Abstract
Environmental issues associated with the production of whey by dairies have triggered a search for alternatives which insist of the preservation of the environment and value aggregation to the co-product. Current paper discusses the advantages, disadvantages, opportunities and dangers of main treatments and valorization means of whey. Review of the literature forwards a critical discussion on the general context of the true use of whey and the involved environmental implications. [ABSTRACT FROM AUTHOR]
