With the improvement of people's living standards and health care awareness, diabetes, obesity, high blood pressure and other diseases increased year by year the issue has aroused people's attention. The key to solving these problems is to promote the use of high dietary fiber foods. Tartary buckwheat is rich in protein, starch, cellulose, flavonoids and other nutrients, it can improve intestinal microecology, lower blood lipids, prevent colon cancer, treat constipation and lose weight, it can also improve the immunity of human body. Starch, as the main component of tartary buckwheat, has high peak viscosity, high hydration capacity and low solubility. As a natural starch, it has shortcomings such as poor processing ability, narrow range of viscosity and unstable storage performance. Therefore, it needs to be modified to keep the functional characteristics of food to the maximum extent. In recent years, the physical modification method represented by ultra-high pressure, microwave, ultrasonic and other green processing technologies has been applied to starch modification, has become a focus recently. Compared with traditional heat treatment, it has a lower temperature of action. In this paper, the homemade tartary buckwheat starch was treated at 0.1 MPa (ordinary pressure), 100, 200, 300, 400, 500 MPa, and kept for 15 min, using scanning electron microscopy and X-ray diffractometry, etc. analyzed the characteristics of the morphology, crystal structure, solubility, light transmittance and freeze-thaw stability of the tartary buckwheat starch granules. The in vitro model was used to simulate human digestion and intestinal fermentation process. The contents of short chain fatty acids and the main bacterial flora of mouse fecal fermentation broth were determined. The experimental results show that when the pressure was higher than 300 MPa, the surface of tartary buckwheat starch would be inwardly depressed and gradually extruded into a block or sheet and adhered together; and the diffraction intensity was gradually increased (P<0.05). The crystallinity increased from 35.0% to 41.8%. When the pressure reached 500 MPa, the crystal form of tartary buckwheat changed from A to B. Both solubility and expansibility decreased first and then increase with the increase of pressure, and the transmittance would go down, at 200 MPa, the solubility and expansion degree were both the lowest, and the freeze-thaw stability would be improved to some extent. In addition, in the pre-fermentation period (0-8 h), compared with the blank group (without added tartary buckwheat starch)the number of Bifidobacteria and Lactobacilli in the intestinal tract increased significantly after ultra-high pressure treatment (P<0.05) , compared with the blank group (no tartary buckwheat starch was added), the increase of Bifidobacteria in the ultra-high pressure treatment (200 MPa) group and the ultra-high pressure treatment (500 MPa) group was 37.0% and 22.16% respectively. Compared with the blank group, the growth rate of lactobacillus increased by 53.7% in the ultra-high pressure treatment (200 MPa) group, and the growth of Escherichia coli and enterococcus was significantly inhibited (P<0.05). At the same time, the pH value in the intestine decreased significantly (P<0.05). The acetic acid, propionic acid and butyric acid in SCFAs increased significantly (P<0.05), among which, in the early stage of fermentation (0-8 h), the concentration of SCFAs in the ultra-high pressure treatment (200 MPa) group was the highest. That is, tartary buckwheat starch treated with 200 MPa could effectively reduce the pH value of intestinal fermentation fluid and inhibit the growth of harmful bacteria. Tartary buckwheat protein is the main bioactive substance in tartary buckwheat. It has the advantages of antibacterial activity, anti-tumor, lowering blood pressure, and inhibiting serine protease and other physiological activities. It is an ideal healthy food raw material. At present, the heating treatment methods are wet-heat, dry-heat and microwave method. In order to maximize the maintenance of food functional characteristics, it is very important to study the effect of different heating treatment methods on the tartary buckwheat products. Wet-heat treatment: Tartary buckwheat protein were mixed with water according to the ratio of solid to liquid 1:10, the temperature of water bath was 80、100 ℃, the treatment time was 20 min, 40 min, 60 min, freeze-dried. Dry heat treatment: the tartary buckwheat protein tile on the enamel plate, placed in the oven, the temperature 80、100 ℃, treatment time was 20 min, 40 min, 60 min. Microwave heating treatment: the tartary buckwheat protein placed in a microwave oven (700 W), treatment time was 2 min, 4 min, 6 min. In this paper, tartary buckwheat seeds were crushed, degreased, with flavonoids removed, then the supernatant was taken and the pH value was adjusted to the isoelectric point, and the precipitate was freezing-dried in vacuo to give tartary buckwheat protein. The tartary buckwheat protein was prepared by wet-heat, dry-heat, microwave treatment. The changes in physical and chemical properties and functional properties of tartary buckwheat protein, such as hydration properties, emulsifying activity, foaming activity, in vitro digestibility, antioxidant activity and bile salt adsorption capacity were measured. The experimental results show that the traditional heating methods (wet-heat, dry-heat) and short-term microwave treatment have a certain improvement on the functional properties of tartary buckwheat protein. Among them, the wet-heat treatment has positive effects, especially for emulsification, emulsifying stability, foaming property, foam stability, hydroxyl radical (·OH) scavenging ability, and sodium taurocholic acid adsorption ability, which were increased by 28%, 22%, 22%, 23%, 9.75% and 28%, respectively. Dry-heat treatment can improve the water holding capacity and the reducing power of tartary buckwheat protein, which are 31% and 16.34% higher than that of untreated tartary buckwheat protein. For short-term microwave treatment (2 min), the water holding capacity of tartary buckwheat protein was increased by 51%. And long-term microwave treatment (4、6 min) has a greater negative impact on the tartary buckwheat protein performance, especially for emulsification, emulsifying stability, foaming ability, and foam stability, which were reduced by 62%, 77%, 66% and 54%, respectively; ABTS radical scavenging ability, .OH scavenging ability, and reducing power were reduced by 48.79%, 63.49% and 49.18%, respectively; adsorption ability of sodium bile acid, sodium deoxycholic acid and sodium taurocholic acid was reduced by 64%, 55% and 41% respectively. In summary, in the process of tartary buckwheat protein processing, you can choose the traditional heating method or strictly control the microwave time to avoid the damage of long-term microwave heating to the buckwheat protein functional characteristics. Based on the idea of engineering practice teaching, the public service platform is implemented to cultivate innovative talents with interdisciplinary abilities in construction of entity platform. Breaking through the constrains of physical space for experiment resources and original management framework, the practice teaching information management platform is constructed to manage all the experiment resources as a whole. Steamed bread is a traditional fermented pasta product in China, which plays an important role in the dietary structure. With the improvement of people's living standards and the acceleration of life pace in recent years, steamed bread has become a popular fast food product for consumer. However, the shelf life of steamed bread is short and easy to be aged, which greatly affects the industrialized production of steamed bread. Frozen dough technology can provide an economic and effective technical way. However, the relevant research reports pointed out that the water in the dough formed ice crystals in the process of frozen storage. Because of the temperature fluctuation, recrystallization will occur, which will destroy the network structure of the dough, make the dough appear cracks after freezing, reduce the gas holding capacity, as well as affect the quality of frozen dough and its cooked products. At the same time, ice crystal will also lead to the damage and rupture of yeast cells, such as the damage of its respiratory system, the reduction of yeast vitality and the lack of gas production, which will cause the decline of dough specific volume, texture and sensory quality. The use of dough quality improver can enhance the structure of gluten network, protect yeast activity, improve the quality of dough, and prolong the storage period of frozen dough. To study the effect of different improvers on the quality of frozen dough and its cooked products, and to select the compound improvers which can improve the quality of the products better, it has a certain practical significance in the actual production. In order to improve the quality of frozen dough and to clarify the effect of different food improvers on the quality of unwrapped frozen dough, this paper studied compound thickeners (carrageenan, guar gum, sodium alginate) and compound emulsifier (diacetyl tartrate monoglyceride, carboxymethyl cellulose), complex enzyme preparations (glutamine transaminase, glucose oxidase) and trehalose on the quality of unwrapped frozen dough steamed bread, through single factor and response surface experimental design, the effect of different compound quality improver on the specific volume, texture and sensory quality of frozen dough. Studies have shown that the effect of trehalose and enzyme preparation on the specific volume of frozen dough is extremely significant (P<0.01). Under the compounding process of adding 0.4 % emulsifier, 0.8 % thickener, 45 mg/kg enzyme preparation and 2 % trehalose, the specific volume of the frozen dough steamed bread reached the level of 3.15 mL/g, and its hardness and the springiness also reached a superior value of 926.832 g and 0.912 8, respectively. At the same time, the frozen dough which was not added and added with the compound quality improver for 0-2.5 month was observed by scanning electron microscopy. It was found that most of the small starch granules in the frozen dough without the addition of the modifier were exposed outside, the particles were distinct, and the internal structure was uneven. The frozen dough starch granules with the compound quality improver added in the gluten network, the protein network structure is clear and complete, the internal structure of the frozen dough is even and tight.
