Agriculture companies are using genetic technology to modify potatoes in order to increase their nutritional value and yield. Ohalo Genetics, a California-based startup, and Solynta, a Netherlands potato-seed developer, are among the companies working on improving the genetic makeup of potatoes. They are using gene-editing technologies to enhance the starch and protein content of potatoes, as well as reduce the levels of acrylamide, a chemical that can form when potatoes are cooked at high temperatures.
