Because of the cost factor of the edible oils, it became a common practice by the adulterators to adulterate the edible oils like coconut oil, Sunflower oil, Groundnut oil and ghee with low cost oils like Palm and Mineral oils and refilling it in bottles and packets of well known brands. Tests have proved that mineral oil causes hair loss and adulterated edible oils affect the human digestion system and causes gastric problems. Hence an attempt is made to find out whether edible oil is in its pure form or adulterated by using ultrasonic technique. Ultrasonic velocity was measured in six edible oils in their pure and adulterate forms at 1,2,3 and 5MHz frequencies using Ultrasonic Multi frequency Interferometer at room temperature. The present study gives information about the ultrasonic velocity changes when the oil was adulterated and data presented will be highly useful to identify whether the given oil is pure or impure.
