This book presents Urbal, an approach that applies impact pathway mapping to understand how food system innovations in cities, and their territories, change and impact food system sustainability. Around the world, people are finding innovative ways to make their food systems more sustainable. However, documenting and understanding how these innovations impact the sustainability of food system can be a challenge. The Urban Driven Innovations for Sustainable Food Systems (Urbal) methodology responds to these constraints by providing innovations with a simple, open-source, resource-efficient tool that is easily appropriated and adaptable to different contexts. Urbal is designed to respond to the demands of field stakeholders, whether public or private, to accompany and guide them in their actions and decision-making with regard to sustainability objectives. This book presents this qualitative and participatory impact assessment method of food innovations and applies it to several cases of food innovation around the world, including the impact of agricultural districts in Milan, chefs and gastronomy in Brasilia, e-commerce in Vietnam, eco-friendly farm systems in Berlin and the Nourish to Flourish governance process in Cape Town. The book demonstrates how food innovations can impact different dimensions of sustainability, positively and negatively, and identify the elements that facilitate or hinder these impacts. The volume reflects on how to strengthen the capacity of these stakeholders to disseminate their innovations on other scales to contribute to the transition towards more sustainable food systems. This book documents how COVID-19 impacts gender, agriculture, and food systems across the globe with on-the-ground accounts and personal reflections from scholars, practitioners, and community members.During the coronavirus pandemic with many people under lockdown, continual agricultural production and access to food remain essential. Women provide much of the formal and informal work in agriculture and food production, distribution, and preparation often under precarious conditions. A cadre of scholars and practitioners from across the globe provide their timely observations on these issues as well as more personal reflections on its impact on their lives and work. It is clear that one of the most damaging global problems is hunger. There is still a high proportion of hungry people in the world, the number of human beings in this condition exceeding 690 million, according to the latest State of Food Security and Nutrition in the World Report (FAO 2020). Consequently, its eradication is extremely urgent. Nevertheless, it does not appear that Sustainable Development Goal number two, i.e. Zero Hunger, will be achieved by 2030. The United Nations itself admits this, stating that'the world is not on track to achieve Zero Hunger by 2030. If recent trends continue, the number of people affected by hunger would surpass 840 million by 2030'. The problems facing food in the world today have increased considerably, as well as various factors and phenomena that augment the complexity of the issues or situations that fall within the scope of food security, such as: climate change, land grabbing, use of chemical fertilizers, loss of agrodiversity and other agricultural sustainability issues, obesity problems resulting from unhealthy diets, the impact of the coronavirus pandemic, the lack of justiciability of the right to food, the use of biotechnology in food, etc. In short, this book is a diverse compilation of the new manifestations of global food security seen from several angles and areas. The book aims to let visualize the main global problems and challenges that have a negative impact on food security, with the underlying objective of highlighting the need for reinforcing its full application in all contexts and countries. To this end, we believe that it is necessary to make its concept operational, and take it into consideration when applying policies and standards, especially in those areas and matters that may undermine said food security. Even as malnutrition in the form of hunger and obesity affect the health and well-being of millions of people worldwide, a significant amount of food is lost or wasted every day, in every country, and at every stage in the supply chain from the farm to the household. According to a 2011 estimate by the Food and Agriculture Organization of the United Nations (FAO), about one-third of food produced is lost or wasted globally. Beyond quantity estimates, however, less is known about the impacts on farmers, food prices, food availability, and environment of reducing food loss and waste. On October 17, 2018, the National Academies of Sciences, Engineering, and Medicine organized a workshop to examine key challenges that arise in reducing food loss and waste throughout the supply chain and discussed potential ways to address these challenges. This publication summarizes the presentations and discussions from the workshop.
