This new book discusses the physiological factors that contribute to metabolic syndrome within the human body and spotlights the beneficial effects on the body of nutraceuticals and functional ingredients, botanicals and natural dietary supplements, structurally numerous antioxidants, B-vitamins, and diverse amino acids and vital nutrients. The book considers the need to preserve a balance between energy delivery and strength expenditure that is essential for maintaining an appropriate body mass index (BMI), which can contribute to less obesity and fewer metabolic disorders, such as diabetes type II, cardiovascular illnesses, etc. The authors present recent research that proves that proper vitamins—including antioxidants, nutrients, micronutrients, and selected amino acids—can enhance the body's metabolism and defend it from inflammatory onslaughts.

The Advanced Dairy Chemistry series was first published in four volumes in the 1980s (under the title Developments in Dairy Chemistry) and revised in three volumes in the late 1990s and again in the 2000s and 2010s. For nearly four decades, the series has been the leading reference source on dairy chemistry and is now in its fourth edition. Advanced Dairy Chemistry Volume 3: Lactose, Water, Salts, and Minor Constituents, fourth edition, reviews the extensive literature on lactose and its significance in milk products. This volume also reviews the literature on milk salts, vitamins, and the behaviour of water in dairy products and the physical properties of milk. Most topics covered in the third edition are retained in the current edition, which has been updated and expanded considerably. New chapters cover chemically and enzymatically prepared derivatives of lactose and oligosaccharides indigenous to milk and some chapters from earlier editions are consolidated.

The study of bioactive compounds has received a considerable rising interest over the last three decades, given their biological activity as reported by scientific evidence linking these substances to the prevention of several types of diseases. Chapter One is aimed at making a wide description of sources, properties and applications of bioactive compounds. In order to further highlight the importance of Brazil's fruitful diversity and its bioactive potential, a number of items related to Brazilian native fruits will be addressed in Chapter Nine, including their biomes of origin, composition of bioactive compounds and potentials, as well as their limitations and future prospects. On a global basis, the dietary supplement industry has enjoyed rapid growth, becoming a multi-billion dollar enterprise over the last 10 years. This growth has been associated with significant changes in both the types of products available and the reasons for using these products. In many cases, these changes have occurred without the benefit of a sound scientific basis for evaluating the safety and efficacy of these products under the new conditions of use and frequently the same limited scientific evidence is used, even though current product composition, user populations, purported beneficial effects, and conditions of use may differ significantly from the available evidence or historical usage.
