bean production systems that optimise both end users' diets and environmental and economic sustainability of production will be implemented in collaboration with key stakeholders (including industry, the retail sector and government). Palatable faba bean flours will be produced and used to develop 'Raising the Pulse' food products with improved nutritional profile and environmental value. Consumer focus groups and workshops will establish attitudes, preferences, drivers of and barriers to increased consumption of such products. They will inform the co‐creation of sensory testing and University‐wide intervention studies to evaluate the effects of pulses and 'Raising the Pulse' foods on diet quality, self‐reported satiety, nutritional knowledge, consumer acceptance and market potential. Nutrient bioavailability and satiety will be evaluated in a randomised‐controlled postprandial human study. Finally, a system model will be developed that predicts changes to land use, environment, business viability, nutrition and human health after substitution of existing less nutritionally beneficial and environmentally sustainable ingredients with pulses. Government health and sustainability priorities will be addressed, helping to define policy‐relevant solutions with significant beneficial supply chain economic impacts and transformed sustainable food systems to improve consumer diet quality, health and the environment. Despite the known health benefits and the potential for substituting less environmentally sustainable consumed foods such as meat, the current intake of pulses in developed countries remains less than recommended. Barriers are related to sensory characteristics and lack of knowledge about preparation, while drivers of environmental benefits are intangible. The aim of this study was to investigate the effect of additional information about health or environmental benefits of pulses on the acceptance of novel pulse‐based products from chickpeas, black beans, and faba beans. Perceptions of these pulse‐based spreads in a blind and informed stage were assessed with 202 consumers in urban and suburban areas of Denmark. In general, the familiar chickpea spread followed by the relatively most unfamiliar black bean spread was liked the most. Only for these two products, additional information increased hedonic perception, regardless of the context (health or environmental benefits). If consumers did not like the spread, as found for the faba bean spread, providing additional information did not significantly alter this perception. Participants' preferences and willingness to pay (WTP) in a discrete choice experiment corresponded to hedonic scores, whereas providing additional information increased the WTP. These findings suggest that extrinsic cues such as health or environmental benefits may only be useful in products with an acceptable baseline taste profile. Moreover, black beans might be investigated as a promising source for further product development due to their acceptance by consumers besides being the comparably most unfamiliar pulse type. This study aimed to evaluate the short-term effect of a common bean baked snack (CBBS) and cooked bean consumption on energy intake, satiety, glycemic response, and palatability in subjects with normal weight (Study 1) and overweight (Study 2) and to determine the glycemic index of CBBS (Study 3). For studies 1 and 2, satiety and glycemic response were measured over 45 min after consuming CBBS, cooked beans or white bread preload, and energy intake at an ad libitum test meal was calculated. Energy intake remained similar after consuming the three preloads in both studies. Compared to white bread, CBBS consumption increased fullness by 52% in subjects with normal weight but not in those with overweight. The CBBS calculated glycemic index was considered low (42). Consumption of low glycemic index CBBS increased satiety in adults with a normal weight. Long-term trials assessing the effects on body weight management are necessary. [ABSTRACT FROM AUTHOR]

Present study focuses on the use of bacterial isolate Pseudomonas OG101 against the Fusarium sp. and its growth promoting ability for chickpea (Cicer arietinum) and cowpea (Vigna unguiculata) plants. Pseudomonas strain OG101 controls mycelial growth of Fusarium oxysporum f.sp. ciceris and F. oxysporum f.sp. pallidoroseum up to 24.4% and 20.5%, respectively. In addition, OG101 showed a significant improvement in the germination index of 93.3% and 98.3% with disease index of 1.6% and 3.3% in chickpea plant and cowpea plant, respectively. Pot experiments of chickpea and cowpea plants refer to use it as a seed bacterization for the best effect for growth promotion and its biocontrol activity against F. oxysporum f.sp. ciceris and F. oxysporum f.sp. pallidoroseum respectively.
